건조조건이 다른 무채말랭이 및 무채말랭이 볶음의 품질특성 (Quality Characteristics of Dried Shredded Radish and Stir-fry Dried Shredded Radish by Different Drying Methods)

  • This study investigated changes in the chemical properties and antioxidant activity of dried shredded radish (Raphanus sativus L.). Shredded radishes with a thickness of either 3.5 mm or 7.0 mm were dried using hot air at $45^{\circ}C$ or were sun dried. The degree of browning for the 3.5 mm sun dried radish, the 7.0 mm sun dried radish, the 3.5 mm hot air dried radish and the 7.0 mm hot air dried radish was 0.12, 0.14, 0.04 and 0.04, respectively. The DPPH radical scavenging activity (EDA%) of the hot air dried radish had a higher value than the sun dried radish. In contrast, the ABTS values of the sun dried radishes were higher than the hot air dried radishes. The total polyphenol content of the 7.0 mm and 3.5 mm hot air dried radishes reached high values of 15.99 and 11.62 mg/g, respectively. The total polyphenol contents of the 7.0 mm and 3.5 mm sun dried radishes were 9.63 and 6.77 mg/g, respectively. In sensory evaluation of the stir-fry dried shredded radishes, the 7.0 mm hot air dried sample scored the highest in terms of smell, color, gloss and overall preference. In conclusion, hot air drying ($45^{\circ}C$) and a thickness of 7.0 mm were found to be the optimal conditions for dried shredded radish and stir-fried dried shredded radish products.

무인기로 촬영한 무 재배지 영상의 정규식생지수(NDVI)를 활용한 병충해 분석 연구 (Analysis of Fusarium Wilt Based on Normalized Difference Vegetation Index for Radish Field Images from Unmanned Aerial Vehicle)

  • This paper compares and analyzes Fusarium wilt of radish by using an unmanned aerial vehicle(UAV) with the NDVI-7 camera. The UAV have taken near-infrared images of the Radish field in Gangwon area, which is affected by Fusarium wilt. Based on those images, we analyzed NDVI(Normalized difference vegetation index) and compared conditions of radish by using the Blue value among Regular Vegetation Index in NDVI. First, the radish field is divided into three fields for radish, soil and vinyl. Each field has separate Blue values that are radish 0.4890, soil 0.2959, vinyl -0.0605 respectively. Second, radish condition levels are divided into four stages which are normal, early, middle, and late stage of Fusarium wilt. The average values of each stage are normal 0.5165(100%), early 0.4565(88%), middle 0.3444(66%), and late 0.1772(34%) respectively. This result shows that this NDVI value is validated by measuring conditions of Radish and soil.

Relationship between texture and major components of radish

  • Radish is a common vegetable consumed in Korea, Japan, and China. Radish Breeding has been conducted based on morphological properties, such as shape and color. Recently, physicochemical properties of radish are attracting more attention from breeders to develop cultivars for the retail market. In this study, major components of radish were determined and their relationship with textural property analyzed. Sixty-six radish cultivars were selected and divided into white head (WH) and green head (GH) according to their head color. The cutting forces of GH and WH groups were $2.17{\pm}0.34kg$ and $2.31{\pm}0.36kg$, respectively (P > 0.05). The starch contents of GH and WH were $3.75{\pm}0.39g\;per\;100g$ (dry basis) and $4.24{\pm}0.62g$, respectively. Cellulose contents in both groups were similar at 12.3-12.4 g per 100 g (dry basis). Pearson correlation coefficients between cutting force, cellulose content, and starch content ranged from -0.33-0.326 which does not demonstrate any strong correlation between these components. Therefore, no relationship was found between the cutting force and the starch content or the cellulose content for the cultivars analyzed in this study. As the first intensive study on the texture and the major components of radish, these results could provide valuable information for radish breeding if further studies on taste and nutrient components are conducted.

