여수연해 정치망어장의 해황과 어황에 관한 연구 (Oceanographic Condition and Fishing Condition of the Set Net Fishing Ground in Yeosu Bay)

  • 여수연해 정치망 어장의 6월, 7월, 8월의 해황변화에 따른 어황관계를 조사하고 분석한 결과는 다음과 같다. 1) 하천수의 유입이 많은 내해와 돌산연안의 정치망 어장에서는 고온.저염분수가 분포하고 외해에는 저온 고염분수가 분포한다. 2) 정치망 어장부근에는 6월의 와류형성과 8월의 수온약층 형성으로 어류가 군집을 하는데 영향을 미쳐 좋은 어획량을 보여 주고 있다. 3) 정치망 어장에서 어획수온범위는 11$^{\circ}C$~28$^{\circ}C$이며 좋은 어획량을 나타내는 범위는 21$^{\circ}C$~27$^{\circ}C$였다. 또한 염분의 범위는 31.60$\textperthousand$~34.80$\textperthousand$이고 어획이 가장 좋은 범위는 33.80$\textperthousand$~33.99$\textperthousand$였다. 4) 어획대상물의 어획순위는 삼치, 전갱이, 삼치, 정어리, 고등어, 갈치의 순으로 나타났다.

대형선망어업의 주요 목표종의 어장 변동 (A study on fluctuation of the fishing grounds of target fishes by the Korean large purse seine fishery)

  • Korean large purse seine fishery catches chub mackerel, sardine, jack mackerel, Spanish mackerel, etc. which are mainly pelagic fish species. The proportion of chub mackerel was 60% over in Korean large purse seine fishery. Sea surface temperature (SST) increased $0.0253^{\circ}C$ per year and total rising rate was $0.759^{\circ}C$ from 1980 to 2009 in the southern sea of Korea, where is mainly fishing grounds of Korean large purse seine. It was that p<0.01 level was statistically significant. It is northward movement that the center of fishing grounds of chub mackerel by Korean large purse seine fishery moved 4.57km/yr. It was rapidly northward movement about 7.1km/yr, 8.13km/yr to move Spanish mackerel and bluefin tuna fishing grounds. However, the fishing grounds of jack mackerel were moved further south in the 2000s than the 1980s. Catch of tunas and bluefin tuna consistently increased in Korean waters. There was a significantly positive correlation between SST and catch of bluefin tuna in the fishing grounds of Korean waters.

건강기능식품의 시장현황 및 인삼시장의 전망 (Market Trend of Health Functional Food and the Prospect of Ginseng Market)

  • The health function food law has been carried into effect from January 31, 2004 just after the proposal of 'a draft of a proposed law concerning the health function foods for the promotion of a nation health' on November 29, 2000 in Korea. After enforcement of health functional food law, there have been difficult market penetration with overall stagnancy of business activities and the current of health functional food within the country divided two groups. In standardized health functional foods the present condition, nutrition supplementary products (938 items) and red ginseng products (351 items) are prevalent and total 32 products are registered containing lactobacilli (297 items), glucosamine (295 items), ginseng (182 items), yeast(136 items) so on. In 2005, five products (products containing green tea extract, soybean protein, plant sterol, fructooligo sugar and Monascus sp. products are newly notified and raw material or component of total 21 products containing xylitol, teanin extract, sardine peptide are recognized as individual authorized health functional foods. Efficacies of ginseng are studied in many-sided researches but benefits of the ginseng in the health functional food law limited to 3 items (staminaresume, immune enhancement, nourishment robustness). To enlarge functionalities of ginseng it needs raw material and ingredient approval through data application to Korea Food and Drug Administration and this procedure acts as barrier of the functional food development in the ginseng industry. It is necessary to develop the authorized health functional foods for leading health functional food market in the future.

