A Study on the Nutritional Knowledge, Food Habits, Food Preferences and Nutrient Intakes of Housewives Living in Urban Area and Rural Area (경상북도 도시 및 농촌 거주 주부의 영양지식, 식습관, 식품기호도 및 영양소 섭취실태에 관한 조사연구)

  • This nutritional survey was conducted from January to March 1994, in order to investigate the nutirtional knowledge, food habits, nutritional attitude, food preferences and nutrient intakes of housewives living in urban area and rural area. The subjects of this survey were 164 urban housewives living in Daegu and Pohang area and 170 rural housewives living in Andong area. The results obtained are summarized as follows ; The subjects had a high level of perceived knowledge(81.2%), that is the knowledge that each subject believed she had, but the accuracy of the knowledge was only 66.3%. Most of the urban housewives belong to "Fair" or "Good" food habit group, while rural housewives belonged to "Fair" or "Poor" food habit group. The correlation between nutritional knowledge score and food habit score was low. And the correlation between nutritional attitude score and food habit score was low, too. Food perferences for kimchi, cooked rice, potato, milk were high in both group. Most of the nutrient intakes of the urban and rural housewives were not significantly different each otehr at p<0.05.ficantly different each otehr at p<0.05.

Analysis of food irradiation education for elementary, middle, and high school students for three years in South Korea

  • BACKGROUND/OBJECTIVES: The current South Korean government policy on food irradiation technology should be reformed based on an in-depth investigation of the communications aspect, because the issue is no longer of a technological nature, given the proven safety and efficacy of the processes. SUBJECTS/METHODS: The target population of the education program consisted of elementary, middle, and high school students attending 310 schools in South Korea (2013: 63 schools, 2014: 104 schools, 2015: 143 schools). Data subjected to analysis were 13,327 pre-education and 12,641 post-education questionnaires received from 7,582 elementary, 2,671 middle, and 3,249 high school students who participated in the education program from May 2012 to April 2015 (n = 12,831), after the exclusion of inadequately filled-in questionnaires. RESULTS: Analysis of the three-year educational effect trend was conducted by comparing levels of variables before and after food radiation education. The analysis yielded the finding that the post-education levels were significantly higher for all variables. That is, for interest in education, perception (necessity, safety, subjective knowledge, and information acquisition), objective knowledge, and attitude, with the sole exception of objective knowledge in 2013. CONCLUSIONS: Given that post-education levels of perception, knowledge, and attitude concerning irradiated foods increased considerably compared to pre-education levels, behavior change should be induced by providing continuous education to enhance, these primary variables.

Understanding Relationship among Emotional Intelligence, Job Attitude, and Organizational Performance in Kitchen Staff (급식업체 조리종사자의 감성지능과 개인의 직무태도, 조직성과와의 관계분석)

  • The objective of this study was analyze the relationship among emotional intelligence, job attitude (job satisfaction, organizational commitment, turnover intention), and organizational performance in kitchen staff. A survey collected data from foodservice employees (N=611). Statistical analyses were completed using SPSS Win (17.0) for descriptive analysis, reliability analysis, factor analysis, t-test, correlation analysis, and AMOS (7.0) for confirmatory factor analysis and structural equation modeling. The main results of this study were as follows. The four EI (Emotional Intelligence) dimensions significantly correlated with age. The mean of the job satisfaction score was 3.24. The organizational commitment score was 3.54. The organizational commitment score was higher for 'loyalty' factor than for 'sense of belongs' factor. The mean of organizational performance score was 3.61. The four EI(Emotional Intelligence) factors were significantly correlated with job satisfaction (organizational commitment, organizational performance, and turnover intension). Structural equation modeling found that emotional intelligence had positive effects on job satisfaction, organizational commitment, and organizational performance, whereas job satisfaction and organizational performance had positive effects on organizational performance. Therefore, this study found that emotional intelligence had direct and indirect effects on organizational performance.

Effects of 'Diet and Health' Course on Nutrition Knowledge and Dietary Attitudes of University Students in the Kangwon Area (강원지역 대학생의 식생활 관련 교양과목이 영양지식 및 식생활 태도에 미치는 영향)

  • This study used a questionnaire survey to investigate the effect of nutrition education on nutritional knowledge and dietary attitudes during a 'Diet and Health' one-semester lecture taken by non-major university students. The study subjects were 504 students of K University. Body mass indices (BMIs) of the male and female students were 22.3 and 20.1, respectively, with 58.2% and 65.9% being normal weight, 13.8% and 1.5% being obese, and 7.3% and 20.2% being underweight, respectively. The nutritional knowledge score significantly increased from 13.51 to 15.97 in male subjects (p<0.001) and from 13.88 to 16.38 in female subjects (p<0.001) after attending the lecture. Dietary attitude scores increased from 47.15 to 49.72 in males and from 48.65 to 50.97 in females after the lecture, but the increase was only significant in the males (p<0.01). There was a significant and positive correlation between nutritional knowledge score and dietary attitude score in both male and female student who had taken the 'Diet and Health' one-semester lecture.

