The morphological and chemical characteristics of leaves and fruits were observed in the three mulberry varieties, including Daeryugppong(Morus Lhou(Ser.) koidz), Kugsang 20(Morus Lhou(Ser.) koidz) and Cataneo(Morus alba L.). The leaf development in spring was earliest in Cataneo and latest in Kugsang. Content of total nitrogen and Mg in leaf was the highest in Cataneo while that of P2O5, K and Ca in Daeryukppong. Flowers started to bloom from May 8 and in full bloom around May 15. Mature fruits began to set from June 10 to 15 and lasted by July 10 in Cataneo. Average fruit weight was heaviest in Kugsang 20(3.52 g/fruit), while lowest in Daeryukppong(1.61 g/fruit). In fruits, glucose and fructose were the major sugars. Citric acid was the most abundant organic acid in three varieties with its average content from 0.8 to 0.14%. The major pigment in fruit was anthocyanin and its content varied among varieties. The stability of anthocyanin was evaluated under various pH, temperature, and sugar concentrations. Rutin was the major flavonol glycoside present in fruits and its content varied from 0.92 to 3.36 mg/gDW. Other flavonol glycosides such as isoquercitrin and quercitrin were also detected in fruit.

In this study, the hot water extract from Mulberry (Morus alba) Leaves fermented with Hericium erinaceum mycelium (MA-HE) was assessed for antioxidant activity. Radical scavenging activity of MA-HE evaluated using 2,2-diphenyl-1-picrylhydrazyl(DPPH) radical and 2,2'-azino-bis(3-ethyl-benzothiazoline-6-sulfonic acid)(ABTS) radical. MA-HE showed 63% DPPH radical scavenging activity at $500{\mu}g/mL$ and 98.27% ABTS radical scavenging activity at $250{\mu}g/mL$. MA-HE was shown to significantly inhibited DNA strand breakage induced by free radical. MA-HE also inhibited free radical-mediated human serum albumin modification. MA-HE effectively inhibited $H_2O_2$ induced cell death and significantly increased of the 8% cell survival at $100{\mu}g/mL$. MA-HE decreased intracellular reactive oxygen species (ROS) levels in $H_2O_2$-treated cells. The results suggested that MA-HE can contribute to antioxidant and protected cells from oxidative stress-induced cell injury.
This study examined the quality characteristics of dumpling shells prepared with 0, 2, 4, 6, and 8% mulberry leaf powder. According to the amylograph data, the composite of mulberry leaf powder-wheat flour samples reduced the gelatinization temperatures, viscosities at $95^{\circ}C$, and maximum viscosity with increasing mulberry leaf powder content. The lightness (L) and redness (a) values decreased with increasing mulberry leaf powder content, whereas the yellowness (b) value increased. In addition, the weight, volume, and turbidity increased after cooking. In terms of the textural characteristics, addition of mulberry leaf powder increased the hardness, springiness, cohesiveness, chewiness, and adhesiveness. The DPPH free radical scavenging activity of the dumpling shells increased significantly (p<0.05) with increasing levels of mulberry leaf powder. The taste, chewiness and texture of the dumpling shells prepared with added 4% mulberry leaf powder were preferred. The sensory evaluation showed that the overall preference of the dumpling shell with the addition of 4% mulberry leaf powder was more effective than the control.

Mulberry fruit is a new income product in Korea sericulture due to the increase of fruit consumption. However, flavonoids of Korean mulberry cultivar for fruit production did not reported yet. In this study, the typical mulberry cultivar, 'Daeshim' was analyzed using ultrahigh performance liquid chromatography coupled with diode array detection and quadrupole time-of-flight mass spectrometry (UPLC-DAD-QTOF/MS) technique for flavonoids analysis. Nine flavonoids were isolated and analyzed from Daeshim using UPLC-DAD-QTOF/MS chromatogram. According to quantitative analysis, rutin (66.1 mg/100g DW) and quercetin 3-O-(6"-O-malonyl) glucoside (26.7 mg/100g DW) were abundant in mulberry fruit. Our results might be used as basic information for mulberry consumption.
This study examined the quality characteristics of cookies prepared with mulberry leaf powder (0, 1, 3, 5, and 7%) substituted for flour. The pH of the cookie dough decreased significantly in response to the addition of all levels of mulberry leaf powder. The spread factor of the cookies also increased significantly with increasing mulberry leaf powder content added to the cookies recipe. In addition, the Hunter's color L and a values decreased significantly with increasing mulberry leaf powder content, whereas the b value increased. According to hardness measurements, the substitution of 1~7% mulberry leaf powder resulted in increased hardness compared to the control. Moreover, the DPPH free radical scavenging activity of the cookies was increased significantly (p<0.05) with increasing levels of mulberry leaf powder. The sensory evaluation revealed cookies containing 3% to have the highest scores.
Flower buds of the mulberry(Morus alba L., Morus bombycis Koidz.) were cultured under different conditions such as basal media, and various concentrations of plant growth substances. Effects of the culture conditions on growth of the buds and organ regeneration were investigated and the result obtained are as follows: Murashige and Skoog(M.S.) medium was more effective on budding and growth of female(Keomseolppong) and male(Kaeryangppong) flower buds isolated directly from branches, compared to Greshoff & Doy(G.D.) and Wolter & Skog(W.S.) media. The growth of the female buds was promoted at higher concetration of benzyl amino purine(BAP) i.e., 2.0ppm. The female and male buds cultured after cuuting for seven days showed better growth than those without cutting treatment. The females and the males bloomed to form healthy stigmas and anthers, respectively, when cultured on M.S. media containing high Kinetin with low concentration of indole acetic acid(IAA).

