Development and Evaluation of the Children's Sugars Intake Reduction Program (유아용 당류 섭취 줄이기 교육프로그램 개발 및 효과평가)

  • This study aimed to develop and evaluate a sugars intake reduction program (SIRP) that was designed to increase the knowledge, attitude, and skills of Korean children aged 5 years regarding sugars intake reduction. A total of 101 children aged 5~6 years from 6 preschools participated in SIRP. SIRP consisted of 4 sessions including 10 activities (e.g., story-telling, arts, experiment, checking nutrition facts, pledge), delivered to children at preschools by nutritionists over a one-month period. Three letters were sent to parents throughout the program to inform them of the children's activities at the preschools and to provide additional information on reducing children's sugars intake. A total of 90 children completed the program; 83 parents of these children completed the SIRP evaluation survey. The children's sugars intake reduction score was significantly increased after attending SIRP. Teachers (n=6) who participated in this program agreed to improve their students' attitudes on reducing sugars intake and to decrease students' behaviors related to sugars intake. Parents agreed to improve their children's attitude on reducing sugars intake and to decrease children's behaviors related to sugars intake. The outcome showed SIRP improved participants' attitudes towards sugars reduction and increased the skills to reduce the sugars intake of children aged 5~6 years. Future studies should examine whether SIRP reduces actual sugars intake among children.

Comparison of Perception and Fast Food Usage Patterns of Adults Classified by Age in Busan (부산지역 성인의 연령별 패스트푸드 인식 및 이용실태)

  • This study was conducted to compare the perception and fast food usage patterns of adults classified by age in Busan. The survey was conducted from April 15 to June 15, 2017 by questionnaires and the data were analyzed using SPSS 24.0 Overall, 74.1%, 58.1%, 40.7%, 20.3%, 29.7% and 17.9% of individuals in their 20s, 30s, 40s, 50s, 60s and 70s, respectively, consumed fast foods more than once a week. Additionally, 66.0%, 52.5%, 25.7%, 16.0%, 22.9% and 11.7% of individuals in their 20s, 30s, 40s, 50s, 60s, and 70s, respectively, preferred fast foods. There was a significant difference in the basis for choosing menu among the groups, with 'preference' and 'price' being most important to those in their 20s and 30s, on the other hand 'preference' and 'companion' being most important to members of other age groups. As their age increased, individuals spent less money on fast food. Overall, 81.5%, 59.9%, 50.0%, 40.1%, 46.3%, and 28.4% of individuals in their 20s, 30s, 40s, 50s, 60s and 70s thought that fast food was a suitable substitute for a meal. Age affected the substitutability of fast food for a meal (P<0.001). Additionally, the ratio of individuals in their 20s and 30s that skipped breakfast was higher than in other age groups. In addition, age showed a significant positive correlation with obesity and dietary attitude, whereas it showed a negative correlation with nutrition knowledge, use frequency, perception degree and preference. Nutrition knowledge and dietary attitude showed no relationship with preference. These results imply that a nutrition education program should be developed and conducted to induce subjects to manage their dietary habit and develop healthier dietary patterns.

Nutrition Knowledge of and Attitudes toward Breast-Feeding and Food Habits in Relation to the Expected Infant Feeding Method among Male and Female College Students (남녀 대학생의 예상 수유방법에 따른 모유영양에 관한 지식과 태도 및 식습관의 비교)

  • In order to provide the basic data on an education program for successful breast-feeding, the nutrition knowledge of and attitudes toward breast-feeding and the factors associated with infant feeding decision among male and female college students were investigated. The majority of students had correct knowledge of the maternal-infant bonding through breast-feeding and knew more about baby-centered benefits than about mother-centered benefits of breast-feeding. Students' attitudes toward breast-feeding were not so positive as expected, and male students had more positive attitudes toward breast-feeding than female students had. 54.8% of students answered to practice breast-feeding longer than 3 months. Nutrition knowledge scores and attitude scores were significantly higher in the breast-feeding decision group than in the formula-feeding decision group. The students residing in a rural community decided breast-feeding significantly more than the students residing in an urban community. It was concluded that nutrition knowledge about the breast-feeding played a significant role in deciding infant feeding method. In order to increase breast-feeding decision rates among college students, the education program may need to focus on understanding of correct nutrition knowledge about the benefits of breast-feeding. Also it would be important to have male students participated in education program.