A Study on Dietary Attitudes of Preschool Children in Child Care Center (어린이집 아동들의 식생활 태도에 관한 연구)

  • This study aimed at examine dietary attitude, eating behavior and food preferences of children in child care center. The children involved in this study were 153 boys and 134 girls, aged 3 to 6 years old. The eating frequency of breakfast and the number of meal times a day were significant difference according to sex(P<0.01). Reason for skipping breakfast was ‘no appetite’(49.3%). It was found that 51.5% of the children belonged to ‘fair’ in food habit score, while children in ‘poor’ and in ‘excellent’ were 25.0% and 9.7% respectively. There was no significant difference in food habit score between boys and girls. Their preferred staple foods were ‘cooked rice’ and ‘Chajangmyon’, their preferred soup was ‘seaweed soup’. Also, their most preferred side dishes with animal foods were ‘fried chicken’ and ‘Bulgogi’. The preference of ‘hard boiled soybean curd’ and ‘pan fried soybean curd’ among the side dishes with vegetable foods were significant according to the obesity index(P<0.05). Children preferred side dishes with animal foods to those with vegetable foods. First considered item in meal preparation was child's favorite(58.1%). Mother's response to child's unbalanced diet was ‘trying to persuade the child’(56.6%). It was significant according to mother's occupation(P<0.01). The nutritional management program at child care center is required to enhance the nutritional status of children. Also the nutritional education for the children and their meal planners is required for better growth and health promotion of preschool children.

Effects of Educational Intervention about Breastfeeding on University Students' Knowledge and Attitudes toward Breastfeeding: Focusing on Gender Differences (모유영양교육과정이 남녀 대학생의 모유영양 지식과 태도에 미치는 영향 : 성별 차이를 중심으로)

  • Objectives: The purpose of this study was to examine the impact of a targeted, practical education intervention on university students' knowledge and attitudes toward breastfeeding. Methods: A university curricular intervention was designed for students to increase their knowledge and positive attitude toward breastfeeding issues. The participants attended a breastfeeding education lectures two hours of weekly for fifteen weeks in university; 61 students (female, n=31 and male, n=30) participated. The pre- and post-measurements included future breastfeeding intention, knowledge, attitude and perceived control beliefs scores based on the results of a questionnaire. Results: The statistical analysis results revealed a significant difference in the pretest and posttest scores (0.57 to 5.10 points, p<0.001) in regard to the students' breastfeeding knowledge. For female students, significant differences were observed in the future breastfeeding intention (p<0.05), knowledge (p<0.001), and attitudes towards breastfeeding (p<0.05) between the pretest and posttest scores. For male students, there were no significant differences in the future breastfeeding intention, attitudes towards breastfeeding, and perceived control beliefs scores after the breastfeeding education lecture. Conclusions: This study showed that the implementation of practical breastfeeding educational interventions helped improve university students' knowledge and attitudes toward breastfeeding. In summary, despite the limitations, it is necessary to pay more attention to improving students' knowledge and attitudes towards breastfeeding through university curricula.

A Study on the Evaluation of a Nutritional Education Program for the Middle Aged Obese Women (중년기 비만여성에 대한 영양교육 프로그램의 효과 평가에 관한 연구)

  • This study was performed to evaluate the effectiveness of a nutritional education program conducted by public health center in Jinju city for obese women. The subjects of this study consisted of 27 obese women(BMI $\geq$ 25) aged 35∼55 years in Jinju area, and the educational period was 6 weeks. We evaluated the anthropometric parameters and biochemical indices, dietary habits, dietary behaviors, nutritional attitude of obese women before and after the nutritional education. And also daily intake during the educational period were measured. Weight, obesity index, BMT, waist circumferences and hip circumferences of obese women were significantly decreased(p<0.001) after nutritional education, but changes of WHR, systolic blood pressure and diastolic blood pressure were not significant. There were no significant difference in total cholesterol, HDL-cholesterol, LDL-cholesterol, triglyceride, LDH and blood glucose level in serum before and after the nutritional education, but the indices tend to decrease after the nutritional education. There was significantly different change of dietary behaviors in 3 items among the dietary behavior after the nutritional education. Their dietary habit, dietary behavior and nutritional attitude scores were significantly improved after the nutritional education. Mean daily energy intakes was low compared with the RDA as 78.88%. The average carbohydrates, protein, fat ratio on the energy intakes was 63 : 17 : 20. The proportion of energy intake from snacks the was 12.91${\pm}$6.15%.

