Effects of Ethanol on the Characteristics of White Bread Containing Lotus Root Powder (에탄올 첨가가 연근 식빵의 특성에 미치는 영향)

  • White bread containing lotus root powder was previously reported as unsatisfactory with respect to appearance and chewiness. In this research, white bread samples were prepared using ethanol(2 wt.%) and lotus root powder(3, 6, or 9 wt. %), and compared to those prepared without ethanol (reference breads). The volumes and heights of the reference breads increased with increasing lotus root powder content. The moisture contents of the breads prepared with ethanol were higher than those of the corresponding reference breads. The hardness and fracturability of the breads made with ethanol were lower than those of the reference breads; however, springiness, cohesiveness, adhesiveness and chewiness were enhanced. In terms of appearance and sensory qualities, optimum results were obtained when the ethanol was added along with 6 wt. % lotus root powder. Overall, the results indicate that adding ethanol can improve the quality of white breads that contain lotus root powder.

  • Finite element analysis and verification experiments were performed in order to find cause of defects such as folding and improper radius around the root area of the thread rolled stud bolts. Thread rolling experiments under several conditions were also carried out to understand the effect of process parameters, such as the rotation speed of the dies and the hardness of the work pieces, on the product quality. Folding defects at the top of thread are attributed to the higher hardness of the work piece and higher rotation speed of the rolling die. It was also found that the radius of screw mainly determined by the radius of the die.

The Hydration Properties and the Cooking Qualities of Various Brown Rices. (품종별 현미의 수화와 취반에 관한 연구)

  • Five-brown-rice-variety, Akibare, Odaebyeo, Taebaegbyeo, Nonglim Na 1 and Hankangchalbyeo, was prepared and examinated the hydration kinetics and the cooking qualities. Before the hydration the L/W ratio of raw Taebaegbyeo was the biggest value among the five brown rices. The water uptake was directly proportional to the square root of soaking time. During the hydration water uptake of high yielding brown rices was bigger than those of traditional brown rices among the nonglutenious varieties but waxy brown rices were not. Generally volume increase constant was directly proportional to the water uptake constant, which were different a little with brown rices was hydrated which was inversed proportional to the water uptake degree. According to the instrumental result using the rheometer of cooked brown rice with increased soaking times that was decreased the hardness and was increased the adhesiveness. The sensory evaluation test indicated that the hardness and the stickiness value of cooked brown rices were proper after 15-hour-soaking time and it was identical result to the instrumental result using the rheometer.

  • Having measured physical canstant and dissolution rate of prednisolone powder, and tablets, also particle size, particle number of powder disintegration, hardness, friability of prednisolone tablets and having also compared it's interrelationship. We obtained the results as following. 1) Dissolution rate of prednisolone powder was determinded cube root rule and: the slope $({\alpha})$ was $3.1915{\times}10^{-2}$. 2) The tablet used in this study was fourteen kind of prednisolone tablets, two kinds of which were not conformity with prednisolone dissolution rate test of U.S.P. XVIII, but the rest of them were conformity with the same test (t60% was 4.3minute in average) 3) There was no significant interrelationship between disintegration, hardness, friability and dissolution rate of prednisolone tablet used in this study but we recognized the disintegration time was greatly influenced by the dissolution rate.

  • The effects of Alloying Element and Heat Treatment on the mechanical properties of ductile cast iron poured into shell stack molds were investigated. The strength and hardness were increased and the elongation was decreased roughly with the increased amounts of tin and copper added, respectively. Those were greatly increased with the increased amount of tin added and the elongation was roughly decreased with it. In the simultaneous addition of copper and tin, the strength and hardness of the tin increased, but the elongation rate decreased. Those were greatly increased and this was decreased with normalizing. In the case of specimens with smaller section sizes during austempering processing, the strength and hardness were higher than those with larger sections, but the elongation rate was lower.

