This study was carried out to determine the depression symptoms and nutritional status of elderly females that ate congregate meals at lunch in rural Pocheon. The subjects were 18 elderly females aged over 65 ($75.7{\pm}4.6$ years) and information on smoking, subjective health status, depression symptoms and malnutrition risk were collected using a questionnaire administered with the help of trained research assistants. Measurements included mid-arm circumference and calf circumference. Food consumption for 3 days during breakfast and supper were determined by 24-hour recall and food consumption at lunch was determined as the difference between the amounts served and the plate waste. All data were compared between two age groups (${\leq}75$ and > 75). The subjects had the lowest nutrient adequacy ratio (NAR) for vitamin $B_6$ (0.523), followed by calcium and niacin and the lowest index of nutrient quality (INQ) for calcium (0.738). The older elderly had significantly lower NAR for vitamin $B_1$, vitamin $B_2$, vitamin $B_6$ and niacin as well as significantly lower mean adequacy ratio (MAR) compared to the young elderly. They also had significantly lower INQ for vitamin $B_1$ and vitamin C and significantly thinner arm circumference (28.3 cm vs. 31.3 cm). They consumed more than 40% of their daily intake for each nutrient at lunch. Higher proportions of nutrient intake from lunch provided evidence of the importance of congregate meals, suggesting that the government and society should support congregate meals to improve nutritional status.
The influence of food habits on nutrient intake and anthropometric measurements of elementary school students was studied from November 2005 to July 2006. 160 elementary school students in the Gyeongnam area were individually interviewed to obtain 24-hour dietary recalls of two seasons (winter and summer). During each period, three interviews were done for 3 nonconsecutive days including two weekdays and one weekend day. The food habits were estimated by questionnaire. The food habit score was $21.5{\pm}2.7$ out of a maximum of 30. The nutrient intake of children was low in calcium and vitamin A. Except for that, most other nutrients were overconsumed. The nutrient intakes consumed in winter were significantly higher than those of summer. Comparing the anthropometric measurements between the summer and the winter periods, height was significantly higher in the summer than in the winter. However, body fat ratio was significantly higher in the winter than in the summer. There was a significant positive correlation between the scores of food habits and the vitamins and minerals intakes of the summer period. However, the relationship was much weaker between the food habits and those consumed in winter. In addition, the scores of food habits were significantly negatively correlated with most of the anthropometric measurements of both periods. In conclusion, the students' food habits may reflect the intakes of vitamins and minerals of only the previous few months, however they reflect the BMI of children for a period of more than 6 months.

BACKGROUND/OBJECTIVES: This study was conducted to examine disparities in food and nutrient intakes based on family types identified among 1,856 participants who were the Korean elderly people in the 6th Korea National Health and Nutrition Examination Survey (KNHNES) excluding those who were currently practicing the diet therapy. SUBJECTS/METHODS: We separated the subjects into two groups: living alone (LA, n = 638) and living with a spouse (LS, n = 1,218). We also examined the disparities of dietary quantity and quality of those two groups using complex sampling design general linear regression analyses (CS GLM). RESULTS: In the LA group, there was a higher percentage of females and average age in LA group was higher than the participants in the LS group. Household income and education level were significantly lower in LA compared to those of LS. The frequencies of skipping meals were higher in LA. LA's food and nutrient intakes showed lower consumption of vegetables, fruits, seaweeds, and of most nutrients. Even after adjusting for the confounding factors, the consumption of vegetables, seaweeds, carbohydrates, potassium, riboflavin, and vitamin C showed lower in LA than LS. Moreover, LA's nutrient intake ratios compared to the KDRIs were lower which turned out to be similar to their nutrient intakes. CONCLUSIONS: These results show that dietary behavior and food intake of the elderly are associated with family types. Frequently skipping meals and less dietary variety are more common with elderly persons who were living alone. Therefore, it is necessary to integrate the supplementary food programs and nutrition education programs for the elderly living alone.
The objective of this study was to investigate difference in the diet by the kind of meal and the economic status. Nutrient contents at each meals were compared and differences in food intake at different meal were analyzed by economic status. Data from the 1998 Korean National Health Examination Nutrition Survey were used. Using the poverty line based on the 1998 Korean minimum cost of living, the subjects (n = 10400) were classified into high class (36.1%), middle class (40.7%) and low class (23.1 %). Most nutrient intakes were obtained for main meals regardless of economic status. For high class, breakfast, lunch, dinner and snacks bring about 21, 29, 30 and 19 % of total energy intake, for middle class 22, 29, 30 and 19% and for low class 24, 30, 30 and 16%, respectively. The high-middle class people tend to get more food intakes and nutrients at dinner and snacks, while the low class at main meals. This result was associated with the consumption of a smaller number of meals and a greater number of snacks daily as the economic level was going up (p 〈 0.05). Meals contributed to energy, protein and fat intake, and snacks to water, retinol and vitamin C. The food intakes by food group were different at meals by economic class. Seaweed product were popular breakfast foods in both middle and low groups. Thus three meals such as breakfast, lunch and dinner still delivered most of the energy and most of the macro-nutrients regardless of economic status.
