외식의 영양정보 제공을 위한 영양 평가 -한식을 대상으로- (Assessment of Nutrient Content for Providing Nutrition Information of Dishes in Restaurant and Food Service Institutions -About Korean dishes -)

  • The purpose of the present study is to assess nutrient content for providing nutrition information such as nutrition labeling on Korean dishes in restaurant and food service institutions. The content of nutrients was calculated in recipies used to prepare dishes which has been frequently consumed in such four groups as the literature, foodservice institutions of industries, restaurants, and households. The numbers of dishes surveyed were 15. Total numbers of literture used for recipies analysis are 20. Recipies used in foodservice institutions of industries were abstracted from the journal 'Guk-Min Young-Yang' published in Korea dietetic association and obtained with the help of dietitians working in those institutions. Also, recipies has been using in restaurants were given from the Korea restaurant association. Recipies in households was calculated from the secondary analysis of the Korean National Nutrition Survey. Nutrient content from foods except steamed rice and side dishes in each dish was calculated using data of Korean food composition table published. The content of energy and protein in 'Gal-bi tang' (beef-rib soup) were highest in recipes used at restaurants, vitamin C in recipes of food service institutions of industries due to the generous use of meats and vegetables than other recipies. 'Doen-jang chigae' (soybean paste stew) showed the lowest content of energy in results analyzing recipes presented on the literature and varied protein level by four groups for difference of protein source used. The content of energy in 'Gop-chang jeongol' (small intestines stew) is 150 kcal more than 'Soegogi jeongol' (beef stew) in general. The energy level of 'Daeji-galbi' jim (braised pork ribs) and 'Dak jim' (braised chicken) turned out to be the highest in recipies presented on literature. Variation of each nutrient content including energy and protein was relatively high, since some of foods used in 'Pibimbab' (mixed rice) varied with four groups. Amounts of energy and protein in 'Naeng-myeun' (cold noodles) is the highest in recipies of foodservice institution of industries because much amounts of noodle and meats were used comparing to other groups. The average content of energy in 'Pulgogi' (grilled meat with sauce) was 50% to Korea recommended amounts of one meal, 833.3 kcal. Content of vitamin $B_1$ in 'Jeuk pyeunuk' (boiled pork), which is made of pork meat, was higher than other dishes. The ingredients of frequently consumed Korean dishes were highly variable among the four groups which inevitably results in variation of nutrient content in each dishes. The high variation of nutrient content in each dish according to study requires careful collecting of the large number of recipies in presenting representative nutrient content for nutrition labeling on dishes in restaurant and food service institutions effectively.

서울지역 대학생들의 일반특성에 따른 외식 행동 및 선호 메뉴 조사 (A Survey of Dining-out Behaviors and Menu Preferences of University Students in the Seoul Area)

  • This survey was conducted to assess dining-out behaviors and menu preferences of university students in the Seoul area. The results were as follows: 1. 65.2% ate out rarely for breakfast and 73.1% ate out frequently for lunch, whereas 20.9% occasionally ate out for lunch. The frequency of dining out for breakfast was influenced by age, gender, and major but the frequency of dining out for lunch was significantly correlated with age(P < 0.01). 79.2% of females dined out frequently, but 62.3% of males reported doing so(P < 0.001). 65.2% ate out frequently for dinner and 31.6% did so occasionally. 34.2% dined out frequently for snacks, and 53.5% did so occasionally. 2. Factors to consider in dining out were as follows: taste > preference > price > persuasion > nutrition. The motivations for dining out were as follows: convenience > favorite food > difficult to prepare lunch box > difficult to carry lunch box > habit. This factor was correlated significantly with age(P < 0.05) and residence type(P < 0.001). Problems with dining out were listed as follows: unbalanced nutrition > price > sanitation > variety of menu > taste. This factor was correlated significantly with age(P < 0.05), alcoholic beverage use(P < 0.01) and smoking(P < 0.01). 3. Foods selected for meals when dining out were as follows: Korean style > Western > Japanese > noodles > Chinese. The expense(in won) of dining out for lunch was as follows: 3,000${\sim}$5,000 > 2,000${\sim}$3,000 > over 5,000 > under 2000. Problems to be corrected in Korean-style food were as follows: variety of menu > price > using personal dish. 4. Korean foods preferred in each cooking style when dining out were as follows: beef rib > kimchi-jjigae > bulgogi > doenjang-jjigae > bibimbab. Chinese foods selected were as follows: tangsuyuk > jajang myeon > jjambbong > gganpunggi > bokeumbab. Preferred Western foods were as follows: spaghetti > steak > pork cutlet > pizza > ribs > chicken. Preferred Japanese foods in meals when dining out were as follows: sushi > hoe > udong > pork cutlet > soba. Preferred noodle foods selected when dining out were as follows: ddukboki > ramyeon > mandu > guksu > sundae > gimbab >. Preferred baked foods for dining out were as follows: cake > pizza > loaf bread > baguette > sandwich > hamburger > doughnut > cream bread.

