Analysis on the inhibitory effects of frozen pepper imports from China by tariff-rate quota, a trade policy tool using a structural equation model

  • Since 2012, despite the fact that tariff rate quotas (TRQ) in the form of dried peppers has not been imported, the imports of pepper-related items such as low- tariff frozen peppers (27%) and other sauces (45%) have increased, there has been a problem in the domestic pepper industry, in which the domestic self-sufficiency rate has declined. The purpose of this study was to find out whether the operation of chili pepper TRQ has the effect of suppressing the imports of pepper-related items from China. We analyzed the import substitution effect (import suppression effect) through causal analysis of the imports of red pepper TRQ, frozen peppers, and other sauces using the structural equation model analysis method. As a result of the hypothetical scenario analysis, when the government imports and releases 7,185 tons of pepper TRQ in 2019/20 (scenario), private imports were estimated to decrease by only 3,060 tons. In other words, the import substitution effect between imported items was estimated to decrease about 2,079 tons of private dried peppers, and about 981 tons of imported pepper-related items. There was an effect of suppressing the imports of pepper-related items such as frozen peppers, but it was analyzed to be insignificant. That reason was that the replacement substitution elasticity of the pepper-related items for TRQ import was less than 1 (inelastic). Therefore, it is judged that the government's operation of the pepper TRQ is preferably focused on stabilizing domestic prices rather than focusing on import control of pepper-related items.

Applications of Nutrient-Controlling and Growth-Regulating Chemicals to Enhance Yield of Once-Over Harvest Red Pepper (Capsicum annuun L.)

  • The cultivation of once-over harvest pepper cultivars might be very valuable to Korean farmers who still depend on traditional hand-harvesting method. Thus, we conducted this experiment to obtain important information for enhancing the productivity of once-over harvest red pepper fruits by supplying several nutrient-controlling and growth-regulating chemicals, such as $KH_2PO_4$, $SiO_2$ and 2-chloroethylphosphonic acid (ethephon). Adequate fertilization was provided in each treatment plots. In this study, two once-over harvest pepper cultivars, Saengryeg No. 211 and 213 (SR 211 and SR 213), and one regular piecemeal harvest pepper cultivar, Kangryegdaetong (KRDT), were cultivated to evaluate the productivity of pepper fruit as affected by above chemicals. The distribution of macro- and micro-nutrients in pepper fruits among the cultivars were different in term of N, B, Cu, and Fe concentrations. In particular, the concentration of B in SR 213 was about 2 times higher than that in SR 211 and KRDT. However, overall red pepper productivity of SR 211 was markedly higher ($2.91{\sim}3.38Mg\;ha^{-1}$) than that ($1.68{\sim}2.37Mg\;ha^{-1}$) of SR 213. Also, the productivity of matured red pepper was significantly influenced by the treatments of $KH_{2}PO_{4}$, $SiO_2$ and ethephon. The yield indices for matured red pepper fruits were the highest with the treatment of $KH_2PO_4$ or $SiO_2$ with ethephon, which were 113~116% for SR 211 and 147~150% for SR 213. Thus, the applications of $KH_2PO_4$ or $SiO_2$ with ethephon would be suggested to enhance the productivity of matured red pepper fruit.

Physical and Sensory Properties of Ice Cream Containing Fermented Pepper Powder

  • This study was conducted to investigate the physical and sensory properties of ice cream containing fermented pepper powder. Three ice cream formulas were manufactured: 1, control; 2, supplemented with 0.1% fermented pepper powder; and 3, supplemented with 0.2% fermented pepper powder. Formulas 2 and 3 had significantly higher viscosity and lower overrun than formula 1 (p<0.05). Additionally, ice creams supplemented with fermented pepper powder were harder and maintained their forms longer than the controls. 0.2% fermented pepper powder added ice cream had no pungency as much as that of control and overall sensory attribute was not significantly different from control. Therefore, ice cream containing fermented pepper powder maintained physical and sensory properties similar to the controls, and maintenance was better. It means fermented pepper powder ice cream can be utilized as the material of functional food (dessert).

