Objectives: To describe the development and validation of a cancer awareness questionnaire (CAQ) based on a literature review of previous studies, focusing on cancer awareness and prevention. Materials and Methods: A total of 388 Chinese undergraduate students in a private university in Kuala Lumpur, Malaysia, were recruited to evaluate the developed self-administered questionnaire. The CAQ consisted of four sections: awareness of cancer warning signs and screening tests; knowledge of cancer risk factors; barriers in seeking medical advice; and attitudes towards cancer and cancer prevention. The questionnaire was evaluated for construct validity using principal component analysis and internal consistency using Cronbach's alpha (${\alpha}$) coefficient. Test-retest reliability was assessed with a 10-14 days interval and measured using Pearson product-moment correlation. Results: The initial 77-item CAQ was reduced to 63 items, with satisfactory construct validity, and a high total internal consistency (Cronbach's ${\alpha}$=0.77). A total of 143 students completed the questionnaire for the test-retest reliability obtaining a correlation of 0.72 (p<0.001) overall. Conclusions: The CAQ could provide a reliable and valid measure that can be used to assess cancer awareness among local Chinese undergraduate students. However, further studies among students from different backgrounds (e.g. ethnicity) are required in order to facilitate the use of the cancer awareness questionnaire among all university students.
The aim of this study was to investigate the effects of socio-demographic and health-related perceptions and twenty dietary behaviors on the superiority and preference, convenient use of and purchase motives of vegetables among 370 women(mean age 43.9) in Seoul and metropolitan and Gangwon area. Data was collected using a questionnaire developed in advanced studies. Almost all subjects rated vegetables more predominantly than grains or meats on the basis of health, diversity, and convenience to purchase. Recognition of healthly funcions of diet, purpose of diet and some dietary behaviors had influence on preference for vegetables. Those who recognized that diet had the function of disease control and prevention, knew the healthy options vegetables provide us, such as, preventing us from geriatric diseases, good sources of vitamins and minerals and considered other motives aside from health issues. From Pearsons's correlation analysis, it was revealed that sufficient time for meal preparation and pleasant eating and desirable life style and dietary attitudes, and a better understanding of nutrition were positively correlated with consumption of more vegetables and convenient use of vegetables. The subjects who recognized the ability of food to help prevent diseases, had a preference for vegetables and attitude to use nutritional knowledge and also considered the nutrition values of vegetables and environment friendliness. Everyday use of vegetables such as consuming a variety of different vegetables, a families favorite vegetables and variation of cooking methods had correlated positively with purchase motives. Therefore to encourage consumption of vegetables, it is important to notice three points continuously; first, practical information of nutritive values of vegetables, the contribution of vegetables in current animal protein foods centered diet and healthful functionalities. Second, the importance of regular diet and steadfast attitude and lifestyle. Finally, the quality of the market where the products are bought such as, quality control of freshness, sanitation, expression of producer and a pleasant environment to shop in.
This Quantitative study was investigated to examine the relationship between self-esteem on body image and disordered eating patterns in some university students. This study used a cross-sectional study design. Total 347 students participated in this study (88 male and 259 female) among three universities. The assessment of eating disorder was conducted by Eating Attitudes Test (EAT-26), a score of >or=20 identified individuals likely have an eating disorder, including anorexia nervosa and bulimia nervosa. Ideal body weight and current body weight were completed with self-evaluation. A distorted body image was independently related to the eating problem in the Logistic regression analysis. There were stronger relationships between their EAT-26 scores and their expected weight changes and weight control behaviors. Compared with the men, women showed highly wishful to loss for current body weight. In the relationship between score of EAT-26 and BMI distance by sex, levels of eating disorder showed linearly elevated toward increased BMI distance (Ideal BMI-Current BMI) (F-value=18.794, p<0.0001) in women, but there were not significant in men (F-value=2.028, p>0.05). In estimate on state-trait anxiety inventory according to quartile of BMI distance by sex, levels of state-trait anxiety were not significant difference by degree of body dissatisfaction in all sex. In addition, higher distorted body image was significantly increased numbers of weight control method and experience of side effects in female, but there were not showed significant relation between two variables in male.
