As an indicator of skin health, acidified skin surface pH ranging from 5 to 7 is crucial for maintaining skin barrier. In this study, we evaluated the relationship between skin pH and dietary pattern (DP) as well as nutrient or food intake in 48 healthy middle aged adults. Skin pH was measured in the skin surface of the inner arm, and blood lipid profile was analyzed. Dietary intake data were obtained using 1 day 24 hour recall method, and DP was extracted using factor analysis. Results revealed that skin pH ranged from 5.15 to 6.88 in all subjects. There was no significant difference in skin pH between males and females. When subjects were grouped by tertile of skin pH, the food intake of fruit, and the nutrient intake of omega 6 fatty acid, potassium, vitamin A, vitamin C, ${\beta}$-carotene, and riboflavin in the first tertile group with skin pH ranging from 5.15 to 5.68 were significantly higher than in the third tertile group with skin pH ranging from 6.26 to 6.88. There was no difference in blood lipid profile between the first and the third tertile group. Among 5 DP extracted by factor analysis, DP5 characterized by a high intake of nuts and fruits as well as a low intake of beverages and alcohol was inversely correlated with skin pH after adjusting for gender and age. DP5 was positively correlated with nutrient intake of carbohydrate, fiber, potassium, iron, vitamin A, vitamin C, ${\beta}$-carotene, thiamine, and riboflavin but negatively correlated with sodium after adjusting for gender, age, smoking, and energy intake. Therefore, acidified skin pH could be maintained by these DP and nutrients.
The purpose of this study was to determine whether vitamin B6(B6) deficiency affects fuel utilization and blood cholesterol profile with exercise-training. Twenty-four rats were fed a B6 deficient(-B6) diet or a control (+B6) diet for 5 weeks and either exercised(EX) or nonexercised (NE). EX rats were exercised on treadmill(10$^{\circ}$, 0.5-0.8km/h) for 20 minutes everyday. Glucose(GLU), glycogen (GLY), protein(PRO), trglyceride(TG), free fatty acid(FFA), total cholesterl(TC), HDL-cholesterol(HDL-C) and LDL-choleterol(LDL-C) were compared in plasma(P), liver(L) and skeletal muscle(M) of rats. There was a vitamin effect on the level of P-GLU, P-TG, M-TG, L-GLY, L-PRO and an exercise effect on the level of P-PRO, P-FFA, M-PRO, L-GLY, L-TG, P-TC, P-HDL-C, P-LDL-C. Compared to +B6 rats were lower and there were no differences in P-GLU, P-FFA, P-TG. M-GLY, L-TG, P-TC and P-HDL-C. In EX group, the level of P-TG was higher and M-PRO was lower in -B6 rats. There were no differences in M-GLY, L-TG, P-TC and P-HDL-C. These results suggest that a lowered intake of vitamin B6 may impair the adaptation of animals to fuel metabolism related to a decrease of fatty acid oxidation and attenuates the exercise-traning effect on blood lipid profile.
The purpose of this study was to compare the physicochemical properties of sausage manufactured with carp (Carassius carassius) muscle and pork. Sausages were prepared using either 100% pork sausage (P10), a mixture of 50% pork and 50% carp muscle (P5C5), or 100% carp muscle (C10). The quality of the sausage emulsion was determined by analyzing approximate composition, pH, instrumental color, cooking yield, water holding capacity (WHC), viscosity, and texture profile analysis (TPA). Moisture content of cooked C10 was significantly higher than that of P10 or P5C5 (p < 0.05); however, protein content of cooked P10 was significantly higher than that of C10 (p < 0.05). The pH of uncooked and cooked C10 was significantly higher than that of P10 and P5C5 (p < 0.05). The cooking yield, WHC, and texture profile analysis of C10 were higher than those of P10 and P5C5 (p < 0.05). In addition, the viscosity of uncooked C10 was higher than that of P10 and P5C5. These results suggest that carp muscle can enhance sausage quality with respect to pH, WHC, cooking yield, viscosity, and TPA.
This study is focused on characterization of the physio-chemical and mineralogical properties, investigation of their vertical changes in the tailing profile of the Guryoung mining area, classification of the profile into distinct zones, and condition conceptual model of physio-chemical conditions and phases-water relationships controlling the element behaviors in the tailings. The upper part of the groundwater is characterized by the high contents of $Fe_2O_3$ and $SO_3$ for whole rock analysis, low pH, and the occurrence of jarosite, schwertmannite and Fe-oxyhydroxide as the secondary mineral phases. The tailing profile can be divided into the covering soil, jarosite zone, Fe-sulfate zone, Fe-oxyhydroxide and gypsum-bearing pyrite zone, calcite-bearing pyrite zone, soil zone, and weathered zone on the based of the geochemical and mineralogical characteristics. The profile can be sampled into the oxidized zone and the carbonate-rich primary zone with the dramatic changes in pH and the secondary mineral phases. The conceptual model proposed for the tailing profile can be summarized that the oxidation of pyrite is the most important reaction controlling the changes in pH, the dissolution of the primary silicates and carbonates, the precipitation of secondary mineral phases, acid-neutralizing, and heavy metal behaviors through the profile.

