Seed Germination of Gastrodia elata Using Symbiotic Fungi, Mycena osmundicola

  • The germination rate and longevity of seeds of Gastrodia elata Blume have been observed for 48 weeks using Mycena osmundicola strain H-21, one of fungi stimulating seed germination. Storage condition of post-harvest seeds was observed in the different temperature ranges of $-30^{\circ}C,\;-5^{\circ}C,\;5^{\circ}C\;and\;30^{\circ}C$ for 48 weeks. After storage period of 48 weeks, the germination rate of G elata was 65.7% at $5^{\circ}C$ and 71.6% at $-5^{\circ}C$, respectively. Although the germination rate of G. elata was 77.3% for 11 weeks at $25^{\circ}C$, the germination rate had been decreased gradually to 49.3% at 13 weeks, 0.3% at 23 weeks and then 0% at 25 weeks. The germination rate was reached to the level of 10% for 2 weeks at $-30^{\circ}C$ and then decreased to 0%.

The relationship between carbon dioxide, crop and food production index in Ghana: By estimating the long-run elasticities and variance decomposition

  • The study estimated the relationship between carbon dioxide, crop and livestock production index in Ghana: Estimating the long-run elasticities and variance decomposition by employing a time series data spanning from 1960-2013 using both fit regression and ARDL models. There was evidence of a long-run equilibrium relationship between carbon dioxide emissions, crop production index and livestock production index. Evidence from the study shows that a 1% increase in crop production index will increase carbon dioxide emissions by 0.52%, while a 1% increase in livestock production index will increase carbon dioxide emissions by 0.81% in the long-run. There was evidence of a bidirectional causality between a crop production index and carbon dioxide emissions and a unidirectional causality exists from livestock production index to carbon dioxide emissions. Evidence from the variance decomposition shows that 37% of future fluctuations in carbon dioxide emissions are due to shocks in the crop production index while 18% of future fluctuations in carbon dioxide emissions are due to shocks in the livestock production index. Efforts towards reducing pre-production, production, transportation, processing and post-harvest losses are essential to reducing food wastage which affects Ghana's carbon footprint.

  • To investigate the effect of several bactericides and fungicides against fruit & vegetable decay grapefruit seed extract(GFSE) was tested in a dilution solution. GFSE was shown to be effective against decay and rind breakdown and to extend the shelf-life of fruits and vegetables during storage and tiansport. Antimicrobial efficiency of GFSE on a wide spectra of gram + & - bacteria, moulds and yeasts was demonstrated by the measurement of minimal inhibitory concentrations performed (Bacteria 10-500ppm, Fungi:250-1,000ppm, Yeasts:100-250ppm). GFSE was separated and extracted into water-soluble fraction, water-insoluble and non-dialyzed fraction to isolate the antimicrobial substances. The water-soluble fraction showed the most active antimicrobial effect. The antimicrobial substances were isolated by gas chromatography. As the result of the isolation using GC, Peak-D was found to be the antimicrobial compound in GFSE. The identification of the most antimicrobial substance was carried out by using GC-MS.

Strengthening Food Security through Food Quality Improvement - Focus on Grain Quality and Self-Sufficiency Rate

  • The concern about food security is rising as the unstable situation of food supply and demand due to the Covid-19 pandemic, climate change, and turbulent political situation. Korea's global food security index (GFSI), analyzed by the Economist Group, is considered good, but the level continuously decreases in comparing food security levels by country. In particular, Korea is highly dependent on food imports, and food and grain self-sufficiency rates continuously decrease. Therefore, increasing those rates to strengthen food security is urgent. Among the major grains, the self-sufficiency of wheat, com, and soybeans, except rice, is relatively low. Unlike the decrease in the annual rice consumption, the annual wheat consumption has been continuously maintained or increased, which is required public-private efforts to increase the self-sufficiency rate of wheat. Applying the government's policies implemented to increase the self-sufficiency rate of rice in the past will help increase the self-sufficiency rate of wheat. In other words, expanding wheat production and infrastructure, stabilizing supply and demand, and establishing a distribution system can be applied. However, the processing capability of wheat and rice is different, which is necessary to improve wheat quality and processing technology to produce consumer-preferred wheat-based products. The wheat and flour quality can be improved through breeding, cultivation, post-harvest management, and milling. In addition, research on formulation, processes, packaging, and storage to improve the quality of wheat-based products should be done continuously. Overall, food security could be strengthened by expanding wheat production and consumption, improving wheat quality, and increasing wheat self-sufficiency.

