Stability of Lipids in Ramyon (deep fat fried instant noodle) -I. Oxidative Changes in the Ramyon Lipids during Storage- (라면 유지(油脂)의 안전성(安定性)에 관한 연구(硏究) -(I) 시험저장중(試驗貯藏中) 라면유지(油脂)의 산패(酸敗)에 대(對)하여-)

  • Oxidative changes of the Ramyon lipids were studied under three experimental storage conditions. Ramyon was 1) exposed to fluorescent light irradiation at $25^{\circ}C$, 2) incubated in the dark at $40^{\circ}C$ and 3) irradiated with ultra-violet light at $25^{\circ}C$. In the study, changes in acid value, peroxide value, carbonyl value, TBA number, fatty acid composition and iodine value were determined with the lipids extracted from the Ramyon samples in intervals for a period of 20 weeks. Acid value, peroxide value, and TBA number of the samples under fluorescent light irradiation and $40^{\circ}C$ incubation increased slightly during storage, while a sharp increase of those values were noticed with the samples of ultra-violet light irradiation. Especially, the TBA number of the Ramyon lipid under ultra-violet light irradiation markedly increased within 10 weeks and then decreased. With this change in TBA number, however, the bound form of malonaldehyde increased gradually. During the storage under $40^{\circ}C$ incubation, and ultra·violet irradiation for 10 weeks, the content of linoleic and linolenic acids decreased, while palmitic and stearic acids increased. However, only small changes were noticed in iodine value of the samples. On the other hand, oxidative rancid odor appeared at the end of 16 weeks storage under fluorescent light irradiation and $40^{\circ}C$ incubation, while it took only 4 weeks with the sample stored under ultra-violet irradiation.

  • Chemical changes with time of frying-fats during the frying process (beef tallow with 0.01% BHA and 0.01% BHT, turnover rate 9%/hr and $140{\pm}10^{\circ}C$ temperature) of Ramyon on a commercial scale were studied. No significant changes of carbonyl value and peroxide value were noted up to 120 hrs. However, small increases in acid value, color and dimeric fatty acid were noted. Small decreases in iodine value and the content of unsaturated fatty acids were also observed. Under the experimental storage condition, when the stability of fats heated were compared to fresh fat, minor differences in carbonyl value and weight gain were noted. All of these demonstrated that frying-fats commercially used in Ramyon frying system were maintained in good quality during the frying process.

  • The stability of lipids(Soybean oil & Ramyon lipid) by adding soybean products' extracts and Soybean, Soybean products was investigated, respectively. 1. Ethanolic extracts of defatted Soybean was very antioxidative in soybean oil. Soybean hot water extracts, defatted soybean water extracts and Soyprotein isolate water extracts possess antioxidative activities. But, Fresh Soybean cold extracts don't possess antioxidative activity. 2. The Oxidation of Ramyon Lipids (beef tallow) during storage at $45^{\circ}C$ incubator was effectively surpressed by addition of defatted Soybean hydrolyzate, tempeh (Defatted), Soy protein isolate hydrolyzate. The power of antioxidative activity is this order: Soy protein isolate hydrolyfate> Defatted Soybean hydrolyzate> BHA (200ppm)> Tempeh> Tempeh extracts> Defatted soybean.

  • To find out the difference of local characteristics, body and mental activity of Ramyon's habitual eater,THI guestion which is objects of students of high school in the city and country was carried. The results are as follows: 1.In comparison of eating and non-eating group of both male and female syudents, the mean value of eating group was high and showed the significance(P<0.001). 2. The eating group of city showed the higher mean value than country and it showed the significance(P<0.05). 3. In the eating group of city;the female had higher mean value than the male and showed no significance. In the eating group of city;the female had higher mean value than the male and showed significance(P<0.001). 4. In the eating group of male, the mean value of city was higher than country and showed significance(P<0.001). In the eating group of female, the mean value of city was igher than country, but showed no significance. As the results of the above,se know habitual eating of Ramyon give rise to spleen functional disouder and consepuently mental disorder resulting trom spirit-blood's original impediment and the variety of character, such varieties were different according to the characteristics of local and difference. Therefore, we'll study more detail aspents from now on.

