This study was conducted to investigate the association of nutrients intake with sugar-containing food consumption of elementary school students in Daegu-Kyungpook area. We analyzed the dietary information from 164 elementary school students (82 boys, 82 girls) participated in "Dietary Intake Survey of Infants, Children and Adolescents" conducted by Korea Food & Drug Administration and Korea Health Industry Development Institute. Information on habitual dietary intake of sugar-containing foods was collected by food frequency questionnaires. Daily nutrients intake of each subject was calculated from 24-hour recall data for two non-consecutive days. As a result of average daily intake of major foods of elementary school students was analyzed from 1 to 50 ranking that show up higher ranking of white milk and white rice but include many kind of sugar-containing food. Dietary intake of energy, carbohydrate, Ca, P, Fe and riboflavin were significantly lower for girls with higher sugar-containing food frequency scores. Significantly negative associations between Index of Nutrition Quality (INQ) and sugar-containing food frequency scores were observed for calcium (r = -0.34) and iron (r = -0.32) among girls. Mean Adequacy Ratio (MAR) was significantly lower for girls with higher sugar-containing food frequency scores (r = -0.26). Our results indicated that nutrition education for elementary school students should focus on the importance of reducing the sugarcontaining food consumption with more attention for girls.
Purpose : This study was conducted to evaluate the effect of denture placement on nutrition status and quality of life in the urban elderly Material and method : The first survey was conducted from 45 targeted elderly people(25 experimental group, 20 control). In the first survey, information on general characteristics, chewing ability, food intake and nutrient intake, anthropometric measurement, and degree of satisfaction in life were obtained. The second survey was conducted to evaluate the effect of denture placement with same method as the first survey. Results : Before denture placement, there are no statistical significant differences (in general characteristics, chewing ability, nutrient intake, anthropometric measurement, and degree of satisfaction in life) between experimental group and control. But after denture placement, survey shows that there is statistically significant difference in chewing ability between two groups. The experimental group have higher intake of energy, protein, carbohydrate, iron, and vitamin C. in nutrient intake. And after denture replacement, there is significant improvement in degree of satisfaction in life. After denture placement there are significant changes in agitation and attitude toward own aging according to Lawton's factor classification. Conclusion: In short, this study shows that chewing ability improvement of the elderly has strong positive effects to their food intake, nutrient status and quality of life.
The anthropometric measurements, nutrient intake, concentrations of minerals in scalp hair and urine and urinary 5-hydroxyindoleacetic acid(5-HIAA) of 30 autistic children not taking psychoactive drugs and 30 nonautistic control children were determined. The autistic children were taking significantly lower amounts of vitamin A, niacin, ascorbic acid and iron. The intake of vitamin A, niacin, and iron in autistic children were found to be 22$\%$, 75$\%$ and 58 of RDA, respectively. The decreased anthropometric measurements in height and weight of autistic children seems partly due to lower intake of these micronutrients. The food intake in vitamin and mineral group of autistic children was significantly lower. It is probably related to decreased intake of fruit in autistic children. There was no toxicity of cadmium and aluminum in both groups according to their contents in scalp hair. Autistic children showed elevated levels of hair calcium and zinc but lowered levels of copper and iron. The urinary excretion urinary excretion of 5-HIAA.
To explore the relationship between weight status and food intake pattern, the Nutrition Survey results of the 2001 National Health and Nutrition Survey were analyzed. Dietary intake data of Korean adults aged 20 to 64. years who participated in the 2001 National Health and Nutrition Survey, was used along with their demographic data. Subjects were classified into 4 groups based on the BMI value of subjects: underweight, normal, overweight and obese. For male adults, obese subjects had significantly higher mean intake of energy, protein, carbohydrates, and fat than normal subjects. In addition, obese male adults consumed more animal foods, especially more meats, than normal subjects. However, females obese subjects did not show higher intake of energy or fat. Although obese male adults showed higher energy intake, calcium and iron intake per 1000 kcal was lower than normal adults. Average calcium intake in females was low; about 70% of RDA regardless of obesity level. In addition, riboflavin and Vitamin A intake was lower in overweight and obese female than in normal females. Percentage of subjects with low fruit and vegetable intake (< 400 g per day) was also high in female subjects. These results showed that food and nutrient intake patterns of obese population were different between male and female adults. These dietary intake patterns need to be considered in developing and implementing nutrition policy and intervention programs to prevent and control obesity. Moreover, the National Survey and monitoring system should be developed for continuous and effective investigation on the relationship between obesity and dietary intake.
