저염화 라면의 소비자 선호 분석을 활용한 기술사업화 전략 (Technological Commercialization Strategy based on Consumer Preference Analysis of Low-sodium Instant noodle Ramen)

  • The purpose of this study was to develop a technology commercialization strategy by analyzing the consumer preference for low-sodium instant noodle ramen, which has a sodium content of 1,730 mg or less. For the commercialization of such low-sodium ramen, this study examined how much consumers would pay through an analysis of consumer preference by conjoint analysis. This study surveyed 1,004 men and women in their 20 s and 50 s between the ages of 20 and 50 years in Korea using an online survey. If the price of conventional instant noodle ramen is KRW 4,000 (approximately USD 3.57) per 5 packs for one pack of 5 servings in a supermarket, this study surveyed how much more they respondents would pay if the sodium was reduced by 10.0, 20.0, and 30.0%. The study found that if sodium was reduced by 10.0, 20.0, and 30.0%, the respondents would pay as much as KRW 4,180, KRW 4,307, and KRW 4,515, respectively. The attributes of low-sodium instant noodle ramen were examined according to the degree of sodium reduction, vegetable protein ingredients, brand, where to buy and price with each level. The Marginal Willingness To Pay (MWTP) was analyzed as follows. If the sodium content of ramen soup is reduced by 1.0%, the amount that can be paid would be KRW 105.78. Respondents could pay KRW 1,673 more for famous brand ramen than an unknown brand ramen. The study results indicated that when a new product is developed and released, it can be expected to increase sales of the new product by understanding the foreseeable value that consumers could pay for and realize the technological commercialization of the technology.

아동 및 청소년의 라면 섭취에 따른 식품 및 영양소 섭취 실태 비교 - 2005년 국민건강영양조사 심층분석 결과 - (A Comparison of Food and Nutrient Intakes between Instant Noodle Consumers and Non-Consumers among Korean Children and Adolescents)

  • Instant noodle is one of the most popular foods in Korea. The objective of this study was to examine the association of instant noodle consumption and food and nutrient intake among children and teenagers in Korea. We used dietary data from 24-h recall of 1,748 subjects aged 7-19 years who participated in the 2005 Korea National Health and Nutrition Examination Survey. Those who consumed instant noodle once or more during the survey period were categorized as "instant noodle consumer (INC)" and were compared for food and nutrient intakes with the others (non-INC). The average age of the INC was 13.4 and that of the non-INC was 12.4; girls consumed more instant noodles than boys (p < 0.05). There was no significant difference in BMI between the two groups. With the exception of grains, as compared to the non-INC, the INC consumed significantly less amounts of potatoes, vegetables, mush-rooms, fruits, spices, seafood, and milk and dairy products. With respect to nutrient intakes, the INC-group showed significantly higher nutrient intakes of energy, fat, carbohydrate, sodium, thiamine, and riboflavin; however, as compared to the non-INC-group, the INC-group showed significantly less intakes of calcium, niacin, and vitamin C. The overall result suggests that consuming instant noodles may lead to excessive intake of fat and sodium, but it may cause an increased intake of thiamine and riboflavin. Therefore, nutrition education that helps children and teenagers choose a balanced meal while consuming instant noodle should be carried out. In addition, manufactures of instant noodles should consider nutritional aspects in product development processes.

히카마 분말을 첨가한 제면의 품질 특성 (Quality Characteristics of Noodle added with Pachyrhizus erosus Powder)

  • This study was conducted to investigate the noodle added with Pachyrhizus erosus powder. Total contents of carbohydrates, crude protein, crude lipid, ash, and total dietary fiber were 87.14%, 3.14%, 0.81%, 7.82%, and 49.12%, respectively. The water-binding capacity was significantly increased by increasing amount of the Pachyrhizus erosus powder. When the volume of the noodles was measured after cooking, there was no difference between the control and Pachyrhizus erosus powder groups. The texture characteristics of hardness increased by increasing amount of the Pachyrhizus erosus powder. As a result of the sensory test, the 1.5% Pachyrhizus erosus powder noodles showed the highest scores for all items including appearance, flavor, taste, texture and overall acceptability. The bacterial counts of noodle decreased with greater Pachyrhizus erosus powder content on the third days. It is considered that research on antimicrobial activity should proceed in the future. As a result, it was finally suggested that optimum level of the Pachyrhizus erosus powder in the product was 1.5% level.

