즉석섭취식품 소비자의 구매선호도와 만족도 조사 (A Survey on Preference and Satisfaction of the Customers Purchasing Ready-to-Eat Foods)

  • This study was executed in order to analyze the purchasing practices, preferences, and satisfaction of consumers purchasing ready-to-eat foods. The study was executed from the $20\;May{\sim}30\;June$ 2007 in the Daegu and Gyeongsangbuk-do area. Questionnaires were distributed among 480 people. Of these, 410 questionnaires were collected and applied to a statistical analysis. Statistical analyses were conducted using the SPSS package program (version 14.0 for windows). The results of the statistical analyses were as follows. 42.4% males and 57.6% females participated in this study. The biggest motivation behind the purchase of ready-to-eat foods was convenience, 51.0%. The most common venues where these foods were purchased were supermarkets or discount marts, 67.6%. The ratio of substituting ready-to-eat foods for meals was 70.5%. The consumption practices of ready-to-eat foods of the consumers according to purchase place illustrated significant differences in the average expense per person each time (p<0.01), co-consumer (p<0.001), and age (p<0.05). The purchase preference was high with kimbaps (73.4%), hamburgers (29.8%), sushis (29.0%), and sandwiches (27.9%). Unmarried individuals showed a significantly higher overall liking and satisfaction for ready-to-eat foods than married individuals (p<0.001). Individuals living without a family was significantly higher overall liking and satisfaction than individuals living with a family (p<0.05). Individuals who spent an average of 10,000 won per time showed a significantly higher overall liking and satisfaction than those who spent below 10,000 won per time (p<0.05). In the presence of a friend as a co-consumer of ready-to-eat foods, satisfaction was significantly high (p<0.01). Consumers who purchased ready-to-eat foods at meal times, showed a significantly higher overall liking, compared to those who purchased such food products in between meal times (p<0.01). The preference and satisfaction degree of the consumer must be reflected by product development, quality improvement and marketing plan establishment.

친환경 유기농 식품을 활용한 한식 건강 메뉴의 이용 실태 및 선택 속성의 중요도 연구 -성별을 중심으로- (Study on Actual State and Importance of Selection of Healthy Korean Food Menu Items Made from Environmentally-Friendly Organic Foods - Focused on Gender-)

  • Research on the actual state of healthy Korean food menu items made from environmentally-friendly organic foods showed that 65.6% of subjects had experience of purchasing environmentally-friendly organic foods, and both genders chose 'expensive but reliable' as their prime reason for purchasing. Having no experience of purchasing environmentally-friendly foods constituted 34.5% of respondents, and the reasons were 'high price' and 'finding no difference from ordinary food'. Research on awareness of healthy Korean food menu items made from environmentally-friendly organic ingredients showed that both men and women thought the given menu items were 'fresh' but had little awareness of other factors such as 'good value for price', 'good visual style' and 'various recipes'. Regarding development prospective of environmentally-friendly organic foods, the number of subjects who answered positively was 405 (93%), which indicates that most research subjects showed positive attitudes. Top-selling menu items in the grain section were Sundubu-jjigae, Dubu-kimchi and Jeonju-bibimbap, and pajeon took first place in the vegetable selection. Moreover, Imjasu-tang showed high scores in the meat section. Furthermore, research on menu selection showed that menu selection was usually dependent on 'the price of menu (3.86)', 'fresh ingredients (4.03)', 'harmony of color (3.65)' and 'mood of the day (3.25)'. Research on menu selection revealed that 'quality of food' factors had the greatest influence upon preference and purchase intention for environmentally-friendly organic foods. Visual and psychological factors and values had significant an effect. Therefore, the food service industry should use this study as a source to develop menu items, by considering quality and visual factors. In addition, there should be various research performed on marketing strategies about menus from using environmentally-friendly organic foods and high value products.

