생선 곰탕 잔사를 이용한 스낵의 제조 (Preparation of Snack Using Residues of Fish Gomtang)

  • 연어 프레임의 완전 이용을 목적으로 연어 프레임으로부터 곰탕 유사 제품을 개발한 후 남는 잔사를 이용하여 스낵의 제조를 시도하였고, 아울러 이의 특성에 대하여 살펴보았다. 스낵의 휘발성염기질소 함량, 수분활성 및 관능검사 등으로 미루어 보아 스낵의 제조를 위한 잔사의 믹스에 대한 최적 대체비율은 15%로 판단되었다. 총아미노산 함량은 잔사 분말 첨가 스낵이 14.8 g/100 g으로, 무첨가 스낵의 9.8 g/100 g에 비하여 높았다. 잔사분말 첨가 스낵의 주요 아미노산은 aspartic acid(9.9%), glutamic acid(14.7%) 및 proline(9.5%) 등이었다. 또한, 잔사 분말 첨가 스낵은 무첨가 스낵에 비하여 무기질(칼슘과 인) 및 고도불포화지방산(20:5n-3 및 22:6n-3 등)이 강화되었다.

The Effect of Slaughter Season on the Fatty Acid Profile in Four Types of Fat Deposits in Crossbred Beef Bulls

  • The objective of this study was to determine the effect of slaughter season on the fatty acid profile in four types of fat deposits in crossbred (Polish Holstein Friesian Black-and-White${\times}$Limousine) beef bulls. The percentage share of fatty acids was determined by gas chromatography and were divided into the following categories of fatty acids: saturated (SFAs), unsaturated (UFAs), monounsaturated (MUFAs), polyunsaturated (PUFAs), desirable hypocholesterolemic (DFAs) and undesirable hypercholesterolemic (OFAs), n-3 and n-6. Perinephric fat was characterized by the highest SFA concentrations (59.89%), and subcutaneous fat had the highest MUFA content (50.63%). Intramuscular fat was marked by a high percentage share of PUFAs and the highest PUFA/SFA ratio. The slaughter season had a significant effect on the levels of C18:3, C20:4 ($p{\leq}0.01$) and conjugated linoleic acid ($p{\leq}0.05$). There was an interaction between the slaughter season and fat type for the content of C20:4 ($p{\leq}0.01$) and C20:5 ($p{\leq}0.05$). The results of this study show that beef from cattle slaughtered in the summer season has a higher nutritional value and more health-promoting properties.

국내산 유채 종자의 품종별 지방 조성 및 페놀 추출물의 항산화 활성 (Lipid Composition of Korean Rapeseed (Brassica napus L.) Cultivar and Antioxidant Capacity of Phenolic Extract)

  • 본 연구는 국내산 유채 종자 내한, 탐라, 목포111호, 영산, 탐미, 한라와 목포68호의 품종별 지방산 조성, 인지질, 당지질, 토코페롤 함량을 조사하고, 유채 종자를 탈지한 후 crude phenolic compound를 추출하여 총 페놀 함량과 항산화 활성을 분석하였다. 유채 종자의 조지방 함량은 29.3~33.2%였고, 품종들 간의 유의적인 차이는 없는 것으로 나타났다. 주요 지방산은 oleic(n-9), linoleic(n-6)과 ${\alpha}$-linolenic acid(n-3)였으며, n-6/n-3 지방산의 비율은 2.20~3.68이고 이 중 내한종이 가장 낮고 한라종이 가장 높았다. Neutral lipids 함량은 내한종과 탐라종, 인지질 함량은 탐미종에서 가장 높고, 소량 함유된 당지질은 내한, 탐라, 한라와 목포68호 간 함량 차이가 없었으며 목포111호에 가장 낮게 함유되었다. 토코페놀 함량 수준은 ${\gamma}$ > ${\alpha}$ > ${\beta}$ > ${\delta}$-tocopherol이며, 내한종의 총 tocopherol 함량이 가장 높고 다음으로 탐라, 목포111의 순이었으며 영산, 탐미, 한라 목포68호는 유의적인 함량 차이를 보이지 않았다. 품종별 총 페놀 함량은 탐라> 영산> 탐미, 한라, 내한> 목포68호, 목포111호의 순으로 나타났으며, 탐라종의 DPPH 라디칼 소거능과 FRAP value가 가장 높아 7개의 품종 중 항산화 활성이 가장 높은 것으로 확인되었다. 탈지 후의 유채박에 함유된 phenol compounds의 용매별 분획할 결과 30% ethanol fraction에 가장 많이 추출되며 이 fraction의 항산화 활성이 가장 높게 나타났다.

