  • Outbreak of contagious diseases to livestock animals is becoming prevalent worldwide and consequently, tremendous numbers of the infected or culled stocks are buried on the ground as the most common disposal method. The buried animals can generate a wide range of detrimental components such as leachate, nutrient salts, and pathogenic bacteria, consequently contaminating the surround environment. This implies that regular investigations are required to monitor any possible detrimental environmental aspect occurred around burial sites. Therefore, the current study was conducted to investigate whether the soil and groundwater nearby the burial sites had been contaminated by the substances originated from the burial sites, which can be applied for the establishment of the ideal burial site construction design and post management scheme. For this, two different burial sites located in Cheonan and Pyeongtaek were selected. Cheonan and Pyeongtaek sites were constructed in 2004 and 2008, respectively and both contained dead poultry infected by avian influenza (AI). Soil and groundwater samples were collected around the sites followed by determination of the nutrient concentrations and bacteria (Salmonella, Camphylobacter, and Bacillus) existence in both soil and groundwater. Some of the soil samples showed higher EC, $NH_4$-N, $NO_3$-N concentration compared to those of the background (control) soils. Also the concentration of $NH_4$-N in some of the groundwater samples appeared to exceed the USEPA guideline value for drinking water (10 mg $L^{-1}$). These results indicated that the soil and groundwater were influenced by the burial site originated nutrients. In the soil, Bacillus was isolated in most soil samples while there were no detections of Salmonella and Camplylobacter. Due to the Bacillus existing mainly as a spore in the soils, it was considered that the frequent detection of Bacillus in the soil samples was attributed to the nutrients originated from the burial sites.

  • This study was conducted to abbess dietary intake and eating habits of low-income persons aged 60 years or elder. 212 persons were surveyed between July 10 and August 17, 1978 ; 105 from the farming village of Yang-ju, Kyunggi province; and 107 from Karakdong, an area of redevlopment in the suburbs of Seoul. Results were as follows : 1 ) Family environment 84% of elderly persons surveyed, lived with their children; 13.2%, together as a couple; and 1.9%, widowed, lived alone. More than half on the households had an average monthly income of \50,000 to \30,000. The average Engel index was 61.2%. As for pocket money, 56.4% of male subjects had \l,000 to \7,000 per month, whereas 74% of female had less than \1,000. 2) Anthropometric measurements 59.9% of subjects were $70{\sim}90%$ of standard weight, 93% had an arm circumference only $60{\sim}80%$ of the standard. 3) Food and nutrient intake Carbohydrate provided 73.4 to 79.4% of total energy intake, whereas protein and fat accounted for 10.4 to 10.5% and 8.3 to 7.8%, respectively. Those over 65 years of age showed a somewhat greater dependence on carbohydrates for energy, than those under 65. Protein intake was only $42{\sim}52%$ of the recommended allowance. and the proportion of animal protein to total protein was only $2.1{\sim}9.3%$ far below the recommended allowance. Thus the protein nutrition of the subjects was proven to be inadequate qualitatively as well as quantitatively. Intake of energy and of all nutrients except vitamin A and ascorbic acid, were lower than recommended. 4) Correlational assessment The correlation coefficient between poor dental health, clinical sign score, appetite index, dietary balance and nutrient intake, was significant (0<0.01). Poor teeth, illness, and poor appetite were always associated with inadequate intake of energy and nutrients. The results of this survey reveal that many of elderly of the rural and urban poor show evidence of general malnutrition, The authours hope that this study will provide a back. ground and indicate the direction that community health and welfare programs may take to assure proper nutrition for the elderly.