Field performance analysis of a card cleaner type separating system for a self-propelled pepper harvester

  • This study was carried out to determine the factor of a separating system according to the pepper varieties and the absence of a card cleaner system. The pepper varieties of Jeokyoung and AR-Legend were transplanted on November 20, 2019 and tested on March 18, 2020 with a harvesting speed of 0.2 m·s-1 for 10 pepper plants. The performance evaluation was determined by analyzing the separation efficiency of the peppers and the foreign matter mixing rate. The pepper harvester with a card cleaner showed a higher separation efficiency of the peppers compared to the pepper harvester without a card cleaner. The average separation efficiency of peppers on the pepper harvester with a card cleaner was higher at 13.5% for Jeokyoung and 1.9% for AR-Legend than that without a card cleaner. The mixing ratio of foreign materials on the pepper harvester with a card cleaner was lower at 8.7% and 2.5% for Jeokyoung and AR-Legend than that without a card cleaner, respectively. For the two-way ANOVA results according to the variety and the card cleaner, there was no effect on the separation efficiency of the peppers, but there was an effect on the foreign matter mixing rate.

충북지역 산지 고추와 유통 고춧가루 중 잔류농약 모니터링 및 위해성 평가 (Monitoring of pesticide residues in peppers from farmgate and pepper powder from wholesale market in Chungbuk area and their risk assessment)

  • 재배지 포장에서 채취한 풋고추와 홍고추, 열풍건조한 건고추 및 유통중인 고춧가루 중 농약 잔류량을 조사하고 그 안전성을 평가하기 위하여 충북지역의 10 농가에서 채취한 풋고추와 9 농가에서 채취한 홍고추, 청주시내 6개소의 대형유통마켓에서 채취한 8점의 고춧가루를 GLC-NPD/ECD와 HPLC로 분석하였다. 또한 건조에 따른 홍고추 중 농약잔류량 변화를 구명하기 위하여 농가에서 채취한 홍고추를 건조한 후 마쇄하여 농약잔류량을 분석하였다. 풋고추에서 9종, 홍고추와 건고추에서 12종 및 고춧가루에서 17종의 농약이 검출되었으며, 이 중 10종 농약(살균제 1성분과 살충제 9성분)이 잔류허용기준(MRL)을 초과하였다. MRL 초과율은 풋고추와 홍고추보다 건고추와 고춧가루에서 높았다. 일부 농약이 고추와 고춧가루에서 MRL을 초과하였으나 추정식이섭취량(EDI)은 ADI의 1.6% 미만으로 안전한 것으로 평가되었다. 또한 홍고추를 건조할 때 중량은 $5.9{\sim}7.8$배 감소하였으나 농약 잔류량은 $1.7{\sim}8.2$배 증가하여 고춧가루의 농약잔류허용기준 적용에 대한 재검토가 필요한 것으로 판단되었다.

  • Red pepper is composed of pericarp and calyx. Calyx must be removed for the producton of high quality powdered red pepper. However, an apparatus to effectively remove calyx is not available. This study was performed to develop a method to remove calyx. According to the result of this study, the following method was found out to be very effective. Step 1 : Red pepper must be compressed by a compressing apparatus such as roller system. Step 2 : Calyx in red pepper must be plucked out when red pepper passes through roller system with relative velocity.

고춧가루 오염 미생물의 제어에서 방사선종별 조사 효과 (Comparison of Irradiation Effect of Different Radiation Types on Decontamination of Microorganisms in Red Pepper Powder)

  • This study investigated the reduction of microbial population and sensory properties in red pepper powders irradiated by gamma ray, electron beam, and X-ray. Populations of total aerobic bacteria and yeast & molds in red pepper powders were decreased by irradiation treatment in a dose-dependent manner. Gamma ray, electron beam, and X-ray at doses above 8 kGy caused 100% inhibition on growth of aerobic bacteria in red pepper powders. Inhibitory activity of X-ray on sterilization of red pepper powders was significantly equal to or higher compared to gamma ray and electron beam. Color and off flavor in red pepper powders were no significant difference among the control and samples irradiated with gamma ray, electron beam, and X-ray. As a result, the gamma ray, electron beam, and X-ray irradiation can be used to sterilize the microbial growth in red pepper powders without quality loss.