유리섬유로 보강된 수지에서 제품설계 및 성형조건에 따른 휨의 연구: Part 1. 비결정성 수지 (A Study on the Warpage of Glass Fiber Reinforced Plastics for Part Design and Operation Condition: Part 1. Amorphous Plastics)

  • 사출 성형품에서 발생되는 뒤틀림은 성형공정 중 제품의 불균일한 수축과 잔류응력의 이완으로 인하여 나타나는 현상이다. 휨이나 뒤틀림 현상을 방지하기 위해서 성형품이 강성이 있도록 설계하거나 수지에 유리섬유 등으로 보강하여 사용한다. 본 연구에서는 플라스틱의 성형품에서 성형품의 설계에 따른 뒤틀림 현상을 성형조건 별로 알아보았다. 성형품의 설계는 리브로 보강된 두 종류와 보강 리브가 없는 시편을 사용하였다. 수지는 유리섬유로 보강된 비결정성 수지인 PC와 ABS를 사용하였다. 실험결과 휨은 리브의 설계에 따라 큰 변화를 보였다. 게이트 주변, 게이트 반대쪽, 그리고 흐름방향쪽 등 측정위치에 따라서 휨은 다양하게 나타났다. 이러한 휨의 결과는 유리섬유의 배향과도 크게 관련이 있음을 컴퓨터 해석을 통해 확인할 수 있었다. 리브가 없는 단순 평판에서 휨이 가장 작게 나타났으며, 리브가 흐름방향으로 놓여있는 경우가 휨에 대한 큰 저항을 보였다. 시편에 나타난 휨은 성형조건보다는 제품의 설계에 따라 크게 변하였다. 리브의 설계와 그에 따른 게이트의 위치 설정은 유리섬유의 배향과 직접적인 관련이 있으므로 성형품의 휨 조절에 매우 중요함을 보여주었다.

  • 강합성교각과 강교각은 철근곤크리트교각에 비해서 우수한 연성, 작은 단면 및 빠른 시공속도에도 불구하고 이 같은 장점들을 활용할 필요가 있는 도시지역에서조차 철근콘크리트교각의 대안으로서 활용되지 못하였다. 이 논문은 강합성교각과 강교각의 내진성능 평가에 관한 연속된 두편의 논문 중 첫편으로 강교각과 강합성 교각의 연성과 강성을 평가 비교하기 위해 수행한 준정적 반복재하실험을 대상으로 하였다. 기존의 강교각 및 강합성교각의 실험과 더불어 채움콘크리트와 하부 다이어프램간의 부작을 개선한 상세를 실험하였다. 또한, 강합성교각의 연성과 강성을 산정하기 위한 간편한 수치해석방법을 찾기 위해 비선형 스프링과 쉘요소를 사용한 해석을 시도하였다. 도시내의 전형적인 오버패스구간의 교각을 모델로 한 실험결과, 강합성교각은 강교각에 비해서 우수한 강성과 에너지 소산능력을 가지고 있는 것으로 나타났으며 채움콘크리트의 부착과 응력집중부의 상세를 개선시기는 것이 강합성교각의 연성과 강성을 증가시키는데 효과적인 것으로 나타났다. 시도된 수지해석방법은 강합성교각과 강교각의 거동을 완벽하게 모사하지는 못했지만 추가적인 연구가 진행되면 연성과 강성을 평가하는 간편한 방법으로 사용될 수 있는 것으로 판단된다.

