원료삼 생산수익 결정모형 (Revenue Determination Model of Raw Ginseng Production)

  • 원료삼 생산에 있어 총수익(R)을 결정하는 4요인 승법 모형을 설정하고 (R=AYQP) 세 농가의 수납실적 수치를 사용하여 총수익 결정식임을 확인하였다. 4요소는 자본요소인 재배면적(A), 기술요소인 단위수량(Y)과 가중평균 품질등급(Q) 그리고 시장요소인 평균등급 가격(P)의 3요소로 해석하였다. 기술요소인 YQ는 자본(A)과 수익(R)의 직선모형에서 기울기가 되어 단위자본의 수익창출계수임을 밝혔다. 수익결정식은 인삼산업의 발전이 재배수량과 품질 향상기술 YQ를 증대시켜 면적(A)을 감소시킴으로서 수익(R)을 높여 시장가격(P)을 낮추는데 있음을 보여주었다.

해가림 종류가 수삼, 홍삼 및 백삼의 품질과 무기물 함량에 미치는 영향 (Effect of Shading on the Quality of Raw, Red and White Ginseng and the Contents of Some Minerals in Ginseng Roots)

  • The quality of raw, red and white ginseng and the contents of some minerals were examined using 6-year-old ginseng roots produced in different shades, thatch and polyethylene net (P..E.). The yield of first and second grade ginseng roots was higher in the thatch shade than in the P.E. shade. The smaller sizes of ginseng routs were probably due to loss of ginseng yield called by alternaria blight in the third and fourth years, and lower quality was dale to more rusty roots in the P.E. shading. For red ginseng. rates of heaven and earth grades were higher in the P.E. than thatch shade. producing red ginseng with less inside cavity Production of white ginseng was higher in the thatch shade than in the P.E. shade. showing a higher yield, better piece grade, lower inside crack and better quality index in the thatch. The contents of some minerals such as K, Ca, Mg and Mn of fine ginseng roots differed between the two shades, some of which had a significant correlation with the quality indices of white ginseng.   • 수삼의 증삼전 열처리로 홍삼중의 추출가능 물질은 물추출물 뿐만 아니라 60%주정 수용액 추출물의 양을 근본적으로 다량 생성시켜 추출수율을 높였다. 또한 갈색도가 증진되었으며, 전분질을 함량을 저하시켜 추출물중 원심분리박의 대부분을 차지하고 있는 전분을 감소시키므로써 이의 제거를 위한 원심분리기 등 고가의 공정 단축이 가능할 수 있다. 증삼 전 예열 적정온도는 $70^{\circ}C$에서 60분이 적합하였으며 증삼시간에 따라서는 엑스추출율의 차이가 크지 않았다. 예열 조건별 물 추출물 엑스의 향미 비교에서 향과 맛 모두 당의 특성 향미가 증진됨을 나타냈다.

Increase in the Contents of Ginsenosides in Raw Ginseng Roots in Response to Exposure to 450 and 470 nm Light from Light-Emitting Diodes

  • An light-emitting diode (LED)-based light source was used as a monochromatic light source to determine the responses of raw ginseng roots (Panax ginseng Meyer) to specific emission spectra with respect to the production of ginsenosides. The ginsenoside content in the ginseng roots changed in response to the LED light treatments at $25^{\circ}C$ relative to the levels in the control roots that were treated in the dark or at $4^{\circ}C$ for 7 d. Ginseng roots were exposed to LEDs with four different peak emission wavelengths, 380, 450, 470, and 660 nm, in closed compartments. Compared with the control $4^{\circ}C$-treated roots, roots that were treated with 450 and 470 nm light showed a significantly increased production of ginsenosides (p<0.05), with increases of 64.9% and 74.1%, respectively. The contents of the ginsenosides $Rb_2$, Rc, and $Rg_1$ were significantly higher (p<0.05) in the 450 and 470 nm-treated root samples. The ratio of protopanaxadiol ginsenosides ($Rb_1$, $Rb_2$, Rc, and Rd) to protopanaxatriol ginsenosides ($Rb_1$, $Rb_2$, Re, and Rf) was significantly higher (p<0.05) in the 450 and 470 nm-treated root samples than in the control $4^{\circ}C$-treated roots. This is the first report that demonstrates the increase and conversion of ginsenosides in raw ginseng roots in response to exposure to LED light.

