In this study, we evaluated the dietary fatty-acid pattern and serum fatty-acid composition of middle school students (total, 355 ; male, 182 ; female, 173), who are vulnerable to excessive and unbalanced food intakes such as fatty acids and energy. In serum lipid levels, total Chol (p<0.05) and HDL-Chol (p<0.001) levels of female students were significantly higher than those of mal, students. The average fat intake was 23-26 energy % which falls in with the current recommendation level (15-25%) for adults. Although the average P/M/S ratio of dietary fat was 1.1/1.2/1.0 which approaches the recommended ratio, the average range of $\omega$6/$\omega$3 fatty acid ratio of dietary fat was found to be 12.0-16.5, which is higher than the presently recommended range of 4 -10. Some of the very high values found in this study were partly explained by the fact that the range of individual variation of $\omega$6/$\omega$3 ratios was very large. Mean daily intake of Chol was 357-361 mg. The n3 fatty acid intake of middle school students was higher in the LFHM (high fish low meat) group than in the LFHM (low fish high meat) group. EPA and DHA intakes appeared to be significantly higher (p<0.01) in the HFLM group than in the LFHM group as expected. Dietary total $\omega$3 fatty acids (p<0.05) and EPA (p<0.01) were also negatively associated with serum AA($\omega$6) levels. Interestingly, energy intakes and dietary SEAs such as 12 : 0 (p<0.05), 14 : 0 (p<0.01) and 16 : 0 (p<0.05) were negatively associated with serum AA ($\omega$6) levels. To lower the $\omega$6/$\omega$3 ratio of dietary fatty acids for children, frequent consumption of $\omega$3 series fatty-acid rich foods such as soy bean, bean products and fish is recommended. Detailed guidelines should be developed in recommending balanced food intake and qualitative fat intake for Korean adolescents taking heterogeneous groups into consideration. In accurately evaluating fatty acid intake, it is also necessary to have the fatty acid composition data of all foods consumed in each country.
This study was designed to evaluate the balance of fatty acids for the Korean style broiled beef and pork ingredient of the rate of mixture oil with sesame oil, soybean oil and perilla oil, by self-developed computer program. Each 3 kinds of Korean style broiled beef and pork by the rate of mixure oil with sesame oil, soybean oil and perilla oil, were evaluated by using the self-developed computer program. Contents of calories were 415.6kcal in Korean style broiled beef, 656.3 kcal in Korean style broiled pork. The mean of protein were 41.35g, Korean style broiled beef, 32.66g, Korean style broiled pork. The ratio of C/P/F ratio of Korean style broiled beef and pork, 21/ 40/ 39, 10/ 20/ 70. The mean P/ M/ S of fatty acids in Korean style broiled beef and pork ratio was similar $0.4{\sim}0.5/\;1.4{\sim}1.5/\;1$. The ${\omega}6/{\omega}3$ ratio of fatty acids of Korean style broiled beef and pork using sesame oil was 54.3, 56.9 much higher than desirable $level(4{\sim}8)$. But the ${\omega}6/{\omega}3$ ratio of fatty acids of Korean style broiled beef using mixture oil with sesame oil, soybean oil and perilla oil were 4.6, 4.2 desirable $level(4{\sim}8)$, Korean style broiled pork using mixture oil with sesame oil, soybean oil and perilla oil were 3.0, 6.2. It means the ${\omega}6/{\omega}3$ ratio of fatty acids of Korean style broiled beef and pork was improved of desirable level respectively by using the mixture oil with sesame oil, soybean oil and perilla oil, than using sesame oil.
