A Study on Infant Feeding and Weaning Practices in Multicultural Families (다문화가정 영유아의 수유 및 이유 실태에 관한 연구)

  • The purpose of this study is to investigate the infant feeding and weaning practices in multicultural families. We surveyed 159 married female immigrants in Jeonbuk province from April 2010 to April 2011. They are from Vietnam (49.7%), China (25.8%), Cambodia (8.8%), Japan (8.2%), and the Philippines (7.5%). The average rate of colostrum feeding of all the subjects was 91% and there were significant differences between nationalities (p<.05), family types (p<.01), and delivery methods (p<.001). 41.5% of those answered did breast feeding, while 49.1% combined breast and bottle feeding, and 9.4% did bottle feeding only. The reason for bottle feeding is either because they are unable to produce enough breast milk or because they think the formula is better than breast milk. Average period of breast feeding was 10.3 months. There were significant differences of breast feeding duration between maternal age (p<.05) and economic level (p<.001). The mean onset time of weaning was 7.8 months, and there were significant differences between nationalities (p<.05), family types (p<.05), and feeding methods (p<.05). There was no significant difference in methods of supplementary food preparation between nationalities, family types, jobs, and education levels. The mean onset time of commercial milk was 12.8 months, and there were significant differences between nationalities (p<.05), the duration of marriages (p<.05), education levels (p<.05) and feeding methods (p<.001).

Factors affecting sugar intake in adults based on the social cognitive theory (사회인지론에 근거한 성인의 당류 섭취에 영향을 미치는 요인)

  • Purpose: This study examined the factors affecting sugar intake in adults based on social cognitive theory. Methods: An online survey regarding the intake frequency of sugar-source food, factors related to sugar intake based on social cognitive theory, perceptions of sugar intake, and health-related factors was conducted in October 2019 with 1,022 adults (502 men and 520 women) aged 19-49 years. The intake frequency of sugar-source food was divided into tertiles using percentiles based on the daily frequency. Results: The daily intake frequency of sugar-source foods was 4 times, with beverages (1.87 times/day) and sweetened coffee (0.81 times/day) being the highest among the food groups and types, respectively. The group with a high intake frequency of sugar-source food had a high negative outcome expectation for reducing sugar intake, and was in a home and social environment with easy access to sweet food. Women in this group showed low self-efficacy and poor behavioral capability in reducing sugar intake. Self-control had the lowest average score among the factors of social cognitive theory (2.56/5 points), followed by nutrition knowledge related to sugar (5.42/10 points). As a result of regression analysis, the social cognitive factor affecting the intake frequency of sugar-sourced foods was found to be home environment for both men and women. On the other hand, factors contributing to reducing sugar intake were positive outcome expectations for men and behavioral skills for women. Conclusion: Dietary education and nutritional interventions for adults, including changes in the home environment with easy access to sweet foods, can reduce sugar intake and raise positive expectations for reduced sugar intake.

Examining Early Childhood Education and Care Programs in China

  • This pilot study examined programs for early childhood education and care in three Chinese cities. The samples for this study were one university-based kindergarten, one private kindergarten (rural area), and one public kindergarten (urban area). Six types of instruments were used to assess early childhood education and care services regarding quality matters. Most questions asked were open-ended; consequently, the interview answers by kindergarten directors or teachers (as well as observations made by the researcher) formed the basis for collecting the data. Quality components for each program were determined by a comparison method. The comparison allowed the researcher to understand the range of quality education and care available as well as the variability of existing kindergarten programs in China. The findings of the investigation revealed important information on; (a) demographic information (fees, class hours, total weeks of class, vacation, number of children and staff, class size, and teacher-child ratio) (b) teacher characteristics, (c) health practices, (d) safety practices, (e) work environment, (f) physical settings, (g) play materials, (h) parent involvement, (i) nutrition, (j) daily schedule. Implications within the Chinese context for quality practices and issues to further develop and strengthen early childhood education and care systems are discussed.