대상포진에 대한 한양방 병행치료 치험 1례 (A Case Report of Herpes Zoster Patient Improved by the East-west Medical Combined Treatment)

  • Objectives : The aim of this study is to report a case of a 51-year-old patient with Herpes zoster, whose symptoms were relieved within five weeks after the East-west medical combined treatment. Methods : A Herpes zoster patient with extreme pain around the right lower ribs and lower back was admitted into the Korean medicine hospital. Bee venom acupuncture was applied directly onto the site of pain and electroacupuncture was applied on $GV_6-BL_{20}$, inferior site of spinous process of the 12th thoracic vertebra-$BL_{21}$, $GV_5-BL_{22}$, $GV_4-BL_{23}$ six times a week. Moxibustion was applied on $BL_{49}$, $BL_{50}$, $BL_{51}$, $BL_{52}$, $GB_{25}$, $LR_{13}$ six times a week, and the patient took daily doses of herbal medicine and western medicines such as anticonvulsants, analgesics, antiepileptics. The patient's symptoms were evaluated with numeric rating scale(NRS) and neuropathic pain scale(NPS). Results : The results were as follows: 1. After the East-west medical combined treatment, the NRS grade decreased from 8 to 1. 2. On the neuropathic pain scale, the patient's symptoms changed from deep sharp pain and burning sensation to superficial dull pain and coldness. Sensitivity to touch, discomfort, and itchiness also decreased. Sudden attacks of pain appeared 14 to 21 days after onset, but disappeared after final treatment. Conclusions : The results of the above patient suggests that the East-west medical combined treatment may be effective for total remission of herpes zoster. Further research is needed to confirm such effects.

수종 임플랜트의 표면 거칠기와 초기안정성에 관한 연구 (A Study on the Surface Roughness and Initial Stability of Various Dental Implants)

  • Surface roughness is one of implant surface topography and it's found that surface roughness characterizations, such as surface energy, oxide layer thickness and its chemical composition, are closely correlated if the roughness is changed. Several studies showed the importance of analyzing surface structure so the surface structure of thread implant was analyzed to measure the implant quality exactly. In this study, surface roughness of 4 implants - MK $II^{(R)}$(Nobel Biocare), $RBM^{(R)}$(Life-Core, USA), $Osseotite^{(R)}$(3i, USA), $TPS^{(R)}$(Life-Core, USA) - were measured using $Accura^{(R)}$ and 40 implants were installed into 4 sets of ten bovine ribs based on the parameters from the measurements. From this test, the following conclusions for the initial stability were drawn by measuring and comparing RFA, Periotest Value (PTV), Removal Torgue Value (RTV). 1. $R_a$ value in surface roughness measurement was increasing by the order of $MKII^{(R)}$, $Osseotite^{(R)}$, $RBM^{(R)}$, $TPS^{(R)}$ and $R_q$ value was the same order. 2. $R_q$ value in each section was observed to increase by the order of $MKII^{(R)}$, $Osseotite^{(R)}$, $RBM^{(R)}$, $TPS^{(R)}$ in top and $MKII^{(R)}$, $RBM^{(R)}$, $Osseotite^{(R)}$, $TPS^{(R)}$ in mid-section but the value of $MKII^{(R)}$ bottom was the lowest, followed by $Osseotite^{(R)}$, $RBM^{(R)}$ and $TPS^{(R)}$. 3. RFA increased by the order of $RBM^{(R)}$(7042Hz), $MKII^{(R)}$(7047Hz), $Osseotite^{(R)}$(7076Hz), $TPS^{(R)}$(7168Hz) and there was no significance between each group. 4. PTV was increasing by the order of $MKII^{(R)}$(-1.62), $TPS^{(R)}$(-1.92), $Osseotite^{(R)}$ & $RBM^{(R)}$(-2.08) and there was no significance, either. 5. Removal torque in RTV measurement showed the increasing order of $MKII^{(R)}(5.31kgf{\cdot}cm)$, $Oeeotite^{(R)}(5.71kgf{\cdot}cm)$, $TPS^{(R)}(5.92kgf{\cdot}cm)$ and $RBM^{(R)}(7.24kgf{\cdot}cm)$ and there was no significance among groups. Above observations explains that surface roughness does not make any impact on the initial stability of implants installation.

