신선편이 엽채류 및 조미채소류의 냉장저장 중 품질변화 (Quality Changes of Fresh-Cut Leafy and Condiment Vegetables during Refrigerated Storage)

  • 현재 급식 외식 업체용으로 유통되고 있는 절단 세척된 신선편이 엽채류 및 조미채소류에 대하여 저장온도와 포장 방법에 따른 미생물학적, 물리, 화학적인 품질변화와 저장 중 변화되는 외관변화를 연구하였다. 본 연구의 대상인 엽채류 및 조미채소류의 품질변화는 신선편이의 농산물의 종류와 온도, 저장기간에 따라 수분함량, 색도, pH 등의 변화에 차이를 보였으며, 특히 10$^{\circ}C$에 저장한 품목들의 변화량이 컸다. 저장온도에 따른 미생물변화에 대한 품질변화 결과, 대장균의 경우 온도에 상관없이 저장기간 동안 검출되지 않았으나 총균수와 대장균군의 경우 4$^{\circ}C$에서 저장하는 동안 대체적으로 낮은 수준으로 유지할 수 있었으며, 10$^{\circ}C$에 저장한 엽채류의 경우 조직의 물러짐이 빠르게 나타나고 형태의 변화가 가속화되어 총균수와 대장균군의 증식이 조미채소류보다 빠른 것을 확인할 수 있었다. 온도에 따른 외관 품질의 변화결과에서는 4$^{\circ}C$에 저장한 것이 물러짐, 흑변현상, 갈변과 황화현상 등이 완만하게 발생하거나 저해되는 경향을 보였고, 10$^{\circ}C$의 경우 호흡률에 의한 진공 풀림, 색 변화 및 이취가 발생함에 따라 4$^{\circ}C$에 비해 품질유지기한이 짧게 나타났다. 그리고 대체로 조미채소류와 엽채류 모두 4$^{\circ}C$에 저장한 것이 10$^{\circ}C$에 저장하는 것보다 최대 3~5일까지 품질을 더 오래 유지할 수 있었다. 포장방법을 달리한 깻잎과 부추의 경우 기공에 따른 대장균과 총균수의 증식 차이는 보이지 않았으며, 포장지의 기공에 의하여 수분의 증발현상이 나타났고, 이에 따라서 수분함량이 감소하고 외관의 변화가 심하게 나타나, 품목에 따른 포장방법에 차이를 두어야 함을 확인할 수 있었다. 따라서 신선편이 농산물은 품목에 따라 저장온도와 포장방법이 품질에 영향을 미치므로 적절한 저장 온도와 포장방법을 유지한다면 품질과 안전성을 동시에 확보하여 품질유지기한을 연장할 수 있으리라 사료된다.

  • The needs of micro scale thermal detecting technique are increasing in biology and chemical industry. For example, Thermal finger print, Micro PCR(polymer chain reaction), ${\mu}TAS$ and so on. To satisfy these needs, we developed a DTSA(Diode Temperature Sensor Array) for detecting and controlling the temperature on small surface. The DTSA is fabricated by using VLSI technique. It consists of 32 ${\times}$ 32 array of diodes (1,024 diodes) for temperature detection and 8 heaters for temperature control on a 8mm ${\times}$ 8mm surface area. The working principle of temperature detection is that the forward voltage drop across a silicon diode is approximately proportional to the inverse of the absolute temperature of diode. And eight heaters ($1K{\Omega}$) made of poly-silicon are added onto a silicon wafer and controlled individually to maintain a uniform temperature distribution across the DTSA. Flip chip packaging used for easy connection of the DTSA. The circuitry for scanning and controlling DTSA are also developed

인터넷을 이용한 건표고 등급선별장치의 원격제어 및 관리 시스템 개발 (Development of Remote Control and Management System for Dried Mushroom Grader via Internet)

  • An internet and network based software and related interface have been developed, which can remotely control and manage an on-site operating system. Developed software modules were composed of two parts: monitoring/management modules and control/diagnosis modules were developed for the network status, warehouse, production and selling status. Modules of control with diagnosis were developed for the on-site operating system and interface. Each module was integrated and the whole modules have been tested with an automatic mushroom grading/sorting system which was built in a laboratory. Developed software modules worked successfully without any uncommon situations such as system down caused by the software or data transfer error. Each software module was developed independently in order to apply easily to other existing on-site systems such as rice processing centers, fruit and vegetable sorting, packaging and distribution centers scattered over the country.

The Effect of Warning Labels on Cigarette Packages: Textual vs. Textual-Visual and Self-Efficacy

  • The small number of fusion research that addresses fear-appeal and self-efficacy in the effectiveness of warning labels cause the label is not clear, then the purpose of the study is the first to examine the effect of the combination of the message. With the experimental method, a total of 240 participants were smokers consist of Indonesian university students in the age range 18-23 years. Data obtained then processed with ANOVA statistical methods and Test T. The results are consistent with previous studies that the visual warning labels more effective than the textual warning labels alone. Results also suggest that a warning label should be both visual and textual messages combined with self-efficacy. Limitations, this study does not differentiate among smokers and non-smokers, in addition to the images are used only one type of disease, so that the research needs to be done to distinguish these factors.

