A Comparison between Food and Nutrition Major, and Non-major, Female University Students in terms of their Nutrient Intakes and Hematological Status, with an Emphasis on Serum Iron (식품영양 전공 및 비전공 여대생 영양섭취상태 및 혈액성상에 관한 비교 연구 - 혈청 철분을 중심으로 -)

  • The purpose of this study was to compare nutrient intakes and the serum iron status of 74 Food and Nutrition major, and 45 non-major, female students at a university in Incheon. This cross-sectional survey was conducted using a self-administered questionnaire and the data were analyzed by the SPSS 10.0 program. The nutrient intake data collected from three-day dietary recalls were analyzed by the Computer Aided Nutritional Analysis Program. Anthropometric data and hematological indices of iron in the blood were measured. Average heights, weights, body fat and mid-upper arm circumference of Food and Nutrition major and non-major female students were 160.3 cm, 53.5kg, 25.8%, 23.7cm and 159.8cm, 55.5kg, 28.9%, 24.8cm, respectively. There were significant differences in body fat percentage and mid-upper arm circumference between the major and non-major students. In all subjects, daily dietary intakes of nutrients- except protein, vitarrlin B1, vitamin C and phosphorus - were lower than the Korean RDA. In particular, calcium and iron intakes of all subjects were under 60% of the Korean RDA. Values of RBC (red blood cell) count, Hb (hemoglobin), Hct (hematocrit), MCV (mean cell volume), MCH (mean cell hemoglobin), and MCHC (mean corpuscular hemoglobin concentration) of the non-major students were significantly higher compared to those of the major students. The diastolic blood pressure of the major students was negatively correlated with MCV, MCH, TS, and serum iron levels. Triceps skinfold thickness, mid-upper arm circumference and waist-to-hip ratios of the non-major students were negatively correlated with TIBC. Fat intake was positively correlated with RBC, Hb, Hct, and TIBC (total iron binding capacity) in the major students. Vitamin C intake was positively correlated with serum iron in the major students. Carbohydrate intake was positively correlated with Hb, Hct, and MCHC in the non-major students. Niacin and iron intakes were positively correlated with Hb and Hct in the non-major students. Therefore, nutrition education is necessary for female university students to improve nutritional status and to practice optimal nutrition strategies. (Korean J Nutrition 35(9) : 952~961, 2002)

A Study on the Nutrient Intakes and Zinc Nutritional Status of Preschool Children in Ulsan (울산지역 유치원 어린이의 <한국인영양섭취기준>에 의한 영양소섭취 실태 및 아연영양 상태에 관한 연구)

  • The purpose of this study was to determine the zinc status of preschool children in Ulsan. The study was conducted in 95 children aged 3 to 6 years by investigating the anthropometric indices and assessing the biochemical analysis. The blood was analysed to assess serum zinc and alkaline phosphatase. And a questionnaire for dietary intakes using 24-hr recall method were performed by mothers of 95 subjects. The dietary intakes of children were analysed to determine the prevalence of inadequate and excessive intakes of zinc with Dietary Reference Intakes for Koreans (KDRIs). WHL (Weight-Length Index) and Kaup index were used to define obesity. The overall prevalence of overweight and obese subjects were 14.7% and 6.3% by WHL, were 15.8% and 13.7% by Kaup index. The mean intakes of zinc by children aged 3${\sim}$5y and 6y were 5.5 ${\pm}$ 1.4 mg/d (75.7% RDA) and 6.7 ${\pm}$ 2.0 mg/d, respectively, that was the level exceeding the estimated average requirement (EAR) and the recommended intake (RI) of Korean Dietary Reference Intakes. Less than 1.3% and 7.9% of children had usual zinc intakes below EAR and RI of KDRIs, respectively. The percentages of children with intakes exceeding the tolerable upper intake level (UL) were 2.6%. The zinc nutritional status by biological assay was found that mean serum zinc and alkaline phosphatase (ALP) of total subjects were 64.0 ${\pm}$ 8.4 ${\mu}$g/dl and 72.8 ${\pm}$ 14.9 U/L, there was not a significant difference between boys and girls. The range of serum zinc level was 45${\sim}$89 ${\mu}$g/dl and children with a low serum zinc concentration by several cut-off points were 18.9${\sim}$55.8%, especially. Serum zinc level was positively correlated to the intakes of calorie, calcium, fiber, iron, zinc, zinc/kg and height (p<0.001). Serum ALP was positively correlated height, weight and WLI. The zinc intake of children aiso showed a positive correlation with height and weight. These results indicate that there were significant correlations between the zinc status and growth of preschool children. Preschool children in Ulsan have dietary zinc intakes that exceed the new DRIs. The present level of intake does not seem to pose a health problem, but if zinc intakes with fortified foods and supplements were considered, the amount of zinc consumed by children may become excessive.

