Extraction Condition from Schizandra chinensis Baillon for Beverage Develooment of High Scizandrin Concentration (Schizandrin함량이 높은 음료개발올 위한 오미자 (Schizandra chinensis Baillon) 추출조건)

  • Omija (Schizandra chinensis Baillon) has five lignans such as schizandrin, gomisin A, gomisin N, gomisin C and schizandrin C. Its major constituent, schizandrin, has a deterrent effect on nephrotoxicity of cisplatin, blood sugar and an ulcer of the stomach. In this study, we have investigated optimized extraction condition to make high functional beverage by quantifying schizandrin and measuring of browning index. Browning index was used as an index of color deterioration of anthocyanin. Browning index was decreased according to increment in extraction temperature and ethanol concentration. The optimum extraction time, extraction temperature and alcohol concentration levels were 3 hrs, $46^{\circ}C$ and 24% alcohol for high schizandrin concentration and desired browing index.

  • The effect of water extract in fruits of Omija (Schizandra chinensis Ballion) on liver function in expermental liver injuries induced by $CCl_4$. The levels of GPT, GOT activities in serum were decreased apparently on the dosage of water extract in fruits of Omija correspond to raw Omija 1g compared to control group. The levels of Microsomal protein, glycogen, and pyruvate in liver and of Urea nitrogen, GPT, GOT, LDH in serum showed a trend toward restoration of normalization. No effective of levels of hepatic G6P DH activity and serum free fatty acid by water extract in fruits of Omija.

Fermentation Property by Novel Cellulolytic Lactic Acid Bacteria Enterococcus sp. TO-94 on Omija (Schizandra chinensis Baillon) (신규 섬유질 분해성 젖산균 Enterococcus sp. TO-94를 이용한 오미자의 발효 특성)

  • The use of cellulolytic lactic acid bacteria in new method to prepare high nutrition complementary foods was investigated. For the screening of cellulolytic lactic acid bacteria, more than 1,150 bacterial colony were isolated from diluted infant feces samples. A typical strain which appeared the most excellent cellulolytic activities was identified novel acidophilic Enterococcus sp. TO-94 through the results of morphological, biochemical and chemotaxonomic characteristics and 16S rDNA sequencing. The optimal lactic acid fermentation conditions of Omija(Schizandra chinensis Baillon) by Enterococcus sp. TO-94 were as follows: pH and temperature were 3.0 and $37^{\circ}C$, respectively, and fermentation time was 20hrs. The fructose and glucose were major free sugar and the contents were 5.83 and 4.30 mg/g after fermentation, respectively. The contents of lactic acid and acetic acid were 9.84 mg/g and 2.08 mg/g after fermentation, respectively. The vitamin $B_1$, $B_2$, niacin, folic acid and C were major vitamin in the fermented broth, the contents were 1.5~3 times higher than those of initial fermentation time. Also, the contents of polyphenol and anthocyanine were 3.8 and 1.2 times higher than those of initial fermentation time.

Antioxidant Effects of Kochujang with Added Omija (Schizandra chinensis) By-product Extract Powder (오미자박 압착액 분말을 첨가한 고추장의 항산화 효과)

  • This study was conducted to investigate the antioxidant activity of Kochujang following the addition of Omija (Schizandra chinensis Baillon) by-product extract powder. This study specifically investigated the total levels of phenolics and flavonoids, the activities of DPPH and ABTS radical scavenging, and FRAP (ferric reducing antioxidant power). Our results showed that the total phenolic and flavonoid contents of unmodified Kochujang were 4.06 mg TAE/g and 2.87 mg TAE/g, respectively, and that the total phenolic and flavonoid contents of Kochujang with added Omija by-product extract powder were 3.89~5.19 mg TAE/g and 3.11~5.35 mg TAE/g, respectively. As more Omija by-product extract powder was added, the more the total levels of phenolic compounds and flavonoids increased. This study found that DPPH radical scavenging activity in unmodified Kochujang was 25.8% and that in Kochujang with added Omija by-product extract powder was 27.1~39.7% each. These results indicate that Omija by-product extract powder has possibility not only in Kochujang products but also as a functional food with antioxidant activity characteristics. These results also indicate that adding Omija by-product extract powder to Kochujang had significant effects on overall acceptability. Thus, the addition of 5 or 10% of Omija by-product extract powder is desirable for making Kochujang.

