한국 상용식품중 칼슘과 수산함량에 관한연구 (A Study on Oxalic Acid and Calcium Content in Korean Foods)

  • Vegetables are liberally taken to enhance the mineral, vitamin, and rouphage value of the diet. And calcium is an essential mineral at all ages, although the daily requirement varies with physiological status of the individual. On the other hand, oxalic acid is an unwanted constituent of several clinical disorders. It is therefore necessary to take into account the calcium as well as the oxalic acid content of the various calcium, foods. Oxalic acid, calcium, calcium/oxalic acid ratio and available calcium have been determined in 31 kinds of the Korean common vegetables. The results are summarized as follows; 1. The highest content of oxalic acid has been recorded in Amaranth. spinach and beet. It is respectively 1,100mg%, 619mg%, 550mg% in fresh sample. It is comparatively high in Leek, leavels of perilla, Mugwort, Chyi-leaves, green red pepper, Burdock. 2. Many vegetables have been calculated as below 2.0 in the calcium/oxalic acid ratio. 3. Avaiable calciumis much in Malaolitoria, Lettuce, Green onion whole, Green garlic, Wild onion, Cabbage and Radish root. 4. A food calendar is suggested as a guide to the proper selection of food items for normal individuals and for those suffering from urolithiasis, cardiovascular disease or calcium deficiency status.

채소(菜蔬) 및 과실중(果實中) 질산염(窒酸鹽)과 아질산염(亞窒酸鹽)의 축적(蓄積)에 관(關)한 연구(硏究) (Studies on the Accumulation of Nitrite and Niarite in Vegetables and Fruits)

  • Vegetables and fruits purchased from several markets in Seoul from July to October in 1977 were analyzed to know the level of nitrate-and nitrite-nitrogen accumulation in relation to a public health. Radishes and chinese cabbages utilized mainly as pickled vegetables in Korea resulted in the highest concentration of nitrate-nitrogen. Some of the levels for radishes and chinese cabbages were notably high and exceeded a recommended upper limit of 300 ppm $No_{3}-N$, and thus these levels would render these samples unsafe for use. The levels in some of vegetables other than radish and chinese cabbage, e.g., spinach, lettuce, green onion, cabbage were relatively high and considered to be unsafe for use in feeding infants, where as those of green pepper, bean sprouts and parsely were very low and safe. And also the levells in fruits were very low and safe. Nitrite-nitrogen contents in all tested vegetables and fruits ranged to trace and appeared not to be accumulated in fresh vegetables and fruits. Stems and roots of radishes and chinese cabbages accumulated approximately 2 fold more nitrate-nitrogen than leaves in 5 samples of each vegetable tested.

김치발효 관련 젖산균에 대한 향신료의 항균력 (Antimicrobial Activity of Exracts from Spices on Lactic Acid Bacteria Related to Kimchi Fermentation)

  • Antimicrobial activities of the extracts from spices microorganisms related to kimchi fermentation were investigated. 32 kinds of spices such as allspice, mount, basil, bay leaves, caraway, cardamon, celery, chilli powder, chives, cinnamon, clover, coriander, cumin, dill, fennel, garlic, horseradish, marjorarm, mugwort, mustard, nutmeg, onion, oregano, paprika, parsely, pepper, peppermint, rosemary, sage, tarragon, thyme and tumeric were extracted with water, ethyl ether, ethyl acetate and ethanol. Fractions were tested for antimicrobial activities against Lactobacillus plantarum and Leuconostoc mesenteroides, The extracts of 28 kinds of spices except caraway, cardamon, paprika and tarragon by water extraction, those of 29 kinds except arrowroot, paprika and tarragon by ethyl ether extraction, those of 30 kinds except paprika and tarragon by ethyl acetate extraction, and those of 29 kinds except clover, paprika and tarragon by ethanol extraction showed strong antimicrobial activities against Lactobacillus plantarum. On the other hand, the extracts of 28 kinds of spices except caraway, cardamon, paprika and thyme by water extraction, those of 27 kinds except cardamon, cumin, paprika, tarragon and thyme by ethyl ether extraction, thou of 30 kinds except paprika and thyme by ethyl acetate extraction, and those of 28 kinds except cardamon, cumin, paprika and thyme by ethanol extraction showed strong antimicrobial activities against Leuconostoc mesenteroides.

마늘과 향신료 첨가가 난황과 감람유 유화의 관능적 특성 (Effective of Extract Garlic, Spices of Emulsified with Egg-Yolk & Olive Oil)

  • 본 연구는 Liquid egg yolk sabayon을 만들 때 버터 대신에 올리브오일과 마늘 첨가량을 달리하여 관능적 평가를 실시하여 조리표준화의 예시를 제시하고자 한다. 1, 맛에서는 마늘 10g 첨가에서 5.61로 대조군의 5.13보다 좋았다. 2. 색에서는 마늘 20g 첨가가 가장 높은 점수를 얻었고, 마늘 30g가 나쁘게 나타났다. 3. 향에서는 마늘 10g 첨가가 대조군 보다 좋았고 마늘 첨가군 모두가 대조군 보다 좋았다. 4. 종합적인 면에서도 마늘 10g첨가가 우수한 것으로 나타났다. 따라서 Liquid egg yolk sabayon을 만들 때 적당량의 마늘을 첨가하는 것이 좋을 것으로 사료되어 진다.