포도 과피 첨가량에 따른 생면의 품질 특성 (Quality Characteristics of Wet Noodles after Addition of Grape-Peel Powder)

  • Optimal Chinese-noodle product in the aspect of preference and quality that added functionality, the focus was put on developing the stable high value-added product in a farm household. Experimental results showed that the value for infrared water-content analysis of moisture was $85.74{\pm}0.12%$, crude protein was $1.31{\pm}0.01%$, the crude fat $3.91{\pm}0.08%$, the ash $1.83{\pm}0.01%$, carbohydrate $1.08{\pm}0.03%$, and crude fiber $6.12{\pm}0.10%$. For all experiments with Chinese noodles, the grape peels were frozen and dried, powdered, and filtered with a 150-mesh strainer. The grape-peel powder, was added to the composite flour in a proportion of 0%, 1%, 3%, 5%, and 7%. The color of the cooked noodle appeared brown, demonstrating that the L-value decreased as the amount of grape-peel powder increased. The value of a, which corresponds to the level of redness, increased and the cooked noodle appeared brown as the amount of grape-peel powder added increased. The yellowness of the cooked noodle tended to decrease as the value of b, which corresponds to the level of yellowness, gradually (p<0.05). In the texture analysis, hardness was highest in the 7% grape-peel powder group, while the 5% groups showed the highest springness values. The 1% groups showed the highest cohesivness while the 7% groups were the chewiest. The 7% groups had the lowest stickiness values (p<0.05). It terms of sensory quality, the overall surface color, texture and taste were perceived as superior for the 3% grape-peel powder-added groups and lowest for the 7% group (p<0.001). The 3% treatment showed the best overall quality.

국산원료(國産原料)를 활용한 복합분(複合粉) 및 제품개발(製品開發)에 관한 연구(硏究) 제4보 보리 및 고구마복합분(複合粉)을 이용한 면류(麵類)의 Texture 특성(特性) (Development of Composite Flours and Their Products Utilizing Domestic Raw Materials IV. Textural Characteristics of Noodles made of Composite Flours Based on Barley and Sweet Potato)

  • 밀가루 대체원료(代替原料)로써 쌀보리가루 또는 고구마가루를 활용한 복합분(複合粉)으로 국수를 만들고 그들의 품질(品質)을 조사하여 다음과 같은 결과를 얻었다. 1) 면대(麵帶) 및 건면(乾麵)생산에 있어서 밀가루에 대한 보리가루 대체율(代替率)은 100%까지, 고구마가루 대체율(代替率)은 70%까지 가능하였으며 품질개량제(品質改良劑)로서 glyceryl monostearate 및 sodium polycrylate의 첨가는 이들 제품의 texture 특성(特性)을 향상시켰다. 2) 면대(麵帶)와 건면(乾麵)의 texture 특성치(特性値)인 견고성(堅固性), 응집성(凝集性), gumminess는 보리가루나 고구마가루의 배합에 의하여 떨어졌으나 첨가제의 효과가 뚜렷하였고 면대(麵帶)는 견고성(堅固性) 6.2 이상, gumminess 430 이상, 건면(乾麵)은 견고성(堅固性) 6.8 이상이 필요하였다. 3) 조리면(調理麵)에 있어서 밀가루 대체(代替)와 첨가제의 사용은 texture 특성(特性)을 떨어뜨리는 경향이 있었으며 조리특성(調理特性)으로 보아 보리가루는 60%까지, 고구마가루는 40%까지 대체(代替)할 수 있었다. 4) 조리면(調理麵)의 색깔, 맛, texture에 관한 관능(官能)시험에서 20% 대체복합분(代替複合粉)은 밀가루와 5% 수준에서 유의차(有意差)가 없었으며 품질저하(品質低下)는 주로 착색(着色)에 기인(起因)하였다.