Nutritional Status of the Elderly Living in Cheongju - I. Health-Related Habits, Dietary Behaviors and Nutrient Intakes - (청주지역 노인의 영양실태조사 - I. 생활습관, 식행동 및 영양소 섭취실태 -)

  • The health-related habits dietary behaviors and nutrient intakes of the elderly living in Cheongju were investigated by interviews with a questionnaire from August to September in 1996. The responses of 169 free-living elderly aged over 65(male 91, female 78) were analyzed. Thirty-six percent of the subjects smoked currently, 33$\%$, drank alcoholic beverages, and 52$\%$ exercise regularly. Exercise was mostly in the from of walking for $\frac{1}{2}$-1 hour. Significantly higher proportions of males smoked, drank, and exercised as compared to females. Food groups eaten at every meal were examined on a 5-point scale, and the consumption scores were compared with groups according to sex, age, smoking, drinking, and exercise habits. The elderly who exercised regularly got significantly higher scores in their calcium intakes and the variety of the 6 food groups than the elderly who did not exercise. The dietary assessment data showed that the energy intakes of males and females were 81.9$\%$and 72.8$\%$ of the RDAs, respectively. The proportions of the elderly consuming less than 75$\%$ of RDAs of vitamin A and calcium were 96.5$\%$ and 91.1$\%$ of the total subjects, respectively. Higher educational status, more pocket money and regular exercise had positive effects on nutrient intakes, while smoking and drinking among females, but not males, had negative effects. Therefore, to improve nutritional status of the elderly, intake of vitamin A-and calcium-rich food such as milk with regular exercise should be emphasized on the education program. The Health Status and Nutrient Intakes of Elderly Female in Daegu Area (대구지역 여자노인의 건강상태 및 영양소 섭취 실태조사)

  • This study was designed to evaluate health and nutritional status of elderly females according to their family type. The participants were 157 elderly women(41 living alone, 45 living with a spouse, and 71 living with family). Among them, the subjects answered that their health rated as good condition, the elderly living with a spouse had significantly higher proportions than those living alone and living with family. Serum cholesterol and fasting blood glucose of the respondents living with a spouse were lower than those of the respondents living alone or with family. A dietary assessment with a 24-hour recall method represented that the elderly living alone had lower nutrient intakes, especially the intake of Ca. Most of women living alone or with family were consuming less than 75% of the Korean Recommended Dietary Allowances(RDA). For the females living with a spouse, the number or nutrients consumed below 7s% or the Korean RDA were significantly lower than that for those living alone and the elderly living with family. As a result of the above analysis, the health and nutritional statement of old women with a spouse was better than that of the old living alone or with family.

Assessment of Anthropometry, Nutritional Compositions and Contribution of School Meals to the Daily Nutrient Requirements of Primary School Children from Rural Communities

  • The study aims to evaluate the nutritional status and influence of school meal intakes on RDA of primary school children in Akure community, Ondo State, Nigeria. A cross-sectional study was conducted among 728 primary school children aged between 6 and 15 years. Data were collected using interviewer-administered semi-structured questionnaires. The questionnaires collect information on demographic characteristics and home dietary intake of the subjects. The heights and weights of the children were measured using a standard procedure and height-far-age and weight-far-height z-score were determined. The children's school meal intakes were weighed for 4 days and samples were collected for chemical analysis. The results showed that 37.8% of the children were not wasted, 35.7% mildly wasted, 18.7% moderately wasted and 7.8% severely wasted. Also, 57.8% were not stunted, 29.3% mildly stunted, 11.0% moderately stunted and 1.9% were severely stunted. The subjects' home dietary intakes showed that 73.6% ate starchy food only, 19.9% ate protein based food, while 11.6% and 11.5% consumed fruits/vegetables and snacks to complement home meals respectively. The chemical composition of school meal was energy 379 - 413kcal, moisture content 5.9 -7.3g, carbohydrate 56.5 - 69.4g, fat 4.6 - 12.7g, crude fiber 0.1 - 2.4g, ash content 3.6 - 8.5g and protein 14.9 - 22.3g. The mineral contents were calcium 45.9 - 59.2mg, sodium 5004 - 59.6mg, zinc 2.3 - 3.1mg, magnesium 55.0 - 61.6mg, potassium 55.3 - 69.3mg, copper 0.2 - 0.3 mg, while others 1.3 - 1.9mg, 243 - 659mg and 831 - 9,510mg were iron, phosphorous and vitamin-A respectively. The contribution of school meals to subjects' RDA was within 2.9% and 1540%. In summary, school meal intake contributed positively to the RDA and nutritional status of the school children.

