The purpose of this study was to provide baseline data for revising the recommended energy intake for Korean adults. We recruited 290 adults so as to determine their resting energy expenditure (REE) and energy intake. The REE was measured by indirect calorimetry. We also calculated the REE from prediction equations formulated by World Health Organization (WHO), The energy intake for two consecutive days was assessed using the 24 hour recall method. The body weight, lean body mass (LBM) and percentage body fat were measured using the INBODY 3.0 system. We compared the results of three age groups ; 20 to 29 years,30 to 49 years and 50 years or more. The average energy intake of each age group was below the 7th Korean Recommended Dietary Allowances (RDA). The average energy intake was lower in the older age groups. However, no difference was observed among the age groups when the energy intake as a percentage of the Korean RDA was compared. Our measurement of the REE was higher than the REE calculated by the WHO's method. Correlation coefficients between the measured and the calculated values of REE for all age groups showed significant correlations (r=0.475-0.672). As the ages of all the subjects increased, the REE/kg of body weight decreased. There were no significant differences in the REE / kg of the LBM between the different age groups; however, the REE/kg of the LBM was higher in the female group than in the male group. Negative correlations of the REE with the age (r=-0.242) and body fat ratio (r=-0.313) were observed; positive correlations of the REE with the BMI (r=0.265), height (r=0.570), weight (r=0.562) and LBM (r=0.586) were also found (p<0.01).
Objectives: The valid assessment of food and nutrients intakes using appropriate dietary intake method is necessary to improve the nutritional status of the hemodialysis (HD) patients. This study was conducted to compare the method between newly developed, semi-quantitative food frequency questionnaire (Semi-FFQ) and 7-day dietary records (7-DRs) for hemodialysis patients. Methods: We conducted both methods on 53 maintenance HD patients in two university hospitals. We calibrated the frequency, portion size and daily intake of 47 food items reported in Semi-FFQ. The food and nutrients intake was compared and the correlation of the two methods was analyzed. Also each nutrient intake was compared to recommended dietary allowance for Korean (KDRIs) and recommended nutrient reference value for HD patients. Results: Energy and energy-yielding nutrients intakes were significantly higher in the two methods (p<0.01). These support the possible reliability between Semi-FFQ and 7-DRs that is similar with regard to most mineral and vitamin intakes. Thus, the Semi-FFQ used in this study for the assessment of nutrient intakes of HD patients can be reliable for the assessment of the nutrient intake along with the 7-DRs. The correlation coefficients were higher for foods consumed daily, such as steamed rice, meat and chicken, bean, egg, milk, coffee and alcohol than for those of foods eaten rarely (p<0.01). Conclusions: The Semi-FFQ used in this study can be a reliable tool for the assessment of the HD patients' nutrient intake along with the 7-DRs, despite its limitations.
Purpose: Elevated iodine intake is related to a higher prevalence of subclinical hypothyroidism (SCH). We investigated the short-term effect of dietary iodine restriction on thyroid function in patients with SCH with high iodine intakes. Methods: The iodine levels in 64 SCH patients with serum TSH levels from 4.0 to 10.0 mIU/L and normal serum fT4 levels (n = 64) were assessed using 24-hour urine iodine test results and iodine intake levels calculated using a semi-quantitative food frequency questionnaire. Dietary iodine restriction was not recommended for patients with an iodine intake in the normal range (group A, n = 13), but seaweed restriction was recommended for patients with high iodine intakes (group B, n = 33). Thyroid functions and iodine levels were rechecked after three months. Another eighteen patients were prescribed thyroid hormone replacement therapy according to clinical criteria. Results: Median baseline iodine intake for the 64 patients was 290.61 ㎍/day, and median 24-hour urine iodine was 33.65 µmol/g of creatinine. The major source of dietary iodine was seaweed, which accounted for 72.2% of median baseline intake. Urine iodine and calculated iodine intake levels were positively correlated with serum TSH levels (p < 0.001 and p = 0.027, respectively), and calculated iodine intakes were significantly correlated with urine iodine levels (p = 0.001). In group B, iodine restriction significantly decreased urine iodine (p = 0.042) and TSH levels (p = 0.004), and conversion to euthyroid status was achieved in 16 of the 33 patients (48.5%). Conclusion: Iodine intake and urine iodine levels are correlated with thyroid function in SCH patients, and dietary iodine restriction can aid functional thyroid recovery in patients with elevated iodine intakes.