  • Electron beam irradiation is widely used as a type of surface modification technology to advance surface properties. In this study, the effect of electron beam irradiation on properties, such as surface hardness, wear resistance, roughness, and critical load of Titanium Aluminium nitride (TiAlN) films was investigated. TiAlN films were deposited on the SKD-61 substrate by using cathode arc ion plating. After deposition, the films were bombarded with intense electron beam for 10 minutes. The surface hardness was increased up to 4520 HV at electron irradiation energy of 1500 eV. In addition, surface root mean square (RMS) roughness of the films irradiated at 1500 eV shows the lowest roughness of 484 nm in this study.

  • A comparison of the welding performance of ship hull structural steels has been made. The weldability of steels especially designed for laser processing was compared to that of conventional hull and structural steels with plate thicknesses up to 12 mm. Autogenous laser beam welding was used to weld butt joints as well as skid and stake welded T-joints. The welds were assessed in accordance with the document "The Classification Societies" Requirements for Approval of $CO_2$ Laser Welding Procedures" Small imperfections in the weld only grew slightly in root bend tests and they only had a minor influence on the fatigue properties of laser fillet welded joints. In Charpy impact tests, the 27 J transition temperature of the weld metal and HAZ ranged from below -60 to $-50^{\circ}C$. The amount of martensite in the weld metal depended on the carbon equivalent of the steel with the highest amounts and highest hardness levels in conventional EH 36 (389 HV 5). Thermomechanically rolled steels contained less martensite and showed a correspondingly lower maximum hardness.ximum hardness.

  • The effects of mold variable and main alloying element on the mechanical properties of ductile cast iron poured into shell stack mold were investigated. The strength and hardness of with the smaller cross-section of the diameter of 6.25mm were higher than those of 12.50mm. On the other hand, the elongation of the former was lower than that of the latter. The strength and hardness of the specimens obtained from the center layer in the 5-story stack mold were the lowest and those for other specimens were increased with increased distance from the center. The elongation of those were the highest of all. The strength and hardness of the specimens obtained from the center layer were decreased the elongation was increased with the increased number of layers. The strength and hardness were increased and the elongation was decreased roughly with the increased amounts of reaidual magnesium and carbon content added, respectively. The strength and hardness were increased and the elongation was decreased roughly with the increased amounts of silicon content added to 2.45wt% and rather decreased with that to 2.85wt%. The effect of silicon content showed the opposite tendency to those of residual magnesium and carbon content.

  • This paper presents the root cause failure analysis of the circulating water pump in the 560 MW thermal power plant. A fractured austenitic stainless-steel shaft operated for 24 years was examined. Fracture morphology was investigated by micro and macro-fractographic analysis. The metallurgical analyses including chemical analysis, metallography and hardness testing were performed. The analysis reveals that the pump shaft was fractured due to the reverse bending load with combination of rotating bending load. Corrective actions for plant operator was recommended based on the analysis.

Comparison of Growth Characterstics and Quality of Ginseng (Panax ginseng C. A. Meyer) Grown under Upland and Paddy Field

  • This study was carried out to investigate the difference of growth characteristics, yield and extract content between upland and paddy ginseng cultured with 4­year-old ginseng in 2003. Although upland ginseng showed larger variation in yield than that of paddy ginseng, the average of it was greater than that of paddy ginseng because it showed better growth of aerial part and higher survival rate than that of paddy ginseng. Moisture content of fresh root was $71.8\%\;(68.5\~73.1\%),\;and\;72.7\%\;(70.2 \~74.9\%)$ on average in upland and paddy ginseng, respectively. Paddy ginseng showed higher hardness in taproot, and higher rate of rusty colored root than that of upland ginseng. The ratio of taproot dry weight in upland ginseng was smaller than that of paddy ginseng, while that of lateral root was larger in upland ginseng. Ratio of marketable root (>60g) to total harvested roots was $13.7\%\;(0.82\~8.0\%)\;and\;7.7\%\;(1.6\~12.6\%)$ in upland and paddy ginseng, respectively. Extract content did not show distinct difference between upland and paddy ginseng, but it showed large variation from $16.1\;to\;25.1\%$ in taproot, and from $24.2\;to\;32.5\%$ in lateral root depanding on the ginseng field examined.