영양강화식품 중 무기질 함량 조사연구 (A Study on the Content of Minerals in Fortified Food)

  • 본 연구는 무기질이 강화된 식품(음료류, 면류, 시리얼류, 곡류가공품) 68건에 대하여 무기질류의 함량을 분석하여 표시량에 대한 검출량의 비율을 조사하였고 칼슘과 다른 무기질의 비율을 분석하였다. 칼슘, 철, 아연의 함량은 마이크로웨이브 장치로 분해 후 ICP-OES로 분석하였다. 칼슘을 강화한 음료류, 면류, 시리얼류, 곡류가공품 38건에 대한 칼슘의 검출량은 표시량의 82.2~293.1%이었다. 무기질류를 강화한 음료류, 면류, 시리얼류, 곡류가공품에 대한 철(42건)과 아연(24건)의 검출량은 각각 표시량의 83.3~301.0%, 90.1~314.1%이었다. 칼슘과 철의 분자량비는 과채주스 90.55(50.55~220.64), 과채음료 850.41, 혼합음료 553.49, 두유류 179.07(118.37~238.01), 국수 204.39(41.64~397.52), 유탕면류 296.97(121.64~868.88), 시리얼류 30.89(15.69~62.05) 그리고 곡류 가공품 7.73(0.22~49.92)이었다. 칼슘과 인의 중량비는 과채주스 1.44(0.96~1.98), 과채음료 1.92, 혼합음료 1.66, 두유류 4.23(2.25~7.72), 국수 1.14(0.28~1.97), 유탕면류 1.88(1.17~2.42), 시리얼류 1.29(0.87~2.92) 그리고 곡류가공품 0.30(0.06~1.57)이었다. 칼슘과 마그네슘의 중량비는 과채주스 1.85(0.87~5.04), 과채음료 28.72, 혼합음료 2.97, 두유류 5.27(2.93~9.36), 국수 3.97(1.34~7.57), 유탕면류 6.77(4.63~10.78), 시리얼류 4.40(2.30~12.55) 그리고 곡류가공품 1.17(0.23~7.48)이었다. 이와 같은 결과로 칼슘의 함량과 칼슘 강화식품에서 칼슘과 다른 무기질들의 비율에 대한 엄격한 관리가 필요하고 또한 과도한 영양 문제를 방지하기 위해 영양강화식품의 식품 표시 및 영양에 대한 더 많은 이해 방안이 모색되어야 한다는 것을 제안할 수 있다.

  • 국산원료(國産原料)를 활용(活用)한 복합분(複合粉)으로 건면(乾麵)과 쿠키를 만들고 그들의 품질(品質)을 조사한 바 다음과 같은 결과를 얻었다. 1) 원료분(原料粉)에 $10{\sim}20%$ 탈지대두분(脫脂大豆粉)을 혼합한 복합분(複合粉)만으로 제면(製麵)할때는 면대(麵帶)가 형성되지 않았으나 품질개량제로서 1.5% GMS + 2% methocel을 첨가한 경우 면대형성(麵帶形成)과 조리시험(調理試驗)에서 가장 좋은 효과를 얻었다. 2) 원료분(原料粉)중 쌀보리가루의 제면적성(製麵適性)이 가장 우수했으며, 원료분(原料粉)에 밀가루를 25%, 50% 수준으로 혼합하면 면(麵)의 품질(品質)이 현저히 개선되었고 쌀보리 복합분(複合粉)의 경우는 식미(食味)에 있어서 밀가루면(麵)보다 양호하였다. 3) Cookie 제조시 GMS 와 CSL의 효과는 볼 수 없었고 대부분의 원료가 cookie 를 형성하였으나 쌀보리가루가 관능시험(官能試驗)에서 가장 우수하였다. 4) 복합분(複合粉)에 밀가루를 25%, 50% 첨가하여 cookie 를 만든 경우, 탈지(脫脂)쌀겨를 제외하고는 대체로 표준품(標準品) 수준으로 그 품질(品質)이 향상되었다.

Kano-Timko모델과 컨조인트 분석을 활용한 한국 식품의 이집트 할랄 시장에 진출을 위한 타당성 분석 (Validity Analysis of Korean Food for Launching Halal Market in Egypt Using the Kano-Timko Model with Conjoint Anlaysis)