A Study of Antioxidative and Hypoglycemic Activities of Omija(Schizandra chinensis Baillon) Extract under Variable Extract Conditions (추출 조건에 따른 오미자 추출물의 항산화 및 혈당 강하에 관한 연구)

  • This study investigated antioxidative and hypoglycemic activities of Omija for evaluation of usefulness as a functional food resource. Omija water extracts were extracted with water for 24 hr, 6 hr and 3 hr at room temperature, 60$^{\circ}C$ and 100$^{\circ}C$, respectively. Omija ethanol extracts were extracted with 60% ethanol for 24 hr and 3 hr at room temp temperature and 60$^{\circ}C$, respectively. The antioxidant properties of Omija(Schizandra chinensis Baillon) extracts prepared under different extraction conditions were evaluated by a variety of radical scavenging assays including DPPH, $ABTS^{{cdot}+}$, and nitrite and reducing power. Hypoglycemic activity was examined for $\alpha$-glucosidase inhibition using an in vitro model. The total phenolic content was also determined. Antioxidant activities of Omija were the highest in the group extracted with 60% ethanol for 3 hr. The ethanol extracts showed higher activity than water extracts. An extraction temperature was the highest in 60$^{\circ}C$. The total phenolic content extracted with 60% ethanol for 3 hr at 60$^{\circ}C$ was 530 mg GAE/100 g. The water extract extracted with water for 24 hr at room temperature showed the lowest antioxidant activity and phenolic content. $\alpha$-glucosidase inhibitory activity was the highest in the group extracted with 60% ethanol for 3 hr at 60$^{\circ}C$, followed by the group extracted with 60% ethanol for 24 hr. The results suggest that extraction of Omija by 60% ethanol for 3 hr at 60$^{\circ}C$ will be useful as a functional food resource with natural antioxidants and hypoglycemic activities.

Optimization of Roasting Process as Pre-treatment for Extraction of Omija(Schizandra chinensis Baillon) (오미자 추출을 위한 전처리로서의 볶음공정 최적화)

  • The effect of roasting of Omija (Schizandra chinensis Baillon) on the physicochemical properties and the sensory quality of the extract was investigated in order to improve the quality of Omija beverage. The response surface methodology was introduced to optimize the roasting condition of Omija based on the sensory quality of the extract. The titratable acidity, the soluble solid content and the reducing sugar content of the extract increased with a mild roasting, but decreased with an excessive roasting. Prolonged roasting at high temperature decomposed red pigment making the color of the extract lighter, less red and less yellow. A mild roasting of Omija improved the sensory quality of the extract, and the highest sensory quality of the extract was provided with the roasting at $180^{\circ}C$ for 10 min, indicating the optimum roasting condition of Omija. The extract of the roasted Omija was superior in sensory properties to that of the unroasted one.

Characteristics of Schizandra chinensis Baillon Orchard Soils Located in Jangsu-gun, Jeollabuk-do (전라북도 장수군 오미자 재배과원 토양 특성)