Identification of Tomato Aspermy Virus (TAV) and Chrysanthemum Virus B (CVB) from Dendranthema indicum in Korea

  • Chrysanthemums showing leaf mottling were collected from three southern locations in Korea in 1998. Two kinds of viruses were isolated from the leaves and were identified as tomato aspermy virus ch-TAV) and chrysanthemum virus B (ch-CVB), according to their host range, morphology, intracellular location, agar gel double diffusion test, and double-stranded RNA (dsRNA) analysis. The purified ch-TAV was spherical particles of approximately 29 nm in diameter and ch-CVB was filamentous particles of 685 nm long. Inclusion bodies were not observed in ch-TAV and/or ch-CVB infected chrysanthemum. ch-TAV showed positive serological reaction with TAV antiserum (ATCC-127) but not with CMV-pepper antiserum. In dsRNA analysis, four kinds of viral dsRNA were observed on ch-TAV and one viral dsRNA was shown on ch-CVB. Rate of co-infection with TAV and CVB in commercial chrysanthemums was 20.9%. On the other hand, infection with CVB alone was 97.2%. However, chrysanthemums naturally infected with TAV alone were not found.

과수 수확을 위한 주머니 방식의 로봇 그리퍼 설계 및 검증 (Design and Evaluation of a Cinch Bag Typed Robotic Gripper for Fruit Harvesting)

  • In this paper, the cinch bag typed fruit harvesting gripper was proposed. This gripper is focused on preventing problems that we found from the related research and setting the breakthrough as a design condition according to the harvest failures of other related studies. The cover part is designed to overcome the surrounding obstacles of target fruits such as tomato, Korean melon, and sweet pepper. The measurement of maximum load showed that the well-grasped target object, such as a spherical object with 65 mm of diameter, is unable to slip in a range of 0 kg to 10 kg. The fact that the gripper allows from 4 cm to 6 cm of positional error was shown in the measurement of positional error tolerance. And the cover part of this gripper showed that the suggested gripper can grab a target object without being obstructed by leaves and stems. Finally, it was proved that the gripper satisfied the design conditions through the measurement of contacting force, which showed it is appropriate for grasping an actual fruit without damage.

고령소비자를 위한 칼슘 강화 식단 개발 (Development of Calcium Enriched Menu for the Aged)

  • The objectives of this study were to develop calcium enriched menu for the aged and to investigate physicochemical characteristics and consumer acceptances of the menus. four kinds of the menu were developed with emphasis on calcium enriched food materials of red pepper leaves seasoned vegetables for menu1, shrimp for menu2, anchovy for menu3, seaweed for menu4. one portion of calorie, polysaccharide, protein, fats and calcium for the aged were calculated as 567kcal, 92.8g, 21.3g, 12.6g 223.1mg, respectively based on the recommended daily allowances for adults. Calcium content increased in the lowest value of all(p<0.05). The hunter lightness(L) values of barely rice in menu 1, radish soup in menu 1, chopped roast chicken in menu 4 and radish salad in menu 2 had significantly the highest values of all(p<0.05). The calcium enriched menus for the aged were successfully developed and these data could be used as basic informations for the improvement in health and life of the aged.

Potato Soft Rot Caused by Psychrotolerant Pseudomonas sp. from Subarctic Tundra Soil

  • Agricultural activities and the number of farms in the subarctic regions have been increasing annually after the coronavirus disease 2019 pandemic to achieve food self-sufficiency. Potatoes are vulnerable to soft rot bacteria at all stages of production, storage, and transportation. A novel bacterium, Pseudomonas sp. N3-W, isolated from Alaska tundra soil, grows at 5-25℃ and produces extracellular protease(s). N3-W caused necrotic spots (hypersensitivity) in hot pepper leaves and soft rot disease (pathogenicity) in potato tubers. The psychrotolerant N3-W caused significant soft rot symptoms on potatoes at a broad temperature range (5℃, 15℃, and 25℃). In contrast, mesophilic Pectobacterium carotovorum KACC 16999 induced severe rotting symptoms in potatoes at their optimal growth temperature of 15℃ and 25℃. However, it barely produced symptoms at 5℃, which is the appropriate storage and transportation temperature for potatoes. The results of pathogenicity testing imply that psychrotolerant soft rot pathogens from polar regions may cause severe soft rot not only during the crop growing season but also during storage and transportation. Our study indicates the possibility of new plant pathogen emergence and transmission due to the expansion of crop cultivation areas caused by permafrost thawing in response to recent polar warming.