Celebrity Endorser Effects of Fast Food Industries on Seoul Highschool and Undergraduate Students (서울 지역 고등학생 및 대학생을 대상으로 한 패스트푸드업체의 '스타마케팅' 광고효과 분석)

  • The purpose of this study was to analyze the effects of celebrity endorsers used in fast food industry among highschool and undergraduate students. By taking the sample's age and income into consideration, the advertisement examples of fast food industries were chosen for this study. Data was collected by questionnaires from 400 students. For statistical analysis, the SPSS V19.0 was used for reliability and factor analysis, chi-square test and regression analysis. The results are as follows: First, there was a significant difference (p<0.01) in advertising effects according to gender and education level. Out of the consumers who were exposed to celebrity endorsers, the highschool students and women showed higher advertising effects. Second, the advertising attitude was positively related to brand images (F: 479.680, p<0.01) and buying intentions (F: 1101.427, p<0.01) as well as brand images on purchase intentions (F: 492.175, p<0.01). In conclusion, the consumers with positive attitudes towards advertisements will also evaluate brand images positively and be more likely to purchase the products.

A Study on the Consumers' Intention to Visit Restaurants in COVID-19 Endemic (COVID-19 엔데믹 상황에서 소비자들의 레스토랑 방문의도에 관한 연구)

  • Coronavirus disease-2019 (COVID-19) has led to a decline in restaurant visits, which in turn has changed the decision-making process of consumers. This study aimed to investigate the factors influencing visit intention during the COVID-19 endemic by employing the expanded theory of planned behavior. A total of 291 samples were collected through an online survey for the analysis. Confirmatory factor analysis, correlation analysis, and structural equation path analysis were performed on the collected data using the Analysis of Moment Structures (AMOS) statistical program. The findings of the study revealed the positive effects of attitude and perceived behavioral control and the negative effects of subjective norms on desire. Second, desire played a mediating role between antecedent variables (attitude, subjective norm, perceived behavioral control) and the visit intention. These findings are meaningful in that they expand the theory of planned behavior during the COVID-19 endemic based on factors that affect visit intention.

Analysis of Dietary Characteristics of Participants Attending the Nutrition Education Program for Hypertensive Patients at a Public Health Center (보건소 고혈압 영양교육 참여자의 식생활 요인 분석)

  • Hypertension is a well-known degenerative disease whose prevalence rate increases with age. Management of high blood pressure is a critical concern in preventive strategies to reduce the morbidity and mortality for cardiovascular disease. The purpose of this study was to examine the dietary characteristics of hypertensive program participants, and to establish strategies based on their nutritional needs. Hypertensive patients were enrolled in the program in a public health center or in a local elderly center, at Suwon, in 1999-2000. Trained dietitians interviewed 62 enrollees(24-hour recall) and related variables. Mean body mass index of the subjects was 25.0kg/m². 30.7% of the subjects had a family history of hypertension. The majority of them ate regularly and partook of all available side dishes. They consumed grains and vegetables regularly, but seldom ate dairy products or food prepared with oil. Male enrollees frequently consumed more processed food and animal fat than did female enrollees(p<0.05). An analysis of the percentage of RDA(Recommended Dietary Allowances of Korea 1995) showed that but for ascorbic acid, enrollees consumed nutrients below the RDA. The food group intake pattern was not diverse, thus only 8.1% of enrollees consumed all food groups in a day. An analysis of eating attitude showed that 64.5% of enrollees always added salt to beef soup. Male enrollees showed low food-related self-efficacy compared to female enrollees, especially with reference to reduction of instant food intake(p<0.01), increase in vegetable intake(p<0.01), reduction of monosodium glutamate(MSG) intake(p<0.01). and not overeating(p<0.05). Their perceived barriers for participating in hypertension nutrition programs included lack of time, program necessity non-recognition, and program comprehension difficulty. These results suggest that nutrition education program necessity non-recognition, and program comprehension difficulty. These results suggest that nutrition education programs for community hypertensive patients should focus on increasing participant consumption of foods, expecially dairy products, and desirable eating attitudes. It also suggests that the program should consider should consider encouraging self-efficacy in changing eating behavior.