  • This study was conducted to investigate the physico-chemical properties of Schizandra chinensis Baillon orchard soils located in Jangsu-gun, Jeollabuk-do. Surface (0 to 10 cm) soils were collected from 200 experimental sites located at Jangsu-eup (53 site), Gyenam-myeon (31), Chunchun-myeon (73), Janggye-myeon (12), Bunyam-myeon (31). The soil texture was mostly loamy sand, and the mean values of degree of soil aggregate and soil porosity were 33.1 and 59.9%, respectively. The pH, EC, total-N, available-P, soil organic matter, and cation exchange capacity of the soils were $5.51{\pm}0.54$, $290{\pm}139{\mu}S\;cm^{-1}$, $946.3{\pm}65.5mg\;kg^{-1}$, $319.6{\pm}29.2mg\;kg^{-1}$, $29.0{\pm}13.9g\;kg^{-1}$ and $4.11{\pm}0.34cmol_c\;kg^{-1}$, respectively. The concentrations of Pb, Cd, Cu and Zn were $3.48{\pm}0.55$, $0.09{\pm}0.04$, $6.90{\pm}0.91$ and $97.7{\pm}42.2mg\;kg^{-1}$, respectively. The presented data can be utilized in better managing Schizandra chinensis Baillon orchard soils in the studied areas.

Preparation and Characteristics of Drinkable Yoghurt Added Water Extract of Omija(Schizandra chinensis Baillon) (오미자(Schizandra chinensis Baillon) 추출물 첨가 Drinkable Yoghurt의 제조 및 특성)

  • A new type of drinkable yoghurt was prepared to develop a functional yoghurt. Skim milk containing 0.4-1.0%(w/v) water extract of omija(Schizandra chinensis Baillon) was fermented by the mixed strains of Lactobacillus acidophilus and Streptococcus thermophilus. Quality characteristics of the drinkable yoghurts were evaluated in terms of compositions, keeping-quality(pH, titratable acidity, number of viable cells) and sensory properties. The drinkable yoghurts added with water extract of Schizandra chinensis were composed of 2.92-3.03% protein, 9.98-10.23% lactose, 0.81-1.08% fat, 16.21-16.64% total solid, and 14.57-15.17% solid-not-fat. The L values(brightness) were significantly lower in the yoghurts containing water extract of Schizandra chinensis than that of the control which had no water extract of Schizandra chinensis, while the a values(redness) and b values(yellowness) were significantly higher than those of the control. The pH, titratable acidity and number of viable cells of the lactic acid bacteria of all yoghurts were not changed during the storage at 4$^{\circ}C$ for 15 days, while the pH and titratable acidity were remarkedly changed during the yoghurts stored at 20$^{\circ}C$ for 15 days. The drinkable yoghurts containing 0.4%(w/v) water extract of Schizandra chinensis added 15%(w/v) oligosaccharide, or 0.6%(w/v) water extract of Schizandra chinensis added 20%(w/v) oligosaccharide had the highest sensory score in taste and overall acceptability among the treatments. From the results, Schizandra chinensis was a useful natural additive with the bioactive effect by provision of a acceptable physicochemical and sensory properties in the drinkable yoghurt.

Effects of the Omija (Schizandra chinensis Baillon) extract on the metabolism and renal Cadmium contents in Cadmium administered rats (오미자 추출물이 카드뮴을 급여한 흰쥐의 대사와 신장내 카드뮴 함량에 미치는 영향)

  • This study was conducted to investigate the effects of Korean Omija extract on the hepatic and renal function in cadmium intoxicated rats. Male Sprague Dawley of 4 weeks old, weighing 100$\pm$10 g, were randomly assingned to four groups which received over four weeks one of the followings : deionized water for control (CW),3% Omija extract (OE),50 ppm cadmium water (CD) and 50 ppm cadmium water plus 3% Omija extract (CDOE). The results are as followes: there ware no significant differences between CD and CDOE in the body weight gain and food efficiency ratio. But Cadmium contents of kidney, GPT and LDH activities were significantly reduced in CDOE as compared to CD. Weight gain of kidney in CDOE, significantly higher than that of CD, increased to nearly normal level. GOT activities in CDOE, significantly different from that of CD, also considerably lowered to same level as that of tile normal rat group, CW The results suggested that Omija extract may have some protective effects from cadmium intoxication by reducing cadmium accumulation in kidney.