The Status of Eating Habits and Nutrient Intakes of Preschool Children in Kyungjoo (경주지역 유치원 아동들의 식습관과 영양소 섭취상태)

  • The purpose of this study is to estimate the nutrient intakes and food habits among preschool children in Kyungjoo city. The subjects were 210 preschool children, aged 4 - 6 years. Measurements of the weight, height, chest circumference, and head circumference of the children were conducted. And general home environment and factors related to eating habits for preschool children were collected using a questionnaire that included information about family income, parents' education and occupations. The average weight-length index (WLI) for the subjects was $103.9\%$. Using the WLI, $20.0\%$ of the preschool children were underweight, $48.6\%$ were normal, $19.0\%$ were overweight, and $12.3\%$ were obese. On the R$\ddot{o}$hrer index, $13.8\%$ of the preschool children were underweight, $38.5\%$ were normal, and $47.7\%$ were over weight or obese. The average daily intake ($\%$ of RDA) of energy and each nutrient was 1323.5 kcal ($81.3\%$), Ca 484.3 mg ($80.7\%$), Fe 7.05 mg ($88.1\%$), vitamin A 420.0 RE ($105\%$), vitamin $B_{2}$ 0.76 mg ($95.0\%$), vitamin $B_{2}$ 0.87 mg ($87.0\%$), and vitamin C 53.1 mg ($106.2\%$) , respectively. In particular, older subjects had lower intake in RDA $%$ of calcium and iron. The energy intake ratio from snacks was much higher than the recommended level of the preschool children. With regard to frequency of regularity of breakfast, $1.9\%$ of preschool children skipped every morning and $7.6\%$ of the children skipped more than 5 per week. With regard to the intake frequency of vegetables, fruits, complex carbohydrates, and milk, $13.3\%$, $19.9\%$, $22.8\%$, and $41.8\%$ of the children ate more than 5 times per week. The eating habit score was positively correlated (r = 0.18, P < 0.05) with household income. This study suggests that nutrition education to increase fruit and vegetable consumption for preschool children should be emphasized. Also a nutrition education program is needed to enhance consuming calcium and iron intake for adequate growth.

A Study on the Preference Determinants of Buddhist Temple Food (사찰 음식 선호도 결정 요인)

  • The purpose of this study was to investigate the preference determinants of buddhist temple food(BTF) and leaded to its activation based on these results. 354 subjects were participated in the survey using questionnaires. 66.9% of subjects had over the normal interest. The taste of BTF was light(34.7%) and it would be helpful in their health(72.9%), subjects answered. Lightness and not strong taste was the main reason of preferring BTF(50.8%), but lack of nutrients was dislike reason of BTF generally. According to factor analysis, the factors of preference determinants deduced as the external form, social environment, health, essential quality and information of food. There were not significantly different between factors by sex and family form. External form, health and essential quality of food had the significant difference by generation and education level. The factors of external form and the essential quality of food showed the significant difference by job. According to the monthly income, the factor of social environment, health and information of food had the significant difference.

A Study on the Perception and Satisfaction of Elementary and Middle School Students on Free Food Service in Chungnam (충남 초·중학생의 무상급식에 대한 인식 및 만족도에 대한 연구)

  • The objective of this study is to investigate the perception and satisfaction of elementary and middle school students on free school food service. We surveyed education related to school food service, concerns about food ingredients, perceptions of free school food service and satisfaction for the quality of the school food service. The investigation is classified into two groups, schools that operate as a food service center or those that do not. Those who are provided food ingredients by school food service centers are educated about the agricultural products' country-of-origin and their environment-friendly food service. The more individuals are educated of the foods' county-of-origin and environment-friendly food service the more they will have a higher concern of the food materials and subsequently a higher satisfaction for the quality of school food service. School food service centers managed directly by the local government would probably receive higher satisfaction than those consigned to a private sector. The results of this study will be meaningful to establish policies on school food service and school food service centers.

Research on the Actual Condition and Consciousness of Female College Students and Alternatives for Job-seeking from the Perspective of Gender Equality (여대생들의 취업의식 실태조사 및 성평등적 관점의 취업 증진 방안)

  • The purposes of this research were to analyse the female college students' appraisals and demands about actual conditions of job-seeking and to propose the developmental alternatives from the perspectives of gender equality. The data were obtained through 510 female students living in Gwangju. The major findings were as follows: 1) Women's needs of job-seeking were very intensive but their preparation level was relatively low. Colleges' support system and organization utility were uneffective because their programs were not specified for women. Women generally recognized that social improvement for gender equality in employment system were very important and more practical methods and contents were demanded in education for job-seeking. 2) Women's grade and major were significant variables in the differences of job preparation, consciousness of job-seeking, social support and appraisals. Therefore, college supporting systems must consider students' characteristics. 3) The job-seeking mechanisms must be changed to more effective systems for the achievement of gender equality. Also community members, colleges and students should make collaborate endeavors for the women empowerment.

