A Study on Sources of Pore Formationin Onggi via the Comparison with Porcelains (도자기와의 물성 비교를 통한 옹기의 기공 형성 원인 분석)

  • Onggi, which is described as a breathing pottery, has strongly influenced the traditional food culture in Korea. In this study Onggi is compared to porcelains including celadon and white porcelain to analyze the sources of pore formation. The differences in starting materials are examined for chemical and mineralogical compositions, particle size and distribution. The gas permeability of the fired samples is correlated to the matrix microstructure. The broad particle size distribution and high iron oxide content of Onggi are revealed as the major cause for the pore formation. Open pores are formed with large particles in the Onggi body while closed pores have a high iron oxide concentration. The Onggi body with increased open pores leads to the high gas permeability.

  • Soy sauce was fermented at $20^{\circ}C$ for 100 days in onggi containers (ethnic Korean earthenware) which had been fabricated using three different glazing treatments: unglazed, glazed only on the outside, and glazed on both surfaces. The changes in microstructure and permeability characteristics of onggi containers were examined after fermentation of soy sauce. The effect of repeated use of onggi containers on the fermentation was analyzed by the contact between an aqueous model solution and the onggi containers used once for soy sauce fermentation. The levels of reducing sugar and free amino acids produced from the dissolved starch and protein, respectively, in the solution were compared between the new and reused onggi containers. The moisture permeance and gas permeabilities of the onggi jars were progressively reduced with continuing use for soy sauce fermentation, probably due to clogging of micropores by solid materials. After having been used once for fermentation, the microbial cells and/or enzymes immobilized on the surface or in the micropores of the onggi containers seemed to contribute to accelerating the hydrolytic reactions of starch and protein.

  • How do we use onggi, Korean earthenware, for container of dough during fermentation instead of stainless steel container? How does it affect the flavor of bread if onggi tray is used in baking instead of steel tray? We tried to confirm those. As a result, the characteristics of onggi made positive effect on dough in fermenting room. The time, when the temperature of the center in the dough is equilibrated to that of surface on the dough, take shorter in onggi than in stainless steel. It could make the temperature of dough maintained evenly with little deviation, which could result in shorter fermentation time. Volume and surface color of the bread baked on onggi tray were better than on steel tray. The bread baked on onggi tray got higher score on overall acceptability in sensory test than on steel tray. Therefore, if onggi is used during baking, it could produce better quality of bread like making positive effect on fermented foods.

  • Anchovy soy sauce was fermented at ambient temperature in 20 L new Onggi, used Onggi, stainless steel, and plastic containers, and sauce quality was analyzed. Microporous insulated Onggi containers were found to promote fermentative microbial growth, thus creating desirable conditions for the preparation of good-quality anchovy soy sauce. The use of used Onggi containers yielded an anchovy soy sauce with high contents of total nitrogen and free amino acids, which afforded good sensory qualities with respect to odor, taste, and overall acceptability.

  • A non-electric water purification system using the Korean traditional ceramic ware Onggi, was demonstrated as an appropriate technology to solve water shortages in under developed regions. Generally, Onggi is produced using large size raw materials that are sintered at low temperature, resulting in a porous body that shows air and water permeability. An Onggi filter was prepared using a spinning wheel with the addition of rice bran to the body to increase porosity. The porosity of the obtained Onggi filter was 25.1%; the water permeability was 85.1 $L/m^2h$. Turbidity and TDS of the purified water using Onggi filter were decreased by 97.7% and 29.1%, respectively.

Effects of Earthenware Vase on Vase Life of Cut Gerbera Flowers and Microbial Multiplication (옹기 화병이 절화 거베라의 수명 및 미생물 증식에 미치는 영향)

  • To examine the availability of onggi (earthenware) as a floral vase, we compared the vase life of cut gerberas (Gerbera jamesonii) with generally used vases made of glass and porcelain. After holding cut gerbera 'Honeymoon' and 'Golden Time' in vases made of glass, porcelain, and onggi containing holding solution (tap water or preservative solution), vase life, fresh weight, and water uptake of cut flowers, and total number of microbes in holding solution were collected. In onggi vase, vase life of both the cultivars was longer than the other vases and floral preservative prolonged vase life compared with tap water. Cut gerberas applied with preservative solution in onggi vase maintained their ornamental value for more than 14 days. Cumulative water uptake by cut gerberas was greatest in onggi vase, where 'Honeymoon' and 'Golden Time' absorbed water by 19.2 and 15.8 mL, respectively, for 10 days. Fresh weight of cut flowers in onggi vase was greater than those of the others, and the preservative solution delayed the reduction of fresh weight compared with tap water. Especially, onggi vase with preservative solution maintained 89% of the initial fresh weight at the 8th day of the treatments due to smooth water uptake with comparison with 71% in porcelain. Total number of microbes in the holding solution was smallest in onggi vase. At the 8th day, microbes number in onggi vase was 435 cfu/mL, that was 20-30% level of those of glass and porcelain vases. In conclusion, onggi vase inhibited microbial proliferation in holding solution, maintained water uptake by cut flower, and delayed bending of flower stalks due to vascular blockage, and then prolonged vase life in gerbera. Therefore, onggi with numerous micropores will be a good material for flower vase and preservative solution can improve its function.