Temperature determines post-harvest quality of spinach leaves after gamma irradiation

  • The relative importance of radiation dose, storage time, and temperature in radiation processing of spinach (Spinacia oleracea L.), was evaluated in terms of the postharvest quality through a model study using leaf disks. Physiological activity and chlorophyll and carotenoid contents were measured to represent the postharvest quality (in terms of external appearance) of spinach, a leafy green vegetable. At $22^{\circ}C$ and $30^{\circ}C$, the higher gamma-radiation dose caused a greater decrease in the physiological activity, depending on the storage time of 4 d. However, this decrease was not significant at $4^{\circ}C$ and $15^{\circ}C$. Total chlorophyll and carotenoid contents were substantially decreased by 3 kGy at $15^{\circ}C$, and dose-dependently by 0.5-3 kGy at $22^{\circ}C$. In contrast, the proportion of lutein in total carotenoid was significantly increased in the 2-3-kGy samples only at $22^{\circ}C$, while that of ${\beta}$-carotene was slightly decreased, indicating progression of leaf aging. These data suggest that the unfavorable effect of gamma irradiation on the postharvest quality of spinach could be avoided or controlled by the storage time or temperature rather than the radiation dose. The current study could be available to improve radiation processing of other leafy green vegetables.

Hydrolysis of Isoflavone Glucosides in Soymilk Fermented with Single or Mixed Cultures of Lactobacillus paraplantarum KM, Weissella sp. 33, and Enterococcus faecium 35 Isolated from Humans

  • Lactobacillus paraplantarum KM (Lp), Weissella sp. 33 (Ws), and Enterococcus faecium 35 (Ef) were used in single (Lp, Ws, Ef) or mixed cultures (Lp+Ws, Lp+Ef, Ws+Ef) for soy milk fermentation ($37^{\circ}C$, 12 h). After 12 h, the cell numbers, pH, and TA of soymilk were $7.4{\times}10^8-6.0{\times}10^9CFU/ml$, 3.8-4.5, and 0.59-0.70%, respectively. Changes in the contents of glycitin and genistin in soymilk fermented with Ef were not significant. The contents of isoflavone glucosides in soymilk fermented with the other cultures decreased significantly with an increase of aglycone contents (p<0.05). It corresponded well with a sharp increase in ${\beta}$-glucosidase activity during fermentation. About 92-100% of the daidzin and 98-100% of the genistin in soymilk were converted to corresponding aglycones by Lp, Ws, or Lp+Ef within 12 h.

Effect of Surface Dielectric Barrier Discharge on the Physiological Activities of Quercetin

  • In this study, using the surface dielectric barrier discharge (DBD) produced at atmospheric pressure to improve the physiological activities of quercetin was investigated. Quercetin (at 200 ppm) was treated using air DBD with an input power of 250 W. The tyrosinase inhibition effect and total phenolic content of quercetin increased from 38.96 to 91.58% and from 134.53 to 152.93 ppm, respectively, after 20 min of plasma treatment. The antioxidant activity of quercetin treated for 20 min in the lipid models was higher than that of quercetin treated for 0, 5, and 10 min. Furthermore, plasma-treated quercetin exhibited antimicrobial activity against Listeria monocytogenes, Salmonella Typhimurium, and Staphylococcus aureus, whereas activity was not shown in the control. Structural modifications of the quercetin molecule induced by plasma might be responsible for the improvements in its physiological activity. These results indicate that DBD plasma could be used to enhance the physiological activity of quercetin for various applications in food.

