중학생의 영양 성분 표시에 대한 구매 행동 및 이용 실태 - 충북 지역을 중심으로 - (The Actual State of Food Purchasing Behaviors Regarding Nutrition Facts Labels among Middle School Students in Chungbuk Area)

  • This study conducted a questionnaire survey of 482 male and female second graders in middle schools located in Cheongju, Chungcheongbukdo. This study lays its purpose on establishing the nutrition facts labeling system by understanding eating habits and analyzing the actual state of reading nutrition facts labels and degrees of understanding them among middle school students, and helping them to engage in right food purchasing activities and through it result in developing sound eating habits by providing them with basic material to be employed to actively utilize nutrition facts for choosing and buying healthy foods. As a result of surveying regarding the actual state of reading food labels, regarding degrees of recognition of food labels, it was revealed that 91.1% of female students recognized them, while 42.1% of male students did not recognize them, indicating lower levels of recognition among the male group. Regarding reasons for not checking food labels, 49.2% indicated habitual purchasing, followed by poor contents in the label(20.2%), ununderstandable contents(17.7%), and the lower reliability of the contents(6.9%). As a result of surveying regarding the actual state of reading nutrition facts labels, in recognition of nutrition facts labels, female rather than male students showed higher degrees of recognition, and degrees of recognition were found to differ according to parents' total income and mothers' educational attainments.

염도계 및 Mohr법으로 측정된 HMR 제품의 나트륨 함량과 제품 영양표시 상의 나트륨 함량 비교 (Comparison of Sodium Contents in Nutrition Facts and Sodium Contents of HMR products by Salinity Meter and Mohr Method)

  • Two experiments were conducted to determine how much sodium in food could be detected using a salinity meter. First, the salinity of mixed solutions of 0 to 6% sugar, 0 to 5% oil, and 0 to 6.4% MSG in a 1% NaCl solution was measured using a salinity meter and a Mohr titration method, and the results were compared with the calculated sodium expectations. As a result, the sodium contents of the sugar solutions and MSG solutions measured using a salinity meter were lower than the expected concentrations at 2% or more and 0.8% or more, respectively (p<0.05). The salinity of the 18 HMR products was measured in the same way, and the results were then compared with the sodium contents of the nutrition facts. The average sodium content of all products measured using the salinity meter and Mohr method was 1.12 times and 1.06 times the sodium content of the nutrition facts, respectively. On the other hand, the differences between the products were significant. The correlation coefficients between the nutrition facts and salinity meter, the nutrition facts and the Mohr method, and the salinity meter and Mohr method were 0.885, 0.920, and 0.950, respectively (p<0.01).

중학생의 가공식품 섭취 실태와 식품표시에 대한 인식 (Intake of Processed Food and Perceptions of Food Labeling in Middle School Students)

  • The purpose of this study was to investigate intakes of processed food and use and understanding of food labeling by middle school students in the Chonbuk area. Self-administered questionnaires were completed by 912 middle school students. Questionnaires included questions regarding general characteristics of the students, intakes of processed food, perception of food labeling, and knowledge of food labeling. Data were analyzed by SPSS 11.5 statistical software. Significant differences between genders were tested by the $x^2$-test and the t-test. The frequency of processed foods being consumed at least two times per day was 31.0%, once a day was 30.5%, once a week was 26.0%, and eating rarely was 12.5%. Most frequently consumed processed foods were milk and milk products, bread and biscuits, and candy and chocolates. When the subjects bought processed foods, they read the general facts 3.1 out of 5.0 points, where the scores for females (3.2) were higher than the males (3.0) at p<.001. The subjects read the nutrition facts 2.7 out of the 5.0 points, and the scores of the females (3.0) were again higher than the males (2.5) at p<.001. The subjects recognized the necessity of general facts(3.5) and nutrition facts(3.4) of food labeling, but, only 33.9% of the subjects had received food labeling education. The accuracy rate of the food labeling knowledge of the subjects was not high, the accuracy rate ranged from 19.3% to 76.8%. Therefore, it is necessary to develop school programs for middle school students to provide education on processed foods, food labeling, general facts and nutrition facts.

서울지역 여성의 시판 김치 구입현황과 구매촉진에 관한 연구 (A Study on Purchasing Current Status and Promotion Facts for Commercial Kimchi of Women in Seoul Area)

  • This study was to investigate purchase of women for commercial kimchi. Survey was carried out by questionnaire method that is target on 322 female over 20 age in Seoul area. The results of the study was that the way they get kimchi of women answered that they make it by themselves(63.3%). The reason of purchasing is they do not have enough time to make it at their home(43.8%) and its good taste(56.8%) result in their purchase. In the degree of preference about package material, prefer polyethylene(39.6%). Also respondents prefer purchasing poggi kimchi(63.4%) among other different types of kimchi. The promotion facts of purchasing commercial kimchi shows a high score in cold chain system package and specific kimchi development.

