The analyses of relationship between specific genes and economic traits were performed on the basis of the genetic characterization of Korean native chicken in this study. Three generation reference pedigree was established from the several lines of Korean native chicken and cornish breed for the linkage analysis and many economic traits were collected for QTL(quantitative trait loci) detection. The experimental design were planed to detect QTLs of meat quality and laying performance from those two distinctive breeds.
A great progress in genetic selection, nutrition and management practices has contributed to the improved growth rate of broilers and egg production in laying hens. For the increased productivity of modern poultry, a healthy chicken liver needs to cope with the increased metabolic demands. The liver is the major site of de novo fatty acid synthesis; therefore, hepatic lipogenesis is crucial for producing better quality meat and eggs. When de novo lipogenesis exceeds the capacity of lipid metabolism and secretion, large amounts of lipids accumulate in the liver of broilers, leading to a fatty liver. Upon onset of egg-laying in hens, lipids including free fatty acids, triglycerides, and phospholipids are dramatically increased in blood plasma for the synthesis of yolk precursors in oocytes. Productive hens with fatty liver often have hemorrhagic syndrome and sudden death due to the heavy demands of yolk synthesis, which burdens the liver. Understanding the lipid metabolism and hepatic lipid disorders is a key point in the improvement of the growth and production of chickens. This review focuses on the recent studies on lipid metabolism, the hepatic lipid disorders, and the prevention or reduction of fatty liver in poultry.

In order to develop a sensitive and reliable method for the species-specific molecular markers, PCR-RFLP assay of the mitochondrial DNA(mt DNA) 12S rRNA gene was exploited for the identification of the origin of animal meat species including cattle, pig, sheep, goat, horse, deer, chicken, duck and turkey. A specific primer pairs were designed, based on the nucleotide sequences of mt 12S rRNA gene, for the amplification of the highly conserved region in the gene of the animal species using PCR-RFLP technique. mt DNA was isolated from meat samples followed by DNA amplification using PCR with the specific primers. PCR amplification produced an approximately 455 bp fragment in each of these animal meats. To distinguish pleat species, the PCR amplicons were digested with restriction endonucleases Tsp5091 and MboI, respectively, which generates distinct RFLP profiles. The DNA profiles digested with Tsp5091 allowed the clear discrimination in the mammalian meat species and the DNA profiles digested with MboI in poultry meat species. Therefore, the PCR-RFLP profiles of mt 12S rRNA gene could be very useful to identify the origin of the raw materials in the raw meats as well as the processed meat products.

A total of 720 slow-growing Korean meat-type (Hanhyop 3) chicken were used to evaluate the effect of stocking densities and dietary protein levels on growth performance, meat quality, bone mineral composition, and serum corticosterone. Three (6.3, 9.5, and $12.6birds/m^2$) stocking densities and two dietary protein levels (19% and 18%) were factorially ($3{\times}2$) arranged for six treatments. Overall body weight gain (BWG) was highest (p<0.001) at the lowest stocking density ($6.3birds/m^2$). The feed intake (FI) of birds at the highest density ($12.6birds/m^2$) was lower than that of birds at the other densities, but resulted in better feed/gain (F/G). Among 18% protein groups, the overall FI of birds at $9.5birds/m^2$ was higher than that at the lowest density; therefore, birds at $9.5birds/m^2$ had poorer F/G than birds at the lowest density during days 61~75. Difference in F/G among densities was only significant (p<0.05) during days 61~75 but not significant (p>0.05) during days 41~60. Although there were no significant differences (p>0.05) in BWG and F/G between 19% and 18% dietary protein levels, FI of the 18% protein diet was less (p<0.05) than that of the 19% diet. Although there was no difference (p>0.05) in meat TBARS values, meat color differed (p<0.05) with stocking density and dietary protein levels. There was no effect (p>0.05) of stocking density and dietary protein levels on bone mineral composition. Serum corticosterone concentration increased (p<0.05) with increasing stock density but was not affected (p>0.05) by dietary protein levels. This study indicated that a density of $12.6birds/m^2$ is not recommended for slow-growing chickens. Between 19% and 18% dietary protein levels, 18% would be recommended for the Korean Hanhyop 3 chicken in the finishing stage.
This study investigated the effects of dietary supplementation of fermented apple pomace (FAP), fermented pear pomace (FPP), fermented orange pomace (FOP), and fermented Angelica keiskei Koidz pomace (FAKP) on performance, shelf life, fatty acid composition and cholesterol in broiler chickens. A total of 600, 1-day-old male broiler chicks (Cobb strain) were randomly divided into six groups with four replicates of 30 birds each. There were five treatment groups: control (C), FAP (1.0%, T1), FPP (1.0%, T2), FOP (1.0%, T3), and FAKP (1.0%, T4). The body weight of the broiler chickens fed FAP diet was higher (1,758 g) than the other treatments. There was no difference in the thiobarbituric acid reactive substances (TBARS) in chicken meat between all groups at days 1, 3, and 5 of storage, while the FAP-supplemented group displayed lower TBARS values at day 7. There was no significant difference in fatty acid composition between the groups but the cholesterol content of chicken meat was lower than the control groups. These results suggest the possibility that FAP could be used as a functional feed to improvement the quality performance of broiler chickens.
An experiment was conducted to study the performance and carcass characteristics of Hanwoo steers fed whole crop corn silage ensiled with poultry manure (PM) for 18 months. The experiment was designed as a randomized block design with three phases. Steers were allotted in one of three dietary treatments, which were ammonia-treated rice straw (AS), whole crop corn silage (CS) and whole crop corn+30% PM silage (based on DM; MS). All diets were supplemented with concentrate. Total body weight gain and average daily gain (ADG) in MS group were increased (p<0.05) by 6% over AS group. The MS treatment enhanced (p<0.05) total and daily intakes of forage compared with the AS and CS treatments while there was compensatory effect on concentrate intake by AS group. Carcass characteristics were improved by feeding MS. MS increased (p<0.05) carcass weight and marbling score (7.5 and 22.5% of AS, respectively), and reduced (p<0.05) backfat thickness (13.2 of AS and 16.6% CS). Carcass grade and meat quality grade were also improved by MS compared with AS and CS. Under the conditions of this study, MS was an efficacious replacement for corn silage for steers.
The demand for traceability of meat and livestock supply chains is growing due to the high-profile incidents of hormonal contamination. E. coli, dioxin, BSE, and antibiotics have been recorded. In this paper, we present blockchain-based poultry information management system design and implementation using Hyperledger Fabric. The proposed system offers accurate, decentralized, immutable and consensus process that promote trust and transparency between stakeholders. The main tasks of the system include the recording of the information associated with poultry rearing (from a hatchery to a farm), status report of the farm activities on a monthly basis. The system can track movement of docks through the supply chain until delivery to the final consumer through the retail outlet. The ability to trace the source of livestock product through all the stages of rearing/production, processing and distribution is essential for ensuring food safety as recall of contaminated product can easily be done thereby increasing consumer confidence.

