Menu-development is one of the important parts in restaurant business. Menu in restaurant has to be developed by customer's net which is the key for the success in restaurant management, The purpose of this study is to determine stress level, food intake, food habit, food preference of employees in certain companies and to develop proper menus for employees who are under high stress state. This study also determine whether the customers under stress will visit restaurant which provide stress-release-menu or not This study was conducted to people who live in Seoul and its adjunct area, including Gyunggi Province. The subjects were selected at random and the Questionnaires were sent to the subject by mail. The surveys included personal information, extent of stress, food habits related to the stress. The statistical tests were performed with SPSS computer software program. The male subjects were $44.9\%$ and females were $55.1\%$, aged between $30\~40$ years old. The percentages of no risk, borderline, and at risk, in the stress level of subjects, were 48.3, 16.5 and $35.2\%$, respectively. Most of the subjects, $61.8\%$, had normal food habit and $29.2\%$ had bad food Habits. The ideal costs of meals were $3,000\~5,000Won$ for breakfast$(57.3 \%)$, $5,000\~10,000Won$ for lunch$(54.7\%)$, and $10,000\~20,000Won$ for dinner$(38.2\%)$. Subjects under high stress answered 0 need a dietary supplementation for stress release. This study also showed that $92\%$ of the subjects under stress were willing to visit restaurants which have stress-release menus. In conclusion, adults who are under stress are shown to be interested in stress and nutrition management and they are willing to visit restaurants providing stress-release menus.
This study is to investigate the housing conditions and housing satisfaction of Chinese students in S. Korea, and identified effective factors for related housing design. Chinese students at CBNU participated in this survey from November to December in 2011. A questionnaire survey was used. 200 students voluntarily participated in this survey with 147 surveys providing useful data for analysis. Descriptive statistics, correlation, and linear regression were used to analyzed the data with SPSS 12.0. The results are as follow. 1) Many Chinese students received housing information from discussion with acquaintance. They lived together 2 students in one-room or dormitory. Monthly rental was about 240,000 won, and they found the living conditions a burden. 2) They are unsatisfied with food, the lack of a refrigerator, and non availability kitchen facilities. These factors are considered in planning for Chinese students housing. 3) For the most part, they are satisfied with their current housing environment, although there is a need to improve health related housing environment factors, including sunlight, noise, and indoor air. The effective residential factors to overall housing satisfaction are dwelling space and size, space organization and floor plan, kitchen toilet bathroom facilities, sunlight, and safety from natural disasters. The effective neighborhood factors identified include access to natural environment, community facilities, parks, noise, and commuting time. 4) Subjective factors played a larger role in overall housing satisfaction than did objective factors such as gender and types of house.
The purpose of this study was to examine the effects of the burnout of dental hygienists on their job commitment. The subjects were 156 dental hygienists. Structured questionnaire surveys were conducted. Maslash Burnout Inventory scale and the tool developed by Kang was used. The burnout and job commitment was each divided into three factors; emotional depletion, accomplishment decrease and dehumanizing and organizational commitment, career commitment, and work commitment. The dental hygienists' burnout score was 3.77 points and commitment score was 3.53 points. Burnout was higher among those with clinical careers shorter than five years and smaller numbers of colleague. Those with higher burnout showed higher career involvement and those with longer careers and higher salaries showed higher organizational commitment. Dental hygienists' career that higher burnout was associated with lower degrees of job commitment. Therefore, efficient manpower management should be ways to maintain of their carrer and increase the salary.
This study is about choice attribution of customers make in food and beverage events. The researcher provided practical plans to uplift food-related enterprises and activate management through surveys and positive analyses, targeting customers who use food services. First of all, all event plans must include customer demands, social changes, special qualities of the business, and market research. Second, low demand season must be customers will be induced to the events. Third, prediction for market variable and solutions must be thoroughly examined and plans should look into the future to maintain a long period of time. Fourth, sufficient communication between planners and employees should be made before the event starts, so that food and beverage businesses can gain trust and quality of event services.Fifth, immaterial service and visible goods/menus in business of food and beverage events must be closely matched. Sixth, menus introducing a variety of merchandise, quality of nutrition and health of the business should be developed. Also, events from countries(regions) should be hold to create a market of cultural exchange. Seventh, for hereafter event plans, feedbacks are needed concerning customers needs and demands through customer care, after the food and beverage events. Eight, faculty management for convenience, kindness, safety, and life preserver accommodations in parking areas must be made, as automobiles are necessaries for people in Mycar era. The ninth, off-line and on-line care through on-line business construction and production of homepage must be done, due to the fact that even the well-made events are bound to fail if they are not delivered to the customers.
