Polyphenolic Contents and Antioxidant Activities of Underutilized Grape (Vitis vinifera L.) Pomace Extracts

  • Grape pomace is an abundant source of underutilized winery by-products. Polyphenols were extracted from grape pomace using cellulase and gluco-amylase enzymes. 2,2-diphenyl-1-picrylhydrazyl (DPPH) and Folin-Ciocalteu's assays were used to measure antioxidant activity and total polyphenolic contents. Both cellulase, and gluco-amylase digested grape pomace showed efficient radical scavenging activity. In addition, the total polyphenolic contents of cellulase digested grape pomace showed lower concentrations were effective compared to higher concentrations, whereas glucoamylase enzyme did not show remarkable variations. The DPPH radical scavenging activity and total polyphenolic contents were significantly higher in the cellulase digested grape pomace compared to the gluco-amylase digested and the not digested grape pomace. It is notable that enzymatic digestions were efficient for extracting polyphenols from grape pomace. The underutilized grape pomace polyphenols can be further used for food safety as a natural antioxidant.

Antioxidant Activities and Quality Characteristics of Bread Added with Dried Mulberry Pomace (오디박 첨가 모닝빵의 품질특성 및 항산화성)

  • The purpose of this study was to develop functional bread added with dried mulberry pomace. The effect of dried mulberry pomace (0, 1, 3 or 5%) on the quality characteristics of breads was evaluated. The weight, volume and height were higher in bread added with dried mulberry pomace, compared with control bread. As the concentration of the dried mulberry pomace increased, decreased in pH and increased in acidity. The sugar concentration($^{\circ}Brix$) and reducing sugar(%) increased with the amount of dried mulberry pomace. The hunter color system L(lightness) and b(yellowness) value of the crumb of breads with increasing dried mulberry pomace were decreased, but the a(redness) value was increased. Contents of total phenol increased with addition amount of dried mulberry pomace. The antioxidant activities such as DPPH and hydroxy radical scavanging activity of the dried mulberry pomace increased with increase of dried mulberry pomace amount. The sensory results showed that scores of over-all preference of the breads added with dried mulberry pomace were higher than that of control.

Meat Quality and Storage Characteristics of Pork Loin Marinated in Grape Pomace

  • This study investigated the meat quality and storage characteristics of pork loin marinated in grape pomace powder during different storage periods. The experimental design included six treatments : pork loin containing only 100% water (Control, C); pork loin containing a combination of 20% grape pomace and 80% water (T1); pork loin containing a combination of 40% grape pomace and 60% water (T2); pork loin containing a combination of 0.5% grape pomace powder and 95.5% water (T3); pork loin containing a combination of 1.0% grape pomace powder and 99.0% water (T4); and pork loin containing a combination of 2.0% grape pomace powder and 98.0% water (T5). The pork loins aged by grape pomace and grape pomace powder showed decreased crude protein, crude fat, crude ash, pH, redness, and yellowness values; however, their moisture, lightness, and shear force increased significantly. During cold storage, marination with grape pomace and grape pomace powder reduced the 2-thiobarbituric acid value, volatile basic nitrogen value, and total microbial count in pork loin. Thus, marination with grape pomace and grape pomace powder improved the meat quality and storage characteristics, and could be used to improve storage stability of pork loin.

Quality Characteristics and Antioxidant Activities of Chocolate Added with Mulberry Pomace (오디박 분말 첨가 초콜릿의 품질 특성 및 항산화성)

  • Mulberry pomace, a by-product obtained from mulberry juice, has not been utilized as a food material for food processing. In this study, the quality characteristics and antioxidant activities of chocolate to which mulberry pomace has been added were evaluated. Freeze-dried mulberry pomace was added to white chocolate at the level of 0, 0.5, 1.5 or 2.5%, and then the white chocolate ganache was put between two layers of dark chocolate. The moisture content and sweetness were not significantly different among treatments, but reducing sugar content was increased, according to the amount of mulberry pomace powder. The Hunter color L(lightness) and b(yellowness) values decreased, according to the mulberry pomace powder amount, whereas the a(redness) increased. The hardness increased according to the mulberry pomace powder amount. Total phenol and flavonoid contents increased, according to the mulberry pomace powder amount. Antioxidant activities(DPPH and hydroxyl radical scavenging activities) also increased, according to the mulberry pomace powder amount. The result of the sensory intensity test revealed that the scores of color, mulberry taste, hardness and chewiness were the highest in the 2.5% mulberry pomace powder added chocolate. Sensory preference test results showed that chocolate added with 1.5% mulberry pomace powder had the highest scores in color, flavor, taste, texture and overall preference. It is suggested that chocolate to which mulberry pomace powder has been added may be a functional chocolate, with high antioxidant activity.