Analysis of Nutrition Teachers' Awareness of Necessity for an Operating School Meal Support Center in Chungnam (충남 영양(교)사의 학교급식지원센터 운영 필요성에 대한 인식 분석)

  • Objectives: We investigated the operation needs of school meal support centers (SMSC) in Chungnam-do based on analysis of nutrition teachers' perception of them. Methods: The Chungnam government established the first SMSC in 2012. Thirteen SMSCs are currently being operated in Chungnam-do. To analyze the results quantitatively, we investigated nutrition teachers opinions regarding the necessity for SMSCs as a dependent variable and derived the independent variables based on the causal relationships with dependent variables using the ordered logit model. Those independent variables included region, school type, number of students, attitude regarding free meal policy, satisfaction with school meal policy, and preference for local food. Results: Briefly, teachers in the region in which the SMSC was located more strongly supported the SMSC. In addition, teachers in public schools with a smaller number of students believed that having a SMSC is more beneficial, and that other variables also affected the necessity for SMSCs. Moreover, nutrition teachers preferred local foods rather than organic foods because of the unstable supply of organic foods. Conclusions: Based on the results of this study, it was recommended that the local government implement the policy consistently. Moreover, it was recommended that the government operate the SMSC more efficiently, enhance the roles of the SMSC as the local organization responsible for student nutritional planing and expand the coverage of agricultural products.

  • This study analyzed the effect of purchase competence on purchasing performance when purchasing eco-friendly food ingredients from school nutrition teachers. To this end, 131 copies surveyed for school nutrition teachers in the survey area were used for analysis. As a result of the analysis, the verification of the difference between purchase competence and purchase performance according to the general characteristics of school nutrition teachers showed significant differences according to age. In addition, the general characteristics of nutrition teachers and the effect of purchase competence on purchasing performance had a positive (+) effect on purchasing performance by Attitude, Knowledge, and communication among purchase competence. In this respect, it is judged that it is necessary to form an organic relationship between the supplier of eco-friendly food ingredients and nutrition teachers in school meals.

The Survey of University Students' Attitude and Expectation-Satisfaction on Well-Being Products (충북지역 대학생소비자의 웰빙태도와 웰빙상품에 대한 기대 및 만족도)

  • The purpose of this study was to explore the consumers' attitude and expectation-satisfaction on well-being products, Consumers' expectation, performance and disconfirmation scales were composed 7 items of 5-likert scales. Consumers' Satisfaction on well-being products was measured with one-item-measurement scale, The consumers' well-being attitudes were composed 4 dimensions such as (1)consuming the well-being products, (2)pursuit of mental well-being, (3)criticism about commercial fashion, (4) pursuit of harmony with natural life. The results were as follows: 1. The well-being attitudes were contrast with a positive attitude and negative attitude, Especially, criticism about commercial fashion was highly remarked. 2. There were statistic differences in the consumers' expectation and performance on well-being products, The Expectation was higher than the performance. It means that consumers' high expectation on the well-being products will bring about the lower satisfaction or dissatisfaction. 3. Consumers' Satisfaction on the well-being products was statistically different among groups by the well-being attitudes.

Evaluation of Nutritional Health Camp in Obese Elementary Students (일부 비만 초등학생을 위한 건강영양캠프의 효과 평가)

  • An evaluation of the influence of nutritional health camp for in obese elementary students was assessed. Anthropometric measurement, 24-hour recall of dietary intake, MMTIC(Murphy-Meisgeier Type Indicator for Children) and questionnaire response(nutritional knowledge, nutritional attitude, and self-satisfaction) was documented in 43 obese elementary students(29 boys and 14 girls). The mean age of the elementary students was 11.2 years. The mean height, body weight and obesity index was 144.7 cm, 55.4 kg and 41.0% in boys, and 136.1 cm, 45.2 kg, 40.0% in girls. The mean energy intake was 1,522.4 kcal in boys and 1,494.9 kcal in girls. The subjects taking less than estimated average requirement(EAR) for vitamin ${B_2}$, folate, vitamin C and calcium was over 70%. A considerable number of students(65.1%) showed U band(undetermined character). The students demonstrated a propensity towards increased average nutritional knowledge and self-satisfaction after attending the nutritional health camp. In addition, a significant increase in average nutritional attitude was observed(p<0.001). The results of this study suggest that nutritional health camp positively influenced the nutritional attitude of elementary students.

Primiparous Couples' Knowledge, Attitude and Practice regarding Breastfeeding (초산부부의 모유수유에 대한 지식, 태도 및 실천의지)