경남지역을 중심으로 한 한국인의 식품 기호도에 관한 조사연구 (Survey on Food Preference in Gyeongnam Area)

  • This research was carried to investigate the food preference of students, from elementary school, middle school, high school, university and industrial workers on Jinju, Sacheon and Jinyang by age and sex. The results were obtained as follows. In case of rice as the stationary food, plain white boiled rice showed the highest preference among all the groups. Most of groups liked most of one-dish meals such as kimbab, fried rice with kimchi, dumplings and bibimbab, especially the elementary school students and middle school students. On the other hand, high percentage of industrial workers disliked the western food such as pizza, hamburger and sphagetti. Most of subjects liked jajangmun, nangmun and bibimgooksu as noodles. As the side dishes generally they prefer the soup to stew. Male prefer the soup with beef and female prefer soup with vegetables. Stew with kimchi and stew with soybean paste showed high preference among most of groups. Most of broil food showed high preference, and students prefer meat to fish as broil cooking materials especially younger students. As a general they liked soybean sprout, spinach and wild sesame leaf as namul cooking method and they liked korean cabbage kimchi, chonggak kimchi, kackdoogi and dongchimi as kimchi. As a dessert subjects liked most of fruits and they liked yoghurt, fruit juice, milk, sikhae and soda as drinks generally. On the other hand snacks such as cooky, candy, cake, corn, rice cake, sweet potato have the lowest percentage preferance as a dessert, but students from elementary schools showed the highest preferance to sweet such as cooky, cake and candy than any other group. These food preferance results showed some nutritional problems especially young age students. They should eat more green-yellow vegetables, liver food and dried small sardine and they should reduce snacks such as candy and cooky and soda drinks. Therefore it is necessary to conduct nutrition education by parents, teachers and dietician together to improve their food habits and their health.

지방산 조성이 다른 식이지방이 발암물질을 투여한 쥐의 간 미토콘드리아 지질조성과 Adenine Nucleotide Translocase 및 ATPase 활성도에 미치는 영향 (Effects of Different Dietary Oils on Hepatic Mitochondrial Lipid Composition, Adenine Nucletide Translocase and ATPase Activities in Carcinogen Treated Rats)

  • This study was done to investigate the effects of different dietary oils on hepatic mitochondrial lipid compositon, adenine nucleotide translocase(AdNT) and ATPase activities in carcinogen treated rats. Sixty male Sprague-Dawley rats, weighing 50∼60g, were fed three different types of dietary oil, beef tallow(BT), corn oil(CO) and sardine oil(SO) at 15% by weight for 14 weeks. Three weeks after feeding rats were intraperitoneally injected with a single dose of diethylnitrosamine(200mg/Kg BW). After five weeks rate fed 0.02% acetylaminofluorene contating diet for 6 weeks, and after seven weeks 0.05% phenobarbital containing diet for 7 weeks. At 14th week, rats were sacrificed and hepatic mitochondrial lipid composition, AdNT and ATPase activities were determined. Percent liver weight per body weight was significantly by carcinogen treatment. Analysis of mitochondrial lipid composition showed that body cholesterol and phospholipid contents were not affected by dietary oils but significantly increased by carcinogen treatment. Individual phospholipid composition as well as phosphatidyl ethanolamine/phosphatidyl choline ratio were altered by either dietary oils or carcinogen treatment. Fatty acid composition was changed by dietary oils but not much by carcinogen treatment. AdNT activity was affected by dietary oils in only carcinogen treated groups. ATPase activity was affected by dietary oils in only carcinogen nontreated groups. These data indicate that both dietary oils and caricinogen treatment can change mitochondrial lipid composition and thereby change AdNT and ATPase activities. Particularly effects of carcinogen treatment on cholesterol/phopholipid ratio, phospholipid compositon and ATPase activity were different among dietary oil groups. Therefore it is suggested that different dietary oils can somewhat modulate the changes of mitochnodrial lipid composition and membrane bound enzyme activites during hepatocarcinogenesis.