Quality Characteristics of Ginger and Ginger Pomace Powder according to Pretreatment Methods (전처리 방법에 따른 생강과 생강박 분말의 품질 특성)

  • In this study, chemical properties and functional ingredients of ginger and ginger pomace discarded after juice were analyzed. Ginger and ginger pomace were subjected to hot air drying, steaming, followed by hot air drying, soaking in vitamin C for 1 hour and 3 hours. When soaked in vitamin C for 3 hours, the moisture content was highest at 9.2% for ginger and 7.3% for ginger pomace. Among inorganic ingredients, the potassium (K) content was high at 2,633.6 mg% in hot air-dried ginger after steaming and at 1,584.3 mg% in ginger pomace. Total flavonoid content of ginger pomace was high at 67.3 mg/g when soaked in vitamin C for 3 hours. Gingerol content was the highest at 9.8 mg/g when ginger was dried with hot air. It was 10.5 mg/g in ginger pomace. After ginger pomace was steamed and dried with hot air, shogaol content was as high as 2.0 mg/g.

The Effect of Addition of Apple Pomace on Quality and In situ Degradability of Black locust Silage (사과박 첨가가 아까시나무 사일리지의 품질과 in situ 소실율에 미치는 영향)

  • The quality including in situ degradability in the rumen of Holstein of the black locust silage added with apple pomace was investigated in this study. The amount of apple pomace added in different treatments were 0, 20, 40 and 60% respectively. With higher amount of addition of apple pomace in black locust, crude protein content in the silage decreased. Crude protein contents in the apple pomace added silage were in the range between 11.7 and 13.7% and those were significantly lower than 16.3% of 100% black locust silage. The contents of ADF, NDF and crude ash were in the same trend as with crude protein, which were shown more clearly in the 40∼60% addition of apple pomace. Moisture content of 100% black locust silage was 56.7% however it significantly increased according to higher levels of addition of apple pomace(67.1∼73.8%). pH, lactic acid and total organic acid contents in 20∼60% addition of apple Pomace were 3.7∼4.3, 1.3∼2.2%, and 2.1∼6.0% respectively, however in 100% black locust silage those were significantly lower except pH as 5.4, 0.6% and 1.0% respectively. In situ disappearance rates of dry matter and NDF in the rumen were significantly higher at the stapes of incubation after 12h and 24h respectively in 20∼40% addition of apple pomace than in 100% black locust silage. No statistical differences were observed with quickly degradable fraction (a) in the disappearance rates of dry matter and NDF. In dry matter, however slowly degradable fractions (b) of 100% black locust and 60% addition of apple pomace were significantly higher as 99.7 and 99.8% respectively than 37.7∼50.5% of 20∼40% addition of apple pomace. On the contrary, fractional rate of disappearance (c) and effective degradability(ED) were significantly higher in 20∼40% addition of apple pomace as 0.0115∼0.0149 and 30.4∼31.9% respectively than the respective values of 0.0027 and 24.9% of 100% black locust. In NDF, b was significantly higher in apple pomace added silage(38.5∼99.8%) than in 100% black locust silage(14.9%). However, C was significantly lower in apple pomace added silage than in 100% black locust silage.

The Effect of Addition of Apple Pomace on Quality and in situ Degradability of Rice Straw Silage (사과박 첨가가 볏짚 사일리지의 품질과 in situ 소실율에 미치는 영향)

  • The quality of the rice straw silage added with apple pomace was investigated in this study and the amount of apple pomace added in different treatments were 0, 20, 40 and 60%, respectively. Crude protein contents (6.4-7.5%) of rice straw silage added with apple pomace were significantly (P<0.05) higher than that of 100%. rice straw silage (5.3%), however, crude ash contents were lower (P<0.05) in supplementation of apple pomace. The trends of changing chemical composition between raw materials and end products of silages particularly in the contents of crude protein and crude ash were more apparent in the silages added with apple pomace by 40-60%. Values of pH and the contents of lactic acid and total acid in 40-60% apple pomace added silages were 3.9-4.1, 1.0- 1.5% and 2.7-4.5%, respectively which were significantly (P<0.05) higher than those of 4.6, 0.02% and 0.34% in 100% rice straw silage, respectively. In situ dry matter (DM) and neutral detergent fiber (NDF) disappearance rates in the rumen in the treatments of 40- 60% apple pomace added silages were significantly (P<0.05) higher than those of 100% rice straw silage particularly since after 3 and 24 hour incubation on DM and NDF disappearance, respectively. Although quickly degraded fraction (a) among the treatments were not significantly different, 28.4-28.5% of slowly degraded fraction (b) and 27.2-27.4% of effective degradability (ED, k=0.08) for DM were significantly (P<0.05) higher than those of 100% rice straw silage (12.5 and 24.6% respectively). NDF was in the same trend as in DM. 31.6-63.2% of NDF for b fraction and 18.7- 19.4% for ED in 40-60% apple pomace added silages were significantly (P<0.05) higher than those of 100% rice straw silage (12.4 and 17.6% respectively). Identification and Quantification of Flavonoids in Korean Wild Grape (Meoru grape, Vitis coignetiae) and Its Pomace