To assess the food habits, nutrient intake and diet quality of preschool children aged 1 to 6 in Pusan by their meals and snacks, dietary survey was conducted with 176 subjects by a questionnaire and 24hr recall method. 63.1% of the subjects often skipped meals and 72.1% of those skipped breakfast in the main. 94.5% had snacks over once per day. The mean energy intake was 1406.4kcal, with 57.7% of energy intake being supplied by carbohydrate, 13.7% by protein, 28.6% by fat. 54.9%, 71.7% and 26.5% of intakes of protein, calcium and iron were supplied respectively by animal food. Most of iron intake came from plant origin. The percent of calcium intake from animal origin was low significantly in a group aged 4 to 6(p<0.05). The mean intakes of calcium, iron and niacin of total subjects were below Recommended Dietary Allo wance(RDA) for Koreans. The mean intakes of iron and niacin of a group aged 1 to 3 were below RDA as well as those of energy, caicium, vitamin B2 and niacin of the group aged 4 to 6. For calcium, iron, vitamin A, niacin and vitamin C, proportions of subjects with intake levels less than 75% of RDA were all over 36%. For most nutrients, proportions of subjects with intake levels less than 75% of RDA were higher in the group aged 4 to 6 than in the group aged 1 to 3. Nutrient adequacy ratios(NAR) were the lowest in iron in case of the group aged 1 to 3 and in calcium in case of the group aged 4 to 6. NAR of iron increased and that of vitamin B2 decreased significantly along increase age(p<0.05). The mean adequacy ratios(MAR) were 0.82 for total subjects, 0.83 for the group aged 1 to 3 and 0.80 for the group aged 4 to 6. The indexes of nutritional quality(INQ) of calcium, iron and niacin of the group aged 1 to 3 were below 1 as well as those of calcium, vitamin B2 and niacin of the group aged 4 to 6. Both of the age groups received 31.6~59.0% of daily intakes of energy, fat, calcium, phosphrous, vitamin B2 and vitamin C from snacks. So snacks clearly play an important role in dietary intake. Both of the NARs of most nutrients and MAR were higher in snacks than in three meals. The INQs of calcium and iron from three meals and those of iron, vitamin A, vitamin B1 and niacin from snacks of the group aged 1 to 3 were all below 1. The INQs of calcium and vitamin B2 from three meals and those of vitamin A and niacin from snacks of the group aged 4 to 6 were all below 1. In conclusion, nutritional characteristics were different between the two age groups. More attention should be paid to improve adequacy of nutrient intake through meals. And dietary management for snacks is needed especially in the group aged 1 to 3.

A food allergy is an adverse health effect arising from a specific immune response that occurs reproducibly upon exposure to a given food. In those with food allergies that are thought to cause aggravation of eczema, food avoidance is important. The objective of this study was to research the nutritional status of patients with food allergies. A total of 225 subjects diagnosed with atopic dermatitis underwent a skin prick test as well as measurement of serum immunoglobulin E. Food challenge tests were conducted using seven food items: milk, eggs, wheat, soybeans, beef, pork, and chicken. At post-food challenge visits to the test clinic, participants completed a three-day dietary record, which included two week days and one weekend day, in order to evaluate energy intake and diet quality during the challenge. We analyzed nutrient intake based on differential food allergens. Subjects with a food allergy to milk showed lower intake of Ca, Zn, and vitamin B2, and subjects with a food allergy to egg showed lower intake of vitamin A, B1, B2, niacin, and cholesterol. Subjects with a food allergy to wheat and soybean showed lower intake of Ca, P, Fe, K, Zn, vitamin B2, vitamin B6, and niacin; and subjects with a food allergy to beef, pork, and chicken showed lower intake of Fe and higher intake of K, vitamin A, B2. Subjects with atopic dermatitis were lacking in several nutrients, including vitamin A and vitamin C. A greater number of food allergies showed an association with a greater number of nutrient intake deficiencies. Allergen avoidance is the basic treatment for atopic dermatitis. However, when the allergen is food, excessive restriction can lead to nutrition deficiency. Findings of this study suggest the necessity for enhanced nutritional education in order to provide substitute foods for patients with food allergies who practice food restriction.
This study is designed to forecast the characteristics in food consumption patterns under per capita GNP growth. Ordinary least square(OLS)method was employed as analyzing technique. Equation was $Y=a_0+a_1X$, in which X was per capita GNP and Y were Engel coefficient, food supply, energy supply, nutrient intake and ratio of self-supply of food. The result obtained indicates that the intake of nutrient such as protein and fat will be increased, and wheat, corn and legume are expected to be imported wholly due to lower ratio of self-supply, and rice will be over-supplied continually. Therefore, the relevant policy of government must be established in the field of supply and demand of food, and the research of sound national health should be done.
