The Effects of Dietary Magnesium on Systolic Blood Pressure and Electrolyte Distribution in Normotensive and Spontaneously Hypertensive Rat (정상 혈압쥐와 본태성 고혈압쥐에 있어 식이상의 마그네슘 섭취가 수축기 혈압과 전해질 배분에 미치는 영향)

  • This study was performed to investigate the effects of different dietary magnesium levels on systolic blood pressure and mineral distribution in normotensive and spontaneously hypertensive rats. In experiment 1, Normotensive rats(NTR ; Sprague Dawley, Female) were given diets containing regular magnesium (0.05% Mg ; rMg), marginal magnesium (0.01% Mg ; mMg) or marginal magnesium with stress(0.01% Mg + stress ; mMg + Str). In experiment 2, spontaneously hypertensive rats (SHR ; Kyoto Wistar, Femal) were fed diets containing regular magnesium(0.05% Mg ; rMg) and high magnesium (0.2% Mg ; hMG). The following were found ; 1) NTR treated with marginal magnesium with stress showed significant increase in systolic blood pressure (SBP). Marginal magnesium diet without stress resulted in nonsignificant increase in SBP. Significant in crease of blood pressure showed in NTR treated with marginal magnesium and stress was associated with decreased magnesium and increased calcium content in femur, reticulocyte and plasma. 2) In experiment 2, magnesium supplementation to SHR showed significant attenuation of their systolic blood pressure with increasing age. The attenuation of SBP showed in SHR was associated with increased magnesium, lowered calcium content in cardiac muscle and reticulocyte and decreased plasma sodium and aldosterone level.

Distribution of Extracellular Proteases from Various Vibrio Species (비브리오속 균주들에서외 세포의 효소의 분포)

  • The members of the genus Vibrio include harmless aquatic strain as well as strains capable of causing infections in human and fish. Pathogenic mechanisms are only understood for Vibrio cholerae O1 and O139 and not for the majority of Vibrio species. Twelve clinical and nonclinical strains were examined by in vitro and in vivo experiments for the importance of extracellular enzymes as a virulence determinant of Vibrio species. In vivo cytotoxicity assay was performed by injecting approximately $10^{8}$ cells/mL into mice (BALB/c). V. harvyi and V. vulnificus showed 100% lethality within 3hr after bacterial injection. V. fluvialis and four strains of V. parahaemolyticus showed 50% lethality within 4hr. V. mimicus, V. alginolyticus and V. furnissii revealed 30% lethality within 9hr. Nonclinical strains, V. campbellii and V. ordalii, did not show any lethality. In vitro protease and hemolytic activities were also good indicators for clinical and nonclinical strains of Vibrio species. The clinical strains showed much higher activities than nonclinical strains. The activity of some clinical strains of re-isolates was evidently increased. Most clinical strains had $\beta$ hemolytic activity. The results demonstrate that the prevalent distribution of extracellular proteases in pathogenic Vibrio sp. implies their importance as a virulence determinant.

Factors Affecting Gelatinization Temperature of Rice Starch (쌀 전분의 호화온도에 영향을 주는 요인들)

  • Factors affecting gelatinization temperature of rice starches from different varieties were investigated. Birefringence end-point temperature(BEPT), amylose content, granule size distribution and degree of crystallinity of rice starches showed the significant varietal differences at ${\alpha}\;=0.01$. Susceptibility of the granule to gelatininzation was dependent mainly on the degree of crystallinity, as indicated by the significant positive correlation between BEPT and the relative crystallinity(r=0.67, p<0.01). However, granule size distribution did not affect the GT(gelatinization temperature) range, nor did amylose electron microscopy (SEM). SEM also confirmed that there is no relationship between the size and the shape and the amylose content of the rice starch.

Importance-Performance Analysis about Sanitation Management Items at General Hospital Foodservice Operations (일부 종합병원 급식소 위생관리 항목에 대한 중요도-수행도 분석)

  • The purpose of this study was to analyze the gap between importance and performance in perceived sanitation management for general hospital foodservice operations. Data were collected through surveys given to 168 hospital dietitians in the Seoul-Incheon, Gyeonggi-do, Daegu, and North Gyeongsang province. The 65 questionnaires from total questionnaires were usable and the response rate was 38.7%. All statistical analyses were conducted using the SPSS package program (version 20.0) for t-test, ANOVA, and importance-performance analysis (IPA). According to the importance and performance analysis for 26 items, the importance score was significantly higher than the performance score for 22 items. In addition, the results of IPA showed the following areas as improvement priorities: handling foods on working table and management of distribution temperature. In conclusion, the performance level of prerequisite programs applying to the hospital foodservice needs improvement, especially cross-contamination prevention and temperature control for distribution. Additionally dietitians should be educated about sanitation management items that perceived to be less important than the others.