Bacterial Inoculant Effects on Corn Silage Fermentation and Nutrient Composition

  • The survival and effect of three new probiotic inoculants (Lactobacillus plantarum CCM 4000, L. fermentum LF2, and Enterococcus faecium CCM 4231) on the nutritive value and fermentation parameters of corn silage was studied under laboratory conditions. Whole corn plants (288.3 g/kg DM) were cut and ensiled at $21^{\circ}C$ for 105 days. The inoculants were applied at a concentration of $1.0{\times}10^{9}$ cfu/ml. Uninoculated silage was used as the control. The chopped corn was ensiled in 40 plastic jars (1 L) divided into four groups (4${\times}$10 per treatment). All corn silages had a low pH (below 3.55) and 83-85% of total silage acids comprised lactic acid after 105 days of ensiling. The probiotic inoculants in the corn silages affected corn silage characteristics in terms of significantly (p<0.05-0.001) higher pH, numerically lower crude protein content and ratio of lactic to acetic acid compared to control silage. However, the inoculants did not affect the concentration of total silage acids (acetic, propionic, lactic acids) as well as dry matter digestibility (IVDMD) of corn silages in vitro. In the corn silages with three probiotic inoculants, significantly (CCM 4231, CCM 4000) lower n-6/n-3 ratio of fatty acids was detected than in control silage. Significant decrease in the concentration of $C_{18:1}$, and significant increase in the concentration of $C_{18:2}$ and $C_{18:3}$ was mainly found in the corn silages inoculated with the strains E. faecium CCM 4231 and L. plantarum CCM 4000. At the end of ensiling, the inoculants were found at counts of less than 1.0 log10 cfu/g in corn silages.

Estrogen deprivation and excess energy supply accelerate 7,12-dimethylbenz(a)anthracene-induced mammary tumor growth in C3H/HeN mice

  • BACKGROUND/OBJECTIVES: Obesity is a risk factor of breast cancer in postmenopausal women. Estrogen deprivation has been suggested to cause alteration of lipid metabolism thereby creating a cellular microenvironment favoring tumor growth. The aim of this study is to investigate the effects of estrogen depletion in combination with excess energy supply on breast tumor development. MATERIALS/METHODS: Ovariectomized (OVX) or sham-operated C3H/HeN mice at 4 wks were provided with either a normal diet or a high-fat diet (HD) for 16 weeks. Breast tumors were induced by administration of 7,12-dimethylbenz(a)anthracene once a week for six consecutive weeks. RESULTS: Study results showed higher serum concentrations of free fatty acids and insulin in the OVX+HD group compared to other groups. The average tumor volume was significantly larger in OVX+HD animals than in other groups. Expressions of mammary tumor insulin receptor and mammalian target of rapamycin proteins as well as the ratio of pAKT/AKT were significantly increased, while pAMPK/AMPK was decreased in OVX+HD animals compared to the sham-operated groups. Higher relative expression of liver fatty acid synthase mRNA was observed in OVX+HD mice compared with other groups. CONCLUSIONS: These results suggest that excess energy supply affects the accelerated mammary tumor growth in estrogen deprived mice.

  • We investigated the effects of gambigyeongsinhwan(GGH)(4) on body weight and non-alcoholic fatty liver disease(NAFLD) examined whether blood total cholesterol, LDL-cholesterol, free fatty acid and triglyceride levels and hepatic lipid accumulation are inhibited by it in high fat diet-fed obese male mice. 8 weeks old, high fat diet-fed obese male mice were divided into 5 groups: C57BL/6N normal, control, GGH(4)-1, GGH(4)-2 and GGH(4)-3. After mice were treated with GGH(4) for 8 weeks, we measured body weight gain, food intake, feeding efficiency ratio, fat weight, plasma ALT, leptin and lipid levels. We also did histological analysis for liver and fat on the mice. Compared with controls, GGH(4)-treated mice had lower body weight gain and adipose tissue weight, the magnitudes of which were prominent in GGH(4)-2. Compared with controls, GGH(4)-treated mice had lower feeding efficiency ratio and blood leptin level, the magnitudes of which was prominent in GGH(4)-2. Compared with controls, GGH(4)-treated mice had lower blood plasma total cholesterol, LDL-cholesterol, free fatty acid and triglyceride levels. Compared with controls, GGH(4)-2 treated mice had lower blood plasma ALT concentration. Consistent with their effects on body weight gain, the size of adipocytes were significantly decreased by GGH(4), whereas the adipocyte number per unit area was significantly increased, suggesting that GGH(4) decreased the number of large adipocytes. Hepatic lipid accumulation was decreased by GGH(4). In conclusion, these results suggest that GGH(4) exhibits anti-obesity effects through the modulation of feeding efficiency ratio and plasma obesity parameters. Moreover, it seems that GGH(4) also contributes to improve NAFLD through the regulation of plasma ALT and hepatic triglyceride accumulation.