The objective of this study was to measure anthropometric and haemoglobin level and nutrient intake of expecting women in the third trimester of pregnancy and to relate the birth weight of neonates as outcome of pregnancy. A cross sectional study was performed in Zahedan City. Two hospitals situated in the city were selected based on their approval and cooperation. Five hundred healthy pregnant women in the age group 16-40 years were selected for this study. Findings showed that the mean height, weight, fundal height, and haemoglobin of pregnant women were 156.4 cm, 62.6 kg, 34.2 cm, and 11.1g/dl respectively. Nutrient intake was computed based on 24 hour recall method. The results showed that, the mean intake of energy was 1802 Kcal/day. The intake of protein, calcium, iron, zinc and magnesium were 70.7 g, 544.0 mg, 16.1 mg, 10.6 mg and 266.0 mg respectively. Percentage adequacy of nutrient intakes with reference to RDA recommendation showed 95% and 80% of subjects had sufficient RDA intakes, while energy, calcium, iron and zinc intake considered as insufficient. The mean birth weight of neonates was 3.0 kg and 13% of neonates showed low birth weight. Maternal height, weight, fundal height and haemoglobin level were significantly correlated with birth weight of neonates. Energy, protein and calcium intakes in the third trimester were significantly correlated with birth weight of neonates. Using the binary logistic regression analysis fundal height, haemoglobin level and energy intake of pregnant women were considered as predictor factors of birth weight of neonates.
The purpose of this study was to identify the influence of diet related factors, such as diet behaviors, food intake, and nutrient intakes, on self-rated health (SRH). Also, in order to determine fitness of classification for SRH reflecting diet related factors, this study surveyed older adults in Gyeongnam province. A total of 101 responses were collected using the interview survey method. The self- rated health of rural older adults was poor as reported by 49.5%. The level of self-rated health was found to be related to the frequencies of coffee and snack, use of sugar and vegetable in diet, the amount of total food intake, and cholesterol intake. The result of discriminant analysis, which was conducted to assess the adequacy of SRH classification and to determine the class of observation, showed frequency of coffee and use of vegetable in diet among 47 variables as predictive variables for explaining SRH. The fitness of self-rated health function was high to 47.7%. Therefore, diet-related factors were ascertained to be important variables to predict SRH.
This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.
The purpose of this study was to examine the correlation between nutrient intakes and bone mineral density in female university students. A total 27 female university students were measured the anthropometric characteristics, dietary intake and the bone mineral density of carpus using DEXA. The average age, height, weight, % body fat, WHR, and BMI of the subjects were 22.7 years, 161.5 cm, 57.0 kg, 29.9%, 0.8, 21.8 kg/$m^2$, respectively. Bone mineral density of ultradis and distal carpus as T-value were -1.5 and -0.4, respectively. The daily energy intake of the subjects was 1589.0kcal. And the intakes of energy, calcium, iron, zinc, vitamin $B_2$, and folic acid did not meet the Korean RDAs. The daily total food intake of the subjects was 1011.0g and food intake from cereals and vegetables was high. The major food groups of mineral intake were vegetables/cereals/milks/fishes for calcium, cereals/meat/vegetables/fishes for phosphorus, cereals/vegetables/meats for iron, seasonings/vegetables/cereals for sodium, vegetables/cereals/seasonings for potassium, and cereals/meats for zinc. The body weight and body mass index were significantly positive correlated to the bone mineral density of average carpus, respectively. The intakes of animal calcium and vitamin $B_2$ were significantly negative correlated to the bone mineral density of average carpus, respectively. In conclusion, bone mineral density in carpus and nutrient intakes of some female university students were low. Therefore, health management and the study on relation between bone mineral density in various site and long-term intakes of nutrients in many subjects are required.
The dietary vitamin $B_6$ intake of 218 Korean young women (aged 20-26y), who had no health problems, and their sources were estimated using a modified Korean vitamin $B_6$ database. The average daily vitamin $B_6$ intake was 0.987 mg for the subjects. About 87.2% of the subjects consumed less than the Korean Recommended Dietary Allowance (RDA) of vitamin $B_6$. The average ratio of vitamin $B_6$ intake to daily protein intake was 0.014 mg/g protein, and approximately 91% of subjects consumed 〈 0.02 mg/g protein. Vitamin $B_6$ intake was significantly (p〈.01 -p〈.001) positively correlated to the intakes of all other nutrients. Between animal and vegetable protein, animal protein had a stronger positive correlation with vitamin $B_6$. Major dietary sources of vitamin $B_6$, the top 10 foods provided nearly 64% of total vitamin $B_6$, and dietary contributors of vitamin $B_6$ for Koreans are less varied than those for Americans.
This study was performed in order to identify nutritional factors affecting on skin sebum content with 131 female university undergraduates in 2003. We measured the sebum contents of 4 facial spots to classify their skin types. Daily energy and nutrient intakes of the subjects were not deficient except in calcium and iron, which were 466.2 mg (66.6% RDA) and 8.5 mg (53.4% RDA) relatively. We observed no significant difference of energy and nutrient intakes among the 3 skin types. But significantly higher consumption of grains and slightly higher frequencies of several food groups (excepting starches) were shown in oily skin types, so they might have higher nutrient intakes. Serum indices and food preferences mostly revealed no difference among the 3 skin types. But in the oily skin type, serum phosphorus levels were significantly lower than others, suggesting phosphorus-rich food consumption like soft drinks and pains could lead to a dry skin type rather than an oily one. Also in the oily skin type, sweet taste preference was slightly tower than others; more-over, sweet intake was lower samely significantly. There was mostly no significant relationship between facial sebum contents and nutrient intakes, dietary behavior, food frequency and food preference except in some factors. Animal protein intake showed a significant negative relationship toward facial sebum content. On the other hand, in normal skin type, Fishes consumed was slightly higher than others, so that higher animal protein consumption presumably leads to normal skin type. Frequency of fried food and bacon and preference of fried foods showed slightly negative relationships toward facial sebum content. Regular meal times showed significantly increased facial sebum content.