서울과 강릉지역 국민학생의 영양지식에 관한 연구 (Nutrition Knowledge of Elementary School children in Seoul and Kangnung Area)

  • This study was designed to determine the level of nutrition knowledge of 3,390 elementary school children in Seoul and Kangnung, and to examine the relationship of demographic characteristics of children to nutrition knowledge. Nutrition knowledge was measured by modified NATs (Nutrition Achievement Tests developed by National Dairy Council and Iowa State University). Higher nutrition knowledge, correlated with increasing parental educational level, lower parental age, and higher socioeconomic status. However, there was no difference in total test scores between children in Seoul and Kangnung. Item scores indicated children had more knowledge about 'physiological facts' and 'food handling', and limited knowledge about 'nutrients' and 'nutrition and society'. Children, both in Seoul and Kangnung, lacked an undestanding of many basic principles of nutrition. These results suggest several areas to emphasize when developing nutrition education materials. Modified NATs in this study may be used to assess nutrition education needs of children, to evaluate the effectiveness of nutrition education program, and to compare nutrition achievement of different groups.

대학생들의 가공식품 구매실태와 식품표시 인지 정도 (A Study on Utilization of Processed Foods and Recognition of Food Labels among University Students)

  • This study examined the utilization of processed food and the recognition of food labels among 257 university students (201 females and 56 males) in Seoul and Kangwon-do. The results of the study showed that the most important considered information on food labels are shelf life, nutrition facts, and price in sequential order. Female students' recognition of nutrition facts was significantly higher than that of male students (p<0.05). Female students more attentively checked the manufacturer, origin of the products, and shelf life information on food labels than did the male students. In checking out the food labels information, the most checked items on food labels were calories, trans fatty acid and cholesterol in that order and the least checked information was the sodium contents. Among processed foods, male students' consumption was dominant in instant noodles, frozen dumplings, and canned goods, while female students had more candies/chocolates. In selecting processed foods, male students showed strong preference for cheaper and quantitative products, while female students chose more tasty, brand new, well-known brand, and products of domestic origin. Frequency of canned and frozen food consumption showed a positive correlation with BMI, while candies/chocolates showed a negative correlations with BMI. Negative correlations were found in the attitude of selecting food with longer shelf life and BMI. The results of this study suggest that university students need to be well informed to make wise food choices that contribute to a healthy diet. Additionally, food manufacturers and government authorities concerned should make certain that consumers know how to use food label information more easily and effectively through proper education.

탁주의 영양표시에 대한 소비자 인식도 조사 및 탁주 영양성분 표시 제도화 방안 (Consumer Awareness and Institutionalization of Nutrition Labeling for Takju)

  • The purpose of this study was to develop measures for establishing and enforcing legal nutrition labeling for Takju based on results from consumer awareness surveys, statistical model development, and evaluation of nutrients. The statistical model developed with consumer survey results showed that consumers would like to know the nutrients they intake from drinking Takju, as their awareness about Takju was low. Specifically, consumers would like to see information regarding alcohol content, calories, carbohydrates, and saccharides on the label. Structural equations from the research model showed that consumers who had some knowledge of Takju also had positive thoughts of the nutrition fact labels for Takju. Evaluation of nutrients in Takju showed that the starch sources and other ingredients used in Takju fermentation did not influence nutrient facts, and nutrient concentrations also varied among the different Takju. In addition, this research suggests methods for consumers to make reasonable selections and to inform them of the nutrition fact labeling for Takju. Benners and pop-up were manufactured to promote voluntary participation of companies and to provide nutrition facts from Takju. Eventually, a measure was suggested to establish and enforce nutrition labeling, using results from consumer and nutrient surveys of Takju.

경북지역 결혼이주여성의 영양지식 및 식생활 교육 프로그램 요구도 조사 (Nutrition Knowledge and Need for a Dietary Education Program among Marriage Immigrant Women in Gyeongbuk Region)

  • The purpose of this study was to provide basic materials and assistance for developing a nutritional education program targeting marriage immigrant women, and it was carried out on 86 female marriage immigrants living in the Gyeongbuk region. An average age of the female marriage immigrants who participated in this survey were 28.6 years, and their home countries were the Philippines (32.6%), Vietnam (29.1%), and so on. Exactly 59.3% of subjects had been married for 1~5 years, and 40.7% of the subjects had an education status of less than middle school graduation. The majority of them (65.1%) had one more children, and 51.2% of subjects were a part of a nuclear-family, with the husband's age between 40~49 years old (58.1%). Concern for nutrition label was significantly different according to number of children (P<0.01), period of marriage (P<0.001), and education level (P<0.05). It was demonstrated that a higher level of education was associated with a higher need to learn about nutritional information. Understanding nutritional facts and knowledge was significantly higher among the women with two children than no child (P<0.05), period of marriage >10 years than <1 year (P<0.01), and education level of college & university graduation than less than middle school (P<0.05). Sixty percent of the women surveyed participated in the education program of 'Korean language' as they were in their country, and the most preferred education program was 'Korean dietary life and culture' (39.5%). Regarding participation and educational method, the majority of subjects responded that they wanted to learn nutritional education in a cooking academy or school (52.9%) and public health center (34.1%).