Relative Effectiveness of Some Antioxidants on Storage Stability of Instant Noodle(Ramyon) Fried by Palm Oil and Beef Tallow (팜유와 우지로 제조한 라면의 저장 안정성에 대한 산화방지제 효과의 비교)

  • Storage stabilities of ramyons fried in palm oil and beef tallow with added antioxidants and their synergists were investigated by comparing the changes in physicochemical parameters and n-hexanal concentrations of oils extracted from ramyons during storage. Ramyons fried in palm oil and beef tallow with added ${\delta}-tocopherol$ $({\delta}-toc)$ showed an enhanced storage stabilities when compared to those fried in the oils with ${\alpha}-tocopherol$ $({\alpha}-toc)$. Ascorbyl palmitate was found to be a better synergist than citric acid for the antioxidant activity of both ${\delta}-toc\;and\;{\alpha}-toc$. Phenolic antioxidants gave a better storage stability than tocopherol when ramyon was fried in beef tallow, while a mixture of BHA and BHT gave an inferior storage stability than${\alpha}-toc$ when ramyon was fried in palm oil. The effectiveness of the antioxidants tested on storage stability of stored ramyon had a close relationship to the n-hexanal concentration. On the other hand, the paramenters such as peroxide value, carbonly value, and conjugated diene concentration showed inconsistency during the course of the storage experiment.

A Study of the Dietary Habits, the Nutritional Knowledge and the Consumption Patterns of Convenience Foods of University Students in the Gwangju Area (광주지역 대학생의 식습관, 영양지식 및 편의식품 섭취 실태에 관한 연구)

  • The purpose of this study was to investigate the dietary habits, the nutritional knowledge and the consumption patterns of convenience foods of 618 university students located in the Gwangju area, from November twentieth to November thirtieth, 2002. The subjects included 301 males (48.7%) and 317 females (51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index (BMI) was 3.7, 88.0 and 8.3 far the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time (65.1%) of the cases. Self-reported eating habit problems were eating irregular meal (52.4%), overeating (21%), prejudiced meal (12.4%) and skipping meal (7.4%). The type of favorite snack was biscuit (31.9%) and cup Ramyon (31.9%). The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 28% respectively. Males ate fiequently cup Ramyon (2.08 $\pm$ 2.95), fries (pork cutlet, fried potato) (1.91 $\pm$ 2.58), Ramyon (1.81 $\pm$ 3.00) and kimbab (1.70 $\pm$ 3.17) more frequently, while females ate kimbab (2.25 $\pm$ 3.26), cup Ramyon (1.89 $\pm$ 2.09), fries (pork cutlet, fried potato) (1.77 $\pm$ 2.67), Ramyon (1.46 $\pm$ 1.1.95) and fish paste (1.45 $\pm$ 2.22) more frequently. The nutritional knowledge score was higher in females than in males. The mean consumption patterns of convenience foods of students living in home were lower than that of students living in dormitory and boarding w/cooking. When the amount of pocket money available and the body mass index increased and the nutritional knowledge level was low, the mean consumption of convenience foods increased. The mean consumption of convenience foods correlated negatively with nutritional knowledge (p < 0.01). Therefore, nutritional education for university students is needed so as to improve their health and nutritional education program should be developed to meet the various needs of these students. Production of Pleurotus spp. Mycelium Using Rancid Frying Oils (산패유를 이용한 느타리버섯 균사체의 생산)

  • Conditions for the culture of Pleurotus spp. mycelium using rancid frying oils were investigated. Among the six strains tested, Pleurotus ostreatus CBS 03 showed the greatest mycelial growth on fish paste and ramyon frying oil, and was used in this study. The optimum temperature and pH for mycelial growth were from 25 to $30^{\circ}C$ and pH 5.5 to 6.0, respectively. Tryptone for mycelial growth was better than any other nitrogen sources. The addition of $KH_2PO_4 and MgSO_4$ enhanced mycelial growth at 0.2 and 0.01% on fish frying oil, and at 0.1 and 0.03% on ramyon frying oil. Among the vitamins used, thiamine and nicotinic acid were the most effective ones.