  • The aim of this study was to examine the relationship between dietary variables and the prevalence of insulin resistance (IR) in middle-aged Korean adults using data from the 2007-2009 Korea National Health and Nutrition Examination Survey. Because IR is closely linked with metabolic syndrome, subjects were divided into three groups according to symptoms of metabolic syndrome: the 'Normal group' without any symptoms, the 'Risk group' with one or two symptoms, and the Metabolic syndrome (MetS) group' with three or more symptoms. Subjects between the ages of 30 and 65 years with no prior diagnosis or treatment for diabetes, hypertension, or dyslipidemia were selected. The number of subjects per group was as follows: 2,085 adults in the Normal group, 3,699 adults in the Risk group, and 1,160 adults in the MetS group. Metabolic syndrome was defined according to Adult Treatment Panel III criteria with modified waist circumference cutoff values (men ${\geq}$ 90 cm, women ${\geq}$ 85 cm). Subjects with HOMA-IR > 2.0 were classified as IR. Homeostasis Model Assessment of Insulin Resistance (HOMA-IR) was calculated using the following formula: (fasting plasma glucose ${\times}$ fasting plasma insulin)/22.5. Nutrients and food groups intake were obtained from a single 24-hour recall. Subjects with IR in the Normal group were more obese and less physically active than non-IR subjects. In the MetS group, subjects with IR were more obese and had a lower prevalence of smoking and drinking, compared with non-IR subjects. Men with IR in the Normal group had a tendency to consume more oils and sugars than non-IR men, while women with IR in the same group had higher intake of carbohydrate, dietary glycemic index, and dietary glycemic load than non-IR women. Women with IR in the Risk group had lower energy intake but higher intake of oils and sugars than non-IR women. In the MetS group, consumption of fruits was higher in subjects with IR than in non-IR subjects. In conclusion, findings of this study suggest that dietary carbohydrate intake, including glycemic index, may be associated with IR in healthy women. Further research in prospective cohort studies in order to examine the effects of dietary carbohydrate on IR incidence will be necessary.

  • This research was conducted to evaluate the general dietary quality(the balance and diversity of food intake, nutrient intake and adequacy) of 12 to 36-month-old toddler, through examining their actual food intake. It was conducted for 664(male-357, female-307) healthy toddler who were outpatients from Mar. to Aug., 1999 at university hospitals and private hospitals in Seoul and kyunggi province. The anthropometric parameters were measured. The 24-hr recall method were utilized to analyze the nutrient intake by months, based on the classification of The Korea Child Gorwth Standard. As for the subjects of this research, we found that the younger the age, the more frequent the pattern of intake of only 3 kinds of food groups. The results are that 1) the group with 1 point of the DDS(Dietary Diversity Score) mostly took only foods from the milk group, 2) the group with 2 points only took foods from the grain and milk group, 3) the group with 3 points did not take foods from the fruit and vegetable group, and 4) the group with 4 points took just about all kinds of food groups except for the vegetable group. This means that most of them were not taking various kinds of food even after the age of 12 months, and that they took more than twice the recommended amount of foods from the milk group until the age of 20 months. Thus, one could find a tendency of dependance on the milk group for food intake. Food intake for the vegetable group was severely under the recommended allowance, regardless of the age. The intake of iron was less than two thirds of the recommended allowance, except for the group of 12 to 14-month-olds who had been fed with infant formula. The Nutrient Adequacy Ratio(NAR) of major nutrients(protein, calcium, phosphorous, iron, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C) and the Mean Adequacy Ratio(MAR, shows the general quality of dietary intake) was 0.86$\pm$0.12, but the NAR of iron was 0.62$\pm$0.27, which was extremely low compared to those of other nutrients. Therefore, concerning the subjects of this research, the MAR value alone does not provide enough ground to conclude that the subjects dietary quality is satisfactory. • High blood pressure is an important determinant of the incidence of coronary heart disease, stroke, congestive heart failure, renal failure, and peripheral vascular disease. Recommendations for control of high blood pressure emphasize lifestyle modification, including weight control, reduced sodium intake, increased physical activity. Subjects who were normotensive (n=19, $47.2\pm9.0$ y, BP l16/81 mmHg) ,treatment hypertensive (n=33, $54.2\pm6.9$ y, BP 132/85 mmHg) and non-treatment hypertensive (n=14, $50.1\pm11.0$ y, 149/94 mmHg) recruited. Anthropometric assessment (height weight waist circumference, hip circumference, fat$\%$, fat mass, and lean body mass) and dietary assessments (using 3-days food records, daily nutrient intakes were inuysed by CAN PRO 2.0 were carried out. Blood and 24-hour urine were collected). Test of recognition for salt taste threshold were performed. In non-treatment hypertensive male subjects, weight, $\%$IBW, BMI, and waist circumference were significantly higher than those of normotensive and treatment hypertensive subjects (p<0.05) .Food habits were not significantly different among the three groups. Intakes of vitamin A, vitamin B,, and vitamin B, were significantly higher in normotensive group (p<0.05). Intakes of sodium and salt taste recognition threshold were the highest in normotensive group and the lowest in treatment hypertensive group (p<0.05). Blood levels of lipids and minerals were not significantly different among the three groups. Urinary calcium level of normotensive group were significantly higher than that of treatment hypertensive and non-treatment hypertensive groups (p<0.05). These results indicate that continuous management of hypertension by drug and non-drug treatment affects salt taste recognition threshold and reduced the consumption of sodium. However, dietary sodium intake exceed recommended sodium intake to prevent and treat hypertension. It is necessary to develop the lifestyle modification program that may have beneficial effects on hypertension treatment.