The purpose of this study was to evaluate the effects cooking activities on the taste and perception of Korean foods in upper grade school children. The cooking class program was designed as 16 lessons for fourth, fifth, and sixth grade school children, and it was implemented as an extracurricular activity. Each lesson included the origin and meaning of Korean foods and cooking. Thirty four children were recruited for participation in cooking class from two elementary schools in Changwon. The control group was recruited from a convenient sampling in each school. The pre- and post-implementation surveys were conducted for comparison of the effects of cooking class between the educated and control group. Children answered the self-administered questionnaire. The questionnaire contained measures of demographic variables, eating culture, interest and preference, taste, perception, and knowledge of Korean foods. There were no significant differences in interest and preference on traditional Korean foods, however, the taste of experimental foods was increased by education (P<0.05). Results for perception (P<0.05) and knowledge (P<0.001) of traditional Korean foods were significantly increased by education. However, no changes in taste, perception, and knowledge were observed in the control group. In conclusion, cooking activity is the most favorite activity of children, and is an effective method for positively affecting the taste and perception of Korean foods.
This research was conducted on Seoul region elementary, middle, and high school nutritionists to analyze execution conditions of HACCP control standards, focusing on PHF and CCP 3~CCP 7, in order to determine more efficient methods for school meals' sanitation system settlement. All surveys were distributed and collected via email. A total of 305 survey papers were collected, and 300 school results were analyzed. The following percentage of nutritionists perceived the following foods as potentially hazardous foods(PHF): raw or cooked animal foods (94.7%), blossomed seed products (93.7%), packed pickled radish (36.7%), unopened mayonnaise (30.2%), and unopened snails & corn cans 54.8%. Exactly 51.2% of nutritionists believed that foods were properly supplied via CCP 3's food quality standard. Exactly 33.9% of nutritionists answered that they had never corrected the digital thermometer since there were no issues with the CCP 4's digital thermometer correction frequency level. As for CCP 5's chroline disinfection of green vegetables, 57.1% of nutritionists answered that vegetables were slightly softened while 36.2% said there were no changes at all. According to the nutritionists, the most difficult execution level of CCP levels (excluding CCP 3, CCP 4) was CCP 7 (37.1%), CCP 6 (16.4%), and CCP 2 (16.4%). For the above results, proper training/education must be enforced so that nutritionists can have a clear notion of the PHF. A solution must be developed enhancing the execution of CCP 4's digital thermometer correction frequency level. For CP 5's chroline disinfection of green vegetables, food characteristics must be considered to suggest an appropriate number and method of cleansing. Furthermore, cooking employees are needed that properly use and manage cooling & heating equipments to maintain heated foods above $57^{\circ}C$ under the CCP 7 standard.
Background: It is not evident that the attributable risk of smoking on mortality in Korea has decreased. We investigated the impact of smoking on all-cause mortality and estimated the attributable risk of smoking in Korean adults. Methods: Those aged ≥20 years with smoking history in the Korean National Health and Nutrition Examination Surveys (KNHANES) 2007-2015 were enrolled. We categorized the participants into three groups as follows: never smoker, <20 pack-years (PY) smokers, and ≥20 PY smokers. We applied inverse probability weighting using propensity scores to control various confounders between the groups. All-cause mortality risks were compared between the groups using the Kaplan-Meier log-rank test. The effects of smoking-attributable risks (ARs) on mortality were also calculated. Results: A total of 50,458 participants were included. Among them, 19,334 (38.3%) were smokers and 31,124 (61.7%) were never smokers. Those with a smoking history of 20 PY or more (≥20 PY smokers), those with a smoking history of less than 20 PY (<20 PY smokers), and never smokers were 18.1%, 20.2%, and 61.7%, respectively, of the study population. Smokers had a higher risk of all-cause mortality compared to never smokers (log-rank test p<0.01). The ARs of smoking were 21.8% (95% confidence interval [CI], 5.7%-37.9%) and 9.0% (95% CI, 6.1%-12.0%) in males and females, respectively. ARs decreased from 24.2% to 19.5% in males and from 9.5% to 4.1% in females between 2007-2010 and 2011-2015. Conclusion: Our study using KNHANES IV-VI data demonstrated that smoking increased the risk of all-cause mortality in a dose-response manner and the ARs of smoking on mortality were 21.8% in males and 9.0% in females during 2007-2015. This suggests that the ARs of smoking on mortality have decreased since around 2010.