흉골늑골 쇄골간 과골증의 장기추시결과 (Long-term Follow-up Study of Sternocostoclavicular Hyperostosis)

  • 목적: 흉골늑골 쇄골간 과골증은 흉골, 쇄골, 상부 늑골 및 주변 연부조직의 골화와 골막반응이 특징적으로 나타나는 질환으로 골종양과의 감별이 요구되고 있다. 이질환은 비교적 잘 알려져 있으나 병인이 불분명하고 흔하게 나타나지는 않기 때문에 장기관찰에 대한 보고는 거의 없다. 저자들은 이 질환을 가진 환자들의 장기간 추적관찰을 통해 이질환의 치료 경과를 보고하고자 한다. 대상 및 방법: 1986년 6월부터 2000년 6월까지 본원 정형외과에서 흉골늑골 쇄골간 과골증으로 진단되어 치료 받은 환자 중 2년 이상 추시관찰이 가능하였던 17명의 환자에 대해서 이학적 검사, 방사선 소견, 조직학적 소견, 치료에 대한 반응 등을 분석하였다. 결과: 성별분포는 남자가 4례, 여자가 13례로 여자가 더 많았다. 이환된 시기의 환자의 나이는 17세부터 60까지로 평균나이는 48.7세였다. 전례에서 흉쇄골 관절 및 흉골, 늑골 주위의 흉골, 쇄골, 상부 늑골에 과골화 소견을 보였고 이것은 시간 경과후에도 변화 없거나 증가되는 양상을 보였다. 피부과 질환을 동반한 경우가 5례가 있었다. 치료에 대한 반응은 대부분의 환자에서 소염진통제에 반응을 하였지만 2년 이상의 소염진통제 및 항상제의 치료에도 반응하지 않은 경우가 3례가 있었다. 결론: 흉골 늑골 쇄골간 과골증은 골주사와 전산화 단층촬영으로 진단이 되어질 수 있는 비교적 드문 양성 질환으로 비교적 항염증 약물, 항생제, 항류마치스약물등의 보존적인 치료에 잘 반응하나 동통이 지속되는 경우에서 비스포스포네이트 같은 약제의 사용이 추천되어진다. 장기간 추시관찰시 동통은 대부분 소실되나 방사선학적 검사에서 골화부분은 변화 없거나 더욱 커지는 양상을 보였다. 대부분의 경우 수술적 치료가 필요하지 않으나 연부조직의 침범이 있거나 악성종양과의 감별이 어려운 경우 조직검사가 필요할 수 있고 외형상문제로 수술적 치료가 요하는 경우가 있다.

  • Investigated kinds and utilization frequency for traditional food and Particular food to systematize Gwangju city and Chollanamdo area traditional food culture. Awareness for traditional food had pride because taste is various, and did that must use much when was festive day. Investigation subject were feeling necessity about accession, development of traditional food, and manufacture of traditional food, succession did that must take charge in home. Characteristic of taste for Gwangju city, Chollanamdo food was deep taste. Difference between variable was significant that age, religion that have pride about traditional food, attainments in scholarship, monthly income that used time much traditional food, degree that give from traditional food to snack is age, attainments in scholarship, years of married life, religion, reason that give snack to traditional food is daughter-in-law order, kind of traditional food that give to snack is age, monthly income mouth, opinion about accession and development of traditional food is age, religion, daughter-in-law order, reason that must inherit and develop traditional food is attainments in scholarship, time that eat much traditional food is attainments in scholarship, a person, medium that learn cuisine of traditional food is age, opportunity that is been interested to traditional food is age, attainments in scholarship, years of married life. By utilization rate of food-tasting food subdivisions of the season, used much by rice-cake soup, fermented rice punch, order of cake made from glutinous rice New Year's Day, by herbs, Gimgui, Ogokbap's order January Full Moon Day on the lunar calendar. By a cake made in the shape of a flower, azalea honeyed juice mixed with fruits as a punch order to Samjitnal, by beans panbroiling, dropwort raw order Buddha's Birthday, Tano Festival uses Charyunbyeong and used Tteoksudan in Yudu and used much by young chicken soup with ginseng and other fruits, watermelon order period of midsummer heat. Used songpyon and fermented rice punch in Full-moon Harvest Day, and Junggujeol used Chrysanthemum griddle cakes made in flower Pattern, and red-bean gruel taken on the winter solstice, and Nappyeongjeolsik was utilizing Goldongban. Pyebaek food utilization ratio was high the utilization rate by chestnut, jujube, chicken, wine order. The contributiveness food utilization rate was high the utilization rate by rice cake, dried croaker, fruit, oil-and-honey pastry order. The large table food utilization rate was high the utilization rate by fermented rice punch, fruit, steamed short-ribs order.

