The Evaluation of Nutrients and Health${\cdot}$Functional Elements Presented at Nutrition Labels of Various Beverages in the Market (영양표시에 나타난 각종 시판음료의 영양 및 건강${\cdot}$기능성 성분평가)

  • On the basis of the increasing interest for the selection of beverages, this study aimed to evaluate the contents of nutrients and health ${\cdot}$ functional elements in the beverages. Total 161 beverages that bear nutrition lable (NL) as nutrition table and health ${\cdot}$ functional elements information were collected and classified to 8 groups. The evaluated nutrients that are obligatory for NL in Korea were total calorie, carbohydrate, protein, fat, and sodium. Presented values showed that milk & yogurt and soy milk are the most wholesome beverages while the total caloric contents also were higher among 8 groups. Sodium contents in soy milk were higher than any other groups. The caloric contents of other beverage groups come mainly from carbohydrate presumably simple sugar. The caloric content of sports drinks is the lowest but the sodium content is variable among products showing the range of 0 - 100 mg/100 ml. Nonobligatory nutrients for NL frequently expressed are Ca, Fe, vitamin C, folate, and dietary fiber. Their content per serving size does not exceed the tolerable upper intake level, however, habitual multiple intakes of certain product require attention for the prevention of overintakes. Many health ${\cdot}$ functional elements as catechin, carnitine, polyphenol, and nucleic acids etc were listed in NL without presenting the content and their functions appear to be exaggerated compared to the known scientific evidence.

Correlation between Raw Materials and Chemical Contents of Livestock Compost (축분종류에 따른 가축분퇴비의 화학성분 특성분석)

  • The aim of this study was to investigate chemical characteristic of livestock compost in association with livestock manure types (poultry, cattle, swine, and mixed manure). The livestock compost was collected from local nonghyup branches on a si-gun level. Chemical composition (nutrients, heavy metals etc.) of the samples was analyzed and Pearson's correlation analysis was performed. Quality of most compost samples met the standard of fertilizer specifications. Poultry compost contains greater nutrients especially $P_2O$ (p-value<0.01) and $NH_4$-N (p-value<0.05). Meanwhile swine compost has higher concentration in water content (p-value<0.05) and heavy metals (p-value<0.01 for Cd, Cu and Zn). Overall, poultry compost was correlated positively with nutrients while swine compost has positive correlation with water content and heavy metals. We expect that the study results can provide base data for determining compost types and amount for crop production.

Effects of Nutrients and Cell Aggregate Size on the Biosynthesis of Carotenoid in Daucus carota Suspension Culture (Daucus carota 현탁 배양에서 배지 조성 및 세포 응집 크기가 Carotenoid 생합성에 미치는 영향)

  • The effects of nutrients and cell aggregate size on the cell growth of D. carota and the biosynthesi of carotenoid were investigated. Highest carotenoid content was obtained with sucrose as a carbon source and the equal ratio of ammonium to nitrate. High phosphate concentration stimulated the carotenoid biosynthesis in D. corota. 2,4-D inhibited the cell growth but stimulated the specific carotenoid content at high concentration. By modifying the medium composition based on these findings, three times higher specific carotenoid content and 2.5 times higher total carotenoid content were obtained as compared with the results obtained with basic MS media. Biosynthesis of carotenoid was found to be affected by cell aggregate size; high carotenoid production was obtained from the large aggregated cells resulted from high sucrose concentration.

