Effect of Acetylated Rice Starch on Rheological Properties of Surimi Sol and Gel

  • The effect of acetylated rice (AR) starch at different concentrations (0, 4, 6, and 8%) on rheological properties of surimi sols and gels was studied. Dynamic frequency sweeps of surimi-AR starch sols at $10^{\circ}C$ showed that the magnitudes of storage moduli (G') decreased with an increase in starch concentration while those of tan ${\delta}$ increased, indicating that the effect of AR starch on the viscoelastic properties of surimi sols depended on starch concentration. In general, the G' thermograms of surimi sols showed the similar sol-gel transition pattern and they were also influenced by the addition of AR starch. The presence of AR starch in the surimi gel system reduced the gel strength and expressible moisture content (EMC). Surimi-AR starch gels showed better freeze-thaw stability compared to the control (0% starch concentration). The effect of AR starch on the rheological properties of surimi sols and gels appeared to be related to the swelling ability of starch granules in the presence of limited water available for starch.

Influence of Nanodispersed Organoclay on Rheological and Swelling Properties of Ethylene Propylene Diene Terpolymer

  • The dispersion of organoclay in ethylene propylene diene terpolymer (EPDM) matrix was correlated with the rheological and swelling properties of nanocomposites. X-ray diffraction pattern (XRD) and transmission electron microscopic (TEM) analysis exhibited the disordered-intercalated structure of EPDM/organoclay nanocomposite. The extent of the disordered phase increased with increasing organoclay content up to a limiting value of 3 wt% after which equilibrium tended towards intercalation. The dispersion effect of organoclay in EPDM matrix was clarified by the physicochemical properties like rheological response and swelling thermodynamics in toluene. The increase in viscoelastic properties of EPDM nanocomposite with increasing organoclay content up to 3 wt%, followed by a subsequent decrease up to 4 wt%, was correlated in terms of the disordered and ordered states of the dispersed nano-clay sheets. Swelling measurements revealed that the change in entropy of the swelling increased with the increase in disorder level but decreased with the increase in intercalation level of organoclay in the disordered-intercalated nanocomposite. The increase in solvent uptake was comparable with the free volume in EPDM matrix upon inclusion of silicate particles, whereas the inhibition in solvent uptake for higher organoclay loading was described by bridging flocculation.

  • For the screening of a new functional exopolysaccharide, sugar composition and rheological properties of exopolysaccharide produced from Xanthomonas sp. EPS-1 were investigated. The average molecular weight of exopolysaccharide was determined to be approximately 2.l $\times$ 10$^{6}$ dalton. The new exopolysaccharide EPS-1 was composed of mannose, glucose, galactose and gluco- samine. IR analysis showed that the exopolysaccharide EPS-1 was assumed to be polymer with carbohydrates. NMR analysis showed that exopolysaccharide EPS-1 was presumed to be 4 units of sugar and trace of CH$_{3}$ group. Exopolysaccharide EPS-1 solution showed a characteristic of non-Newtonian fluid properties. At the concentration of 1.0%, the consistency index and the flow behavior index were shown at 10.8352 poise-sec and 0.4419, respectively. All dispersions were pseudoplastic fluids described accurately by Power-law model. Exopolysaccharide EPS-1 was highly viscous at low concentration, with good stability over a wide range of pH 5 to 13. The excellent compatibility of exopolysaccharide EPS-1 was represented with salts such as sodium chloride.

  • To enhance application of FPC in food industry, salmon FPC hydrolysates were produced and their functional properties were investigated. Hydrolysates of salmon FPC showed high solubilities ranged from approximately $80\~95\%$. Emulsifying activity index (EAI) values of hydrolysates were higher than that of egg white, however sugar ester showed the highest EAI value of 32.5. Though sugar ester had the best emulsifying stability value $({\Delta}EAI)$ of 9.65, hydrolysates showed better ${\Delta}EAI$ value than that of egg white. Foam Activity of hydrolysates was predominantly better than those of controls and also foam stability value showed similiar trend. Osmolality of hydrolysates was increased with the increase of degree of hydrolysis (DH) and concentration of protein, but it showed very lower osmolality than that of NaCl. Flow property of hydrolysates showed different upward-downward curves, and hysteresis loop increased with the increase of DH. ACE inhibitory activity showed similiar value ranged from $21.1\~24\%$ at all DH values.

PP-SEBS/실리케이트 복합체의 유변학적 특성 연구 (Study on the rheological properties of PP-SEBS/silicate composites)

  • 폴리프로필렌(polypropylene, PP)-SEBS(styrene-ethylene/butylene-styrene triblock copolymer)/실리케이트 복합체를 PP의 조성을 35, 40 그리고 45wt%로 변화시키며 실험실 규모의 Brabender Mixer를 이용하여 $200^{\circ}C$에서 용융상태에서 제조하였다. 실리케이트 조성은 5wt%로 고정하였다. PP-SEBS/실리케이트 복합체의 열적특성을 DSC와 TGA를 이용하여 분석하였다. PP-SEBS 콤파운드의 용융온도는 SEBS 함량에 따라 $141^{\circ}C$까지 감소하였다. 실리케이트가 PP-SEBS에 첨가되었을 때 분해온도가 증가하는 것을 TGA 결과로부터 확인할 수 있었다. 콤파운드의 유변학적 특성을 동적유변측정기를 이용하여 측정하였다. PP-SEBS/실리케이트 복합체는 PP-SEBS 콤파운드보다 shear thinning과 탄성특성이 증가하였다. 탄성특성 증가를 확인하기 위해 Van Gurp-Palmen 분석을 이용하였다.