무산소 처리에 의한 감마아미노뷰티르산(γ-Aminobutyric Acid) 함량이 높은 뽕잎차의 제조 (Development of Mulberry-leaf Tea Containing γ-Aminobutyric Acid (GABA) by Anaerobic Treatments)

  • 다량의 ${\gamma}$-aminobutric acid (GABA)를 함유한 뽕잎차를 제조하기 위해 뽕잎을 채취하여 진공 및 질소가스 치환의 방법으로 12시간 무산소 처리를 하였다. 이후 차를 제조하고 GABA 및 그밖의 주요 성분의 함량 변화를 측정한 결과 뽕잎에 질소 가스 치환처리 및 진공처리를 한 실험군 모두 GABA의 함량이 현저하게 증가하였고(436-472%) 글루탐산은 감소하였다. 일반성분 및 수용성고형물은 거의 변화가 없었으며, 유리당, 카테킨 및 총페놀 함량이 다소 감소한 것으로 나타났다. 뽕잎을 무산소 처리하는 두가지의 방법 즉 질소 가스 치환처리와 진공처리를 비교했을 때 GABA와 주요성분의 함량은 거의 차이가 없었다. 관능평가에서 무처리군과 질소가스, 진공처리군 간에 차이가 없어 무산소 처리를 해도 기호성이 저하되지 않았다. 채잎후 무산소 가공 처리를 하고 뽕잎차를 제조하는 것은 관능적인 품질을 유지하면서도 뽕잎차의 기능을 향상시킬 수 있는 효과적인 방법이라 판단된다.

Identification of Microorganisms in Duck Meat Products Available in Korea and the Effect of High Hydrostatic Pressure

  • The objective of this study was to investigate the microbial count of duck meat and duck meat products commercially available in Korea. High hydrostatic pressure (HHP) treatment was applied at 0.1, 300, 400, and 500 MPa for 5 min to enhance the microbiological safety of duck meats. The levels of total aerobic bacteria were in the ranges of 3.53-6.19 and 3.62-6.85 Log CFU/g in raw and smoked duck products, respectively. By DNA sequence analysis, we identified microorganisms responsible for spoilage, with the most common species in the raw and smoked duck products being Aeromonas spp. or Pseudomonas spp. and Leuconostoc mesenteroides, respectively. HHP treatment significantly reduced the levels of total aerobic bacteria in raw and smoked duck products. This study demonstrates that HHP treatment may be used to effectively improve the safety of raw and smoked duck meat products.

문화와 과학의 융합적 관점에서 본 전통음식의 역사 및 미래 (Traditional Foods: Historical Perspectives and Future Prospects)

  • Traditional cuisine reflects cooking traditions shaped by political, economic, social, cultural, and environmental conditions characterized by authenticity and uniqueness. Traditional food is not only a part of our cultural heritage but also a knowledge resource. Application of food science and technology in Korean traditional foods was reviewed from six points of view, including food preservation, fermentation, changes in food materials, utilization of food functionality, and packaging and development of cooking appliances. Books from disparate times were chosen in order to cover a wide range of materials from the past to the present. Food preservation and fermentation techniques were applied to various food materials. Combination of science and skills contributes to the accessibility of diverse food materials and better quality foods. Koreans use assorted and resilient plants, which have an abundance of functional substances such as food materials. Among cooking appliances, microwave oven and refrigerator are the most innovative products with huge influences on food eating patterns as well as lifestyle. Packaging effectively reduces post-harvest preservation losses, and better packaging has technical improvements for storage and distribution. Kimchi was chosen as an example in order to study technology from the past to the present. Availability of Kimchi cabbage, enrichment of functional ingredients, identification of useful microbial species, standardization of recipe for commercialization, prevention of texture softening, introduction of salted Kimchi cabbage and Kimchi refrigerators, and packaging were reviewed. The future of traditional foods in the market will be competitive. First, traditional foods market should be maintained to protect the diversity of food materials. Secondly, tailored foods for individuals should be considered using foods with functional properties. Information on health benefits would provide insights into health and traditional food products. Third, speedy transfer of new technology to the traditional food industry is needed to ensure food quality production and new opportunities in the market. Fourth, safety of traditional foods should be ensured without sacrificing the essential characteristics of culturally important foods. Improvement of logistics, distribution, and facility should be carried out. As demand for convenience foods increases, traditional foods should be developed into products.