The purposes of this study were to 1) examine the dietary patterns of fatty acids and the fatty acid composition in serum, 2) determine selenium (Se) concentrations, and 3) investigate how serum fatty acid compositon affects serum levels of Se in Korean elementary school children. The subjects consisted of 168 school children(82 boys & 86 girls) belonging to 1st through 6th grades, and their dietary assessment was evaluated. The serum fatty acid composition was analyzed by GLC, and the ICP/MS method was employed to measure serum Se concentration. Total average intake of PUFA, MUFA and SFA were 10.5g, 12.7g, 11.2g respectively. Total average dietary P/M/S ratio was 1.10/1.18/1.0. The average intake of $\omega$3 fatty acids and $\omega$6 fatty acids were 1.33g, 9.19g, respectively. The $\omega$6/$\omega$3ratio was 14.2 which is higher than the recommended range. In serum fatty acid composition, PUFA, MUFA, SFA were 40.6%, 28.1% and 31.6% respectively. The average $\omega$3 fatty acid composition was 3.80%, and the mean value of $\omega$6 series was 36.8%. The M/S ratio of girls was significantly higher than boy's in fatty acids intake and in serum composition. Mean Se concentration of total subjects was 416.7ug/l and it was significantly higher in the lower grades(1st-3rd)than in the upper grades(4th~6th, p<0.05). Although the mean serum Se concentration was negatively correlated with PUFA composition in total boys and girls, it was not significant. Serum Se concentration was negatively correlated with P/S ratio and C24:1 concentration(p<0.05). In addition, serum composition of $\omega$6 PUFA and C24:1 showed negative correlations with serum Se in only lower grades girl(1st~3rd), and further studies are needed to clarify in these phenomena. In conclusion, the mean serum Se concentration was significantly lower in upper grades (4th~6th)than in lower grades(1st~3rd) of elementary school children and was negatively correlated with P/S ratio of serum fatty acids. More detailed studies on relationship between Se and fatty acids are required.
Effects of high fat diet and/or endurance exercise training on hepatic total and phospholipid(PL) fatty acid compositions were evaluated in rats fed one of the following diets for 31 days. control diet(CD, 5 wt% corn oil) or high fat diet(HFD, 35 wt% corn oil). Half of the rats in each group were exercise-trained regularly on a treadmill for 90 minutes/day during the entire feeding period. Total and PL fatty acid compositions of hepatic lipid extracts were determined by a gas-liquid chromatograph),. Endurance exercise training did not change the daily food intake, but significantly reduced body weight gain and feed efficiency ratio of rats, which were most prominent in animals fed HFD. Exercise training did not significantly change the percentages of ∑saturated fatty acids (SFA) and ∑polyunsaturated fatty acids(PUEA), but decreased the percentage of ∑monounsaturated fatty acids(MUFA) in hepatic total fatty acids, which might be associated with the decrease in (equation omitted) 9-desaturation index of hepatic total fatty acid metabolism. Exercise training significantly lowered the percentages of 16 : 0 and 22 : 5$\omega$3, and increased the percentages of 20 : 1 and 20 : 3$\omega$3 in both total and PL fatty acid compositions in rat liver. Both total fatty acid and PL fatty acid compositions of rat liver responded more sensitively to changes in dietary fat content than to endurance exercise training in this study. Feeding HFD, whoch contains high level of linoleic acid(LA, 18 : 2$\omega$6), significantly decreased the percentages of ∑SFA and $\Sigma$MUFA, and increased the percentages of ∑PUFA and ∑$\omega$6 fatty acids of hepatic total fatty acids. Hepatic total fatty acid composition was affected by dietary fat content and dietary fatty acid composition more sensitively than those found in hepatic PL fatty acid composition. HFD significantly decreased most of desaturation indices, while exercise training significantly decreased elongation index(20 : 5$\omega$3⇒22 : 5$\omega$3) of hepatic total and PL fatty acid metabolism in rats. Maize which has very high omega-6 fatty acid content has been used as a main feed grain for Hanwoo beef production to increase marbling, and thus omega-6 to omega-3 fatty acids ratio in Hanwoo beef is expected to be biased. To elucidate the current status of omega fatty acids ratio in Hanwoo beef, fatty acid profiles of neutral lipid and phospholipid fraction were analyzed separately using 55 Hanwoo steers' longissimus dorsi muscle slaughtered at Pyeongchang, Korea from Oct. to Nov. 2015. In addition, an association study was conducted to evaluate associations between single nucleotide polymorphism (SNP) markers from references and omega fatty acid profiles in phospholipid of Hanwoo beef samples using analysis of variance (ANOVA). In neutral lipid fraction, composition of saturated and monounsaturated fatty acids was higher and polyunsaturated fatty acids was lower compared to those in phospholipid fraction. The mean n-6/n-3 ratios of Hanwoo were $56.059{\pm}16.180$ and $26.811{\pm}6.668$ in phospholipid and neutral lipid, respectively. There were three SNPs showing statistically significant associations with omega fatty acid content. GA type of rs41919985 in fatty acid synthase (FASN) was significantly associated with the highest amount of C20:5 n-3 (p = 0.031). CC type of rs41729173 in fatty acid-binding protein 4 (FABP4) was significantly associated with the lowest amount of C22:2n-6 (p = 0.047). AG type of rs42187261 in FADS1 was significantly linked to the lowest concentration of C20:4 n-6 (p = 0.044). The total n-6/n-3 ratio of the steer which has all four SNP types in above loci (27.905) was much lower than the mean value of the total n-6/n-3 ratio in phospholipid of the 55 Hanwoo steers ($56.059{\pm}16.180$). It was found that phospholipid and neutral lipid of Hanwoo have very high n-6/n-3 ratios compared to the reported data from different cow breeds. Four SNPs in genes related with fatty acid metabolism showed significant associations with the fatty acid profile of phospholipid and may have potential as SNP markers to select Hanwoo steers in terms of n-6/n-3 balance in the future.