음식물쓰레기 이용 혐기 산발효에 의한 수소 및 유기산 생산: 축산폐수 첨가 효과 (Effect of Livestock Wastewater Addition on Hydrogen and Organic Acids Production Using Food Waste)

  • Organic wastes such as food waste (FW), livestock wastewater (LW), and sewage sludge (SWS) can produce hydrogen ($H_2$) by anaerobic acid fermentation. Expecially, FW which has high carbohydrate content produces $H_2$ and short chain fatty acids by indigenous $H_2$ producing microorganisms without adding inoculum, however $H_2$ production rate (HPR) and yield have to be improved to use a commercially available technology. In this study, LW was mixed to FW in different ratios (on chemical oxygen demand (COD) basis) as an auxiliary substrate. The mixture of FW and LW was pretreated at pH 2 using 6 N HCl for 12 h and then fermented at $37^{\circ}C$ for 28 h. HPR of FW, 254 mL $H_2/L/h$, was increased with the addition of LW, however, mixing ratio of LW to FW was reversely related to HPR, exhibiting HPR of 737, 733, 599, and 389 mL $H_2/L/h$ at the ratio of FW:LW=10:1, 10:2, 10:3, and 10:4 on COD basis, respectively. Maximum HPR and $H_2$ production yield of 737 $H_2/L/h$ and 1.74 mol $H_2/mol$ hexoseadded were obtained respectively at the ratio of FW:LW=10:1. Butyrate was the main organic acid produced and propionate was not detected throughout the experiment.

Effects of Persimmon (Diospros kaki L.) Vinegar as a Dietary Supplement on Feed Intake, Digestibility, and Ruminal Fermentation Indices in Sheep

  • This study estimated the effect of fermented persimmon (Diospros kaki L.) extract (FPE) supplement on feed intake, digestibility, nitrogen (N) balance, and rumen fermentation characteristics in sheep. Five male sheep (Corriedale${\times}$Polwarth) with average body weight of $48.6{\pm}1.3\;kg$ were housed in metabolism crates and assigned to a 5${\times}$5 Latin square design with five consecutive 20-d periods which consisted of 14-d adaptation and 6-d data collection. The sheep were fed ad libitum a diet containing concentrate and rice straw (3:7). The five treatments were FPE supplemented at 0 (Control), 5, 10, 20, and 30 g/kg of concentrate. Intakes of dry matter (DM, p<0.01), organic matter (OM, p<0.01), neutral detergent fiber (NDF, p<0.05), acid detergent fiber (ADF, p<0.05), and nitrogen-free extract (NFE, p<0.01) increased quadratically with increasing intake of FPE supplement and maximized (p<0.05) at 10 g/kg FPE. The digestibilities of DM (p<0.05), OM (p<0.05), crude protein (p<0.01), and NFE (p<0.01) increased quadratically with increasing amount of FPE supplement, and sheep fed 5 and 10 g/kg diets had greater (p<0.05) DM, OM, and NFE digestibilites than the Control treatment. By increasing FPE supplement concentration, N intake (p<0.01) and fecal N (p<0.05) increased linearly, whereas retained N (p<0.05) and retained N ratio (p<0.05) increased quadratically. The retained N was maximized (p<0.05) in sheep fed 5 and 10 g/kg diets. The mean rumen pH was not affected by FPE supplement, but there was a quadratic increase (p<0.05) of mean rumen ammonia N concentration and a linear increase (p<0.01) in mean rumen total volatile fatty acid (VFA) and acetate concentrations. The mean concentration of rumen propionate in sheep fed all FPE supplemented diets was greater (p<0.05) than the Control, but the mean ratios of rumen acetate to propionate in sheep fed 5 and 10 g/kg diets were lower (p<0.05) than that of Control sheep. In conclusion, FPE supplemented at 5-10 g/kg of concentrate improved feed intake, the digestibilites of OM and NFE, N metabolism, and rumen fermentation indices of sheep.