고추의 건조(乾燥) 공정(工程)에서 적외선(赤外線) 건조법(乾燥法)의 활용(活用)에 관한 연구(硏究) (Application of an Infrared Drying to Drying Process for Red Pepper)

  • This study was conducted to investigate the possibility of application of an infrared drying to drying process for red pepper. The performance of seramic heaters and the variation of temperature and moisture content of red pepper were analyzed during an infrared drying of red peppers. Also, the quality of dried red pepper was analyzed. The following results were obtained from this study. 1. The surface temperature of infrared heaters and the rising time required for steady state were mainly affected by electrical power consumed. 2. The heat energy required for heating red pepper was proposed to be calculated by the equation in terms of enthalpy of air and net heat flux by infrared heater in a drying chamber. The statistical model for net heat flux was developed. 3. The performance of the infrared heater used for heating red pepper was much affected by the distance of radiation, and the difference of temperatures appeared between the radiated surface and the inside of red pepper. 4. Electrical capacity of the infrared heater had a significant effect on the heating of red pepper. However, the effect of shape of heater on heating was not significant. 5. The variation of temperature of red pepper largely appeared in the range of 30 to 60% (db) in moisture content. The temperature of red pepper was almost constant at low moisture content. 6. The temperature of red pepper and heating time had significant effects on the quality for radiant heating. 7. When the electrical capacity of infrared heater and the distance of radiation are carefully designed in a dryer with the insulated drying chamber, infrared drying might be very effective in red pepper drying.

Potential of Cross-infection of Colletotrichum Species Causing Anthracnose in Persimmon and Pepper

  • Ninety isolates of Colletotrichum species from new persimmon tree twigs and 50 isolates from pepper plant fruits were isolated via single-spore isolation. Of the 140 isolates, 26 were examined for mycelial growth, carbendazim sensitivity, and ITS sequence. Four of the isolates from the persimmon trees, which were cultivated exclusively in an orchard, showed fast mycelial growth and sensitivity to carbendazim, while five of the pepper isolates showed slower mycelial growth and were resistant to the fungicide. However, 17 isolates from persimmon trees cultivated with pepper plants in the same orchard showed slow mycelial growth like the pepper isolates and they were sensitive to carbendazim like the persimmon isolates. ITS sequence analysis of these 27 isolates led to the identification of the 22 persimmon isolates as C. gloeosporioides and the five pepper isolates as C. acutatum. PCR with species-specific primers confirmed that the 90 isolates from persimmon were C. gloeosporioides whereas the 50 isolates from pepper were C. acutatum. The 90 persimmon isolates of C. gloeosporioides and 50 pepper isolates of C. acutatum were compared by a wound inoculation test to determine their capacity for host cross-infection. All of the C. acutatum isolates from pepper caused typical symptoms of anthracnose on the fruits of pepper plants and twigs of persimmon; they differed from the C. gloeosporioides isolates from persimmon, more than 90% of which were able to infect only persimmon. Amplified fragment length polymorphism analysis revealed the existence of two groups (C. gloeosporioides and C. acutatum isolates group). At 80% genetic similarity, the C. gloeosporioides group was defined within four clusters, while the C. acutatum group was within three clusters. However, these clusterings were unrelated with the virulence of Colletotrichum species against pepper fruits.

근적외선 분광분석법에 의한 고춧가루의 원산지 및 고추씨 혼입 판별 (Discrimination of Geographical Origin and Seed Content in Red Pepper Powder by Near Infrared Reflectance Spectroscopic Analysis)

  • Red pepper powder (Capsicum annum L.) is an important seasoning as a kimchi ingredient in korea and most korean consumer tend to eat the korean red pepper powder as the better than other oriental country such as China. Near infrared reflectance spectroscopy (NIRS) was applied for discrimination according to geographical origin (Korea, China) of red pepper powder. The objective of this study is to determine if NIR technique could be used to discriminate between the korean red pepper powder and non-korean red pepper powder according to seed content and maxing ratio in red pepper powder by using the new method. Rapid, precise and nondestructive analysis method for determination of the geographical origin of red pepper powder by near infrared spectroscopy and chemometrics were performed. It has been observed discriminant analysis with PLS is adequate to determinate the geographical origin of red pepper powder. It tend to difficult the discrimination of geographical origin according to increase the seed content of red pepper powder. The accuracy of discrimination in mixed red pepper powder was range from 95.2% to 100%.