The effects of feeding diets with different fatty acids on the composition of fatty acids and vitamin E status in maternal milk & serum and pup's serum were studied. Dietary fats(10% by wt) include on oil(CO), soybean oil(SO), perilla seed oil(PO : about 60% , C18 : 3 $\omega$3) and fish oil(FO : rich in C20 : 5$\omega$3, eicosapentaenoic acid = EPA & 22 : 6$\omega$3, docosahexaenoic acid = DHA), Sprague-Dawley rats weighing 200-250g, were fed experimental diets from pregnancy through lactation period. Maternal milk was obtained by gentle squeezing after 30 minutes of oxytocin(0.2 IU, intraperitoneal) injection. The fatty acid compositions of milk and serum were analyzed at day-2 and day-15. The concentrations of vitamin E in maternal milk and serum and pup's serum were also analyzed. The groups of CO, SO and PO which had no DHA in their diet, contained DHA in their milk, The rations of EPA+DHA/arachidonic acid(AA) were higher in PO group than those in either CO or SO group. This seemed to be due not only to more conversion from C18 : 3$\omega$3 to C20 : 5$\omega$3 and C22 : 6$\omega$3 but also to inhibition of C18 : 2$\omega$6 conversion to C20 : 4$\omega$6. More DHA was found in day-2 milk than in day-15 milk. It was also noted that milk contained more DHA was found in day-2 milk than in day-15 milk. It was also noted that milk contained more DHA than serum and this difference was larger in day-2 than in day-15 milk. Even though the concentrations of vitamin E both in maternal serum and milk were lower in PO and FO groups fed highly unsaturated fat than in CO or SO groups, pup's serum did not show a significant difference among all the experimental groups indicating that the pups man secure their essential nutrients by the biomagnification mechanism.
Objectives : Epidemiological studies in other countries show that a low intake of omega-3 fatty acids (FAs) increases the risk of depression or suicidality. However, no studies have investigated the associations of suicidality with omega-3 FAs in Korea. Hence, this cross-sectional study aimed to investigate the effects of omega FAs on suicidality in the general South Korean population. Methods : The data in this study were sourced from adults (n=215,860) who completed the Sixth Korea National Health and Nutrition Examination Survey (KNHANES VI), and the associations between omega FAs and suicidality were analyzed using multivariate logistic regressions. Results : Our results demonstrated that high omega-3 FA intake was associated with a decreased risk of suicide (OR=0.83, 95% CI : 0.71-0.98) and the high omega-6 to omega-3 FA ratio was associated with an increased risk of suicide (OR=1.25, 95% CI : 1.02-1.54). Additionally, a high intake of omega-3 FAs was associated with a decreased risk of suicide in men, but not in women (OR=0.72, 95% CI : 0.59-0.88). Conclusions : Overall, our findings suggest that a lower intake of omega-3 FA is associated with the increased risk of suicidality in the general Korean population, especially in men.
BACKGROUND/OBJECTIVES: The aim of this research was to study the different long term effects of consumption of dietary oil sources with varying omega-6/omega-3 (${\omega}-6/{\omega}-3$) polyunsaturated fatty acids (PUFAs) ratios on bone marrow fatty acid level, ex vivo prostaglandin $E_2$ ($PGE_2$) release, and mineral content of bone in rabbits. MATERIALS/METHODS: For this purpose, weaning and female New Zealand white rabbits were purchased and randomly divided into five groups and offered ad libitum diets containing 70 g/kg of added oil for 100 days. The dietary lipid treatments were formulated to provide the following ratios of ${\omega}-6/{\omega}-3$ fatty acids: 8.68 soy bean oil (SBO control), 21.75 sesame oil (SO), 0.39 fish oil (FO), 0.63 algae oil (DHA), and 0.68 algae oils (DHA/ARA). DHA and ARA are two types of marine microalgae of the genus Crypthecodinium cohnii. RESULTS: The dietary treatments had significant effects on the bone marrow fatty acids of rabbits. Rabbits fed the FO diet, containing the highest ${\omega}-3$ PUFA concentration, and those fed the SBO diet showed the highest ${\omega}-6$ PUFA. On the other hand, a positive correlation was observed between Ex vivo $PGE_2$ level and the ${\omega}-6/{\omega}-3$ dietary ratio. Significant effects of dietary treatment on femur Ca, P, Mg, and Zn contents were observed in both genders. CONCLUSIONS: Findings of the current study clearly demonstrated that dietary PUFA, particularly ${\omega}-6/{\omega}-3$ and ARA/EPA ratios are important factors in determining bone marrow fatty acid profile, and this in turn determines the capacity of bone for synthesis of $PGE_2$, thereby reducing bone resorption and improving bone mass during growth.