The purpose of this study is to investigate the actual situation of the surrogate games and win trading gameplays in e-sports leagues, and to insist on the creation of new regulations to punish them. The surrogate game surveys was conducted for 40 amateur users and 17 professional users in e-sports leagues. The survey was conducted in-depth interviews with a professional user to learn more about the actual situation of the win trading gameplay. As a result of the study, professional users had a high rate of experience with Gahz'rilla, and they would be able to increase their game rankings through Gahz'rilla. But they did not think Gahz'rilla is a surrogate game. Amateur users had a low rate of experience with Gahz'rilla and did not think they would be able to increase their game rankings through Gahz'rilla relative to professional users. Amature users tend to think of Gahz'rilla as a surrogate game. Both the users agree on the necessity of regulation on Gahz'rilla and surrogate game. Therefore, it is necessary to narrow the gap between the professional users and the amateur users by establishing rules for Gahz'rilla and surrogate game.

Background: Compared with other chronic diseases, hearing loss is generally overlooked from the perspective of disease burden. However, hearing loss is emerging as an important issue in the current society. The objective of this study was to investigate disease burdens and marginal utilities associated with hearing loss and other chronic diseases. Methods: This study analyzed the cross-sectional data of 32,986 participants aged 19 years and older who completed the Korea National Health and Nutrition Examination Surveys between 2009 and 2013. Additionally, this study used the pure tone audiometric test, European Quality of Life-Five Dimensions Questionnaire, and chronic disease status. The data were analyzed using a multiple linear regression method. Results: The data of 23,297 people who underwent a pure tone audiogram and completed the European Quality of Life-Five Dimensions Questionnaire were used in this analysis. The marginal utility of hearing loss ranked fifth among nine chronic diseases. The estimated loss of quality-adjusted life years associated with hearing loss was -93.69 years per 100,000 people, which is similar to other chronic diseases. Conclusion: This study assessed the marginal utilities and public burdens of hearing loss and eight chronic diseases in a South Korean population. Although the values may vary depending on country and race, this study may provide an indispensable foundation for more detailed studies on hearing loss.
Background: The purpose of this study is to provide the data for discussions related to oral health promotion policies for single-person households by analyzing the status of unmet dental needs and related factors in single-person households in Korea, based on the Anderson model. Methods: The data, obtained from 544 single-person households of those over 20 years old who were targeted for the 6th Korea National Health and Nutrition Examination Survey, were analyzed through a complex sample frequency analysis, complex sample cross analysis (Rao-Scott chi-square test), and complex sample binary logistic regression analysis on a complex sampling design. Results: The most frequently given reason for an unmet dental need among single-person households was economic (52.4%). Factors related to the unmet dental needs of single-person households are smoking, which is a predisposing factor; personal income levels, which are an enabling factor; chewing discomfort; and limited daily activities, which are need factors. Smokers, the high-income group, the chewing-discomfort group, and the limited activity group showed high unmet dental care experience. Smokers had a 2.75 times higher rate of unmet dental care than non-smokers, and the high-income group had a 5.29 times higher rate of unmet dental needs than the median group. The rate of unmet dental needs for the chewing discomfort group was 3.27 times higher than the non-chewing discomfort group, and the limited activity group had a 7.87 times higher rate of unmet dental needs than the non-limited activity group. Conclusion: It is necessary to map out policies designed to help maintain and promote met dental needs considered to be internally heterogeneous to single-person householders, based on the Anderson model.