Effects of Amylose Contents and Degree of Gelatinization of Rice Flour on In Vitro Starch Digestibility, Physical Characteristics, and Morphological Properties

  • The relationship of in vitro starch digestibility and gel strength was investigated at various concentrations (10-30%) of rice cultivars with different amylose contents (27.9, 17.9, and 5.2%). As the rice flour concentration increased, predicted glycemic index decreased, but gel strength increased regardless of amylose contents. Gel strength correlated strongly with amylose content, whereas in vitro starch digestibility was more highly affected by rice flour concentration than by amylose contents. Moreover, the impact of degree of gelatinization on in vitro starch digestibility of high amylose rice was also examined in terms of structural features and rheological properties. The digestion rate of fully gelatinized flour was 1.7 times higher than that of native flour, while the disrupted structure with a different gelatinization degree during starch digestion was visually demonstrated through the X-ray diffraction and molecular distribution analysis. The rice flour changed from an A-type to a V-type pattern and showed difference in crystalline melting. The low molecular weight distribution increased with increasing degree of gelatinization during starch digestion. The apparent viscosity also increased with degree of gelatinization. These results demonstrated that the starch digestibility of rice was more affected by concentration than by amylose content, as well as by the degree of gelatinization due to structural difference.

The Effect of Motivated Consumer Innovativeness on Perceived Value and Intention to Use for Senior Customers at AI Food Service Store

  • Purpose: This study investigates the use intention of artificial intelligence (AI) food service stores for senior customers, which are becoming a trend in the service industry. Research design, data and methodology: For the study, the extended technology acceptance model (TAM) and motivated consumer innovativeness (MCI) variables, proven by existing researchers, were used. In addition to the effect of motivated consumer innovativeness on customer value, we investigated the effect of customer value on trust and use intention. For the study, 520 questionnaires were distributed online by an expert survey agency. Data was verified through validity and reliability. Results: The analysis results of the research hypothesis verified that functionally motivated consumer innovativeness (fMCI), hedonically motivated consumer innovativeness (hMCI), and socially motivated consumer innovativeness (sMCI) all had positive effects on usefulness and enjoyment. Furthermore, usefulness had a statistically significant positive effect on trust, but perceived enjoyment did not; trust was found to positively affect the intention to use. Conclusions: We compared the moderating effects of seniors' gender and age (at 60) between groups. Although there was no moderating effect of age, it was verified that regarding the effect of usefulness on trust, the male group showed a greater influence than the female group.

Can Coffee Shops That Have Become the Red Ocean Win with ESG?

  • Purpose: This study aims to investigate the relationship between ESG activities (Environment, Social, Governance) of coffee shops and their brand image, purchase intention. Research design, data and methodology: To test the hypothesis, a survey was conducted for about one month from May to June, 2021, and a total of 311 people responded to the survey, and the responses from 311 copies were used for the analysis. Validity and reliability analysis were performed, and the relationship between latent variables was empirically analyzed using the structural equation modelling. Results: The results of the study are as follows. First, among the ESG activities of coffee shops, the environmental and social sectors had a significant positive (+) effect on the brand image, but the governance aspect showed no significant effect on the brand image. Second, it was found that the symbolic image and the empirical image had a significant positive (+) effect on the purchase intention, but the functional image did not have a significant effect on the purchase intention. Conclusions: The results of this study suggest that as the number of coffee shops and the heated competition are increasing, it is possible to build a differentiated brand image through ESG activities rather than relying on the functions and services of competing products.

  • Appropriate random variables and probability density functions based on statistical analysis should be defined to execute reliability analysis. Most studies have focused on only normal distributions or assumed that the variables showing non-normal characteristics follow the normal distributions. In this study, the reliability problem with non-normal probability distribution was dealt with using the convolution method in the case that the integration domains of variables are limited to a finite range. The results were compared with the traditional method (linear transformation of normal distribution) and Monte Carlo simulation method to verify that the application was in good agreement with the characteristics of probability density functions with peak shapes. However it was observed that the reproducibility was slightly reduced down in the tail parts of density function.

  • The distribution of local anesthetics between the hydrocarbone interior and surface area of the lipid bilayer of liposomal membrane was calculated employeg fluorescence probe technique. The quenching of fluorescence probe technique. The quenching of fluorescence probe technique. The quenching of fluorescence of 12-(9-anthroyl) stearic acid and N-octadecyl naphthyl-2-amini-6-sulfonic acid by the local anesthetics in liposomal system was used to calculate the distribution. The Stern-Volmer equation was modified and employed for this calculation. The results showed that procaine hydrocloride and benzocaine were mainly distributed on the surface area of the lipid bilayer of the liposoal membrane, while tetracaine hydrochloride penetrated effectively into the hydrocarbon interior and showed even distribution in the lipid bilayer.

  • Archidium Brid. (Archidiaceae), comprising a total of 35 species, is known to be widely distributed from subtropical to temperate regions, excluding the polar areas. The distribution of Archidium ohioense Schimp ex Müll. Hal. in Korea has been unclear. This study reports the collection of Archidium ohioense from Mt. Gamak, Yeoncheon-gun, Gyeonggi-do, South Korea. This species is distinguished from similar species by median cell, alar region, capsule. We provide detailed description, illustrations, photographs, and a key to related species.