The study determined the effects of stock density (SD) and energy level (EL) on growth performance, serum biochemistry, and meat quality in Korean native chickens. A total of 240 chickens were randomly assigned to one of the four treatments including two stock density (low, 14, and high, 16 chickens per m2) and two energy level (low, 2,950, 3,000, 3050 ME kcal/kg, and high 3,150, 3,200, 3,250 ME kcal/kg, for starter, grower, and finisher, respectively). During the whole period of the experiment, the chickens were fed ad libitum. The greater final body weight and weight gain were achieved in chickens fed high energy diet, whereas the final body weight and weight gain were significantly reduced in high-density treatment compared with the low density. Chickens in low-density groups had a higher feed intake compared with high-density treatment, however, the energy level did not affect the feed intake. An improved overall feed conversion ratio was detected in the high energy treatment. There was a significant interaction between stock density and energy level on cholesterol concentration. The concentration of aspartate transaminase in serum was increased by higher stock density. There was a significant treatment interaction on IgM levels. Moreover, the carcass rate was significantly increased in the high energy level treatment. Based on the findings, we suggest that rearing chickens in low density with high dietary energy levels could be beneficial by improving the growth performance.

An experiment was conducted to investigate the effects of dietary supplementation of feather meal (FM its) digests on the performance of broiler chicks and taurine content in broiler meat. A total of 1,000 broiler chickens were assigned to five dietary treatments : Control, FM diet(FM), FM+pyridoxine(FM+Pyridox), H$_2$O$_2$ treated FM diet(H$_2$O$_2$-FM) and enzyme treated FM diet (Enzyme-FM). Treated diets were supplemented with FM or FM digests at the level of 5 % to the control diet. During the stater period, weight gain of chicks fed FM+Pyridox was significantly higher(P<0.05) than those of the other FM or FM digest treatments but was not different from the control. Weight gam of overall period were not significantly different among treatments. Feed intake of the control was greater than that of FM or FM digest treatments. Feed conversion ratio(feed intake/gain) of chicks fed FM and H$_2$O$_2$-FM were significantly higher than those of Enzyme-FM and FM+Pyridox, but were not significantly different from the control. Taurine contents of leg and breast mucle were significantly (P<0.01) different among treatments but those of liver were not significantly different. Taurine content of FM+Pyridox was highest in both leg and breast muscle. It was 85 % higher in leg muscle and 15 % higher in breast muscle than that of the control. Sensory evaluation data showed significant but not consistant responses in various parameters. FM + Pyridox treatment showed highest score in aroma of raw leg muscle of male and in juiciness and tenderness of broiled breast muscle of male chickens. Control group showed highest color score in raw leg muscle of female and lowest overall acceptability score in broiled breast and leg muscle of male chicken. It is concluded that taurine can be enriched especially in broiler leg meat by 5 % FM diet supplemented with pyridoxine.
The applicability of electronic nose was tested to detect lipid peroxidation in chickens and to measure antioxidant effect of astaxanthin in chicken carcasses. Two sources of astaxanthin were fed to 62-wk-old spent laying hens to improve meat quality: natural astaxanthin (NA) from the red yeast, Phaffia rhodozyma, and synthetic astaxanthin (SA) from chemical synthesis. One hundred forty four ISA Brown laying hens were used in a 6-wk feeding trial. Three treatments consisted of the basal diet (control), SA (100 mg astaxanthin/kg basal diet) and NA (50 mg astaxanthin/kg basal diet). The astaxanthin levels of SA and NA were set to give a similar degree of skin pigmentation. After 6-wk feeding of astaxanthin, the skins from NA and SA were discriminated from the control by electronic nose. However, electronic nose failed to distinguish between SA and NA skins after 6-wk feeding. The astaxanthin level differences between skins of SA and NA were not remarkable during the 6-wk trial. The lipid peroxide formation in skin was significantly decreased by SA but not by NA. The antioxidation effect of SA was detected by electronic nose because SA skin was discriminated from others. NA was a better pigmentation agent than SA, but the reverse was true in antioxidation. Electronic nose is applicable for detecting astaxanthin in chicken, and meat off-flavor caused by lipid peroxidation during storage.
