An investigation on optimum condition for processing of salted-dried sardine and quality change of the product during the storage was carried out. The fillets of sardine were salted in 5, 10 and $15\%$ NaCl solution for 12, 24 and 36 hours at $9-10^{\circ}C$, respectively and air-blast dried at $24-25^{\circ}C$ with a velocity of 3 m/sec and then stored at room temperature for 30 days. The results were as follows : The optimum condition for the product was salting in $15\%$ NaCl solution for 36 hours as VBN and histamine contents were 27.5 mg/100g and 42.5 mg/100g, respectively, and also showed a good result in sensory evaluation. Histamine, VBN and TMA-N content of the dried fillets immediately after salting in $15\%$ NaCl solution for 36 hours increased to 47.8 mg, 29.5 mg and 5.4mg per 100g of the sample, respectively and increased slowly during the storage. The peroxide value and acid value of the lipid extracted from the product increased from 15.9 meq/kg to 114.0 meq/kg, and 12.6 to 30.5 during the storage. In the fatty acid composition, $C_{22:6}\;and\;C_{20:5}$ acids were decreased during the storage period.

To lessen the initial level of microorganisms, electrolyzed acid-water was used as washing and brine water in the manufacturing process. On the washing and salting processes, application of electrolyzed acid-water showed a possibility to lessen the microorganism level of Chinese cabbage effectively. Microbial level of Chinese cabbage was reduced to about 1/4 level by salting and washing process with electrolyzed acid-water while Chinese cabbage salted with tap water increased to about 1.7 times. And no coliform and E. coli were detected. However significant differences between seasoning mixtures prepared with electrolyzed acid-water and with tap water were not observed in microbial levels. Relatively low level of total count in kimchi prepared with electroyzed acid-water was kept until 15 days of fermentation at $10^{\circ}C.$ Any significant difference between them was not observed after 20 days of fermentation. pH and acidity were showed the same tendencies as microbial count.
Salting-out technique was adopted to crystallize dye crystals from dye solution. In this research solubility of dye solution and crystallization kinetics of Reactive dye (RB-8, RB-49, RR-218) was investigated. The empirical expressions of salting-out crystallization kinetics for Reactive dye (RB-8, RB-49, RR-218) in continuous MSMPR crystallizer was RB-8 in crystal growth kinetics $G=7.1{\times}10^{-4}{\Delta}C^{0.67}$ and nucleation kinetics $B^0=3.1{\times}10^{15}{\Delta}C[1.2{\times}10^{-8}+{\Delta}C^{0.7}M_T{^2}]$, RB-49 in crystal growth kinetics $G=5.2{\times}10^{-4}{\Delta}C^{0.3441}$ and nucleation kinetics $B^0=7.2{\times}10^{15}{\Delta}C[3.3{\times}10^{-8}+({\Delta}C)^{0.7}M_T{^2}]$, RR-218 in crystal growth kinetics $G=4.4{\times}10^{-4}{\Delta}C^{0.2361}$ and nucleation kinetics $B^0=6.3{\times}10^{15}{\Delta}C[7.9{\times}10^{-8}+({\Delta}C)^{0.7}M_T{^2}]$. Also, comparison of calculated crystal size distribution applying to characteristic curve method with experimental crystal size showed good agreement.
1,3-Propandiol is a promising chemical which can be produced from fermentation of glycerol because the application of 1,3-propanediol is mainly in the production of bio-polytrimethylene terephthalate (bio-PTT). However, the cost of downstream processes in the biological production of 1,3-propanediol can make a high portion in the total production cost due to the large amount of water and the by-produced carboxylic acids such as succinic, lactic and acetic acids in 1,3-propanediol fermentation broth. In this study, aqueous two-phases systems composed of hydrophilic alcohols and phosphate salts were applied to the recovery of 1,3-propanediol from its artificial aqueous solution. Formation of aqueous biphases in hydrophilic alcohols and phosphate salts was due to the salting-out effect of salts in bottom phase, thereby 1,3-propanediol in bottom phase was moved into top phase. Extraction efficiency for 1,3-propanediol was proportional to the polarity of hydrophilic alcohols and the basicity of salts and the maximum value of extraction efficiency was more than 98%. In the aqueous two-phases systems after extraction, there was no carboxylic acid in top phase. Therefore, it was concluded that the aqueous two-phases systems composed of hydrophilic alcohols and phosphate salts were effective for the selective recovery of 1,3-propanediol without any coextraction of carboxylic acids.
Gulbis were made of raw Pseudosciaena manchurica by different salting methods and drying conditions. During the Gulbi processing, the contents of trimethylamine(TMA), dimethylamine(DMA) and formaldehyde(FA) were chemically analyzed and the distribution of fat was microscopically observed. The contents of TMA, DMA and FA in raw sample were 0.9mg, 3.19mg and 0.19mg per 100g, respectively. The TMA contents in Gulbi were rapidly increased to 24.82-76.32mg during drying, while the DMA contents in Gulbi were slowly increased and FA contents in Gulbi remained nearly unchanged. These changes were not influenced by the kinds of salt and salting methods. The formation rates of TMA and DMA were twice faster dried by the controlled condition than the natural condition. The fat in muscle moved to the skin layer through connective tissue with the laps of drying time. The extent of fat shifting was smaller salted by purified salt than by bay salt. The muscle tissue of Gulbi dried by the controlled condition had clearer spaces between white muscles than that of the natural condition. The muscle tissue of Gulbi salted with purified salt exsisted orderly, while the sample salted with bay salt was clumped.