An Analysis on the Health Education Content Suggested in the 7th Curriculum of Elementary School Education (제7차 초등학교 교육과정에 제시된 보건교육 내용 분석)

  • The purpose of this study was to provide the necessary fundamental data in composing a systematic text content of the public health by analyzing each text, domain, and teaching contents suggested in the textbooks as well as teachers' guides of the 7th elementary school education curriculum, while the study subjects were as follows. 1. The health education content suggested in the 7th physical education curriculum were analyzed and examined. 2. The health teaching content of each textbook in the 7th elementary school curriculum was to be analyzed and examined. In order to resolve the above research issues, the physical, spiritual, and social domain along with the (1) Proper living habit, (2) Health and nutrition, (3) Sex education, (4) Prevention of the sense-organic diseases, (5) Cleanliness of food, (6) Oral hygiene, (7) Individual health and public health, (8) Safety in living, (9) Abuse and usage of medication, educational content suggested in the 7tand (10) Environment pollution focused around the health of the elementary school education curriculum was analyzed and its outcome was as below First, compared with the 6th elementary school education curriculum, the health content suggested in the 7th elementary school education curriculum was decreased. Second, although each grade's teaching content of the health domain in the physical education was considered in its structure following after the according systems, they were preponderant in partial subjects such as the safety in living, nutrition, proper living habit, sport, and health in sport. oo. Third, the health education content was organized in 4 units such as the physical growth and development, prevention of diseases, safe living, and leisure living(leisure, spiritual health, and etc.) for the 3rd and 4th grade. Then, as for 5th and 6th grade, it was organized in 3 units such as the understanding the human body, prevention of disease, and leisure and safe living. Fourth, in the physical educational health domain, a strong point was constructed within the physical, spiritual, and social areas of the elementary school physical education. Fifth, the number of the public health education contents directly related with the health education was 43 as with 25 indirect contents. Sixth, each grade's domain unit structure of the public health content was heavy upon the physical and social area throughout every grade while in opposite, the spiritual domain' s unit structure was weak. In according to each grade, the physical domain was stressed in 4, 5, and 6 grades while the social domain was stressed in 1, 5, and 6 grades.

Microbiological Hazard Evaluation of the Product Flow of Korean Rice Cakes (떡류 제조 시 미생물학적 위해도 평가에 관한 연구)

  • This study evaluated the microbiological hazard of three Korean rice cake products (Gaepidduk, Injulmi, Julpyon). Microorganisms testing was conducted in various phases of the product flow of Korean rice cakes preparation, food equipment, environment work and cook employees at small scale. The results showed the presence of redbean paste, soybean powder and oil at levels as high as $10^5$ CFU/g on the hazard analysis of rice cakes ingredients. High levels of coliforms were detected in Julpyon products after 24 hr. and on the cooker's aprons. Clinical bacteria were not detected in any of the rice cakes. We concluded that there is a strong requirement for education related to personal hygiene for the production of hygienic rice cake products and for the publics health.

A Study on the Job Satisfactions of School Food Service Employees (학교 급식 종사자의 직무만족도에 관한 연구)

  • The objective of this study is to identify factors affecting the job satisfaction of cook(n= 173) employed in school food service and to propose a plan to improve school foodservice quality. The subjects were cook employed by school in Chungchon province, Gwangju area. The average of cook's job satisfaction was 3.06, the rank factor for nature of work(4.25). the co-workers(3.28), the organic environment(3.17), promotion welfare payment(2.31), the physical environment(2.29) shown respectively. The highest satisfaction with nature of work and organic environment was indicated in the areas of the group of higher age, and cooks who received college education showed significantly lower job satisfaction in physical environment. The highest satisfaction for promotion welfare payment, and physical environment shown in the group of higher length of service who receive higher wages. The groups of regular job shown higher result in the nature of work(3.46>2.94), organic environment(3.46>2.94), promotion welfare payment(2.88>1.94) comparing to irregular job. It is necessary to elevate cook's low satisfaction for improving their work efficiency and the quality of elementary school foodservice.