A Case Study on the Influence of the Local Government to the Intangible Cultural Heritage Community - Focused on Oegosan Onggi Village - (지방자치단체가 무형유산 공동체에 미치는 영향 - 외고산 옹기마을 사례를 중심으로 -)

  • Oegosan Onggi Village can be characterized by having industrial significance and cultural significance of Onggi. However Onggijang(Onggi maker) worked in poor conditions because the village was in the limited development district. Throughout the new millenium phenomenon of Well-being, the awareness of cultural values has been increased while local government designated Onggi as Local Intangible Cultural Heritage(ICH). In this condition, Ulsan metro city and Ulju county paid attention to Onggi Village as tourist attractions. First, they worked improving condition of village through Cultural Tourist Attraction Plan. Second, they extended their participation in Onggi Festival so the festival growed. Third, they designated Onggijang in Village as Local ICH. These activities were the effort in order to revitalize the village, however the cultural tourist attraction plan was solely centralized into tourist attractions. Thus, the work condition of Onggijang was not considered sufficiently so the work condition had become more inconvenient than the previous situation. In the case of Onggi festival, the outward development has been accomplished in accordance with the growth of festival scale and visitors, while the identity of festival had been weaken so the Onggijang barely attended the Onggi festival. The designation of ICH was also the unilateral decision, Onggijang had been in the conflict relationship between Onggijang concerning the craftsmanship and maintenance of the ICH. Local Government had power on their Intangible Cultural Heritage(ICH). Therefore we need to seek for role and functions as community on ICH.

Effect of Korean Earthenware Container (Onggi) on Preservation of Fresh Fruits and Vegetables (신선 과일과 채소의 보관에 사용된 옹기의 저장성 향상 효과)

  • The effect of different containers on preservation of the fresh produces of banana, non-astringent persimmon, strawberry, cherry tomato and enoki mushroom was evaluated by storage test at controlled chilled temperature. Korean earthenware containers (onggi) glazed and/or unglazed were compared with plastic box and chinaware (or glass bottle). Glazed onggi was effective in preserving banana, persimmon and cherry tomato, while there was only marginal or little benefit with strawberry and enoki mushroom. The positive effect of glazed onggi on the freshness keeping for these ethylene-sensitive commodities is reasoned to come from adsorption of ethylene by the onggi, which needs to be tested by further study.

Effects of Vessel on the Quality Changes during Fermentation of Kochujang (고추장의 숙성 중 발효 용기가 품질변화에 미치는 영향)

  • Kochujang(Korean red pepper paste) of 600 g was fermented in the different types of vessels (glass, polypropylene(PP), polyethylene terephthalate(PET), stainless steel and Korean porcelain called onggi) with 627 mL of volume during 4 months. The quality changes were monitored for physical, chemical and microbiological attributes. Onggi which had high porosity in the micro-structure provided kochujang with higher microbial counts of aerobic bacteria, lactic acid bacteria and yeasts than those of the other containers. Compared to kochujang fermented in the other containers, kochujang in Onggi showed higher protease activity, amino type nitrogen, and free amino acid content. The kochujang in Onggi also attained higher acidity, lower pH and higher reducing sugar concentration than those in the other containers. All changes were completed 2 or 3 months. Onggi showed water loss and salt increase of the kochujang comparable to those in the other vessels, which was from gradual clogging of the micropores during storage. All physical, chemical and microbiological changes made the kochujang in Onggi attain the sensory quality significantly better than those fermented in the other vessels.

  • Onggi, described as a 'breathing' type of pottery' has significantly influenced the traditional food culture of Korea. It is known that Onggi is an optimal type of storage for fermented foods such as soy sauce, salted seafood, and Kimchi, as air or liquid can penetrate through the body of this material. These foods gain flavor due to the breeding of aerobic bacteria at the beginning of the fermentation process. In this study, Onggi materials from five regions, Gangjin, Yeoju, Ulsan, Yesan, and Jeju, were collected and analyzed to determine their chemical and physical properties before and after sintering. The differences in the raw materials of other mining regions are examined in terms of their chemical and mineralogical compositions, specific surface area, particle size, and particle distribution. Among them, the Gangjin raw material has the greatest mean particle size of $92.29{\mu}m$, as well as the widest particle size distribution. Differences in the levels of $SiO_2$ and $Fe_2O_3$ are shown among Onggi raw materials. However, the crystalline phases formed after sintering are identical, except for the Jeju samples. At all sintering temperatures tested here, Gangjin Onggi showed the greatest porosity, leading to complete air permeation through the body within 90 minutes. These results taken together indicate that air permeation is strongly related to the pore structures in the Onggi body. This is assumed to affect the fermentation behavior.