Efficacy of Aqueous Chlorine Dioxide and Citric Acid in Reducing Escherichia coli on the Radish Seeds Used for Sprout Production

  • The efficacy of citric acid-aqueous chlorine dioxide ($ClO_2$) treatment of radish seeds artificially contaminated with Escherichia coli was studied. Radish seeds were inoculated with E. coli. Following inoculation, samples were stored at $4^{\circ}C$ and soaked in citric acid or aqueous $ClO_2$ for 10 min. The treatment of radish seeds using 200 ppm aqueous $ClO_2$ solution caused a 1.5 log CFU/g reduction in the population of E. coli. Compared to the aqueous $ClO_2$ treatment, soaking radish seeds in 2.0% citric acid solution for 10 min was more effective in reducing E. coli populations on radish seeds. The efficacy of spray application of chlorine (100 ppm) or 0.5% citric acid to eliminate E. coli during the germination and growth of radish was investigated. Radish seed inoculated with E. coli was treated for the duration of the growth period. Although it resulted in a decrease in the E. coli population, the spray application of 100 ppm chlorine during the growth period was not significantly effective. In contrast, the combined treatment of seeds using 200 ppm aqueous $ClO_2$ and treatment of sprouts with 0.5% citric acid solution during sprout growth was hardly effective in eliminating E. coli.

크롬이 무의 생육과 흡수이행에 미치는 몇가지 요인 (Several Factors on Growth of Radish and Absorption and Translocation of Chromium)

  • 우리나라에서 가장 많이 소비되고 있는 채소중의 하나인 무를 실험종으로 선택하여 토양중 크롬의 농도, 토양 pH, 공존중금속 첨가, 복토, 유기물처리의 요인을 변수로 하여 무의 생육상태 및 무에 의한 크롬의 흡수이행량 차이를 조사하였다. 무종자의 발아율은 크롬농도 50mg/kg에서는 발아에 영향이 없었으나 100% 이상이었으며, 250mg/kg에서는 63% 정도의 발아율을 나타내었다. 토양중에 처리된 크롬농도가 증가할수록 무의 초장, 근장, 건물량이 감소하는 경향이었으며 크롬농도 100mg/kg 까지는 대조구와 비슷하게 생육하였으나 크롬농도 250mg/kg에서 건물량의 약 45%의 생육저해가 나타났다. 토양 pH가 증가함에 따라 무로 흡수이행되는 크롬의 함량이 감소하는 역의 상관을 나타내었으며(줄기: $r=-0.803^*$, 뿌리: $r=-0.840^*$) Fe, Zn, Cu와 같은 공존이온 첨가시 무의 생육 및 흡수이행되는 크롬함량간에 유의성이 인정되지 않았다(줄기, 뿌리 P>0.1). 복토, 유기물처리를 하였을 경우 대조구에 비하여 생육상태가 진전되었으며, 복토처리시 무로의 흡수이행량은 큰 차이를 나타내지 않은 반면에 유기물 처리시 무로 흡수이행되는 크롬의 함량이 감소하는 경향이었다.

무와 비교한 콜라비의 성분분석 (Composition Analysis between Kohlrabi (Brassica oleracea var. gongylodes) and Radish (Raphanus sativus))

  • 무의 소비에 있어서 주된 문제점은 glucosinolate에 의한 쓴맛과 매운맛이다. 최근에 무의 문제점을 보완할 수있는 콜라비가 한국에 도입되어 제주도에서 월동재배가 이루어지고 있다. 두 작물의 식감과 맛이 비슷하여 품질을 비교 분석하였다. 콜라비의 환원당, cellulose, pectin의 함량은 무보다 낮았다. 식감은 콜라비가 무보다 더 단단한 것으로 나타났으며, 아미노산의 함량은 콜라비가 무보다 약 2.7배 정도 높았다. 특히 aspartate, glutamate, arginine과 같은 수용성 유리 아미노산의 함량이 무보다 콜라비에서 3배 정도 높게 나타났다. 총 glucosinolate 함량은 콜라비가 무의 내부 보다 12.4배, 외부 보다 28.5배로 각각 낮았다. 관능평가에서 콜라비의 쓴맛과 매운맛이 무보다 적게 나타났다. 항암성분으로 알려진 glucoraphanin은 무 보다 콜라비에 더 많이 함유되어 있는 것으로 나타났다. 콜라비의 환원당 함량이 무에 비해 적음에도 불구하고 관능평가에서 무보다 콜라비가 더 달다는 결과가 나왔다. 이는 무보다 콜라비가 더 많은 수용성 유리 아미노산을 함유하기 때문일 것이라 생각된다. 결과적으로 콜라비는 맛과 기능적인 면에서 무보다 높게 나타나 소비가 증가될 것으로 예상된다.