Age, sex and the amount of activity determine recommended dietary allowances. So the method of developing RDA and their levels have been revised according as the physical condition of a nation improves and the amount of activity changes along with the variety of social situations. It can be seen from records that in Korea the absolute nutrient requirements for the people in Chosun Dynasty were first published in 1922. After that, in 1941 Gui Dong Han expressed his view that the standard health diets for the Japanese would be suitable for the people in Chosun Dynasty. In 1960, the temporary nutrition standards for the Koreans were established by the Ministry of the Health and Social Affairs. For these standards, males and females were respectively divided into three groups by age and nine nutrients were recommended for each group. In 1962, The Korean Association to FAO published the RDA for the Koreans. Since then, regular researches have been done. For these allowances, there were 16 age groups of men and women and ten nutrients recommended for each group. On the first revision in 1967, the fat allowance was presented at the ratio (12%) of fat calorie to total calories with no change in the number of age catagories and in the kinds of nutrients. And the basis of the riboflavin allowance was changed from the level of protein intake to that of energy intake. On the socond revision in 1975, there was brought 19 are catagories and ten nutrients recommended. On the third revision in 1980, age catagories increased to 22, and ten nutrients were recommended. On the fourth revision in 1985, there remained 21 groups by uniting the early and later periods of pregency. On the first revision in 1967, the recommended energy allowance was 3000 kcal, the highest level. Since then it has gradually been reduced. And it can be noticed that the protein allowance was high when food was difficult to obtain.
This study was conducted to abbess dietary intake and eating habits of low-income persons aged 60 years or elder. 212 persons were surveyed between July 10 and August 17, 1978 ; 105 from the farming village of Yang-ju, Kyunggi province; and 107 from Karakdong, an area of redevlopment in the suburbs of Seoul. Results were as follows : 1 ) Family environment 84% of elderly persons surveyed, lived with their children; 13.2%, together as a couple; and 1.9%, widowed, lived alone. More than half on the households had an average monthly income of \50,000 to \30,000. The average Engel index was 61.2%. As for pocket money, 56.4% of male subjects had \l,000 to \7,000 per month, whereas 74% of female had less than \1,000. 2) Anthropometric measurements 59.9% of subjects were $70{\sim}90%$ of standard weight, 93% had an arm circumference only $60{\sim}80%$ of the standard. 3) Food and nutrient intake Carbohydrate provided 73.4 to 79.4% of total energy intake, whereas protein and fat accounted for 10.4 to 10.5% and 8.3 to 7.8%, respectively. Those over 65 years of age showed a somewhat greater dependence on carbohydrates for energy, than those under 65. Protein intake was only $42{\sim}52%$ of the recommended allowance. and the proportion of animal protein to total protein was only $2.1{\sim}9.3%$ far below the recommended allowance. Thus the protein nutrition of the subjects was proven to be inadequate qualitatively as well as quantitatively. Intake of energy and of all nutrients except vitamin A and ascorbic acid, were lower than recommended. 4) Correlational assessment The correlation coefficient between poor dental health, clinical sign score, appetite index, dietary balance and nutrient intake, was significant (0<0.01). Poor teeth, illness, and poor appetite were always associated with inadequate intake of energy and nutrients. To investigate effects of the shared living on nutrient intakes,250 college male students who were living alone (104 men) or sharing accommodation with friends (134 men) were participated. Their average age was 22.6 years, their average height was 171.8 cm, their average weight was 65.6 kg and their average Body Mass Index (BMI) was 22.2. The caloric intakes of the men living alone or sharing accommodation were 55.9% and 72.5% of the Korean Recommended Dietary Allowance (RDA), respectively. The decreased caloric level of the group living alone seemed to be due to their decreased protein and fat consumption as compared to that of the group sharing accommodation. The group living alone consumed increased amounts of fiber for breakfast and half the carbohydrates, but more fat (p < 0.05) in snacks than the group sharing accommodation. The daily carbohydrate : protein : fat (C : P : F) ratio averaged 58.6 14.1 27.3, which is a lower carbohydrate and a higher fat ratio than the Korean recommended ratio. However, the group living alone was closer to the Korean recommended ratio than the group sharing accommodation. The food intake habits were evaluated as being poorer in the group living alone as compared to the group sharing accommodation, less frequent consumption of fried / pan-fried dishes, and fruits / juices, but more frequent consumption of instant / processed foods. In comparing the eating patterns of the two groups, the group living alone showed better eating habits, such as more“breakfast eating”and less“snacking in the morning, afternoon or late at night”whereas the group sharing accommodation showed better eating habits such as less“picky eaters”and less “eating out”. In the group living alone, their lower caloric intake was assumably due to their fewer side dishes, however they showed higher eating frequencies of instant i processed foods. Since the lifestyle of living alone seems to grow gradually among young men, we strongly recommend dietary education for them.