  • 외식시장의 새로운 판매방식으로 나타난 소셜커머스는 도입 이후로부터 꾸준히 성장하고 있다. 소셜커머스 시장에서 판매되는 쿠폰 중 50%이상이 외식상품으로, 외식기업에서는 할인판매 방식인 소셜커머스를 마케팅의 도구로 활용하고 있다. 그러나 이러한 시대적 배경에도 불구하고 소셜커머스와 외식소비자를 연계한 연구는 매우 미흡한 실정이다. 따라서 본 연구는 소셜커머스를 이용하여 외식상품을 구매한 경험이 있는 소비자를 대상으로 소셜커머스 구매특성 요인들을 선행연구를 통하여 선정하고 이러한 구매특성이 고객만족과 충성도에 미치는 영향에 대하여 분석함으로써 외식기업이 소셜커머스를 이용하는데 있어 활용할 수 있는 방안을 제시하고자 하였다. 연구를 위한 설문지는 총 300부가 사용되었고 분석은 구조방정식 모델을 통해 진행되었다. 분석결과, 소셜커머스 구매특성인 가격할인, 다양성제공, 상호작용성, 브랜드 친숙도 중 가격할인과 브랜드 친숙도가 고객만족과 충성도에 유의한 영향을 미치는 것으로 나타났다. 따라서 외식기업은 소셜커머스 활용에 있어서 가격할인 전략과 브랜드 친숙도를 이용한 차별화된 마케팅 전략이 필요하다고 할 수 있다.

주부의 더덕 소비실태 및 기호도 조사 (A Study on the Consumption and Preference of Codonopsis Lanceolata by Housewives)

  • In this study, a survey was conducted to analyze the preference and conditions of consumption. A survey of 299 housewives from Seoul and the metropolitan area analyzedthe preference and the conditions of consumption, the general backgrounds and the actual state of diet and health management. According to the survey on the preference of Codonopsis lanceolata, 52.8% answered a traditional market place as the place they most commonly purchased Codonopsis lanceolata. When purchasing Codonopsis lanceolata, 49.2% purchased unwashed. For the frequency of intake, 38.5% of the housewives surveyed answered 1-2 times per year and 38.5% perceived Codonopsis lanceolata a very healthy food. Among the subjects, 46.2% answered their spouse as the person who most likes Codonopsis lanceolata in the family. Regarding the question of why they preferred Codonopsis lanceolata, 39% answered because it was healthy., compared to 36.0% who answered high cost as the reason why they did not prefer Codonopsis lanceolata. Codonopsis lanceolata preference showed a notable difference according to age, average income, interest in health, and intake frequency (p<0.01).

녹차소비자의 추구편익과 선택속성의 관계 (Canonical Correlations between Benefit Sought and Selection Attributes of Green Tea Consumers)

  • This study aims to investigate relationships between benefit sought and selection attributes of green tea consumers. For data collection, a total of 595 copies of questionnaires were collected by convenience sampling in the Seoul and Gyeonggi-do area. The data were analyzed by using SPSS 15.0. The factor analysis identified four dimensions of the benefit sought : health benefit, sensory, sociality, and self-esteem. Six dimensions of selection attributes were identified as manufacturing, design, sensory appeal, recommendation, utility and brand. The results of the canonical correlation analysis indicated that health benefit, sensory, sociality of benefit sought and manufacturing, design, sensory appeal, recommendation, utility, brand of selection attributes were highly correlated, and the self-esteem of benefit sought and recommendation of selection attribute were highly correlated. This means it is important to place an emphasis on safety production, package design, sensory characteristics, product description, utility and brand for consumers who seek health benefit, flavor and sociality. It is also important to place an emphasis on product description for consumers who pursue self-esteem benefits. Green tea marketers should consider benefit sought aspects as the most important factors affecting selection attributes on green tea purchasing.