과육이 포함된 무즙으로 반죽한 국수의 품질특성 (Quality Characteristics of Noodle Added with Radish Juice Containing Pulp)

  • Purpose: This study was to investigate the quality characteristics of wet noodle added with radish juice containing with pulp. Methods: Wet noodles were prepared with different amounts of radish juice (0%, 20%, 40%, 60%, 80%, 100%, w/w) instead of water. Results: As the amount of radish juice was increased, water absorption, volume increasing rate, and turbidity of soup were decreased. Lightness (L) values of uncooked wet noodles and cooked noodles were decreased with the addition of radish juice, while redness (a) and yellowness (b) values had no tendency of increasing or decreasing, regardless of the amount of radish juice. Moreover, lightness, redness, and yellowness values of uncooked noodles were higher than those of cooked noodles. The texture of cooked noodles showed significant differences in hardness and chewiness. It was increased as the amount of radish juice was increased. Their adhesiveness and springiness were lower than those of the control. Appearance, texture, and overall acceptability of sensory evaluation revealed that the noodle added with 80% of radish juice had the highest scores, although there were no differences among noodles added with different amounts of radish juice. Conclusion: In summary, the most desirable blending ratio of radish juice and water for the kneading of wet noodles was 80:20.

항 곰팡이 단백질 유전자 분석에 의한 국내 무 품종간 유연성에 관한 연구 (Study of Distance Relationships among Domestic Radish (Raphanus sativus L.) by Analyzing its Anti-fungal Protein Gene.)

  • 국내 시판 무 (Baekwoon) 의 씨앗으로부터 항 진균 단백질들을 (RAP-l,2)분리 하였으며[12] 이들 항 진균 단백질을 MALDI-TOF실험결과, 2S storage albumin, Rs-AFP등 지하부 식물의 defensin protein과[15] 일치함을 확인하였고 이에 시판되는 7종의 각각의 무 씨앗으로부터 조 단백질과 Total RNA를 분리 하여 항 효모 (Saccharomyces cerevisiae, Candida albicans.) 및 항 곰팡이 (Botrytis cenma)에 대한 항 진균성을 실험한 결과 항 곰팡이 활성은 모든 품종에서 보였으나 항 효모 활성은2 종 (Myungsan, Baekwoon) 의 무에서만 보였 다 . 또한 기존에 알려진 항 진균 단백질 (Rs-AFP)의 유전자를 Gene Bank/EMBL 에서 획득하여 씨앗으로부터 분리한 Total RNA 에 RT-PCR 한결과, 7종 중 2종은 0.2kb 의 산물이 보이지 않았다. 이들 Ks-AFP 유전자산물을 염기서열을 분석하였으며 이 염기서열에서 얻어진 아미노산 서열을 Clustal W를 이용한 pairwise alignment 분석에 의해 국내 시판 무 의 품종간 각clone의 계통수를 분석한 결과를 보고한다.

저온과 Polyamine 처리에 의한 봄무우와 가을무우 자엽과 상배축에서 당류와 총 아미노산 분석에 관한 연구 (Analysis of sugars and total amino acids-content of young spring and fall-radish cotyledons and hypocotyls by cold and polyamine-treatments)

  • 몸무우의 자엽에 저온과 polyamine(PA)을 처리하면 세포내의 환원당과 설탕의 농도가 증가되었고, 가을무우의 자엽에 저온처리를 하면 환원당과 설탕의 농도가 증가되나, 저온과 PA를 동시에 처리하면 세포내에 당류의 농도가 증가되지 않았다. 몸무우 자엽에서는 저온처리에 의해 총 아미노산의 농도는 증가되나, 가을무우에서는 증가되지 않았다. 이 결과는 저온에 예민한 봄무우는 세포내의 삼투조절에 의하여 적응하며, 봄무우와 가을무우 사이에 생리 및 생화학적인 대사가 다름을 보여 주었다. 저온에 예민한 봄무우에서 PA는 저온처리와 함께 상승효과를 보이나, 저온 스트레스에 강한 가을무우에서는 PA 처리로 상승효과를 나타내지 못함은 처음 보고 하는 결과이다.

  • Distribution of $P^{32}$ in a pot-grown plant of the radish was studied by means of fertilization with phospbate labeled with $P^{32}$ followed by autoradiography of the dried parts. (1) An accumulation of $P^{32}$ occurs in the growth point, the root of hair, the younger leaves and the top of leaves in the radish similary other plants. (2) In the yellow leaves of the radish it was counted too weak by monitor. (3) $P^{32}$ absorbed by the root in radish was transported through the xylem of the radishtissue.