The purpose of this study was to compare the degree nutrient intake, health status and other characteristics of females aged 65 years and over in a longevity area according to family arrangement. For analysis, 585 female elderly were recruited from the Kugoksoondam area (Kurye, Goksung, Soonchang and Damyang counties), known as the longevity-belt region in Jeonla province, Korea. The subjects were categorized into three groups according to family arrangement (living alone, living with spouse only and living with family). Demographic characteristics were collected, as well as information on physical measurements, blood tests for biochemical indicators, health status and health-related life style, dietary behavior, favorite food groups, consumption frequency of food groups, nutrient intake and mini nutrition assessment. In the group living with their spouse only, the highest education, physical activity, diverse food intake, frequency of eating meats and fish, energy and nutrients intake, and score on the mininutrient status assessment (MNA) were found to be significantly favorable factors. Taken together, these results demonstrated that the group living with their spouse only had relatively superior nutrient intake and the quality of diet. In contrast, the group living alone showed the lowest self-rated economic status, diversity of food intake, and physical activity, with the highest frequency of drinking, smoking and regular exercise for almost everyday compared with the other groups. On the other hand, those living with family demonstrated the lowest intake of supplements or functional foods, and levels of hemoglobin hematocrit MCH, but the highest HBA1c and blood sugar. Therefore, the group living with family was assumed to be at risk of anemia and diabetes. These results could be useful to plan effective strategies to increase the health-life expectancy of Korean elderly people living in rural areas, according to family arrangement.
This study examined the effectiveness of two commonly used dietary assessment methods (the 24-hour recall and the food frequency questionnaire) in the epidemiological investigations of health-related habits and degenerative diseases. This cross sectional project in the Seoul area was conducted for the purpose of establishing cohort subjects and collecting reliable nutrient intake data for a further large-scale cross sectional study. The subjects were 91 volunteers from the Seoul area with a mean age of 53.5 \pm 9.6 for the males and 52.2 \pm 8.9 for the females. The subjects had a relatively high educational background, were from high socioeconomic levels, and were greatly concerned about healthrelated life styles. There was a significantly negative correlation between their smoking and their nutrient intake. Their drinking habits, their self-estimated health status and their concern or stress about being healthy did not have any influence on their nutrient intakes. Skipping meals was the most undesirable dietary habit influencing their nutrient intakes, and the next was their irregularity of eating meals. The subjects who liked legumes and fish had higher intakes of iron and niacin and those who liked milk and dairy products had higher intakes of calcium, vitamin \B_2 and fat. The subjects who considered themselves not to be healthy consumed higher amounts of fish and shell-fish, and those who considered themselves to be healthy consumed higher amounts of vegetables. The smokers consumed less fruits than non-smokers, but there was no correlation between their drinking and consumption of the food groups. There was no correlation between their food consumption frequency and their skipping meals or meal irregularity. There were positive correlations between their food likes and food consumption frequency for foods such as meat, milk and dairy products, seaweeds and fruits. Therefore, their smoking, skipping meals and meal irregularity appeared to greatly influence their nutrient intakes. Significant correlations were found between their health-related habits and their food group preferences and food frequencies. This implies that simple surveying methods using criteria such as smoking, skipping meals and meal irregularity, food group preferences and eating frequencies can be used as useful tools in the assessment of nutritional statuses.
To assess the food intake and diet quality by the interrelationship of DDS and DVS of high school girls, this dietary survey was conducted with 253 subjects living in Iksan and Seoul areas using a 24-hour recall method. The average amount of total food intake was 1,133.2 g, with 79.9% of food intake being supplied by vegetable food and 20.1% by animal food and higher in Seoul area. The food consumed most frequently was rice, green onion, garlic, soy sauce, sesame oil, onion, and Kimchi. The food consumed in the largest amounts were rice(303.3 g), milk(62.2 g), and Kimchi(53.4 g). Diet quality was assessed by food group pattern, dietary diversity score(DDS), and dietary variety score(DVS). When investigating the consumption pattern of major five food groups(grain, meat, dairy, fruit, vegetable groups), nobody consumed all five food groups in each meal. The groups most frequently missing were fruits and dairy products. The average number of food consumed per day was 12.1(DVS) and Iksan area scored lower(11.7) on DVS than Seoul area(12.6). The higher DDS and DVS of subjects were, the more MAR and NAR of energy, calcium, vitamin A and C increased. The number of major food groups(DDS)(p<0.01, P<0.05) and that of food items (DVS)(p<0.01) correlated positively NAR(nutrient adequacy ratio) and MAR (mean adequacy ratio) significantly.