Assessment of Nutritional Status in Elderly Dialysis Patients (노인 투석환자의 영양상태 평가)

  • It is important to evaluate nutritional status of elderly patients receiving dialysis, since wasting and malnutrition are their common problems. This study aims at assessing their nutritional status by the type and duration of dialysis. The nutritional status such as somatic fat and protein storage was evaluated with anthropometric measure including weight/height ratio, triceps skinfold thickness and midarm muscle circumference. It was also measured with albumin, transferrin, C3 and IGF-1 and calorie and protein intakes. The general clinical condition of patients was evaluated with the severity of uremia and metabolic acidosis. which were measured through the levels of serum urea, creatinine and bicarbonateion. The data were analyzed by using t-test, ANOVA, Wilcoxon-rank sums test, Scheffe test, Kruskal-Wallis test and Pearson correlation coefficients. The results are following : 1. There was no significant difference in the calorie and protein intakes by the type and duration of dialysis received. 2. As for the anthropometric measures, no significant difference was found by the type of dialysis in body mass index triceps skinfold thickness and midarm muscle circumference. Yet these anthropometric measures differed significantly by the duration of dialysis in those elderly patients receiving hemodialysis(HD group), but this finding was not found in those receiving continuous ambulatory peritoneal dialysis(CAPD). 3. Regarding the indicators of uremia and metabolic acidosis, blood urea nitrogen(BUN) and creatinine were lower in the CAPD group than in the HD group, whereas bicarbonate ion was higher in the CAPD group than in the HD group, with no statistical significance. In the HD group, creatinine increased significantly with the increase of the duration of dialysis. 4. Serum trasferrin and C3 were significantly higher in the CAPD group than in the HD group. However. each of biochemical indices did not show statistical significance by the duration of dialysis in both HD and CAPD groups. 5. Anthropometric measures were significantly associated with dietary intake. Significant correlations were observed between biocarbonate ion, BUN and creatinine. In addition, the correlations between serum protein and albumin and between transferrin and C3 were statistically significant. Yet, IGF-1 revealed no significant correlation with other nutritional indices. The above findings indicate that there were no difference in nutritional status measured with protein and calorie intakes between the type and duration of dialysis, but CAPD seems to benefit correcting uremia and metabolic acidosis than HD. Studies of dietary management for dialysis patients need to be pursued in order to improved the quality of aged patients receiving dialysis.

Nutritional Status of Hypertensive Men in Gyeongnam Area (경남 일부지역 고혈압 남성의 영양 상태에 관한 연구)

  • This study was performed to investigate the nutritional status associated with hypertension. The subjects were composed of 52 middle aged men divided into normotensive and hypertensive groups according to the Joint National Committee(JNC)-7 criteria. The mean blood pressures of the normotensive and hypertensive groups were $109.8{\pm}1.8$ / $68.9{\pm}1.7mmHg$, and $146.8{\pm}4.6$ / $90.5{\pm}2.9mmHg$, respectively. The percent body fat (PBF), waist to hip ratio (WHR), and serum levels of total cholesterol, LDL-cholesterol, Na, Cl, alanine transferase (ALT), and atherogenic index (AI) were significantly higher in the hypertensive group than normotensive group. The intakes of energy, protein, lipid, vitamin B1, niacin, and intake ratio of Na/K were significantly higher in the hypertensive group than normotensive group. Our findings suggest that decreasing PBF, WHR, serum levels of total cholesterol, LDL-cholesterol and NaCl may play an important role in the prevention of hypertension. It also suggests that decreasing intakes of energy, protein, lipid, vitamin B1, niacin, and Na/K ratio are crucial in order to prevent hypertension.