Taekukkwon was practiced far health previously. The experimental group consisted of undergraduate and graduate students practising in the above disciplines at Myong Ji University. The group consisted of three female and three male students and the aim of this research was to measure the brain wave change for opened and closed eyes. The result of this research are as follows. Firstly, when students were subjected to basic open eye brain wave tests, beta-waves displayed for all regions of the brain. In the frontal region fast beta-waves were displayed and in the central region alpha-waves were displayed. Secondly, in the closed eye brain wave tests, the control group displayed beta-waves in some regions and alpha waves in external and internal regions. For all students\` brain-wave patterns, the amplitude of the alpha-wave was low and the frequency was high. In some students theta-waves were displayed. Taekukkwon practice relaxes the mind and body and helps relieve social stress which shows that taichichuan practices is beneficial. Finally, characteristics of the subjects were mostly type A so the personalities of the subjects were fast and aggressive. This research shows a definite link between personality and personal relationships with beta-waves emissions. So, further research is required in the future to investigate this relationship. The subjects consumed too large amount of foods so it was necessary to change their dietary habits taking into consideration on total calories, fats, and protein. It was also necessary to carrying out nutrition education to the students in emphasizing appropriate attitudes in general health and dietary behavior.
This quantitative study was conducted to examine the relationship between weight control behaviors and disordered eating patterns in some university students. This study used a cross-sectional study design. A total of 347 students from three universities participated in this study (88 male and 259 female) Eating disorders were assessed using the Eating Attitudes Test (EAT-26); a score of =20 identifies individuals who likely have an eating disorder, including anorexia nervosa and bulimia nervosa. A score for healthy dietary behaviors was obtained by self-assessment on a healthy diet scale (20-item questionnaire), and the severity of any state-trait anxiety was calculated by the state-trait anxiety inventory (40-item questionnaire). In the analyzed results, the percentage of participants with experience of weight control was 58% in male and 73% in female. The subjects with a high risk of an eating disorder (score of =20 of EAT-26) were 44.3% ($mean{\pm}S.D;\;18.9{\pm}13.4$) of the males, and 57.9% ($mean{\pm}S.D;\;23.2{\pm}11.6$) of the females. Higher Body Mass Index (BMI) was significantly related with an increased risk for an eating disorder in females, but not in males. In the group who had attempted weight control of all types, there was a severe risk of an eating disorder. Increased eating disorder risk was significantly related with weight control behaviors such as a higher number of attempts at weight control, having used medication, having experienced side effects, and having experienced disease for both sexes. Therefore, the results of this paper showed that detrimental behaviors of weight control are connected to an increased risk of eating disorders. Consequently, education regarding the correct, behaviors of weight control is necessary to prevent eating disorders in adolescents.
The purpose of this research was to analyze the job satisfaction and business attitudes of restaurant owners in order to explore solutions for improving restaurant management. The results were as follows : 1) The motive for starting a restaurant business was vocational aptitude \longrightarrow possibilities \longrightarrow good income : 2) In terms of job satisfaction, most respondents were satisfied with both the work itself and the income. It was also observed that the younger owners were more satisfied with their jobs than the older owners : 3) Increased costs, including labor and food costs, was indicated as the biggest problem in restaurant management. Respondents also perceived labor shortage as one of the most difficult problems. Men were more likely than women to consider the following problems as being more serious: rent, financial problems, taxes, regulation restrictions, menu development and customer complaints. It was found that as the size of the restaurants grew, the respondents perceived the shortage of labor as the hardest part of running a business : 4) Respondents agreed that employing good foodservice workers was the most important part of foodservice management. Owners also believed that they needed more research time for menu and service development 5) To be successful, the restaurant owners paid the most careful attention to food taste. Service, sanitation, and menu development were also emphasized. Respondents stressed the focus on service, good relationships, diligence, and faithfulness in order to be a good restaurant owner. The results of this research suggest that restaurant owners should have more professional conscientiousness to succeed in their own businesses, as well as improve the quality of the foodservice industry. Other important aspects related to the overall improved quality of the foodservice industry are: the continuation of government support, the enlargement of educational opportunities and greater respect for foodservice employees. Objectives: This study aims to investigate the married female immigrants' experience on Korean dietary life adaptation, especially identifying the symbolic meaning and nature of experiences. Methods: This study was conducted with six married female immigrants through an analysis of the qualitative materials which consisted of in-depth interviews, field notes and materials. Data was analyzed using Giorgi's phenomenological research methods. Results: The results were deduced as 116 significant statements, 17 formulated meanings (sub-theme), and 6 theme clusters. Six theme clusters comprised of lack of preliminary knowledge and information, conflict and support in relationships, Korean food culture which is different from homeland, adaptation attitudes of Korean food culture according to situation, sharing of homeland food culture, and practical difficulty and expectative service. The participants started Korean life in the dark about Korea and Korean food culture, so they were subjected to trial and error. The conflict between Korean mother-in-law and foreign daughter-in-law came from lack of consideration of daughter-in-law's cultural background. Some participants were hurt because of misunderstanding and nitpicking. They were learning about cooking method, ingredient, seasoning, table setting and manner. Some participants integrated Korean food culture and their homeland food culture. Some of them assimilated with Korean food culture. One of them maintained homeland food culture. The participants who adapted Korean food culture well could share homeland food amicably. They sometimes didn't apply the services which were offered by the government, because the services did not fit their needs. Some of them didn't know the usage route of the services or information. They had resistance about home teaching and it showed that outreach service was not always effective. Conclusions: This study suggested that it is necessary to develop a practical support plan which covers married female immigrants' real needs and system improvement measures.