The daily intake of dietary fiber by Korean population in urban and rural areas was computed from an optimized food intake based on national nutrition survey, food balance sheet, and the dietary fiber content of Korean foods. The average intake of dietary fiber the nationwide and in urban and rural areas were 24, 22 and 28g in the 1970's, 20, 21 and 20g in 1980's , and 22, 22 and 21g in the 1990's , respectively. As compared with the recommended dietary allowance of 20-25g for Koreans, the average intake of dietary fiber was within the normal range, regardless of urban and rural areas. Since the dietary pattern of korean people is being changed according to different life style, the exact intakes of dietary fiber by diverse specific population groups should be assessed in the future.
The purpose of this study was to develop a software system for computer nutrition counseling based on food intake and level of exercise measurements. Various software programs were developed using Powerbuilder 5.0 and categorized according to their function: 1) inputting general data including age, sex, weight, height, degree of acitivity and exercise amount of individuals, 2) inputting food intake based upon a 24-hour dietary recall method, 3) calculating energy and general nutrient intake and evaluating dietary status with respect to the Korean recommended dietary allowances, 4) calculating dietary intake of fatty acids, 5) calculating PUFA : MUFA : SFA and $\omega$6 :$\omega$3 ratios, 6) reporting the results of nutrient analysis, and 7) assessing the nutritional status of individuals and practicing nutrition education. This study provides various information on the assessment of nutritional status.
The purpose of this study was to develop the dietary enhancement program for rural elderly. The subjects consisted of 71 normal healthy elderly aged over 60 living in rural and senior citizen center. Daily supplementation of 20g soybean powder of 3 months revealed no statistically significant elevation in serum parameters of the elderly, but resulted in the increment in the number of the subject with normal range of serum parameters and the improvement in perceptions of health status by CMI score, even though the nutrients intake had constantly lowered. The nutrients intake of rural elderly was very low: energy intake was 59-68% of RDA, that of protein 47~59%, and clacium 21~60% only. Supplementation of 20 g soybean powder per day for 3 months, did not enhance nutrients intake of rural elderly. We can recommended that constant nutrients supplementation program as well as dietary enhancement program are needed to improve the quality of life of rural elderly.
The purpose of this study was to investigate differences in the diet with the amount and the qualitative assessment of nutrient intakes by the economic level. Data from the 1998 Korean Health and Nutrition Survey were used. Using the poverty line based on the 1998 Korean minimum cost of living, Subjects (n = 10400) were classified into high class (36.1%), middle class (40.7%) and low class (23.1%). Chi-square-test and Analysis of Variance following Duncan's multiple range test were used to test the difference in nutrient intake pattern among three groups ($\alpha$ = 0.05). The amount of nutrient intake and nutrient intake adequacy were statistically different by the economic level (p<0.01). The ratio of energy intake from carbohydrate is higher than the criteria of WHO recommendation in all economic levels. Especially people in the low class depended much on the carbohydrate for the energy intake. The ratio of energy from the protein and fat are lower in the middle and low class than that of the high class. The Intake level of calcium and vitamin B$_2$ were lower than those of the Recommended Dietary intake level, regardless of economic status. It also showed differences in major food sources of nutrients by the economic level Consequently, it seems that the nutrition policy and program should be prepared according to their economic status. Also, there should more detailed studies to find out the nutrient intake pattern, their determinant, and health consequences.