  • This study examined the reproducibility of nutrient intakes estimated by the 24-hour recall method in a prospective cohort study (Longitudinal study of aging and health monitoring of Korean elderly) of middle-aged volunteer subjects (42 males and 49 females) in the Seoul area. The three-day 24-hour recall was administered twice at an interval of approximately 6 months. The first data were collected and a corrective procedure was performed by interviewing of the subjects and a trained dietitian. The second data were collected by mail from the subjects without the performance of any corrective procedure. The mean age of the subjects was 53.5 $\pm$ 9.6 for the males and 52.2 $\pm$ 8.9 for the females. The subjects who had above college education were 95% in the case of the males and 60% in the case of the females. The characteristics of the male subjects in this study were that they were highly educated and held professional jobs and were from the middle or upper class. Comparing the first and second 24-hour recall data, the second data showed relatively lower intakes of all nutrients, except vitamin A, vitamin Bi and cholesterol. There was no difference in the nutrients of the first and the second data with respect to vitamin A, vitamin B$_1$ and cholesterol in the males and calcium, iron, sodium, vitamin A, vitamin B$_1$, vitamin B$_2$ and cholesterol in the females. This data may indicate that the 24 hour retail method without a dietitian's help may result in lower reporting of the subject's intakes. The men had a tendency to remember less than the women. Pearson's correlation coefficients with unadjusted nutrient intakes values were ranged from 0.24 to 0.66. When energy intake was adjusted, there was a slight increase (from 0.26 to 0.71). Intra-class correlation coefficients with nutrient-unadjusted values ranged from 0.22 to 0.66, and the energy-adjusted values were ranged from 0.23 to 0.69. The weighted Kappa statistical values ranged from 0.10 to 0.40. On the average,46.3% of the subjects who were found in the lowest quartile of the nutrient intake levels based on the first 24-hour recall, were in the lowest quartile based on the second 24-hour recall. Therefore, there was a low reproducibility between the first and the second 24-hour recall. We should examine the factors influencing low reproducibility. Also, strategies should be developed to maximize the reliability of the assessment, with regard to portion-size training and telephone validation. (Korean J Community Nutrition 8(4) : 603∼609, 2003)

  • Algal growth potential (AGP) bioassay were conducted to assess the water quality and fertility in the Kum River from March 1998 to June 1999. AGP values were always the highest at the conjuction site of the Kapchon, which is a tributary of the Kum River. Average value of AGP by Microcystis aeruginosa in the main river and tributary was 17.0 mg dw/l, 48.3 mg dw/l, respectively. AGP values decreased towards the lower part of the river and consisted in the water quality or nutrient analysisresults. Among the tributaries, AGP of the Kapchon, Mihochon and Soksongchon were relatively high, and the average value was 161.2, 50.3 and 125.6 mg dw/l, respectively. AGP value in the Yukuchon was lowest among the study stations with <2.7 mg dw/l. Water quality in the lower part of the Kum River deteriorated in drought season, and the AGP values of this season were higher than those in other seasons. Based on correlation analysis between AGP results and nutrients, limiting nutrient appeared to be P because SRP (r = 0.99) was higher than other nutrients, and N uptake in algal growth was preferred by $NH_4$ rather than $NO_3$. The variation of AGP was different according to localities and seasons, and it was related to nutrient fluctuation in the inlet tributary. Water quality status according to AGP was assessed to be eutrophic.