Bacillus subtilis 균주의 기능성 분석 및 이를 활용한 고추 흰가루병 방제 (Functional Analysis of Bacillus subtilis Isolates and Biological Control of Red Pepper Powdery Mildew Using Bacillus subtilis R2-1)

  • 지자체 농업기술센터와 농과원에서 수집한 18개의 Bacillus subtilis 균주들이 보유하고 있는 기능성을 구명하기 위하여 항균활성을 비롯한 사이데로포아 생산, 질소고정능력, 인산가용화 능력 및 오옥신 생성능력을 조사하였다. B. subtilis 균주들은 대부분 입고병균(R. solani), 고추 탄저병균(C. acutatum), 채소류 시들음병균(F. oxysporum), 벼도열병균(M. oryzae), 고추 역병균(P. capsici)에 대하여 항균활성을 보였다. 대부분의 균주가 Siderophore와 오옥신 생성능력을 보였으며 질소고정능력도 함께 보유하고 있는 것으로 나타났다. 인산가용화능은 조사한 Bacillus 속 균주 중 단 한 균주에서 활성을 보였다. 대부분의 B. subtilis 균주가 고추 흰가루병 억제효과를 보였으나, 균주 간에는 방제효과에 있어서 큰 차이를 보이지 않았다. B. subtilis R2-1균주의 농업현장에서의 활용 가능성을 구명하기 위하여 2009년도에 강원도 화천의 유기재배농가에서 오이 흰가루병 방제용 미생물 농약으로 등록되어 사용되고 있는 '큐펙트'와 '탑시드'를 대조로 하여 방제효과를 검정하였다. 2009년도에 B. subtilis R2-1 처리시 방제효과는 37.7%로 '탑시드'(47.6%)보다는 낮았으나, '큐펙트'(25.7%)에 비해서는 높았다. 2010년도에는 B. subtilis R2-1의 고추 흰가루병 방제효과가 83.3%로 미생물 농약인 탑시드 보다도 높게 나타났다. B. subtilis R2-1균주의 발병억제 기작을 구명하기 위하여 B. subtilis R2-1균주와 미생물 농약(탑시드, 큐펙트)을 경엽 처리한 후 포자발아율을 계수한 결과, 미생물 농약인 큐펙트는 97.9%, 탑시드는 94.7% 억제하는데 비해서 B. subtilis R2-1균주는 84.2% 억제하는 것으로 나타났다. 앞으로 B. subtilis R2-1을 고농도로 배양할 수 있는 대량배양기술을 개발하고 항균활성 기능이 잘 발현되도록 제형화한다면 생물농약으로의 개발이 가능할 것으로 사료된다.

시설재배 가지, 피망에서 꽃노랑총채벌레 피해해석과 방제수준 (Damage analysis and Control threshold of Frankliniella occidentalis Pergande (Thysanoptera: Thripidae) on Greenhouse Eggplant and Sweet pepper)

  • 시설재배 가지 및 피망에서 꽃노랑총채벌레의 가해에 따른 피해양상과 방제수준 설정을 인위적인 충 접종과 케이지 실험을 통해 조사하였다. 2005년 가지 실험결과, 꽃노랑총채벌레 가해에 의한 직접적인 피해는 가지 과실에서 나타났고, 여러 개의 가는 선과 굵은 선을 동시에 갖거나 과실 표면이 일부 표백된 피해가 심한 과실은 상품성이 하락하였다. 꽃노랑총채벌레는 가지 꽃에서는 성충태가, 앞에서는 유충태가 주로 발견되었다. 꽃노랑총채벌레 밀도 수준에 따른 시험구간 수량차이는 발견되지 않았다. 시험구의 꽃노랑총채벌레 발생밀도(수확 2주전 일주일간 끈끈이트랩 밀도)와 각 수확시 비상품과율간에는 정의 상관 관계가 있었다. 황색 끈끈이트랩 이용시 방제수준을 피해과율 5%를 유발하는 총채벌레 밀도로 가정했을 때 가지 수확 2주전에 일주일간 성충 유살수가 10마리 되는 수준이었다. 2007년 피망 실험결과, 꽃노랑총채벌레에 의한 피해는 피망의 과실표면, 꽃받침에 뚜렷하게 나타났고, 과실에서 피해가 심할 경우 상품성이 하락되었다. 밀도가 높은 시험구들에서는 상품과의 수량에 유의한 감소가 있었다. 피망에서 꽃노랑총채벌레 밀도와 피해과율에는 높은 상관관계가 있었고, 피해과율 5%를 유발하는 꽃노랑 총채벌레 밀도수준은 수확2주전 끈끈이트랩 유살수의 경우 일주일간 채집된 개체수가 4.8마리, 꽃에서 발생밀도의 경우는 0.9마리 수준이었다.