  • Purpose: We consider export of Korea for Muslim population of Cairo residents in Egypt. Product instant cup noodle and yuzu tea are mainly focused on Kano model and Timko's customer satisfaction factor (CS - Coefficient) analysis and conjoint analysis. Methods: Based on the evaluation and conjoint analysis, cluster analysis was additionally applied to further exploratory research as to what kind of population the target customer has. A total of 120 people, each 60 people each, were prosecuted for Muslim women, middle middle class who had over 3,000 Korean won annual income for that study, and in Cairo in August 18. Results: The Kano analysis result Instant cup noodles act as attractive elements for packaging state, cooking method, smell and convenience, and Yuzu tea acted as an attractive element of taste, eating method, raw materials, efficacy, packaging form. Customer satisfaction factor, instant cup noodles, capacity and noodle thickness was a factor of indifference in Kano analysis, but acted as an attractive factor, the way to eat citron tea was classified as a factor of indifference. Conclusion: In the case of instant cup noodles, we first set up the taste of chicken-based soup with high appreciation as a whole, a group that likes chicken-based soup taste and oil noodles for each market segment, a taste of beef based soup And popular group that likes raw noodles Appears that diversification is necessary, and it has been found that it is necessary to develop a product type by hierarchy and marketing with different size priority from group packaging container. In the case of Yuzu tea, it is indispensable to emphasize the efficacy, in particular, energy recovery preference appears high, appealing point matching the needs of energy recovery is necessary, release the citrus fruit as a product without buckwheat in Bisson Ho, the packaging container, The group that likes cups and sticks is different and we found that it is necessary to prepare all two types.

국내 주요 식품(Key foods) 중 면류 제품의 영양성분 함량 비교 (Comparison of Nutritional Composition of Noodle Products in Korean Key Foods)

  • This study analyzed the nutritional composition (proximate composition, total dietary fiber, calories, minerals, fatty acids, and amino acids) of 10 noodle products (tteok ramyun, jjamppong ramyun, kimchi ramyun, instant udon, cup ramyun, jajangmyun, bibimmyun, cream spaghetti, ssalguksu, and milmyun), which account for 85% of the cumulative intake of one or more key nutrients, using data from the 7th Korea National Health and Nutrition Examination Survey. The moisture contents of bibimmyun, jajangmyun, and cream spaghetti were lower than those of the other noodle products, whereas the crude fat, crude protein, carbohydrate, and calorie contents were the highest. Cream spaghetti had the highest mineral, fatty acid, and amino acid contents, followed by bibimmyun and jajangmyun. Ssalguksu had the lowest contents of most nutrients. These data could be used to populate a food composition database, which can provide consumers with the nutritional information about frequently consumed noodle products.

송화를 첨가한 우리밀 국수의 관능특성 및 송화추출물의 항산화성 (Sensory Characteristics of Korean Wheat Noodles With Pine pollen and Antioxidant activities of Pine pollen Extracts)

  • 본 연구는 품질 특성과 기능성을 가진 우리밀 국수를 개발하기 위하여 송화 분말을 물과 70% 에탄올로 추출하여 추출물의 전자공여능 및 아질산염 소거능 등의 기능성을 검토하고 송화를 첨가한 우리밀 국수의 품질특성을 검토하였다. 1. 추출물의 전자공여능은 물 및 에탄올 추출물 모두에서 농도가 증가함에 따라 전자공여능도 증가하였으며, 1,000 ppm에서 물 추출물은 67%, 에탄올 추출물은 74%로 에탄올 추출물의 전자공여능이 물 추출물 보다 높았다. 2. 추출물의 아질산염 소거능은 물 및 에탄올 추출물 모두에서 pH가 낮아짐에 따라 증가하여 pH 1.2에서 가장 높았고 동일 pH에서는 농도가 높아짐에 따라 증가하였다. 3. 송화를 첨가한 우리밀 국수 생면을 $20^{\circ}C$에서 일주일간 저장하였을 때 3% 송화첨가국수가 총균수 및 진균수는 대조구의 최대균수를 나타낸 저장일의 균수에 비해 유의적으로 낮았으나 pH 및 산도는 대조구 및 실험구간에 유의적인 차이는 없었다. 4. 송화를 첨가한 우리밀 국수의 명도(L)와 적색도(a)는 송화첨가량이 증가할수록 유의적으로 낮았으나 (p<0.05) 삶은면의 명도는 대조구와 추출물 첨가 농도에 따라 유의적인 차이는 없었다. 황색도(b)는 실험구의 농도가 증가할수록 높아져 유의적인 차이를 보였다(p<0.05). 5. 송화를 첨가한 우리밀 생면, 건면, 삶은면의 관능검사 결과 종합 기호도에서 3% 첨가구가 가장 높아 유의적인 차이를 보였다(p<0.05).