국내시판(國內市販) 수산건제품(水産乾製品)의 지방산(脂肪酸) 조성(組成) (Fatty Acid Composition of Dried Sea Food Products on Korean Market)

  • The crude lipid contents of dried sea food products varied remarkably from 1.2 to 29.9% for dried fish products, from 2.8 to 12.3% for dried mollusk ones, and from 0.1 to 2.3% for dried seaweed ones. In fatty acid composition of dried fish products, the saturated acid was the most predominant component for dried anchovies, hair tail, Kstsuobushi, the monoenoic acid was the most predominant one for dried yellow corvenia, flat head, common carp, sea eel and conger eel. And the polyenoic acid was the most abundant one for dried cod. Allaska pollack, flounder, sole fish, ray, smelt and sardine. The major fatty acids of these dried fish products were 16:0, 16:1, 18:0, 18:1, 20:5 and 22:6. Fatty acid composition of dried mollusk products were mainly consisted of polyenoic acid, and followed by saturated acid, monoenoic aced. The major fatty acids of these products were similiar to those of dried fish products. And in case of dried seaweed products, saturated acid such as 14:0, 16:0 was the most predominant component, while polyenoic acid was abundant one in dried laver and sea mustard. The main fatty acids of dried seaweed products were 14:0, 16:0, 18:1, 20:1, 20:4, and 20:5. Judging from the results, dried sea food products were abundant of the highly unsaturated fatty acids in spite of the drying processing and storage.

  • This study was conducted to determine the supplemental effects of two insect meals, mealworm (MW) and black soldier fly (BSF), with high or low lipid levels in diets, on Pacific white shrimp Litopenaeus vannamei. Sardine and tuna by-product meals were used as the fish meal source in a control (Con) diet. The fish meals were replaced with MW, defatted MW (deMW), BSF or defatted BSF (deBSF), respectively. The shrimp (body weight: 0.47 g) were stocked into 20 acryl tanks (215 L) and fed the diets six times a day. After 45 days of the feeding trial, the shrimp that were fed insect meals had significantly higher phenoloxidase and superoxide dismutase activities than the shrimp fed Con diet. The gene expressions of prophenoloxidase, crustin and penaeidine-3c in shrimp hepatopancrease were also higher in shrimp that were fed the insect diets, regardless of defatting than those in shirmp that were fed Con diet. The survival against Vibrio parahaemolyticus was higher in shrimp that were fed the diets containing defatted insect meals than in shrimp that were fed Con diet. These results indicate that MW and BSF, regardless of lipid levels, could be good protein sources for the enhancement of innate immunity and anti-oxidant capacity of the shrimp.

안정동위원소와 위내용물 분석 기법을 이용한 여름과 가을 남해 연안 정어리(Sardinops melanostictus)의 먹이원 평가 (Food Resource of Sardine Sardinops melanostictus on the Southern Coast of Korea in Summer and Autumn Revealed by Stable Isotope and Stomach Content Analyses)

  • This study, analyzed the stomach contents, stable isotope signatures (δ13C and δ15N) in muscle tissue, and potential food sources (particulate organic matter, Zostera marina, epiphytes, and zooplankton) of Sardinops melanostictus in the southern coast of Korea to evaluate its dietary changes across seasons (summer and autumn 2022). The diet of S. melanostictus predominantly comprised organic detritus (99%) regardless of the season. The isotope results showed that S. melanostictus had mean δ13C and δ15N values of -17.7±0.4‰ and 10.6±0.5‰, respectively and seasonal variations were observed (t-test, P=0.010, P=0.002). However, the isotopic mixing model showed that particulate organic matter was a major nutritional source for S. melanostictus in summer and autumn (88.7% and 90.2%, respectively). Based on the stomach contents and stable isotope signatures, these results may help improve the understanding of S. melanostictus and establish the management measures for their conservation.