  • Mass loss and changes of mineral nutrients during decomposition of Lepista nuda for 7 weeks from October 7 to December 28 in 1998 were investigated in an oak stand in Kongju, Korea. Content of nitrogen, phosphorus, potassium, calcium and magnesium of the fresh L. nuda was 67.8, 4.1, 47.3, 0.4 and 1.5 ㎎/g, respectively. Content of nitrogen, phosphorus and potassium in L. nuda were much higher than those in leaf litter. After 7 weeks, remaining mass was 35%. Nitrogen, phos- phorus and potassium increased till 5 weeks and then decreased rapidly, however, calcium and magnesium steadily increased during the experimental period. Nitrogen and phosphorus showed a short period of immobilization, and calcium showed no immobilization period during decomposition. After 7 weeks, remaining N, P, K, Ca and Mg was 26.6, 37.5, 28.5, 35.0 and 91.0% of the initial content, respectively. Nutrients could be relocated spatially during the formation and decomposition of fruiting body of Basidiomycetes.

  • This experiment was carried out to Investigate the environmental changes of rhizosphere, behavior of nutrient components in soul, and nutrients uptake and growth response of the tobacco plant in the condition that mulch as polyethylene film, had been removed on the ridge at the 50th day after transplanting in comparison with continuous mulching condition. The results obtained were as follows; 1. After rainfall, soil moisture content In the plow layer was greatly increased without mulch in comparison with that of the plot with mulch. As a result, leaf water potential of tobacco plant without mulch was higher than that with mulch. 2. Available nutrients such as $NH_4-N, \;NO_3-N$, and total salts in the plow layer of the plot without mulch tended to be Increased, and especially accumulated on the surface layer owing to the redistribution of soil water by rainfall during the latter growth stage after removing mulch. 3. Nutrients uptake by tobacco was much more enhanced in the plot without mulch and resulted in higher contents of total nitrogen, $NO_3-N, \;P_2O_5, \;and K_5O$ in the tobacco leaf Especially higher content of nitrogen caused the delay of maturity resulting In the increased of dry weight of top part of tobacco in the plot without mulch toned to be Increased in comparison with that in mulching condition. Content of total nitrogen, $NO_3-N$, and nicotine in flue-lured leaves was much higher in the plot without. mulch than in mulching condition, but lower content of reducing sugar in the plot without mulch resulted in lower quality of tobacco.

Kinetics of Chemical Properties and Microbial Quantity in Soil Amended with Raw and Processed Pig Slurry

  • Pig slurry is a good soil amendment not only because of its high organic matter content, but also because of its ability to provide various nutrients. The objective of this study was to estimate the influence of raw and processed pig slurry application on pot soil over chemical fertilizer and non-amended control soil. Change in the chemical parameters (pH, organic matter (OM), organic carbon (OC), macro and micronutrients) and microbial mass of the treated soils were monitored over 30 to 90 days. Pot soil was treated with the recommended dose of pig slurry and chemical fertilizer, and was sampled after 30, 60 and 90 days of incubation. The least significanct difference (p<0.05) was observed on Fe, Cu, Zn, available P and K between treatments. All treatments increased N, P and K content and microbial mass of soil over control soil. Interestingly, no significant effects were detected on OM, OC, total bacteria, actinomycetes and fungi mass in soil irrespective of treatments given. However fungal and bacterial counts, as well as available nutrients, were found to be higher in processed slurry (PS)-treated soil compared to other soils. In general a significant correlation existed between the fungal count and OM, OC, Zn, T Kjeldahl N (TKN), available P and K of soil. A strong negative correlation was observed between pH and Fe in soil. This study clearly demonstrated that the use of processed manure as a fertilizer could be a key for sustainable livestock agriculture.

A Study of the Nutritional Composition of the Dandelion by Part (Taraxacum officinale) (민들레의 부위별 영양성분 함량 비교)