인삼 우수계통 KG101의 생육과 홍삼품질 (Red Ginseng Quality and Characteristics of KG101 a Promising Line of Panax Ginseng C.A. Meyer)

  • KG101 was developed by the Korea Ginseng & Tobacco Research Institute. We reported about yield trials and local adaptability test. Growth characteristics and red ginseng quality of KG101 in local performance test can be summarized as follows. Aerial parts growth, stem and leaf, was similar about KG101 and Jakyungjong, 4-year old and 6-year old ginseng. Emergence rate of KG101 was higher than Jakyungjong in the 3 location of local performance test. Taproot diameter of KG101 was smaller than Jakyungjong and taproot shape of KG101 had fitted characteristics, radish type and human body type, to manufactured red ginseng. Raw ginseng grade, 1st and 2nd of KG101 was higher than Jakyungjong's. Chun, Jeesam ratio to manufacture of 2nd grade of raw ginseng of KG101 was 25%, Jakyungjong was 6-13% in 3 location of local performance test. Distribution of red ginseng weight of Jakyungiong was heavier than KG101 in 2 location, Kongju and Jungup, but KG101 was heavier than Jakyungjong in Ichon. Red ginseng quality of KG101 was better than Jakyungiong. Main degrade factor of red ginseng quality was inside cavity and inside white, was not different lines and location.

약침용 홍삼추출액의 급성독성시험에 관한 연구 (Studies on the Safety Assessment of Red-ginseng Radix Extract Solution for Herb-acupuncture)

  • The components of Red-ginseng radix extract solution for herb- acupuncture were analyzed by HPLC. According to the Medical Product Safety Administration Guidelines for safety assessment, mice and rats were used for acute toxicity test. The results were summarized as follows; 1. In the Saponin contents(%) of Red-ginseng radix extract, Ginsenoside $Rb_1$ Saponin was 0.27% in raw material, 1.67% in extract powder and Ginsenoside Rc Saponin was 0.16% in raw material, 1.12% in extract powder and Ginsenoside Rd Saponin was 0.08% in raw material, 0.54% in extract powder. 2. There were no abnormal findings in acute toxicity test treated with Red-ginseng radix extract solution for herb-acupuncture and $LD_{50}$ could not be measured.

인삼 직파재배에서 파종밀도가 생육 및 수량에 미치는 영향 (Effect of Seeding Rate on Growth and Yield of Ginseng Plant in Direct-Sowing Culture)

  • To know possibility of raw ginseng production for white- and red-ginseng by direct-sowing culture, seeds were directly sowed or seedlings were transplanted at soil condition of sandy loam in ginseng field. After cultivation, the characters of 5-year-old ginseng were investigated. Number of survived plants was increased with increase the seeding quantity in direct-sowing culture, the survived plants in direct-sowing culture was higher than that of transplanting one. Rate of the numbers of survived plants to numbers of seeds sowed in plots of 134 or 90 seeds sowed per tan, 180 x 90cm area, inspire of high number of survived plant was high compared to that of transplanting culture. Occurrence rate of rusty root of ginseng in direct-sowing culture was low significantly compared to that of transplanting culture. Root yield showed in the order of 134, 268, 90 seeds sowed, the values of yield in direct-sowing culture were high obviously compared to that of transplanting one. Individual root weight was increased with decrease the seeding quantity, however, the root weight in plot of 90 seeds sowed showed almost equal the weight in transplanting culture. The number of usable raw ginseng for white- and red-ginseng was increased with decrease of the seeding quantity; the numbers were higher than that of transplanting culture remarkably. We concluded that optimum seedling rate in direct-sowing culture of ginseng was 90 to 134 seeds per tan considering the yield per area and production rate of large root.