  • Breastfeeding is an excellent way of feeding infants and continues to be an important source of nutrition and antibodies for infants. Although breast-feeding is believed to be important, the rate of breastfeeding among Korean women is very low. One reason for the low breastfeeding rate is that the health professionals in the past have given little practical help couples to overcome difficulties encountered during breastfeeding. The promotion of breastfeeding has recently become a high priority among health professionals because of the undisputed physiological, psychological, social, economic, and nutritional benefits. Fathers have been found to influence the course of breastfeeding, but no one has conducted a systematic investigation into in and included fathers perspectives of breastfeeding in Korea. It is important to find strategies to solve the problems by assessing the knowledge, attitude and practice of breastfeeding with fathers as well as mothers. The purpose of this research is to find ways to promote primiparous(first child) couples's breastfeeding by assessing their general knowledge, attitude and practice of it. More specifically its purposes is to identify the relationship between knowledge, attitude, practice and the background factors of breastfeeding of primiparous couples in order to promote and support breastfeeding. The data will help health professionals to guide first-pregnancy couples to prepare and overcome any difficulties encountered during breastfeeding. Data were collected through a questionnaire which included both structured and open-ended questions. The questionnaire was composed referencing earlier literature, studies and surveys. This survey was made postpartum 2-3days after childbirth on 96 couples. The numbers of subjects for data analysis were selected 51 couples through pilot screening test. Data were coded and analyzed using the Statistical Package for Social Sciences : Cronbach's alpha coefficient, T-test, ANOVA, Stepwise pearson's correlation coefficient. The relations between the variables of breastfeeding were examined using a Pearson's correlation coefficient. This study showed that, the internal validity of the instrument was tested by Cronbach's alpha. The result was : mother knowledge 0.72, mother attitude 0.88, and father knowledge 0.70, father attitude 0.92, practice 0.76 and planning of breast feeding 0.95. The average age of mothers in the sample was 28.9 years old, and the average age of fathers in the sample was 31.3 years old. The other descriptive informations available included. the study also found that fathers were more important than doctors or nurses. However results of the study indicate that there were no differences between father and mother knowledge of breastfeeding(t=-0.39, p=0.698), and father attitude was statistically significant higher than mother attitude of breastfeeding (t=2.24, p=0.030). In analysis, the variable 'practice' with breastfeeding was the relationship with mother knowledge (p=0.031) and mother attitude(p=0.015). In this study, the correlation between one couple' knowledge and attitude was not significant. Primiparous couples surveyed in the postpartum period regarding knowledge, attitude and practice about breastfeeding might be affected by recall bias, the effects of the euphoria of the first 24-48 hours postpartum, but these variables were not examined. This study results add to the body of knowledge about nursing care for breastfeeding mothers and fathers. This indicates that a need for education about breastfeeding and, that fathers be included in it as well as mothers.

Evaluation of Public Health Nutrition Education Program for High School Girls (여고생 대상 가임여성 보건 영양교육 프로그램 평가)

  • Impact and process evaluations were performed in order to verify the effectiveness of a public health nutrition program developed for child-bearing aged women in Korea. Participants included 58 high school girls who were divided into two groups. Each group received four 50 - 60 minute nutrition education lectures regarding healthy eating, osteoporosis, constipation and nutrition labeling in every two weeks. Each session took 50- 60 minutes. Regarding nutrition knowledge, there was a significant increase of degree of perception (p = 0.0004) , but no change in degree of accuracy after implementation (p = 0.9522) . Nutrition education was also effective in attitude change, showing more participants were ready to change their eating behaviors in terms of meal regularity (p = 0.0455) and less processed food intake (p =0.0143) . After implementing nutrition education, effective behavioral changes were observed in milk consumption (p =0.0037) and meal regularity (p = 0.0882) as well as daily activity such as stair use (p = 0.0701) . However, nutrition education had no effect on body mass index and perceived health status. In process evaluation conducted by a 9 item questionnaire, grand mean score was $4.17 \pm$0.72 out of 5. Proportion of items with scores higher than 4 ranged $68-91\%$. These results suggest that the nutrition education program used in this study was effective and useful. For a wider use of this program, more research was recommend for a strategy development of program diffuse. (Korean J Nutrition 38(10): 873$\sim$879,2005)

Scale Development for Measuring the Brand Images of Contract Foodservice Management Companies (위탁급식 전문업체 브랜드이미지 척도 개발)

  • The aim of this study was to measure the brand images of contract foodservice management companies by identifying brand image attributes and then developing a measurement scale to measure the weight of these attributes. The measurement scale was developed by following a 5-stage process that included face-to-face interviews with experts, literature review, questionnaire surveys, verification of scale validity, exploratory factor analysis, and confirmatory factor analysis. A total of 137 items measuring brand image were collected: 37 items from studies of brand image and corporate image, 55 items from studies of contract foodservice management companies and 45 items from the internet and websites of contract foodservice management companies. A survey was then conducted to assess the validity and reliability of the questionnaire items. Ultimately, the 137 items were reduced to 40 items. The calculated Cronbach's alpha for the 40 brand image items was 0.934, demonstrating good internal consistency. Based on exploratory factor analysis (EFA), employee attitude, menu content, corporate image, dining location and ambience, along with 33 subattributes, were identified as brand image attributes. Employee attitude was the most significant attribute influencing brand image. After confirmatory factor analysis (CFA) and a review process, four brand image attributes and 33 subattributes were finalized and incorporated into the scale.
