  • The chemical composition and thermal, crystal characterization of oak mushroom waste were investigated in comparison with those normal oak wood for utilization of cellulose from oak mushroom waste. The oak mushroom waste contained a higher percentage of ash, and hot water extractives than oak wood. This results indicated that the materials inside the body are easily decomposed during the oak mushroom cultivation. The lower percentage of holocellulose and a-cellulose of oak mushroom waste caused by fungal decomposition too. Whereas, the thermal decomposition behavior and crystallinity of oak mushroom waste was similar to that of normal oak wood, which indicated that the cellulose characterization of oak mushroom waste is resistant to fungal decomposition. In additionally, a degree of polymerization of oak mushroom waste must be investigate for examination of cellulose crystalline characterization, especially.

Optimization of Sweet Rice Muffin Processing Prepared with Oak Mushroom (Lentinus edodes) Powder (표고버섯 첨가 찹쌀머핀의 최적화 및 품질특성)

  • The purpose of this study was to bake sweet rice muffins with oak mushroom ($Lentinus$ $edodes$) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p<0.001) and redness (p<0.05) displayed a linear model pattern, whereas lightness (p<0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p<0.5), texture (p<0.5), and overall quality (p<0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p<0.5) and chewiness (p<0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.

  • This study attempted to estimate the degree of management of oak mushroom farms in Chungcheongnam-do and to provide information to establish oak mushroom cultivation-related policies. The oak mushroom management standard diagnostic table consists of three major categories, growing condition, inoculation management, cultivation management and management administration, along with 20 subcategories. Thus, 209 households of oak mushroom farms were surveyed from 2015 to 2018 in Gongju, Cheongyang, Buyeo and Seochun in Chungcheongnam-do. The average score for the 20 subcategories was 71.5 points (representing a significant level), indicating that these areas have excellent management conditions. The analysis of the management performance indicators revealed a high number of indicators with scores of five or above. The total score was higher, and the amount per bed log and the rate of top-grade products in the total output were also higher, indicating a significant correlation. These findings will provide consulting services to oak mushroom growers as they highlight the correlation between the higher scores of indicators in the oak mushroom management standard diagnostic table and the management performance of farmers. We found that the scores of the indicators for management administration, such as management record and analysis and fund plan were relatively lower than those of other indicators. It is assumed that the owners aging has led to negligence in recording the details on incomes, expenditures, and work and lowered the willingness to make substantial profits. Therefore, it is essential to overcome these problems for profitable oak mushroom farming.

  • The experiments on some organic materials used in SAPS are carried out for the better sulfate reduction efficiency and the longer lifetime. Organic materials include spent mushroom compost, sewage sludge, oak chip compost and the combination of there. Reactors with mushroom compost, sewage sludge, the mixture of mushroom compost and sewage sludge, and the mixture of mushroom compost and oak chip compost maintained pH higher than 6.0. Reactors with mushroom compost, the mixture of mushroom compost and sewage sludge, and the mixture of mushroom compost and oak chip compost maintained reduction condition. Reactors with sewage sludge, oak chip compost and the mixture of sewage and oak chip compost produced COD less than 2,000ppm. Reactors with sewage and the mixture of mushroom compost, sewage sludge, oak chip compost showed about 60% of sulfate removal ratios.

Development of Cultivation Facility Models to Reduce High Temperature Damage in Oak Mushroom (Lentinula edodes) Cultivation Using Bed-logs (고온피해 경감을 위한 표고 원목재배사 모델개발)

  • Five empirical farmhouses were selected to reduce the high temperature damage in oak mushroom cultivation using bed-logs. The cultivation facilities were categorized as follows: those having two blackout curtains or one blackout curtain and outdoor oak mushroom cultivation. The inequality of the indoor condition, oak mushroom hyphae rampant ratio, and fruit body production in each test condition was evaluated. $3^{\circ}C$ was lower in indoor temperature of cultivation facility having two blackout curtains than one blackout curtain. Specifically, the indoor air humidity average of cultivation facilities having one or two blackout curtains was 10% lower than that of outdoor oak mushroom cultivation. This condition is not ideal for oak mushroom cultivation as continuous indoor humidity control is essential for producing good fruit bodies. The Inoculated bed-log surface and oak mushroom hyphae rampant ratio of bed-logs cultivated with two blackout curtains was superior to other tested conditions. The mushroom production ratio observed in facilities with two blackout curtains was 117-204% higher than those cultivated in facilities with only one blackout curtain. Furthermore, the mushroom production ratio increased in based on these findings, we recommended five cultivation facility models to reduce high temperature damage in oak mushroom cultivation using bed-logs.