The analytical method of extracting compounds from human blood to examine accumulated organochlorine pesticides (OCPs) has been widely used the traditional liquid-liquid extraction (LLE) method and solid-phase extraction (SPE) method, yet these methods have certain limitations in purification and usafe of a large amount of sample. In order to overcome the se problems reside in these, solid-phase microextraction (SPME), known as a highly efficient extration method with less samples and relatively simple, was employed to collect 18 different kinds of OCPs in blood as extraction method in this study. To optimize extraction method, we examine various experimental SPME-parameters such as adsorption (fiber type, adsorption time, adsorption temperature, salting out effect), and desorption (desorption time, desorption temperature etc.). From the experimental results, the optimal conditions are as follows: fiber was polyacrylate with $85{\mu}m$, adsorption time was for 5 min, adsorption optimum temperature was at $280^{\circ}C$, and salting out effect was NaCl with 0.1 g. MDL, precision and accuracy was in the ranges of 0.05~0.20 ng/mL, 5.59~13.39%, respedively, and accuracy was -0.5% ~24.5% for all OCPs.
The HACCP (hazard analysis critical control point) concept becomes an important aspect of Good Manufacturing Practices (GMP) in safe food production. The HACCP plan was developed with food safety objective. The authors already carried out hazards analysis on Changran Jeotgal manufacturing process in a previous report. In this study we developed a HACCP plan on the manufacturing process of Changran Jeotgal. We could decide two CCPs those were salt concentration and eliminations of foreign materials before packaging. Foreign materials should be certainly checked out with laser detector just before packaging. Salt should be maintained more than $8\%$ to inhibit pathogenic bacteria in end product. On the Jeotgal process free water is removed after salting and Jeotgal is seasoned with several subsidiary materials such as com syrup. In result end products have $8\%$ salt with water activity 0.82. Most bacteria are inhibited but some can live in this condition. Materials on the working may be contaminate by pathogens, chemicals or physical hazards. It will be decreased by SSOP (standard sanitary operating program). The SSOP needed in Jeotgal plants is nearly same as other general food manufacturing plants but essential to fulfill HACCP program.
This study was conducted to figure out the nutritional nature of seafoods categorized according to the medicinal effects and the usages introduced in Lim-Won-Sib-Rheuk.-Ji, one of the well-known encyclopedias published during the Chosun Dynasty. They were compared with those introduced in other cooking books in order to find out how they were used in the diet of real-life. The seafoods of the book were first categorized into the fish 20, the mollusk 5, the crustacea 4, and the shellfish 7, and reptile according to the biological taxonomy, and then each one was reviewed in terms of the taste and the food-nature. Generally, the fishes had the sweet taste; the crustacea and the shellfish the salty or sour in addition to the sweet taste; none of them were bitter or hot. Most of them had the mild nature; seven of them were regarded as warm; four as cool; one as cold from the standpoint of the traditional medicine. The food-nature of seafoods was closely related with the medicinal effects on the human body. These seafoods were characteristically used in daily dietary life as well as the medical applications; used as the side-dishes rather than the main-dishes. The cooking methods of boiling, steaming, and baking were preferred to drying and stewing. The preservation methods favored were the fermentation, drying and salting. These cooking and preservation methods were believed to reflect the nature of the seafoods to manifest the medicinal effects.
The Nara Dynasty of Japan lasted from 710 to 784 A.D, which corresponds to the period of the Unified Shilla Kingdom of Korea. The Nara Dynasty enacted the 'Daiho Law and Ordinance' by referring to those of Tang Dynasty of China. Under these legal systems, the Ministries were defined, and foods were used for paying taxes or as currency. The characteristics of the dietary culture in Nara Dynasty were as follows. 1) They obtained food from rice and other grain farming, hunting and fishery. Rice was their main staple and was also used for preparing porridge and brewing wine. 2) Under the influence of Buddhism, meat was prohibited, and milks or dairy products were supplemented for improving malnutritional status. 3) They also used seasonings, spices and sweeteners to enhance the taste and produced medicines by extracting plants, animals and minerals. 4) While chopsticks were made of bamboo, willow, silver, shell, tree or bronze, such utensils as pan earthenware steamer, or charcoal pots were used for preparing meals. 5) Highly qualified utensils, made of porcelains painted with lacguetr, metal, glass, horn and stone, were produced as handcraft art wad developed. 6) Chinese style cousines and cooking methods were popular and various types of preserving techniques like drying or salting were used. Processed cookies were also developed. 7) Although flour was used mainly among noble class people, ordinary people also used it. The royal families ate milk products a lot and even fried foods. 8) One can say that Buddism exerted an influence on Vegetarianism from this era.
New manufacturing process was applied to manufacture the low salted Squid-Jeotgal to improve the quality variation salty taste and shelf-life. It's optimum salting and sugaring process was made by the addition of $17\%$ NaCl for 3 hr and $15\%$ corn syrup for 4 hr with 10 rpm agitation. Quality variations of Squid-Jeotgal produced by the improved and the conventional process were packed by jar, polyethylene lerephthalatefpolyethyleneilinear low density polyethylene (PET) and low density polyethylene (PE). And then quality variations of them were investigated at storage temperature of 10, 20, and $30^{\circ}C.$ Decreasing rate of pH, increasing rates of VBN and viable cell counts of Squid-Jeotgal produced by the improved process were slower than those of the conventional process at all storage temperature. Sensory evaluation indicated that the production of Squid-Jeotgal by the improved process extended the shelf-life about 10-20 days.