  • A highly viscous biopolymer from Bacillus coagulans CE-74 was purified and its rheological properties were studied The rheological properties of biopolymers produced by Bacillus coagulans CE-74 were studied at the temperature ranges with 20~8$0^{\circ}C$, at the concentration of 0.5~4.0%, at the pH ranges from 3 to 1 and at the shear rate fo 7.34~73.38 sec-1. The apparent viscosity of biopolymer was decreased with increasing shear rate, and thereby biopolymer showed pseudoplastic characteristics. Biopolymer solution showed a characteristic of non-Newtonian fluid properties. At the concentration of 1%, the consistency index and the flow behavior index were shown at 2.64 poise. sec11 and 0.8571, respectively. All dispersions were pseudoplastic fluids described accurately by Herschel-Bulkley model. The change of the biopolymer viscosity on pH showed the highest value at the pH 7.0 and it showed lower at acidic conditon that at alkaline condition comparatively.

3D 프린팅 공법 적용을 위한 모르타르 구성성분 변화에 따른 레올로지 특성 연구 (Study on Rheological Properties of Mortar for the Application of 3D Printing Method)

  • 본 연구에서는 3D 프린팅 공법 적용을 위한 콘크리트 기초 레올로지 분석을 목적으로 실험을 수행하였다. 콘크리트 구성성분 중 유동특성에 큰 영향을 미치는 인자(W/B, binder Type, replacement ratio, super plasticizer dosage)의 변화에 의한 레올로지 특성(rheological properties)을 실험적으로 분석하였다. 실험은 페이스트와 모르타르 크게 두 가지 인자로 구분하여 수행하였다. 페이스트 실험에서는 W/B, binder type, replacement ratio, super plasticizer dosage를 주요 변수로 설정하여 레올로지를 분석했다. 모르타르 실험에서는 W/B와 sand ratio에 따른 레올로지 특성을 분석했다. 결과적으로 W/B가 증가될수록 viscosity가 감소하였으며, FA를 치환할 FA 비율이 증가됨과 함께 viscosity가 증가하였다. 유동성 증가를 위해서는 SF를 5%만 치환해도 shear stress를 감소시키며 viscosity는 약 83%까지 감소되었다. 모르타르 레올로지 평가를 통해 W/B 30~40% 구간에서 큰 폭의 변화가 일어나는 임계치 구간이 존재하는 것으로 분석됐다. 또한 동일 W/B 내에서는 sand 비가 50~60% 구간에서 shear stress가 두 배 이상 증가하는 임계 구간이 존재하는 것으로 분석됐다.

광물혼화재가 혼합된 다성분 페이스트 시스템의 레올로지 특성 평가 (Characterization of Rheology on the Multi-Ingredients Paste Systems Mixed with Mineral Admixtures)

  • 콘크리트의 강도증진과 내구성 및 유동성 향상을 위하여 사용되는 광물혼화재가 혼합된 시멘트페이스트 시스템의 레올로지 특성이 연구되었다. 그리고 시멘트페이스트는 일성분, 이성분, 삼성분 혼합 페이스트 시스템으로 구성되었다. 페이스트 시스템의 레올로지 특성을 평가하기 위하여 Haake사의 Rotolnsco RT 20 레오미터가 사용되었다. 레올로지 특성을 평가한 결과 다음과 같은 실험 결과를 얻었다. 일성분 페이스트 시스템의 경우, 고성능 감수제의 첨가량이 증가함에 따라 레올로지 특성들이 상당히 개선된다. 이성분 페이스트 시스템에서는 고로슬래그와 플라이애쉬의 치환율이 증가함에 따라 비치환된 시스템의 경우보다 항복응력과 소성점도는 감소된다. 실리카 퓸이 치환된 이성분 페이스트 시스템에서는 실리카 퓸의 치환율이 증가함에 따라 항복응력과 소성점도의 값이 급격히 증가된다. 삼성분 페이스트 시스템에서는 OPC-BFS-SF와 OPC-FA-SF 페이스트 시스템 두 경우 모두 실리카 퓸을 단독으로 치환한 페이스트 시스템과 비교하여 레올로지 특성이 향상된다. 이성분과 삼성분 페이스트 시스템 모두 플라이애쉬 보다 고로슬래그를 배합에 넣어 사용할 때 레올로지 특성이 좀 더 개선된다.

Relationship between morphology and viscosity of the main culture broth of Cephalosporium acremonium M25

  • In this study, the relationship between morphology and viscosity of the main culture broth of Cephalosporium acremonium M25 was investigated in a 2.5 L bioreactor. The differentiation of C. acremonium M25 showed a complex pattern during the main culture. The morphological changes of C. acremonium M25 were related to the rheological properties of the culture broth and it was well agreed with the power law model. As a result of rheology study, it was found that rheological properties of the main culture broths of C. acremonium M25 in bioreactor were closely related to morphological changes. Also, fractal dimension fairly predicted morphological and rheological changes in the main culture broth.