Sound Absorption Capability and Anatomical Features of Oak Mushroom Bed Log (버섯폐골목의 흡음성능과 구조적 특징)

  • Sound absorption coefficients of oak (Quercus mongolica) wood and oak mushroom bed log were measured by the two microphone transfer function method and anatomical features of oak mushroom bed log examined by stereo scope and SEM observations. The sound absorption coefficients of oak mushroom bed log seemed to be higher than those of normal oak wood specimen over all estimated frequency range. Especially, in the frequency range of 2 to 6 kHz, they were about 2~3 times higher than those of normal wood specimen. Due to fungi degradation, the specific gravity of oak mushroom bed log decreased about 70% than that of normal wood. For oak mushroom bed log, abundant pores occurred on the radial, tangential and cross sectional surface and it was considered that the pores behaved as a sound absorbing pore.

Quality Characteristics of Oak Mushroom Salad Dressing (표고버섯을 이용한 샐러드 드레싱 제조의 품질 특성)

  • This study was conducted to develop a novel salad dressing composite recipe composed of natural seasoning containing dried oak mushroom (Lentirus edodes). Dried oak mushroom (Lentirus edodes) has a better flavor and more nutrients than fresh oak mushroom since vitamins are activated during the drying process. To manufacture salad dressing with Lentirus edodes, dressing with 0%, 3%, 6%, 9%, and 12% added L. edodes were prepared and tested for quality. The pH of the dressing decreased with added L. edodes content, whereas acidity increased but decreased again in the 9% dressing. The L value decreased with added L. edodes content, whereas the a and b values increased but decreased again in the 9% dressing. Sugar content increased with added L. edodes. Rradish strength increased with added oak mushroom. Brittleness and chewiness decreased in the lower percentage dressing, increased in the 9% dressing, but decreased again in the 12% dressing. According to the sensory evaluation results, the highest overall acceptability was 3.3, in the 6% dressing compared to the control group.

Studies on the Possidility of Oak Mushroom(Shiitake) Cultivation on Ban Oak (Quercus incana) of India (인도산(印度産) 참나무(Quercus incana)를 이용한 표고재배(栽培)의 가능성(可能性)에 관한 연구(硏究))

  • The study has been carried out to invetigate the possibility of oak mushroom (shiitake) cultivation on Ban Oak (Quercus incana) growing naturally in Simlaregion, India. The survival and growth of oak mushroom mycelium and fruit body formation on Q. incana as well as the composition of the log were compared with that of Bristle-tooth oak (Q. serrata) which are being used for mushroom cultivation in Korea. The results are summarized as follows. 1. The content of alcohol-benzen extract, NaOH extract, NaOH extract and ash were higher in Q. incana than in Q. Serrata. While cellulose and pentosan were less in the formers. 2. The mycelial growth of oak mushroom were more rapid on sawdust medium of Q. Serrata than on Q. incana. However the mycelial growth on the later were more compact. 3. The mycelial growth of oak mushroom were more rapid on the logs of Q. serrata than Q. incana. The mycelium survived well on both two species, and no difference in the survival rate of mycelium were observed. 4. The first fruit bodies on logs of Q. Serrata and Q. incana were appeared 16 months inoculation of spawn. 5. In view of the above results. it seems that the cultivation of oak mushroom (shiitake) on Ban oak (Q. incana), growing in India, is possible.

Comparison of enzymatic hydrolysis characteristics of mushroom culutured waste (MCW) and Cork oak by alkali treatment (알칼리 처리에 따른 폐골목 및 굴참나무의 효소당화 특성 비교)

  • The mushroom cultured waste(MCW) from cork oak was evaluated as the raw material for bioethanol production. For enzymatic hydrolysis, cellulase cocktails (Celluclast 1.5L and Novozym 188) was used for polysaccharides to monosaccharides conversion. Compared with sound cork oak woodmeal, woodmeal from MCW showed higher cellulose to glucose conversion. To improve polysaccharides to monosaccharides conversion, pretreatment by sodium hydroxide was applied. Even though more xylan and lignin were removed in woodmeal of MCW than that of cork oak, concentration of glucose was higher from sodium hydroxide treated cork oak woodmeal (51.3 g/L) than treated MCW woodmeal (41.6 g/L).

Prediction of Oak Mushroom Prices Using Box-Jenkins Methodology (Box-Jenkins 모형을 이용한 표고버섯 가격예측)

  • Price prediction is essential to decisions of investment and shipment in oak mushroom cultivation. But predicting the prices of oak mushroom is very difficult because there are so many uncertain factors affecting the demand and the supply in the market. The Box-Jenkins methodology is one of strong tools in price prediction especially for the short-term using historical observations of time series. In this paper, the Box-Jenkins methodology is applied to find a model to forecast future oak mushroom prices. And out-of-sample test was conducted to check out the prediction accuracy. The result shows the high accuracy except for market disturbance period affected by unexpected weather change and reveals the usefulness of the model.