This study was to investigate the factors which influence foodservice dietitians' job satisfaction and dissatisfaction by the elementary school foodservice type using questionnaires. The results of the study are as followings : 1) Foodservice types of the subjects were urban 49(23.2%), country 141(66.8%) and island 21(10.0%). 79.6% of the urban type were operated by the conventional, independent management system, where 38.3% of the country and 52.4% of the island type were operated by conventional, joint management system. 2) Urban type dietitians showed significantly lower satisfaction on their salary & promotion(1.5) compare to country & island types(p<0.05). Island type dietitians showed significantly lower satisfaction on the student's health improving(2.4) compare to country &urban types(p<0.05). 3) Dietitians of urban type were dissatisfied more 'personnel management(3.2)' than dietitians of other two types. Dietitians of country type and island type were dissatisfied more 'extra work load(2.6)' than dietitians of urban type. 4) Work load was lots orderly island, country and urban types. Working attitudes were the most positive at dietitians of urban type and the most negative at dietitians of island type. 5) Job satisfaction and dissatisfaction of dietitians were correlated with number of meals, number of school transfer, cook license, additional job and school foodservice location type.
This study investigated preferences toward soybean-based foods and levels of dietary isoflavone intake in female adults living in Daegu. In order to determine the subjects' attitudes toward soybean-based foods their degrees of recognition and preference along with intake frequency were examined. To estimate their isoflavone intake levels, a food frequency questionnaire and the 24-hour recall method were used. The average age, height, weight, and BMI of the subjects were 47.3 years, 159.6 cm, 56.4 kg, and 22.1 kg/$cm^2$, respectively. And their mean energy, protein, dietary fiber, calcium, and sodium intakes were 1,871.9 kcal, 81.1g, 23.2 g, 604.7 mg, and 5.07 g, respectively. The average amount of isoflavones consumed from soy foods was 29.49 mg/day(daidzein 13.14 mg/day and genistein 16.35 mg/day) as assessed by food frequency questionnaire, and by the 24-hour recall method the average amount was 22.97 mg/day (daidzein 10.10 mg/day and genistein 12.87 mg/day), showing that the food frequency questionnaire assessment amount was 6.52 mg higher than that by 24-hour recall method. The major food sources of the isoflavones were soybean paste and soybeans. For the subjects' degrees of recognition of soybean food, soybean paste received the highest score among the items. The results also showed that the most preferred soybean-based foods were soybean paste stew and soybean paste soup. Furthermore isoflavone intake was significantly higher in the postmenopausal women than in the premenopausal women. Overall, these data help elucidate the patterns and determinants of soy food consumption and also provide an assessment of dietary soy isoflavone intake in Korean women.
Acculturation may manifest dietary behavioral changes of students from overseas. This study investigated the dietary attitudes, food intakes, and dietary behaviors of 121 Chinese college students residing in Busan, Korea. Using a focus group interview and structured survey, subjects were divided into two groups (SG, LG) based on their self-rated acculturation status. The SG (n=70) and LG (n=51) groups consisted of participants that had resided in Korea for shorter than 18 months versus 18 months or longer, respectively. The SG group was more likely to point out the taste of Korean foods as being too sweet, salty, and spicy but less greasy. A food frequency questionnaire was developed to assess normal intake of Korean ethnic, Chinese ethnic, and common foods. The LG group consumed more Korean foods such as rice cake, dried laver, and radish kimchi but less Chinese foods such as bread glue ball and kidney bean. The LG group consumed more salty and fatty foods and Korean liquors, whereas the SG group consumed more fruits and noodles. Based on the exploratory factor analysis, the SG group showed significantly higher scores for "dietary regularity" but lower scores for "indulgence of unhealthful food" factors. In summation, the LG group became more accustomed to Korean foods and adopted less desirable dietary behaviors compared with the SG group. Findings suggest that the residential period of Chinese college students may be associated with their self-rated acculturation status and food acculturation process, and therefore tailored nutrition education programs are needed to support Chinese students' healthier dietary behaviors and food acculturation process.