Apparent digestibility coefficients of animal feed ingredients for olive flounder (Paralichthys olivaceus)

  • Apparent digestibility coefficients (ADCs) of dry matter, crude protein, crude lipid, nitrogen-free extract, energy and essential amino acids in animal-based feed ingredients were determined for olive flounder (Paralichthys olivaceus). A reference diet (RF) was formulated to contain 1.0% chromic oxide (Cr2O3) as an inert indicator. Nine test diets were formulated to contain RF and one of the feed ingredients (pollock meal [PM], jack mackerel meal [JMM], anchovy meal [AM], cod meal [CM], sardine meal [SM], sand eel meal [SEM], tuna meal [TM], meat meal [MM] and squid liver meal [SLM]) at a 7:3 ratio in each diet designated as PM, JMM, AM, CM, SM, SEM, TM, MM and SLM, respectively. Olive flounder, averaging 150 ± 8.0 g, were stocked at a density of 25 fish per tank in 400-L fiberglass tanks attached with fecal collection columns. Feces were collected from triplicate groups of fish one time a day for four weeks. Dry matter and crude protein ADCs of CM and SEM were significantly higher than the other tested ingredients. Lipid ADCs of JMM, CM and SEM were significantly higher than the other test ingredients. Energy ADCs of CM and SEM were significantly higher than that of the other tested ingredients. The availability of amino acids in CM was generally higher than the other animal protein sources. PM exhibited the lowest amino acid availability among the treatments. Interestingly, MM exhibited significantly higher nutrient digestibility than several marine-based ingredients. However, CM and SEM are seeming to be highly digestible and effective to use in olive flounder diet compared to the other tested ingredients. Overall, the results of this study provide information about the bioavailability of nutrients and energy in animal feedstuffs to apply when formulating cost-effective practical feeds for olive flounder.

수산물에 대한 Grapefruit 종자추출물의 항균 및 항산화효과 (Antimicrobial and Antioxidant Activity of Grapefruit and Seed Extract on Fishery Products)

  • 연속 추출장치를 이용하여 grapefruit 종자를 glycerine으로 추출하고 농축, 조제한 grapefruit종자 추출물(GFSE)의 항균 및 항산화성 효과를 검토하기 위하여 정어리, 고등어 및 새우와 같은 수산물을 재료로 하여 GFSE를 처리하지 않은 대조구와 GFSE용액(100, 250, 500, 750 및 1,000ppm)으로 처리한 시험구로 나누어 Salmonella typhi를 접종하여 일정 온도에서 저장하면서 총균수, 과산화물가 및 texture의 변화를 측정하고 GFSE처리후 저장한 수산물을 대조구와 외관, 냄새를 중심으로 관능검사를 실시하였다. 정어리와 고등어의 경우, 최초 균수가 $1.9\times10^6,\;1.8\times10^6$이었는데 500ppm 농도 첨가하여 $5^{\circ}C$에서 50일 저장후 $1.1\times10^4$$9.0\times10^3$으로 감소되었고, 새우의 경우 균의 검출이 확인되지 않아 상당히 좋은 항균효과를 나타내었다. 그리고, 3종의 수산물 모두 GFSE 처리구가 대조구에 비하여 유의적인 항산화효과가 있음을 나타내었으며, 500~750ppm 농도의 용액을 처리하여 $30^{\circ}C$에서 30일간 저장한 수산시료 추출유의 과산화물가는 정어리는 최초 $28\~45meq/kg$에서 $92\~143meq/kg$(대조구, 490meq/kg)로, 고등어는 $64\~75meq/kg$에서 $98\~137meq/kg$(대조구, 406meq/kg)로, 새우는 $12\~20meq/kg$에서 $21\~32meq/kg$(대조구, 72meq/kg)로 증가하여 뚜렷한 산패 억제효과를 볼 수 있었다. Texture도 저장기간이 경과함에 따라 감소하는 경향을 나타내었으나, 3종 수산물 모두 GFSE 용액 처리시험구에서 감소율이 크게 낮아졌다 GFSE를 처리하여 $0^{\circ}C$, 0일간 보관한 시험구와 대조구에 관한 관능검사 결과, GFSE를 처리하지 않은 대조구는 열등한 기호도를 보여준 반면, GFSE용액을 500ppm 이상의 농도로 처리한 시험구 모두가 높은 기호도의 관능검사 결과를 나타내었다.