  • Large quantities of Korean wild grape (Vitis coignetiae, KWG) pomace, a by-product of grape juice and wine manufacture, are generated annually, and disposal cost of KWG pomace is now increasing. Therefore, this study was conducted to determine total polyphenol, flavonoid, and anthocyanin content in whole KWG, KWG skin and KWG pomace and to identify and quantify flavonoids found in whole KWG and KWG pomace using LC/MS/MS. Spectral analysis showed high total polyphenol and flavonoid in KWG skin extracted with 75% ethanol (p < 0.05). KWG pomace had higher amount of total polyphenol, flavonoid and anthocyanin than whole grape (p < 0.05). Sixteen flavonoids were identified, but only 10 flavonoids were quantifiable from whole KWG and KWG pomace. Both epicatechin and rutin were the major flavonoids, and 521 or 147 ng/g of epicatechin (p < 0.05) and 305 or 110 ng/g of rutin (p > 0.05) were found in whole KWG and KWG pomace, respectively. The results show that KWG pomace is a very rich source of flavonoids, thus KWG pomace can be used as a functional food additive. Plans to include KWG pomace in food production are necessary.

The Effect of Addition of Apple Pomace on Quality and In Situ Degradability of Orchardgrass Silage (사과박 첨가가 오차드그라스 사일리지의 품질과 In Situ 소실율에 미치는 영향)

  • The quality including in situ degradability in the rumen of Holstein of the orchardgrass silage added with apple pomace was investigated in this study. The amount of apple pomace added in different treatments were 0, 20, 40 and 60% respectively. With higher amount of addition of apple pomace to orchardgrass, ADF, NDF and crude ash contents decreased significantly (p<0.05). Crude protein contents in the silages (11.8- 12.9%) were similar to that of 100% orchardgrass silage. Moisture contents increased according to the higher proportion of apple pomace in the silages. On the contrary to moisture content, pH was lower in 40-60% addition of apple pomace (3.7-3.9) than that of 100% orchardgrass silage (4.7). However the contents of lactic acid (1.7-2.5%), acetic acid (1.3- 1.7%) and total organic acid (2.9-4.2%) significantly increased according to higher levels of addition of apple pomace compared to the respective values of 100% orchardgrass silage (1.1%, 0.6% 1.7%). In siru disappearance rates of dry matter and NDF in the rumen were significantly higher at the stages of incubation after 24h in 40-60% addition of apple pomace than in 100% orchardgrass silage. No statistical differences were observed with quickly degradable fraction (a) and slowly degradable fraction (b) in the disappearance rates of dry matter and NDF. However, fractional rate of disappearance (c) and effective degradability (ED, k=0.08) for dry matter and NDF were significantly higher in 20-60% addition of apple pomace as 0.0076-0.0079 and 0.0099-0.0130. and 39.3-41.7% and 18.4- 20.6% respectively than the respective values of 0.0054 and 0.0064, and 36.8 and 16.5% of 100% orchardgrass silage. The Effect of Addition of Grape Pomace on Chemical Composition and Quality of Silage (포도박 첨가가 사일리지의 화학적 성분과 발효품질에 미치는 영향)

  • The qualities of the rice straw, black locust and orchardgrass silage added with grape pomace were investigated in this study and the amount of grape pomace added in different treatments were 0, 20, 40 and 50%, respectively. Crude protein contents of rice straw(6.5-10.6%) and orchardgrass silage(13.2-14.8%) added with grape pomace were significantly higher(p<0.05) than that of 100% rice straw(5.3%) and orchard grass silage(12.8%), however the crude protein contents(14.9-15.6%) of black locust silage in supplementation were lower than that of 100% black locust silage(16.3%). With higher amount of addition of grape pomade to rice straw, black locust and orchardgrass silages, ADF, NDF and crude ash contents decreased significantly(p<0.75). Moisture contents decreased according to the higher proportion of grape pomace in the rice straw silages, but increased according to the higher proportion of grape pomace in the black locust and orchardgrass silage. Values of pH in 20∼60% addition of grape pomace in rice straw(4.0∼4.2), black locust(4.1∼4.3) and orchardgrass silages(4.2∼4.4) were lower than that of 100% in rice straw(4.6), black locust(5.4) and orchardgrass silages(4.7). The contents of acetic acid and total volatile fatty acid significantly increased according to higher levels of addition of grape pomace compared to the respective values of silage. However the contents of lactic acid in supplementation of grape pomace were lower than that of 100% black locust silage.