Omega-3 fatty acids, including eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are polyunsaturated fatty acids beneficial to human health. A limited number of microalgae have been used for commercial omega-3 production, which necessitates the identification of new microalgae with high omega-3 contents. We explored the fatty acid composition and EPA and DHA contents of the mixotrophic dinoflagellate Gymnodinium smaydae fed with the optimal algal prey species Heterocapsa rotundata. Cells of G. smaydae were found to be rich in omega-3 fatty acids. In particular, the DHA content of G. smaydae was 21 mg g-1 dry weight, accounting for 43% of the total fatty acid content. The percentage of DHA in the total fatty acid content of G. smaydae was the highest among the reported microalgae except for Crypthecodinium cohnii. Moreover, to determine if the prey supply interval affected the growth rate of G. smaydae and its fatty acid content, three different prey supply intervals (daily, once every 2 d, and once for 4 d) were tested. Daily prey supply yielded the highest total fatty acid and DHA contents in G. smaydae. Furthermore, we successfully produced high-density G. smaydae cultures semi-continuously for 43 d with daily prey supply. During the semi-continuous cultivation period, the highest density of G. smaydae was 57,000 cells mL-1, with an average growth rate of 0.7 d-1. Taken together, the percentage of EPA and DHA in the total fatty acid content was maintained in the range of 54.2-56.9%. The results of this study support G. smaydae as a promising microalgal candidate for commercial DHA production and demonstrate that daily supply of prey can efficiently produce high-density G. smaydae cultures for more than a month.
Effects of dietary cholesterol and taurine supplementation on hepatic total and phospholipid fatty acid compositions were evaluated in rats fed one of the following semisynthetic diets for 5 weeks : control diet(CD, cholesterol free and taurine free diet); high cholesterol diet(HCD, CD+1.5% cho lesterol); high cholesterol, high taurine diet(HCHTD, HCD+1.5% taurine). Diet induced changes in hepatic total fatty acid compositions were very similar to those in hepatic phospholipid fatty acid compositions. The HCD significantly decreased the percentage of total saturated fatty acids(SFA), and increased the percentage of total monounsaturated fatty acids(MUFA) of hepatic total lipids and phospholipids as compared to the values for the control rats(p<0.001). HCHTD significantly elevated the percentage of $\Sigma$SFA and lowered the percentage of $\Sigma$MUFA compared to the values for the HCD(p<0.001). Percentages of hepatic total and phospholipid 18:3$\omega$3, 20:5$\omega$3, 18:2$\omega$6 and 20:3$\omega$6 were significantly higher in rats fed the HCD than the values for the control rats, and the percentages of their elongation and desaturation products(22:5$\omega$3, 22:6$\omega$3, 20:4$\omega$6, 22l:4$\omega$6 and 22: 5$\omega$6) were significantly lower in rats fed the HCD compared to those for the control rats. HCD significantly lowered the Δ5 desaturation(20:3$\omega$6⇒20:4$\omega$6) and Δ4 desaturation(22:4$\omega$6⇒22:5$\omega$6) indices, and the elongation index of $\omega$3 fatty acid(20:5 $\omega$3⇒22:5$\omega$3) in rat liver. HCHTD reversed the cholesterol induced changes in the compositions of $\omega$3 and $\omega$6 fatty acids. These results suggest the possibility that dietary cholesterol and taurine supplementations affect plasma and liver lipid levels, at least in part, by changing the hepatic phospholipid fatty acid compositions and thereby modulating the physical characteristics of the membrane and the activities of microsomal enzymes involved in lipid metabolism.