부산.김해지역 중소제조업체의 수출물류비 현황분석 및 절감방안 연구 (Export Logistics of Small-medium Sized Manufacturers in Busan Kimhae Area)

  • In this study, for purpose of searching for measures to lower the logistics costs which is one of the most difficulties for the small-medium sized manufacturers in Pusan and Kimhae, those manufacturers were surveyed with questionnaire about the facts in the export logistics costs, difficulties related to the costs, and measures they thought for lowering the cost. Taking account of findings from the survey, the comprehensive measures of saving the export logistics costs were to be proposed. In the surveyed manufacturers, the problems they thought over export logistics costs lied in short logistics information and transportation-related difficulties in cargo and distribution, insufficient standardization in packaging and the shortage of material handling equipments in unloading. In transportation, frequent non-fulfillment of in-time shipment, cost increase including over consumption of transportation time due to traffic jam, and the biased heavy use of inland transportation were pointed out as problems. In customs clearance, logistics information, and marine insurance, addressed were complexity in custom clearance and bonded transportation procedures, and the shortage of software and hardware to construct logistics information system.

가구특성 및 쇼핑행태가 과일 구입가격에 미치는 영향 (An Impact of the Characteristics of Individual Household and Its Shopping Behavior on the Purchase Prices of Fruits)

  • This study probed into some characteristics of the urban household such as household income, number of the household, age distribution of the family members, their characteristics of shopping behavior such as the shopping place, types of the packaging and the characteristics of the time series, using consumer panel data of the Rural Development Administration (RDA). It further examined how the above factors affect fruit purchasing prices and then estimates the degree of the influence by each factor. The study looked at the purchase of apples, pears, tangerines, and oranges - the most favorite fruits in Korea. The results of this study can be utilized as the basic information for marketing strategies and/or for the establishment of future policy plans related to fruits consumption.

국내 육 가공품의 소비성향에 관한 연구 (Consumption Pattern of Meat Products in Korea)

  • A total of 100 adults were surveyed on types of favorable meat products. They tended to show much of unsatisfactory on the market products. Those unsatisfactory were mostly conceptual such as instant products, unreliable raw materials, sanitation conditions, list of unfavorable ingredients, mix of harmful additives, and etc. The results indicated that the consumers purchased the products of ham, cheese, chicken, sausages, and canned products mostly at medium-large marts(56%), department stores(22%), retail stores(19%) and others(3%). They were also concerned with the distribution date, prices, shape of packaging, and etc. The types of products and frequencies of purchasing various products were varied by time. For the purchase of products, mixed items were more favored rather than the single items.

두부산업 발전사 (History of tofu industry)

  • Tofu has been consumed as source of protein in Asia for hundreds of years and it was first known in US and Europe by Asian immigrants during 1900s. Lately it is being spotlighted for excellent plant-based protein that has nutritional value. Tofu has long been the most widely used ingredients in Asia and it has been developed into various forms such as tofu, yuba, fried tofu, tofu sheet, fermented tofu and more according to food culture. With development of equipment, coagulant, packaging and pasteurization, now we can have advanced flavor, productivity and distribution of tofu. Tofu has been brought to customer's attention, people who prefer more health oriented, sustainable and eco-friendly food during COVID-19 pandemic season. Furthermore, this global trend is expected to be continued. In response to the trend we need more study on new texture of tofu, substitution of meat, dairy, and various commercialization of HMR in future.

  • This study investigated the effect of the level of ethics in food manufacturing of agricultural products processing companies on food safety and product trust. In general, a company's food manufacturing ethics is complex, includes social responsibility, and has a potential impact on stakeholders. The main implications summarized based on the analysis results are the expansion of the HACCP application of the agricultural product processing system, the production of safe agri-food that fulfills social responsibilities with an ethical awareness, including entrepreneurial awareness, from raw materials to processing, packaging, and distribution from a long-term perspective. It was found that it was necessary to secure product trust and to provide education, consulting and management on ethical awareness.

  • 신문왕국이라 불리는 일본 신문 역시 발행부수, 매출액, 광고수익 등에서 위기를 맞고 있다. 이에 일본의 주요 전국지 경영진들은 현재 일본 신문이 직면한 위기의 원인을 어떻게 진단하고 있고, 나아가 위기를 극복하기 위해 어떠한 대응전략을 펴고 있는지를 심층인터뷰와 2차 자료를 통해 살펴보았다. 일본 주요 신문사의 경영진들은 위기 원인을 주로 매체환경 변화에 따른 젊은 독자의 감소와 같은 외적 요인에서 찾고 있었다. 또한 광고매체로서 신문의 매력도 감소나 제작유통비용 상승과 같은 신문산업의 구조적 요인을 문제로 꼽았다. 위기에 대처하기 위한 대응으로는 젊은 독자에게 어필할 수 있도록 신문의 지면 강화, 온라인-오프라인 패키지 광고와 고객맞춤형 광고 시도, 온라인, 모바일 영역으로의 뉴스유통 확대, 부동산 사업 등 다각화를 통한 재정 안정성 확보, 브랜드 가치를 높이기 위한 각종 사업, 신문사간 공동 뉴스사이트 운영, 공동인쇄와 배달 등 다양한 협업을 시도하고 있다. 본 논문은 일본 신문사 경영진들의 위기인식에서부터 극복을 위한 다양한 대응전략을 통해 국내 신문기업들이 공유할만한 정보와 전략들을 제시했다는 데 의의가 있다.