Effects of Wheat Flour Protein Contents on Ramyon (deep-fried instant noodle) Quality (밀가루의 단백질 함량이 라면의 품질에 미치는 영향)

  • The quality of Ramyon prepared from hard red winter-western white (HRW-WW) and dark northern spring-western white (DNS-WW) flour blends having protein contents of 9.12-9.78% was examined. The noodles were manufactured by commercial process with the same water absorption. The weight and volume of cooked noodle were decreased as the protein content increased at the same cooking time. No significant differences in cooking properties were observed between noodles prepared from HRW-WW and DNS-WW blends. The weight and volume of noodle prepared from HRW-WW blend cooked for 4 min showed significant negative correlation with farinograph and extensograph data and protein contents of flours, but positive correlation with amylograph data. Such correlations were not found from noodles prepared from DNS-WW blend. Based on the sensory evaluation of cooked noodle it was concluded that the optimum protein content for noodle manufacture was in the range of 9.28-9.62%. The replacement of HRW with DNS flour had no effect on the sensory quality of noodle.

  • Three kinds of Korean food (Ramyon, bread and dried Injulmi, a kind of rice bread) and basal diet were fed to ten groups of rat with consideration of their basal metabolism and some physiological changes were checked for four months. And obtained results were as follows: 1. In the rate of growth (body weight), rats fed on combined basal diet with Ramyon (20% or 33%) were slightly superior to those of simple basal diet (control case), and rats fed simply on Ramyon, bread or Injulmi were all inferior to the control. 2. Throughout the experiment, no considerable changes in intestinal bacterial flora, liver function and kidney function were observed in all cases, as compared with the control. 3. Liver tissues and kidney tissues in all cases were identified as normal and same as those of the control.

Study on Body Composition, Biochemical Parameters, and Consumption of Convenience Foods According to ${\beta}$-3 Adrenergic Receptor Polymorphism in University Students (베타-3 아드레날린 수용체 유전자 다형성에 따른 대학생의 생화학 지표, 체성분과 편의식품 섭취실태에 관한 연구)

  • The purpose of this study was to investigate the body composition, biochemical parameters, and consumption of convenience foods according to ${\beta}$-3 adrenergic receptor polymorphism in university students. A survey was conducted on a total of 486 students - 189 males and 297 females. Based on a self-reporting method, questionnaires were administered for over 20 minutes, and ${\beta}$-3 adrenergic receptor and blood samples were also analyzed. The genotype frequencies of ${\beta}$-3 adrenergic receptor polymorphism were Trp/Trp homozygote (73.0%) and Trp/Arg heterozygote (27.0%) in male students. For the female students, the distribution of genotypes was Trp/Trp (71.0%) and Trp/Arg (29.0%). There were no differences according to biochemical parameters (ALT, cholesterol, triglyceride, HDL-cholesterol, LDL-cholesterol, and hemoglobin) or body composition. Males with TT genotype frequently ate Ramyon (2.40${\pm}$0.52), Cup Ramyon (2.37${\pm}$0.39), Kimchi (2.23${\pm}$0.61), and frozen meat (2.00${\pm}$0.44), whereas males with TA genotype ate Fries (frozen food) (1.90${\pm}$0.79), Smoked meat (1.67${\pm}$0.81), and Canned fruit (1.64${\pm}$0.81). Females with TT genotype frequently ate Frozen fries (2.21${\pm}$0.35), Kimbab (2.12${\pm}$0.44), and Ramyon (1.85${\pm}$0.40), whereas females with TA genotype frequently ate Kimchi (1.73${\pm}$0.98), Fries (frozen food) (1.46${\pm}$0.26), and Cup Ramyon (1.30${\pm}$0.34). When questioned about satisfaction about body shape, 22.8 and 60.8% of those with TT genotype answered that they were 'satisfied' or needed to 'lose weight', respectively, whereas 18.0 and 63.9% of those with TA genotype answered that they were 'satisfied' or needed to 'lose weight', respectively. In conclusion, this study found no significant effects in terms of ${\beta}$-3 adrenergic receptor polymorphism, which suggests that health-promoting education needs to be developed so that university students appropriately recognize their bodies and control their weight in desirable ways. Therefore, it is necessary to educate individuals with TT genotype how to buy reasonable foods by understanding the interrelationship between convenience foods and health care and by checking the nutrition index labels on convenience foods. Thus, it is recommended that a health-promoting program be developed for the promotion of healthy lifestyles.
