Carotenoids and total phenolic contents in plant foods commonly consumed in Korea

  • Phytochemicals are reported to provide various biological functions leading to the promotion of health as well as the reduced risk of chronic diseases. Fat-soluble plant pigments, carotenoids, are extensively studied micronutrient phytochemicals for their potential health benefits. It is noteworthy that specific carotenoids may be responsible for different protective effects against certain diseases. In addition, each carotenoid can be obtained from different types of plant foods. Considering the fact that the phytochemical content in foods can vary according to, but not limited to, the varieties and culture conditions, it is important to establish a database of phytochemicals in locally produced plant foods. Currently, information on individual carotenoid content in plant foods commonly consumed in Korea is lacking. As the first step to support the production and consumption of sustainable local plant foods, carotenoids and total phenolic contents of plant foods commonly consumed in Korea are presented and their potential biological functions are discussed in this review.

Association between plant protein intake and grip strength in Koreans aged 50 years or older: Korea National Health and Nutrition Examination Survey 2016-2018

  • BACKGROUND/OBJECTIVES: We investigated the association of plant and animal protein intake with grip strength in Koreans aged ≥ 50 yrs. SUBJECTS/METHODS: The data was collected from 3,610 men and 4,691 women (≥ 50 yrs) from the 2016-2018 Korea National Health and Nutrition Examination Survey. We calculated the total energy intake, and the intake of animal and plant protein and collected dietary data using 1-day 24-h dietary recalls. Low grip strength (LGS) was defined as the lowest quintile (men: up to 26.8 kg, women: up to 15.7 kg). The association of protein intake with grip strength was examined using Pearson's correlation and multiple linear regression analysis. RESULTS: The results proved that participants with LGS had lower daily energy, protein and fat intake, and percent energy from protein than those with normal or high grip strength (P < 0.0001). Total energy intake, animal protein, and plant protein were positively associated with grip strength. A higher intake of total plant protein (P for trend = 0.004 for men, 0.05 for women) and legumes, nuts, and seeds (LNS) protein (P for trend = 0.01 for men, 0.02 for women) was significantly associated with a lower prevalence of LGS. However, non-LNS plant protein intake was not associated with LGS (P for trend = 0.10 for men, 0.15 for women). In women, a higher total animal protein intake was significantly associated with decreased LGS (P for trend = 0.03). CONCLUSIONS: Higher total plant protein and LNS protein intake are negatively associated with LGS.

  • In order to observe the absorption pattern of mineral elements and the nutritional components of brown rice grown in reclaimed saline areas in Korea, the four commercial varieties of rice were cultured at the average salt concentration of 6.05 mmhos/cm, $25^{\circ}C$, (0.3%) in saline soils and non-saline silty loam soils. In the saline areas the absorptin of Na and Si was relatively high while the absorption of P, K and Ca was relatively low. N was absorbed actively before the emergence of the rice grains but showed relative decrease thereafter. There was no difference in Mg content. Though brown rice in the saline areas contained sugar abundantly with small contents of protein, fat and crude fiber. There was little difference in total carbollydrate and ash contonts.

키토산을 처리한 발아현미의 기능성분 증대 및 비만에 미치는 영향 (Increment of Physiologically Active Compounds in Germinated Brown Rice Treated with Chitosan and its Effect on Obesity of Rat Fed a High Fat Diet)

  • 키토산용액으로 발아시킨 키토산발아현미는 증류수만으로 발아시킨 일반발아현미보다 식이섬유, 총 페놀성 화합물, GABA, 그리고 phytic acid의 함량이 높게 나타났다. 또한, 체내 지방 흡수에 관여하는 lipase 저해 검정에서는 키토산 발아현미가 가장 높은 활성을 나타냈으며 일반발아현미도 현미에 비해 높은 활성을 나타냈다. 고지방 식이에 의한 흰쥐의 비만 억제 실험에서는 키토산발아현미군이 대조구와 일반발아현미에 비해 체중 및 복부지방량이 낮고 분변 중의 조지방 함량은 높은 경향을 보였다. 또한 혈중 총콜레중성지질, 및 LDL-C의 농도는 낮은 반면 HDL-C 농도는 높은 경향을 나타냈다. 발아현미 제조에 있어 키토산 처리는 발아하는 동안 비만 억제 및 콜레스테롤 감소에 효과가 있는 기능성 성분을 증대시키는 유용한 방법으로 사료된다.