신규 분리된 Mychonastes sp.의 생장, 지방산 및 색소 생산에 생장배지가 미치는 영향 (Effect of Culture Media on Production of Biomass, Fatty Acid, and Carotenoid in a Newly Isolated Mychonastes sp.)

  • This study examined the growth, fatty acid (FA) content, and carotenoids of a newly isolated freshwater microalga, Mychonastes sp. 246, in various culture media. The appropriate temperature and light intensity for culturing Mychonastes sp. 246 were determined as 18℃-22℃ and 200-250 µmol/m2/s using a high throughput photobioreactor. The microalgal cells were cultivated in 0.5 L bubble column photobioreactors using BG11, Bold's Basal media, and f/2 media. According to the growth results of the microalgae, BG11, among the tested media, showed the highest biomass concentrations (3.5 ± 0.1 g/L in 10 d). To enhance the biomass growth of the microalgae, the N:P ratio in BG11 was manipulated from 45:1 to 7:1 based on the stoichiometric cell composition. The biomass concentrations of Mychonastes sp. 246 grown on the manipulated BG11 (MBG) increased to 38% (4.6 ± 0.3 g/L in d) compared with the original BG11 (3.3 g/L). The FA content of the microalgae grown on the MBG was lower (8.4%) than that of the original BG11 (10.1%) while the FA compositions did not exhibit any significant differences. Furthermore, three kinds of carotenoids were identified in Mychonastes sp. 246, zeaxanthin, lutein, and β-carotene. These results suggest an effective strategy for increasing biomass concentrations, FA content, and carotenoids of microalgae by performing a simple N:P adjustment in the culture media.

Xylooligo당이 고콜레스테를 식이 횐쥐에서 간조직 HMG-CoA Reductase 활성과 지질 초성에 미치는 영향 (Effects of Dietary Xylooligosaccharides on HMG-CoA Reductase Activity and Lipid Cmposition of Liver in Rat Fed High Cholesterol Diets)

  • 고콜레스테롤 식이 횐쥐에서 xylooligo당이 간장에서의 콜레스테롤대사에 미치는 영향을 관찰하였다. 실험동물은 100$\pm$10g의 Sprague-Dawley 횐쥐를 이용하여 정상 식이군과 1% 고콜레스테롤 실험군으로 나누고 다시 실험군은 1%의 고콜레스테롤 식이에 xylooligo당을 0%, 5%, 10% 및 15% 농도 첨가군(C, C5XO, C10XO 및 C15XO군)으로 나누어 4주간 자유섭식시킨 후 콜레스테롤 대사 개선효과를 알아보았다. 간조직중의 중성지방과 콜레스테롤함량은 정상군에 비해 C군에서는 각각 3.9배, 20배씩 증가되었으며 C군에 비해 C10XO군은 거의 절반으로 감소되었다. 간조직의 HMG-CoA reductase 활성은 정상군에 비해 C군은 45% 감소되었으나, xylooligo당 공급군에서는 정상군 수준이었다. 간조직중의 지방산 조성은 oleic acid( $C_{18:1}$)과 linoleic acid( $C_{18:2}$)은 정상군에 비해 C군에서 유의적(p<0.05)으로 증가되었고, ara chidonic acid( $C_{20:4}$)는 감소되었으나 xylooligo당 공급으로 증가되었다. 총포화지방산(SFA)은 정상군에 비해 고콜레스테롤 식이로 인해 감소되 었으나, xylooligo당 공급으로 정상화되었다. 고콜레스테롤군에서는 총 단일불포화지방산(MUFA)은 증가되었으나, xylooligo당 공급으로 감소되었다. 항혈전지수인 n-3/n-6 지방산 비는 정상군에 비해 C군에서 감소되었으나, xylooligo당 10% 공급군에서는 C군에 비해 유의적으로 증가하였다. 결론적으로 식이 xylooligo당은 고콜레스테롤 식이로 인한 고콜레스테롤 혈증이나 고지혈증의 위험인자인 콜레스테롤을 감소시킬 수 있는 콜레스테롤 대사 개선 기능이 우수하므로 기능성 식품 신소재나 식이섬유의 대용품으로도 활용될 수 있으리라 생각된다.다.