Nutrient and Carotenoid Intakes and Dietary Habits in Mentally Disabled Adults (성인 정신적 장애인의 영양소와 카로티노이드 섭취 수준 및 식습관에 대한 연구)

  • Objectives: According to preceding studies, many people with mental disability have unbalanced dietary habits or excessive intake of calories. Most of them are overweight or obese due to lack of self-control for food consumption, swallowing with inadequate chewing and physical inactivity. Therefore, this study aimed to assess the nutritional intake, including carotenoid, in mentally disabled people and find out a possible solution for nutritional improvement. Methods: People with intellectual disability (N=28), emotional disability (N=44) participated in this study. The disorder grades were from I to III and ages were between 20 and 65 years. Assessments included anthropometry, daily intake of nutrients, including carotenoid, ROMA III questionnaire for assessing bowel movement. Results: The average BMI of intellectually disabled people and emotionally disabled people was in the range of overweight and obesity respectively ($23.7{\pm}6.3kg/m^2$, $25.8{\pm}4.1kg/m^2$). Overall, the frequencies of vegetable and dairy product intakes were lower in this population. When compared with Recommended Nutrient Intake (RNI) from Dietary Reference Intakes for Koreans 2010, the intakes of vitamin $B_1$, vitamin $B_2$ and calcium were insufficient in both groups. Also, lycopene intakes of carotenoid were low, compared with traditional Korean diet of the non-disabled people from the second year 2008 of the 4th National Health and Nutrition Survey. In addition, emotionally disabled people also had lower intake of cryptoxanthin. Conclusions: The mentally disabled people in this study showed lower intakes of vitamin $B_1$, vitamin $B_2$, calcium and carotenoids. Based on these findings, we recommend that it is important to encourage mentally disabled people to consume sufficient amounts of such nutrients in order to promote nutritional status.

Seasonal and Regional Variations in Nutrient Intakes of Korean Adolescents as Assessed as 3-Day Dietary Records (식사기록법으로 조사한 일부 사춘기연령층의 영양소 섭취상태의 계절 및 지역별 비교연구)

  • Seasonal variations of nutrient intake ware evaluated through a 3-day dietary records in 196 Korean adolescents(86 males, 108 females) aged 13 - 15 years and living in urban and rural areas of Chungnam. The seasonal differences of nutrient intake were tested by repealed measure ANOVA. Comparing nutrient intakes among flour seasons using repealed measure ANOVA, mean values of daily intakes were higher in winter and autumn for most nutrients, and were the lowest in summer in the urban areas and in spring in rural areas. Girls recieved the largest amount of nutrients, except Ca and vitamin $B_12$, in winter and the lowest amount in summer, while in boys significant differences were not observed among the four seasons for meet nutrients, except fats, Mg, and vitamin E. Interestingly, the seasonal differences for many nutrients were more evident in rural areas than in urban areas. Vitamin A intake in urban areas was higher in winter and spring, while in rural oreas, in summer. Mean values of daily intakes as a percent of the RDA throughout the year in boys and girls ware 82.2% and 84.2% for energy and 88.9% and 82.7% for protein, respectively. Ca and vitamin A intakes were as low as 32.4% and 24.2% of the RDA in boys and 39.7% and 30.6% in girls. Intakes of Fe, Zn, folic acid and vitamin B$_{12}$ ranged from 40 - 60% of the RDA. The nutrients which showed the largest seasonal difference in the percent of RDA were vitamin E in boys and vitamin C, vitamin E, and Fe in girls. The index of nutritional quality(INQ) for Fe was significantly lower in autumn in both genders. The INQ for vitamin C in girls of both areas was much higher in winter. Annual mean adequacy ratio(MAR), an index of overall nutritional quality, ranged from 0.57 - 0.69, which was higher in winter than in other seasons. Conclusively, nutrient intakes of Korean adolescents showed seasonal variations, particularly in girls and in rural area. Thus, seasonal variations should be considered in the assessing nutritional status, particularly ill the rural areas of Korea.a.

Development of Computer-based Nutritional Counseling Program for Farmers (농업 종사자를 위한 영양상담 프로그램 개발)

  • The purpose of this study is to develop a software program for nutritional counseling by assessment of nutrients intake status and health degree by using semi-quantitative frequency food intake method and the questionnaire of Cornell Medical Index(CMI) and farmers' syndrome. This program is composed with three parts, nutrients intake, health status with body complaints, and nutrition counseling contents for diet therapy of each body condition states. First, nutrient intakes with percentage of Korean Recommended Dietary Allowances, and quantities of other nutrients intake were calculated and presented in an out-put screen. Second, the different body complaints(farmers' syndrome, anemia, hypertension, gastrointestinal problem, and cardiovascular complaints) were divided 3 groups of health status as normal. suspected and ailment. The contents of nutritional counseling with recommended food kinds. intake quantities. and recommended preparation methods were shown by button click of each health state of body complaints. And also this program could serve several times for one person to compare nutrition education and counseling effect by use of pre and post presentation results. This programs would be effect to home extension workers of rural development administration for farmers' nutrition counseling.