Estimation of Oil Yield of Perilla by Seed Characteristics and Crude Fat Content

  • Perilla (Perilla frutescens var.frutescens) is an annual plant of the Lamiaceae family, mainly grown for obtaining oil by press extraction after roasting the seeds. Oil yield is one of its important traits, but evaluating this yield is time-consuming, requires many seeds, and is hard to adjust to pedigrees in a breeding field. The objective of this study was to develop a method for selecting high-oil-yield lines in a breeding population without oil extraction. Twenty-three perilla cultivars were used for evaluating the oil yield and seed traits such as seed hardness, seed coat thickness, seed coat proportion and crude fat. After evaluation of the seed traits of 23 perilla cultivars, the ranges of oil yields, seed hardness, seed coat thickness, seed coat proportion, 100-seed weight, and crude fat were 24.68-38.75%, 157-1166 gf, $24-399{\mu}m$, 15.4-41.5%, 2.79-6.69 g, and 33.0-47.8%, respectively. In an analysis of correlation coefficients, the oil yield negatively correlated with seed length, seed width, the proportion of seed coat, seed hardness, and 1000-seed weight, but positively correlated with crude fat content. It was observed that as the seed coat proportion increased, the seed coat thickness, hardness, and 1000-seed weight also increased. Multiple linear regression (MLR) was employed to find major variables affecting the oil yield. Among the variables, traits crude fat content and seed coat proportion were assumed to be indirect parameters for estimating the potential oil yield, with respect to a significant positive correlation with the observed oil yield ($R^2=0.791$). Using these two parameters, an equation was derived to predict the oil yield. The results of this study show that various seed traits in 23 perilla cultivars positively or negatively correlated with the oil yield. In particular, crude fat and the seed coat proportion can be used for predicting the oil yield with the newly developed equation, and this approach will improve the efficiency of selecting prominent lines for the oil yield.

Effects of lycopene on abdominal fat deposition, serum lipids levels and hepatic lipid metabolism-related enzymes in broiler chickens

  • Objective: The present study was conducted to investigate the effects of lycopene on growth performance, abdominal fat deposition, serum lipids levels, activities of hepatic lipid metabolism related enzymes and genes expression in broiler chickens. Methods: A total of 256 healthy one-day-old male Arbor Acres broiler chicks were randomly divided into four groups with eight replicates of eight birds each. Birds were fed basal diet supplemented with 0 (control), 100, 200, and 400 mg/kg lycopene, respectively. Results: Dietary 100 mg/kg lycopene increased the body weight at 21 day of age compared to the control group (p<0.05). Compared to the basal diet, broilers fed diet with 100 mg/kg lycopene had decreased abdominal fat weight, and broilers fed diet with 100 and 200 mg/kg lycopene had decreased abdominal fat percentage (p<0.05). Compared to control, diets with 100, 200, and 400 mg/kg lycopene reduced the levels of total triglyceride and total cholesterol in serum, and diets with 100 and 200 mg/kg lycopene reduced the level of serum low density lipoprotein cholesterol (p<0.05). The activity of fatty acid synthase (FAS) in 400 mg/kg lycopene treated broilers and the activity of acetyl-CoA carboxylase (ACC) in 100, 200, and 400 mg/kg lycopene treated broilers were lower than those fed basal diet (p<0.05). Lycopene increased the mRNA abundance of adenosine monophosphate activated protein kinase α (AMPK-α), whereas decreased the mRNA abundance of sterol regulatory element-binding protein 1, FAS, and ACC compared to the control group (p<0.05). Conclusion: Dietary lycopene supplementation can alleviate abdominal fat deposition and decrease serum lipids levels, possibly through activating the AMPK signaling pathway, thereby regulating lipid metabolism such as lipogenesis. Therefore, lycopene or lycopene-rich plant materials might be added to poultry feed to regulate lipid metabolism.

Biological Effects of Allium monanthum Extracts on Lipid Metabolism, Anti-oxidation and the Production of Pro-inflammatory Cytokines in Rats Fed a High-Fat Diet

  • This study is a basic study on the development of functional substances involved in obesity prevention, lipid metabolism, and immune regulation. Male Sprague-Dawley rats were fed a high-fat diet for 10 weeks. Allium monanthum extracts (AME) were administered orally to obesity-induced rats, and their lipid-lowering, antioxidative and various types of biological effects related to the immune system were examined. Blood free fatty acid and triglyceride concentrations decreased as the dose of AME increased. Total cholesterol and LDL cholesterol concentrations in the blood decreased as the dose of AME increased. The total cholesterol concentrations in the liver of the AME-treated groups were lower than the control group. The thiobarbituric acid reactive concentrations were lower in the plasma and liver of all AME-treated groups than the control group. Plasma AST and ALT activities did not show any significant differences among the treatment groups. IL-$1{\beta}$ and IL-6 concentrations in the liver tended to decrease as the dose of AME increased. TNF-${\alpha}$ and IL-10 concentrations did now show any significant differences compared to the control group. Lower expression levels of TNF-${\alpha}$, Apo-B and Apo-E genes were found in the AME-treated groups. Taken together, these results indicate that AME may show positive effects in lipid lowering, antioxidation and anti-inflammation.