도시 및 농촌 거주 주부의 식습관에 관한 연구 (A Study on the Food abits of Housewives Living in Urban area and Rural Area)

  • The purpose of this study is to collect basic data which will be effective in performing nutrional education. This study was conducted at Taegu area and adjacentrural area from June to July in 1986. The completely answered questionnaires were analyzed for food habits, purchase of food, the sources of nutrition information and general characteristics of housewives of 20's to 50's. The results obtained are summarized as follows ; 1) The major food of breakfast was boiled rice (93.9%). With decreasing level of education and in rural area, the percent of boiled rice was higher. 2) The frequency of eating out with family is higher in urban area, younger age, and nuclear family. 3) The preference for eating between meals appeared in order of bread and cakes, cookies, and the others. 4) The preference for desserts appeared in order of fruits, coffee, the other, coarse tea, adlay tea, and gingseng tea. 5) The purchasing place for vegetables and fruits was market (53.5%) on the whole, but in rural area, the percent of self production was higher (63.6%). 6) With increasing age and decreasing level of education, the percent of accuracy of nutrition knowledge was lower. 7) Sources in the knowledge of nutrition appeared in order of Radio and T.V., relatives, cookbooks, newspapers and magazines, lectures in cooking school. In order to promote nutritional status of family, nutritional education for housewives must be accomplished in the first place.

부산지역 학교급식의 위생관리 수행 평가 (The Sanitary Management Procedures of Foodservice in Elementary Schools in Pusan)

  • The purpose of this study was to investigate the sanitary management procedures of foodservice in elementary schools in Pusan area. The questionnaire which were administered to 189 dietitians was used in this study as a survey method. The results were as follows. Mean total length of employment for dietitians at school foodservice was 3.7 year. The mean serving scale was 1,052 meals. Meals were served at classroom 63.5%, lunchroom 23.8%, and classroom+lunchroom 12.7% of the schools. The mean time span required of meal delivery was 31.5min at the classroom serving place. Regarding total mean score of sanitary management procedures, time temperature was 3.48/5.00, personal sanitation 4.20/5.00, equipments and facilities sanitation 3.92/5.00. The mean score of the pre preparation was 3.91/5.00 for time temperature management procedure, those of food purchasing and receiving, food storage, food production, meal. assembly.trasnportation service, and hot.cold holding were 3.83/5.00, 3.82/5.00, 3.71/5.00, 3.25/5.00, 2.30/5.00 respectively.   • The purpose of this study explores the meaning of shopping and shopping behavior of consumer under the perception of time pressure. In this study, qualitative methods such as participation observation, depth interview, focus group interview were used. The major findings are as follows : First, consumer under the perception of time pressure defined shopping is mainly' grocery purchasing'. Second, they go shopping on weekend, in familiar store and buy the same kind of goods. Like this, their shopping patterns appear fixed type. Third, this study ascertained proposed time management strategies applied to shopping. Finally, a place of residence, driving or not, house helper, children and standard of family influence on consumer's shopping behavior additionally.

  • The purpose of this study was to investigate and offer useful information on natural dyeing underwear industry through an analysis of 20's purchasing behavior and design preference between male and female. From 600 questionnaires that were distributed, 512 with usable data were coded for further statistical analysis including descriptive statistics(frequency and chi-square test), by using SPSS 12.0 and the major results were as follows. Given that a large number of 20's purchase men's underwear by their parents, and women's of their own. It was found that the underwear for men in their 20's should be developed in an attempt to place greater emphasis on improving functions as an outerwear. It is important to strengthen the design and marketing strategy specially tailored to 20's of natural dyeing underwear products.

서울지역 성인들의 비타민.무기질 보충제 섭취 실태에 관한 연구 (The Experience of Nutrient Supplement Use among Adults in the Seoul Area)

  • This study examined the experience of vitamin/mineral supplement among adults in Seoul. Using a self-completed questionnaire including demographic information and use of vitamin/mineral supplement, 618 participants completed the study. The majority of respondents were female (72.2%), 40~49 years old (42.2%), and over college graduates (53.4%). Among the 618 respondents surveyed, 56% had experience of supplement use. The reasons for vitamin/mineral supplement use were health maintenance (56%), fatigue recovery (18%), disease prevention (8%), disease treatment (8%), and nutrition (8%) in order. The main considering factors for selecting vitamin/mineral supplement were side effect, cleanliness and reliability of company. The information sources for vitamin/mineral supplement were physician/pharmacist (45%), TV & advertisement (29%), family and relatives (19%). The main purchasing place for their supplement reported by the most of the respondents (84%) was from pharmacy.