사물탕의 용량별 투여가 임신 랫드와 태자에 미치는 독성학적 연구 (Toxicological Effect of Samultang (Herbal Medicine) Administration in the Pregnant Rats and Fetuses - Focusing on dose-response Relationship -)

  • Objective : Samulatang (herbal description) is much used for women's disease in Korean Traditional Medicine. The aim of this study is to evaluate reproductive toxic effect by Samultang in pregnant rats and fetuses, and ascertain a dose-response relationship Method : Pregnant Sprague-Dawley rats were administered with the Samultang at single, double and quadruple dose for 20 days, orally. Pregnant rats were sacrificed at 20th day of gestation, and observed internal and reproductive organs. Live fetuses of gestation were randomly selected and fixed in 95% ethanol. Fetuses were stained with alcian blue and alizarin red S. We observe maternal body weight,, index associated pregnancy, and skeletal malformations in fetus Result : Maternal body weight of Samultang treated group has increased, side effect was not found in maternal body compared to that of control group. There were no significant difference in internal and reproductive organs. Double concentration administered group had lowest value in number of implantation, live fetuses, implantation rate and delivery rate, Also double concentration administered group showed higher early and late resorption rate than the other group. But, these are not significant. In the sex ratio, number of females, bigger than number of males in all Samultang administered groups. The fetuses of dams treated with Samultang didn't showed external and skeletal malformation. Vertebral and sternal variations were observed in single, double and quadruple concentration administered group but, compared to the control, those variations were insignificant. There were no significant changes in number of ribs, cervical, thoracic, lumber, sacral and caudal vertebrae Conclusion : Samultang is not expected to affect on pregnant rats and fetus about maternal body weight and number of live fetuses. There were no significant changes in organ weight, reproductive organs. Although skeletal variations were showed in vertebrae and sternum, treated groups were shown insignificant changes in skeletal variation

CT 영상에서의 간 영역과 간 종양 추출 및 분석 (Detection and Analysis of the Liver Area and Liver Tumors in CT Scans)

  • 간암은 우리나라에서 전체 암 사망자 중 17.2%로 3번째의 흔한 사망 원인이며, 간암에 의한 사망률은 인구 10만 명당 약 21명에 이른다. 본 논문에서는 간 내부에서 발생하는 간 세포암을 CT 영상에서 자동으로 추출하는 방법을 제안하여 간 세포암의 보조진단으로서의 유용성에 대해 알아보고자 한다. 간 내부의 종양을 추출하기 위해 흉부의 윗부분에서 시작하여 2.5mm의 간격으로 약 $45{\sim}50$장 정도를 촬영한 CT 영상들을 대상으로 간 영역을 추출한다. 간 영역 추출은 관심이 없는 외부 영역을 갈비뼈를 중심으로 제거한 후, 영상의 자기 정보를 이용하여 각 기관의 영역을 분할한다. 분할된 영역들은 위 아래로 인접한 영상에서의 분할 영역들과 자기 값을 비교하여 적절하게 병합하는 3차원적 접근방법을 적용한다. 간 영역은 여러 개의 영역들 중에서 간 영역의 구조 및 위치 등의 정보를 활용하여 추출한다. 추출된 간 영역에서 종양 판별과 추출을 위해 종양이 가지는 특징을 분석하여 종양을 추출한다. 전형적인 간 세포암은 과혈관성 종양이므로 조영증강 CT 영상에서는 주위보다 밝은 색으로 나타나며, 팽창형 성장을 보일 경우에는 구형으로 나타나는 특징이 있다. 이에, 주위 보다 밝은 색을 가지고 둥근 형태를 가지는 영역을 종양의 후보 영역으로 선정한 후, 그 영상의 위와 아래로 연결되는 영상에서도 같은 위치에서 같은 특징을 보이는 영역이 있으면 간 내부의 종양으로 판별하여 추출한다. 제안된 간 영역 및 간 종양 추출 방법의 정확성을 판별하기 위하여 CT 영상을 대상으로 실험하여 영상의학 전문의가 판단한 결과와 비교하였다. 간 영역 추출은 정확히 모두 추출되었으며, 간 종양 추출 및 판별은 전문의의 보조 진단 도구로 활용할 수 있는 가능성이 매우 높다는 것을 확인할 수 있었다.