고지방 식이 마우스에서 석창포 열수 추출물의 혈중지질 개선 효과 (Effect of Acorus gramineus Water Extract on the Blood Lipid Profiles in High Fat Diet-fed Mice)

  • 혈중 LDL 콜레스테롤 농도는 이상 lipoprotein metabolism의 유효한 지표로 간주되고 있으며, 관상동맥질환 및 동맥경화증의 위해성과 직접 연관이 있는 것으로 알려져 있다(Goldstein and Brown, 1983; Venter et al., 1990). 또한 HDL 콜레스테롤은 말초조직에서 간으로의 콜레스테롤의 이동에서 중요한 역할을 하며, 유리형 콜레스테롤의 에스테르화를 촉매하는 효소인 lecithin:cholesterol acetyltransferase (LCAT)를 활성화하여 세포 안으로 콜레스테롤의 유입을 억제함으로써 동맥경화를 막는 역할을 한다(Steinberg and Witztum, 1990). 본 연구 결과 석창포 열수 추출물은 혈중 triglyceride 수준을 유의하게 낮추는 효과가 입증되었다. 또한 석창포 열수 추출물은 혈중 total cholesterol과 HDL-cholesterol 수준을 WKAG-M, WKAG-H군에서 유의하게 감소 시켰으며 LDL-cholesterol 수준은 석창포 열수 추출물 투여에 의해 유의적으로 증가되었다. 또한 이러한 결과로부터 석창포 열수 추출물은 혈중 지질 조절에 의해 동맥 경화 지수를 감소시킬 수 있으며 심장 위험 지수 또한 감소시킬 수 있음을 알 수 있었다. 추후 석창포 열수 추출물 분획 중의 각 성분들이 혈중 지질 성상에 미치는 효과를 규명하는 연구를 수행하여 유효성분에 대한 연구를 계속할 예정이다.

Silage용 옥수수의 품종별 생산성 비교 Il. 옥수수 부위별 조성분 함량 및 영양소 생산성 (Comparison of Productivity of Various Silage Corn Varieties II. Chemical composition and nutrient yield of different part of silage corns)

  • This experiment was conducted to compare the productivity of five silage corn varieties. Corn varieties were Pioneer 3144(P 3144), 3160(P 3160), 3282(P 3282), 3352(P 3352) and Suweon 19(S 19) and were seeded on May 2 and harvested on August 15. Ratios of stalk, leaf and ear, chemical composition and yields of nutrients were investigated in respective corn part. Experimental design was accepted by Latin square arrangement with five replicates and each plot had twenty two plants. The results obtained were as follows: 1. Crude portein, crude ash and nitrogen free extract(NFE) contents of whole plant ranged from 6.32 to 7.18%, 5.16 to 7.43% and 52.62 to 57.90%, respectively, and there were no significant(P>.Ol) differences between varieties. Crude protein and NFE content were the highest in ear between corn parts. 2. Crude fiber conent of whole plant ranged from 18.98 % to 24.01 %, and was the highest in suweon 19 and the lowest in P 3352(P<.01). Crude fiber content was the highest in stem and the lowest in ear, However, crude fat content(2.03-3.66 %) vice versa. 3. Yields of organic matter, crude protein, crude fat, NFE and TDN per 10a were the greatest(P< .01) in P 3282, however crude fiber yield was the highest(P<.Ol) in P 3352. 4. Ratios of different part to total dry matter yield ranged from 12.7 %(P 3352) to 17.8 %(P 3160) for leaf, 44.5(P 3352) to 66.9 %(P 3160) for stem and husks, and 16.9 %(P 3282) to 42.8 %(P 3352) for ear, and there were significant differences between corn varieties(P<.Ol). Consequently, P 3352 has the greatest nutrient yields, particularly by ear, and P 3282 has a great nutrient yield by stem. This result suggested that could be appear a better character of silage corn by hybridization of this two corn varieties.
