  • This study was conducted to determine the effect of natural ingredient seasoning on the reduction of heterocyclic amine (HCA) production that may occur when pork belly is cooked at a very high temperature for a long time. Pork belly seasoned with natural ingredients, such as natural spices, blackcurrant, and gochujang, was cooked using the most common cooking methods, such as boiling, pan fry, and barbecue. HCAs in pork belly were extracted through solid-phase extraction and analyzed via high-performance liquid chromatography. For short-term toxicity, a mouse model was used to analyze weight, feed intake, organ weight, and length; hematology and serology analysis were also performed. Results revealed that HCAs formed only when heating was performed at a very high temperature for a long time, not under general cooking conditions. Although the toxicity levels were not dangerous, the method showing the relatively highest toxicity among various cooking methods was barbecue, and the natural material with the highest toxicity reduction effect was blackcurrant. Furthermore, seasoning pork belly with natural materials containing a large amount of antioxidants, such as vitamin C, can reduce the production of toxic substances, such as HCAs, even if pork belly is heated to high temperatures.

  • In vitro cytotoxic activities of cisplatin combined with Chungpesagan-tang or puerarin, which were treated with or without human intestinal bacteria, were measured. When cisplatin was combined with Chungpesagan-tang and its ingredient treated without intestinal bacteria, they did not affect the in vitro cytotoxicity of cisplatin against tumor cell lines. However, when cisplatin was combined with intestinal bacteria-treated Chungpesagan-tang and its ingredients, the cytotoxicities against SNU C4, L1210, A549 and P388 tumor cell lines were synergistically increased. Puerarin, which was isolated from Puerariae Radix, did not show in vitro cytotoxicity. However, its metabolite, daidzein, showed potent cytotoxicity against tumor cell lines and was synergistic by the combined usage of cisplatin. These results suggest that natural glycosides are not only prodrugs which can be transformed to active compounds by intestinal microflora, but the combined usage of cisplatin with natural components, such as daidzein, and herbal medicinal polyprescriptions, such as Chungpesagan-tang, may be a new method for prevention and minimization of the toxicity of cisplatin.

  • Natural colorants have attracted much attention all over the world because of their non-hazardous nature. The world is becoming increasingly aware of environmental issues, such as ozone layer depletion, water pollution and waste disposal problems. The use of synthetic dyestuffs for their synthesis and application in the dyeing industries has been criticized due to introduction of contaminants into the environment. This has led to the desire to turn to the traditional, and more natural way of life. In this study, the colorants of extract of Ginkgo biloba bark were analysed and their dyeing properties on silk, wool and cotton were studied. It was found that uv-visible absorption spectra of extract of Ginkgo biloba bark showed two strong absorption peaks in the range of 240∼400 nm. From the result of IR spectra, the major ingredient of extract of Ginkgo biloba bark seems to be the flavon which is one of the flavonoid derivatives. Silk, wool, and cotton dyed with the extract of Ginkgo biloba bark showed a reddish yellow color. Their color differences were increased drastically with repetition of dyeing by three times.