  • Many studies have presented results about the antioxidative and antimicrobial activities of Dandelions (Taraxacum officinale). There has yet to be a study which makes comparisons of nutrients based on the parts of the Dandelion. To identify the nutrient composition by part of dandelion, nutrient contents were analyzed. Dandelions were taken from Songpa-gu in Seoul and the nutrient composition of the flower, leaf and root were measured. The nutrient content of each part was analysed by using the method developed by the Association of Official Analytical Chemists (AOAC). The proximate components(moisture, protein, fat, fiber, ash, and carbohydrates), minerals and vitamins of the dandelion were analysed. The nutrient composition of the dandelions showed many significant differences among the parts when the differences were determined by using Duncan's multiple range test. The leaf contains more protein, ash, Ca, K, Mg, Zn, vitamin A, B$_1$, B$_2$, and C than the other parts. The root has much more fiber, carbohydrate, P and Fe content. The results demonstrate that dandelions could be used as a food source supplement for fiber, Ca, Fe and vitamin B$_2$ which are common nutritional deficiencies in Korea. It is recommended that more research for other bio-functional factors besides nutrients composition is needed to enhance the utilization of the dandelion.

  • Physicochemical properties of soil, mineral cyclings, production of plants, and relationship between sodium(Na) content and progresses of plant communities were studied in a coastal salt marsh in Incheon. Contents of Na, available phosphorus(A-P) and value of electric conductivity of soil decreased in order of Salicornia herbacea, Limonium tetragonum, Phragmites communis and Zoysia sinica communities, but contents of organic matter, total nitrogen(T-N) and calcium(Ca) of soil were vice versa. Specise diversity index decreased with increase of Na content of soil with correlation coefficient of -0.82. The aboveground biomass of plant communities were 2,981 g.dw/$m^2$ in P. communis, 1,471 g.dw/$m^2$ in Z. sinica, 189g.dw/$m^2$ in S. herbacea and 71 g.dw/$m^2$ L. tetragonum, respectively. Seasonal changes of contents of inorganic nutrients per unit land area coincided with those of biomass of plant communities, however, the maximum contents of K occured earlier than the maximum biomass. Amounts of inorganic nutrients absorbed by plant were directly proportion to its biomass and it was true to reverse in restored amounts of them to soil. In turnover times of nutrients of the communities, it took the shortest time for P but the longest for Ca and P. communis community took the shortest but L. tetragonum the longest. For example, in P. communis turover time of P took one year and that of Na 1,440 years. Lack of P element, therefore, was expected in this study area.

Seasonal Variations of Nutrients in Warty Sea Squirt(Styela clava) (계절에 따른 미더덕의 영양성분 조성에 관한 연구)

  • To study the nutritional value of warty sea squirt, Styela clava, which is one kind of urochoda and it has been used as special seafood stuffs by Korean, the seasonal variations of nutrient was investigated. The moisture content was ranged from 83.6% to 86.8% in experimental period. Maximun glycogen content showed up in June (3.7g/100g sample). The protein(N$\times$6.25) and lipid content varied with glycogen whereas ash content was not changed remarkably, showing 2.8$\pm$0.3%. Predominant minerals in edible portion and integuments were sodium, potassium, calcium and magnesium in order. Predominant constitutiional amino acids were asparagine, glutamic acid, taurine, aspartic acid, lysine and glycine and amino acids occupied 50% of the total amino acid. Porportion of nonpolar lipid to total lipid increased from April to early June while polar lipid level decreased. The neutral lipid was composed of triglyceride(59.32%) and free sterol(23.52%), and followed by diglycerides, monoglycerides, esterified sterols and hydrocarbon, free fatty acid. The phospholipid was mainly composed with phosphatidyl choline(49.7%), and phosphatidyl ethanolamine(33.0%). The major fatty acids of the total lipid in warty sea squirt were C20 : 5(17%), C22 : 6(13.76%), C16 : o(13.91%) and C16 : 1(12.52%).

  • To study the possibility of agricultural utilization of the sewage sludge and the converter slag, the chemical properties of soil, the growth response of corn plant and uptake of inorganic nutrients in plant tissues were investigated by application of the composts made of the sewage sludge and converter slag. Uptake of inorganic nutrients in stem and leaf of corn plant were decreased by applications of the composts. The content of heavy metals in soil and corn plant were investigated, but the results of show that the concentrations of heavy metals are much low.