  • The prevalence rate of metabolic syndrome has increased rapidly among the middle-aged and seems to be affected by socioeconomic factors, lifestyles and dietary habits. This research tries to find out the difference in dietary intake between middle-aged with and without metabolic syndrome. Using Korean National Health and Nutrition Survey (KNHANES) in 2005 and 2007, this study investigated 2,382 people (normal: 1,575, disease: 807) in 2005 and 1152 people (normal: 747, disease: 405) in 2007 (between the age of 40 and 64). Analysis was performed to discover the difference in nutrient intakes between people with and without metabolic syndrome. Also differences among people with various socioeconomic factors (such as age, education level, and income level), which can affect nutrient intake, were analyzed. In the nutrient intake people with metabolic syndrome has lower intake in most of nutrients than those of normal group, except carbohydrate. In 2007, normal group had higher intake in most nutrients, except for carbohydrate, sodium, potassium and vitamin A. Carbohydrate: protein: fat (C: P: F) ratio for metabolic syndrome group showed higher rate for carbohydrate, than normal group, in 2005, and 2007. Overall, the higher age and income level, the more carbohydrate intake rate is increase in metabolic syndrome group. The Quality of each nutrient intake was assessed using NAR (Nutrient adequacy ratio) and MAR (Mean adequacy ratio). According to the MAR, there was significant difference in 2005, 0.83 for normal group and 0.81 for metabolic syndrome group but there wasn't any in 2007 (0.81 for normal group, 0.82 for metabolic syndrome group). By NAR, in 2005, all nutrient except phosphorus, iron, vitamin A for Normal group higher then those of metabolic syndrome group (p < 0.05). In 2007 intake of metabolic syndrome group were higher then those normal group in most of nutrient by NAR. For age, education and income, MAR for normal group is higher then that of metabolic syndrome. In conclusion, Quality of nutrient intake in normal group is better then in metabolic syndrome group. Therefore, it is necessary to monitor dietary of intake people with metabolic syndrome, and necessary measures should be taken.

  • Nutrient limitation and light limitation was examined for the Youngsan Lake by collecting chlorophyll $\alpha$ and other properties including light intensity, nutrient concentrations, pheopigment ratio monthly from March, 2003 to April, 2004 (except for November-January). Chlorophyll $\alpha$ was fractionated into net-(>$20\;{\mu}m$) and nano-size(<$20\;{\mu}$). Light and nutrient limitation index was calculated based on the equations incorporating the mechanisms of limitation of light and nutrients from the literature. Phytoplankton population (chlorophyll $\alpha$) was low during the wet season especially in August and increased in short-period during other seasons. Photoperiod was short during the wet season but long during the dry season. Nutrients such as phosphate and ammonium were rapidly increased in spring, 2004. Light limitation index was minimum (0.01) in August during the wet season and nutrient limitation index was relatively high (>0.4) except for May and September. Light limitation may affect phytoplankton growth rather than nutrient limitation considering that nutrient levels are high in the Youngsan Lake. Results of correlation analyses showed a negative correlation between light and nutrient limitation indices and net-pheopigment index, and a positive correlation between the indices and nano-pheopigment index. These results suggest that phytoplankton response to change of light and nutrient may be size-dependant.

  • This study focused on the nutrition knowledge, food purchase behaviors, and dietary habits of 213 housewives (41 women under 39 years, 98 women 40~49 years, and 74 women over 50 years). Younger housewives held more special jobs, whereas older housewives worked as housewives or had no jobs ($p$<0.05). The average monthly income of the three family groups was 3,000,000~5,000,000 won, and the monthly dietary expenditure for all three groups was 200,000~500,000 won. Familial frames for the three groups was nuclear family (over 80%), but housewives younger than 39 years (19.5%) lived together with their parents and let them take care of their children. Housewives (over 50 years) prepared a balanced diet for every meal, utilized less drastic cooking methods to prevent loss of nutrients, and shopped at many places in order to save money on various food materials. Further, they purchased food materials that resulted in the least amount of left overs. On the other hand, housewives under 39 years visited large supermarkets and purchased cooked foods more than other groups. Housewives under 39 years considered nutrients content as the most important factor when purchasing food materials, whereas 74.5% of housewives between 40~49 years and 51.4% of housewives over 50 years put the most importance on flavor ($p$<0.05). Housewives under 39 years were interested in manufacture date, nutrient content, and food price, in decreasing order, whereas housewives between 40~49 years and over 50 years were interested in manufacture date, food prices, and nutrient content. Older housewives were interested in brown rice and fruits, whereas younger housewives under 39 years were interested in meat, fish, eggs, fried foods, and fast food. Older housewives over 50 years did not consume fried foods more than two times per week and consumed three regular meals more often than younger housewives. Accordingly, for younger housewives, it is necessary that healthy foods be cooked for their families.