  • The red ginseng is very popular as a health food. It has been manufactured with raw ginseng by the conventional method. But, the yield of the heaven grade ginseng (the best quality red ginseng) among the whole products is around 5-7%, Therefore, the yield should be improved in order to increase economic returns. In this study, a new model of drying system was developed to improve the yield of heaven grade ginseng from 7% to 15% or more. For this system, temperature and relative humidity were controlled by the feedback control system, and a solenoid valve for steam supply and other variables were controlled by the PC. The special features of this system developed are an image processing system for monitoring the red ginseng during the drying process in the drying chamber, and a cylindrical porous tray for holding ginseng that is rotating with the speed of 0-10rpm in the drying chamber and makes uniform drying of red ginseng possible.

Optimization of Enzymatic Pretreatment for the Production of Fermented Ginseng using Leaves, Stems and Roots of Ginseng

  • This study sought to optimize the extraction and enzymatic treatment conditions of Panax ginseng leaves, stems, and roots for the production of fermented ginseng. The optimization enhanced the extraction of total saccharide, a nutrient and growth-activating factor for Lactobacillus bacteria. The hydrolysis of ginseng leaves, stems, and roots was tested with eight enzymes (Pentopan, Promozyme, Celluclast, Ultraflo, Pectinex, Ceremix, Viscozyme, and Tunicase). The enzymatic hydrolysis conditions were statistically optimized by the experimental design. Optimal particle size of ginseng raw material was <0.15 mm, and optimal hydrolysis occurred at a pH of 5.0-5.5, a reaction temperature of 55-$60^{\circ}C$, a Ceremix concentration of 1%, and a reaction time of 2 hr. Ceremix produced the highest dry matter yield and total saccharide extraction. Ginseng leaves were found to be the most suitable raw material for the production of fermented ginseng because they have higher carbohydrate and crude saponin contents than ginseng roots.

연포장재 필름으로 개별포장한 수삼의 저장 중 관능특성 및 화학성분 변화 (Changes in Sensory Characteristics and Chemical Constituents of Raw Ginseng Roots Individually Packaged in a Soft Film During Storage)

  • 50 g내외의 4년근 수삼을 물로 세척한 후 한 뿌리씩 산소투과도가 낮은 기능성 연포장재 필름 주머니(ONY/LDPE/L-LDPE; 200$\times$300 mm, 90 $\mu\textrm{m}$)에 넣고 밀봉하여 $25^{\circ}C$에서 보관기간별로 수삼의 외관품질 변화를 조사하고 외관품질이 양호하게 유지된 정상 수삼, 곰팡이가 발생한 수삼 및 연화가 일어난 수삼의 관능특성과 이화학적 특성을 비교 조사하였다. 수삼의 외관품질은 주로 연화에 의하여 불량해졌으며 보관 20일째에는 불량률이 전체의 75%에 달하였다. 연화가 일어난 수삼은 정상 수삼에 비하여 경도가 약하였고 끈적거리는 정도가 강하였으며 자극적인 냄새와 신 냄새가 매우 강하였고 단 냄새, 신맛 및 단맛이 비교적 강했던 반면에 인삼 냄새, 신선한 냄새는 매우 약하였고 쓴맛은 비교적 약하였다. 한편 연화가 일어난 수삼은 경도와 pH가 정상 수삼보다 낮았고 수분과 일반성분의 함량은 정상 수삼과 비슷한 수준을 나타내었다. 또, 연화가 일어난 수삼의 diol계 사포닌성분 함량 및 불포화지방산과 포화지방산의 비(USFA/SFA)는 정상 수삼보다 낮았고 수용성 펙틴질 함량은 정상 수삼보다 높았다.
