Ohmic Thawing System을 이용한 해동기법이 냉동 돈육 품질에 미치는 영향

  • 본 연구는 Ohmic heating system을 이용하여 돈육을 해동하여 해동에 의한 식육의 손상을 최소화하고 신선육과 유사한 해동육을 얻기 위해 최적 해동 속도에 대한 기초 자료를 마련하고자 실시하였다. 각각의 ohmic power intensity(AC, 0, 10, 20, 30, 40 Volt)에 따른 돈육의 해동속도는 기하학적으로 중심부 변화에서 가장 빠른 해동속도는 40V에서 1,582 cm/h로 산출되었고 OV의 0.307cm/h에 비하여 약 5배 정도 빠르게 나타났으며 power intensity가 증가할수록 해동속도가 증가하였다. 이와 같이 ohmic intensity(X: volt)와 해동속도(Y: cm/h)변화를 수학적으로 나타내었는데 다음과 같다; lnY=-0.8971+$1.0345{\cdot}X$ $R^2=0.9968$. 각각의 ohmic power와 비교에서 대조구인 신선육의 보수력이 가장 높았고 해동시료인 처리구간 비교에서 power가 상대적으로 높은 30V, 40V에서 보수력이 가장 좋게 나타났다. Cooking loss에서는 power intensity에 따른 유의적인 변화는 발견되지 않았다. Colo에서는 b-값의 경우 ohmic power intensity가 증가함에 따라 다소 감소하는 경향을 보여 주었다. 해동시 power intensity가 증가할수록 pH는 다소 낮아지는 경향을 보여주었다. 또한 육의 TBA가는 이와 반대로 ohmic thawing은 육의 TBA가를 증가시키는 요인으로 작용하였는데, power intensity에 따른 변화는 유의적인 차이를 보여주지 않았다. 그러나 VBN가에서는 신선육에 비해 해동육의 VBN은 증가하였지만 해동방법에 따른 차아는 발견되지 않았다.

  • Ohmic joule heating electrodes were developed for the electrical heater of the floor of a room. A composite slurry of super pure black and polyvinylidene fluoride with/without the additives of multi-walled carbon nanotube or kindney stone powder was coated as a thin film on the polyethylene terephthalate film. The performances of heating electrodes were evaluated checking specific conductivity, adhesion strength and hardness. The addition of kindney stone powder increases specific resistance and hardness in a small extent. However, the addition of carbon nanotube increases specific conductivity and hardness. The properties of various compositions of ohmic joule heating electrodes were evaluated.

  • This parer presents the analysis of hot gas flow in puffer-type circuit breakers using FVFLIC method. For the analysis of arc-flow interaction, the flow field is analyzed from the equations of conservation for mass, momentum and energy with the assumption of local thermodynamic equilibrium state. The arc is represented as the energy source term composed of ohmic heating and radiation term in the energy conservation equation. Ohmic heating is computed by the electric field analysis only within the conducting plasma region. An approximate radiation transport model is employed for the evaluation of emission and absorption of the radiation. The analysis method was applied to the real circuit breaker model and simulation results such as pressure rise and arc voltage were compared with the experimental ones.

  • This paper proposes a radiation model, which considers radiation transport as an important component in hot gas analysis. This radiation model is derived from combining the method of partial characteristics (MPC) with net emission coefficient (NEC), and it covers the drawbacks of existing models. Subsequently, using this proposed model, the arc-flow interaction in an arcing chamber can be efficiently computed. The arc is represented as an energy source term composed of ohmic heating and the radiation transport in the energy conservation equation. Ohmic heating term was computed by the electric field analysis within the conducting plasma region. Radiation transport was calculated by the proposed radiation model. Also, in this paper, radiation models were introduced and applied to the gas circuit breaker (GCB) model. Through simulation results, the efficiency of the proposed model was confirmed.

  • The steady hydromagnetic flow of an electrically conducting non-Newtonian fluid due to the rotation of an infinite disk is studied with heat transfer with the inclusion of the ion slip as well as Ohmic heating. The governing nonlinear momentum equations and energy equations are solved using the finite difference method. The numerical results indicate the important effect of the ion slip and the non-Newtonian fluid characteristics on the velocity and temperature distributions.

  • Joule heating은 내부 가열법 중의 하나이며, Ohm의 법칙에 따라서 식품에 직접전기를 통전하여 식품이 갖고 있는 전기저항성에 의해서 식품자체를 자기 발열시키는 가열방법이다. 따라서 Joule 가열을 Ohmic heating 또는 통전가열이라고도 부르고 있다. 열전달성이 느린 고형물 또는 고점도의 Paste형 식품도 어느 정도 전도성이 있으면 신속하면서도 균일하게 열처리를 할 수 있다. 최근 일본에서는 통전가열에 대한 연구가 활발히 진행 중에 있으며, Joule 가열 연구 및 산업화 동향의 일부를 소개하고자 한다.

The Effect of Organic Acids on Dewatering Efficiency of Soybean Milk Residue by Hydraulic Press (유기산이 두유박의 압착 탈수율에 미치는 영향)

  • The efficiency of dewatering of soybean milk residue was improved by hydraulic pressing after pH adjustment to 4.5 with organic acids such as acetic and lactic acids. Water content of raw soybean milk residue was reduced from 80% to 72% by pressing after pH adjustment, while only to 78% by the conventional hydraulic press. The water content of the residue after pH adjustment was further reduced to 63% by hydraulic pressing with ohmic heating. The pH adjustment facilitated separation of cake from the filter cloth and reduced the solid content of the expressed liquid from 10 to 3%.
