Effect of Barley Flour Addition on Quality Characteristics of Vegetable Pancake (보릿가루의 첨가가 부침개의 품질특성에 미치는 영향)

  • Purpose: This study investigated the quality characteristics of vegetable pancake prepared with various levels of barley flour. Methods: The pH level and spreadability of the batters as well as the color, texture, and sensory evaluation of the vegetable pancake were analyzed. Results: The results show that spreadability of batter significantly decreased as the substitution amount of barley flour increased (p<0.001). The pH level of the batter significantly decreased as the substitution amount of barley flour increased (p<0.001). Redness and yellowness increased as the substitution amount of barley flour increased. For texture, the sample groups with substituted barley flour showed high characteristics of hardness, gumminess, and chewiness. Principal component analysis showed that the sample group with a high substitution amount of barley flour was characterized by relatively high darkness, roasted grain aroma, bitterness, astringent, and chalkiness. Acceptance test found that the sample group with 15% barley flour received higher acceptance than the sample group with 0% barley flour in terms of color, texture, and overall acceptance. Conclusion: Acceptance test found that the sample group with 15% or 30% of barley flour had significantly higher or similar acceptance attributes than the sample group without barley flour, which suggests the possibility of developing vegetable pancake with barley flour.

Wind-and-flip technique for the fabrication of a persistent mode superconductive magnet by using a coated conductor

  • Persistent mode HTS pancake coil has been fabricated using a coated conductor by a "wind-and-flip" method. A coated conductor with the length of 1.2 meters was divided at the center along the length. The sliced coated conductor was wound on a pair of bobbins with a diameter of around 4 cm and two pancake coils connected superconductively without a resistive joint were prepared. By flipping one of the pancake coils, the magnetic field generated by each coil is to be aligned to the same direction and generate meaningful magnetic field while the magnetic fields of two spit coils are canceled without flipping. Permanent current was induced by flowing current to the coil immersed in liquid nitrogen pool using a power supply. A magnetic field of 48.8 Gauss was generated when 20 A of current was flowing in the pancake coils. The "Wind and flip" method can be applied for the fabrication of a long solenoid magnet by winding a sliced coated conductor on a cylindrical bobbin. It is also introduced that the construction of multiple sets of pancake (or solenoid) coils is possible by a "wind-and-flip" method using a wide coated conductor.

  • To wind a HTS (High Temperature Superconductor) tape conductor on a bobbin, double pancake winding technique is widely used to reduce number of splicing contacts between conductor pieces. However, this makes some Ic (critical current) degradation on kink points which is unavoidable. This paper describes the two ways of winding; usual double pancake and soldered double pancake. Characteristics of the two windings are measured and compared.

  • This paper deals with design and fabrication of heater-triggered switching system for the high-Tc superconducting (HTS) power supply with series-connected double-pancake load. Amongst all components, heater triggering is the most important element for the performance of HTS power supply. To fabricate the optimal heater-triggered system, its characteristics have been analysed through the simulation and expriment. The thermal analysis of switching parts of the Bi-2223 solenoid according to the heater input was carried out. Based upon the analysis, 8A electromagnet current and 1.5A DC Heater current were optimally derived, and 8s and 20s for the pumping period were selected in this experiment. In the experiment. the maximum pumping current reached about 24A with Bi-2223 pancake load of 6mH.

  • When HTS tapes are used in power application, they are used by winding form, such as, a pancake and a solenoid. When AC current is applied to the coil, Ac magnetic field is generated in winding. This AC magnetic field acts as an external magnetic field and makes loss. In this paper the radial magnetic field component ($B_r$) and the axial magnetic field component ($B_z$) in a pancake and a solenoid were calculated by numerical analysis method and compare with measured value. AC losses of a short sample were calculated by Norris equation and n numerical analysis based on Brandt equation. AC losses of the pancake coil and the solenoid coil were also calculated.

  • AC loss is one of the important parameters in HTS (High Temperature Superconducting) AC devices. Among the HTS AC power devices, the transformer is the essential part in the electrical power system. But unfortunately, the transformer is the worst HTS device concerning AC loss because of very large magnetization loss due to high magnetic field applied to the HTS wire. We calculated the magnetization losses in HTS pancake windings for transformer according to the operating temperature. Two kinds of arrangement of HTS pancake windings were adopted for calculation of AC losses of a shell type transformer, and the analysis results were presented and discussed.

  • This paper describes the construction and test results of a 10kVA single phase HTS transformer. Double pancake windings with BSCCO-2223 HTS tape and G10-FRP cryostat with room temperature bore are used in the transformer. Two double pancake windings are connected in series to provide 188 turns and other two double pancake windings are connected in parallel to conduct the secondary current of 45.4[A]. Coefficients of the constructed transformer are obtained using the fundamental teats of the transformer. According to the test results, larger leakage reactance than expected is observed due to the bulky core which surrounds the sryostat.

  • This paper presents simulations of the pancake in the simplified 3D microwave oven. The results were compared with experimental data. For the comparison we used infrared photography of the heated pancake and electric field distribution obtained by simulation. Finite Element Method (FEM) using edge element is employed for the simulation. For solving the large sparse system parallelled QMR method was used.

  • According to the improvement of the HTS wires performance, several tapes of HTS superconducting machines are being developed. Stacked HTS tapes are used as conductor that can flow high current for the HTS power machines. To develop the HTS power machines, the critical current characteristics of a stacked HTS tapes in external filed and AC losses should be examined. In this paper, we present characteristic of the stacked HTS tapes and AC losses of HTS pancake windings with stacked tapes. AC loss of the pancake winding were measured and compared with the calculated loss by using AC loss data of the stacked samples and the magnetic flux density in the HTS winding under operating conditions. We can see that measured results generally agree well with the calculated results by using AC loss data of 4-stacked sample.