This study aimed to investigate the effect of sunflower seeds, either as whole or as oil, on rumen fermentation, milk production, milk composition and fatty acids profile in dairy goats. Fifteen lactating Damascus goats were divided randomly into three groups (n = 5) fed a basal diet of concentrate feed mixture and fresh Trifolium alexandrinum at 50:50 on dry matter basis (Control) in addition to 50 g/head/d sunflower seeds whole (SS) or 20 mL/head/d sunflower seeds oil (SO) in a complete randomized design. Milk was sampled every two weeks during 90 days of experimental period for chemical analysis and rumen was sampled at 30, 60, and 90 days of the experiment for ruminal pH, volatile fatty acids (tVFA), and ammonia-N determination. Addition of SO decreased (p = 0.017) ruminal pH, whereas SO and SS increased tVFA (p<0.001) and acetate (p = 0.034) concentrations. Serum glucose increased (p = 0.013) in SO and SS goats vs Control. The SO and SS treated goats had improved milk yield (p = 0.007) and milk fat content (p = 0.002). Moreover, SO increased milk lactose content (p = 0.048) and feed efficiency (p = 0.046) compared to Control. Both of SS and SO increased (p<0.05) milk unsaturated fatty acids content specially conjugated linolenic acid (CLA) vs Control. Addition of SS and SO increased (p = 0. 021) C18:3N3 fatty acid compared to Control diet. Data suggested that addition of either SS or SO to lactating goats ration had beneficial effects on milk yield and milk composition with enhancing milk content of healthy fatty acids (CLA and omega 3), without detrimental effects on animal performance.
Broiler processing waste(offal) was homogenized and treated with the combination of acids. The offal was autolyzed(ensiled) at $25^{\circ}C$ for 72 hrs and analyzed for pH and fatty acid profile. The proximate composition and microbial content change of the autolyzed offal by mixing with wheat bran and ovendrying were evaluated. The initial pH value of the homogenized offal, 6.52 came down to 2.75 within 5 min after acidification and increased silightly to $3.06{\sim}2.92$ during autolysis. The proximate composition and fatty acid profile of the autolyzed offal were not substantially different from the unautoylzed offal. However, the log CFU(colony forming units)/g of total plate counts and fungal counts decreased from 7.45 and 7.11 to 3.39 and 2.03 after autolysis, respectively.
The present study evaluated the blood profile and meat color of ducks with Houttuynia cordata (H. cordata) pellets in their diets. In total, 120 pekin ducks (1-d-old) were used in a 42 d growth trial. Ducks were randomly allocated to six pens and exposed to three replicates of two treatments: (1) controls as basal diet and (2) basal diet + 2% H. cordata pellets (T1). Total-cholesterol, HDL-cholesterol, triglyceride contents or L* and b* vaules revealed significant difference (p>0.05) in compared with those in the controls; however, dietary supplementation of H. cordata pellets did not affect (p>0.05) LDL-cholesterol, VLDL-cholesterol and a* values. In conclusion, the inclusion of 2% H. cordata pellets improved HDL-cholesterol and meat color in duck breast and thigh meats, which further reduced other cholesterol values.

The purpose of this study was to develop the wireless pH telemetry lasting longer than 24 hours in the mouth to overcome the limits of conventional wire telemetry previously used for salivary and plaque pH measurement, and to assess its effectiveness. We developed a wireless pH telemeter which can measure and store the pH profile data during more than 24 hours. It was composed of intraoral part; pH sensor of antimony electrode, battery and microprocessor for data storage, and extraoral part; control/data receiver and data analyzing software which was newly made for this device. After inspecting wireless electrode for accurate measurement, it was attached to the removable intraoral appliance and delivered to the volunteer who was told to wear except brushing time, retrieved after 24 hours and finally the pH profile data was extracted and analyzed. When compared with conventional wire telemetry, this device showed similar results and induced less discomfort to examinees. The data showed pH changes at same time when examinees ate various scheduled foods and beverages. With this method it became possible to accurately measure pH changes within mouth for long time in accordance with individual's lifestyle, definitely reducing the discomfort inflicted to the examinees' life.
Biodiesel is produced through the transesterification process in the presence of alcohol and a catalyst that catalyzes the conversion of triglycerides to esters and glycerol compounds. A more optimal product conversion can be achieved using enzymes, such as lipase. Lipase is reported to be produced in osmophilic yeasts due to the low water content in their natural habitats. Wild forest honey is one of the osmophilic natural habitats in Indonesia. However, lipase-producing yeast has not been reported in the Indonesian honey. In this study, we screened the lipase-producing yeasts isolated from wild forest honey collected from Central Sulawesi. The production profile and activity of lipase were determined at different pH values and temperatures. One promising yeast was isolated from the honey, which was identified as Zygosaccharomyces mellis SG 1.2 based on ITS sequence. The maximum lipase production (24.56 ± 1.30 U/mg biomass) was achieved by culturing the strain in a medium containing 2% olive oil as a carbon source at pH 7 and 30℃ for 40 h. The optimum pH and temperature for lipase activity were 6 and 55℃, respectively. The enzyme maintained 80% of its activity upon incubation at 25℃ for 4 h. However, the enzyme activity decreased by more than 50% upon incubation at 35 and 40℃ for 2 h. This is the first study to report the lipase producing capability of Z. mellis. Further studies are needed to optimize the enzyme production.
Physicochemical properties of aspalatone (acetylsalicylic acid maltol ester, AM), which has been recently found to have an antithrombotic effect, were studied in terms of solubility, dissolution, partition coefficient (Pc) and stability. The solubility of AM at 37$^{\circ}C$ was about 1.2 mg/ml and the P$_{c}$ value for n-octanol/water and chloroform/water was 11.4 and 382.6, respectively. Dissolution rates of AM at pH 1.2 and 6.8 were more than 80% within 30 min. The degradation of AM followed apparent first-order kinetics, and was dependent on temperature, pH and ionic strength. From the pH-rate profile, the optimal pH was found to be at around 4.0. Half-lives at pH 1.2 and 6.8 were 33.5 and 44.4 hr, respectively. The degradation rate of AM at pH 1.2 was somewhat faster than that of aspirin, but at pH 7.0, the degradation rate of AM was slower than that of aspirin.n.