Peroxidase activity was measured in brown leaf spot pathogen (Myrothecium roridum) inoculated potted mulberry (Morus alba) during pre-symptomatic to various symptom development stages and compared with corresponding healthy leaf tissues. The enzyme showed a pH optimum of 7.0 and the activity was linearly increased up to 15 min of incubation. The peroxidase had a broad substrate specificity and the rates of oxidation were in the rank of pyrogallol> guaiacol> ascorbate at pH 7.0. Catechol at 10 mM inhibited 89% of guaiacol-peroxidase and 76% pyrogallol-peroxidase activities, indicated higher non-specific peroxidation in pyrogallol dependent assay system in mulberry than guaiacol. The optimum requirement for the guaiacol dependent assay was 0.2 ml (${\approx}40-60{\mu}g$ equivalent of protein) of crude enzyme source. Excepting the 8th leaf from the apex, the peroxidase activity did not vary appreciably in different leaf positions. In pre-symptomatic phases, an initial (1 to 5 min) rise of peroxidase activity was noticed in inoculated leaves, and then maintained a plateau up to 300 min. In contrary, non-infected tissue showed a slightly increased trend of enzyme level up to 420 min. In infected tissue, a sharp transient increase (3.1 fold) of peroxidase activity appeared between 300 - 420 min post infections. Afterwards, significantly different but steady maintenance of enzyme levels were observed in two treatments. On the other hand, during symptom development, a sharp increase in peroxidase activity was noticed up to 4th grade of lesion appearance (25.1 % to 50% of leaf area infection), and then declined slightly. However, in non-infected but same age healthy leaves, such huge fluctuations of enzyme level did not apparent. A high positive correlation $(R^2=0.92)$ between peroxidase activity and leaf spot development grades was also marked. The result implies that pre-symptomatic burst (between 1 - 5 and 300 - 420 min) and subsequent increased trend of guaiacol peroxidase activity may require for the symptomatic manifestation of Myrothecium leaf spot in mulberry.

Mulberry root bark is one of potential plant sources for antioxidant materials which can be used for the relief of oxidative stress. To explore the effects of solvent type and temperature on the structural characteristics and antioxidant activity of the root bark extracts, we prepared various extracts of mulberry root bark (Morus alba L.) using 0 - 100 % ethanol (EtOH) at RT - 100℃. EtOH concentration and temperature critically affected the extraction yields, the content of bioactive components, and antioxidant activity of the extracts. Use of high content of EtOH solvent and low temperature resulted in the low extraction yield. Meanwhile, it was revealed that the extract prepared using absolute EtOH at room temperature contained polyphenols and flavonoids with the highest contents among other extracts. Interestingly, the temperature differently affected the polyphenol and flavonoid contents according to the solvent types. In the case of 30% EtOH solvent, polyphenol and flavonoid contents increased with an increase in temperature, whereas in the case of 70 and 100 % EtOH, these contents decreased. Using the radical scavenging assay, it was confirmed that the 100% EtOH extracts had higher antioxidant activity compared to distilled water (DW) extracts regardless of temperature. Also, heating might extract more antioxidant components from the root bark. Especially, the extract prepared using 30% EtOH solvent at 100℃ showed the highest antioxidant activity. Taken together, these experimental results imply that the extraction parameters should be designed carefully considering the productivity, the extracted bioactive components, and antioxidant activity.

We bred a mulberry cultivar named Shimgang, through local adaptability test, which is under registration as a new cultivar for fruit production. Local adaptability test had been carried out at four local places(Suwon, Chuncheon, Buan and Jinju) for five years from 2011. This variety 'Shimgang' belongs to Morus Microphylla Buckl. selected from seedlings imported from USA. Shimgang was resistant to popcorn disease and high yielding variety in fruit productivity by 111% compared to control cultivar 'Shimheung(Morus alba L.)' for three years. Although fruits of 'Shimgang' was smaller in size and lower in sugar content of mulberry fruits, it showed stronger resistance than that of 'Shimheung'. It is adaptable to every where except the places where cold and late frost damage happen frequently.
This study was performed to investigate the antioxidant activities and the whitening effect of mulberry (Morus alba L.) root bark extracts. The antioxidant activities of water and 70% ethanol extracts of mulberry root bark were 65.8% and 87.0% in the DPPH assay at $1,000\;{\mu}g/ml$ ; 89.3% and 77.1% in the ABTS assay at $1,000\;{\mu}g/ml$. Xanthine oxidase inhibition of water and 70% ethanol extracts were 100% and 96.2% at $1,000\;{\mu}g/ml$. Nitric oxide radical inhibition of water and 70% ethanol extracts showed 43.5% and 53.0% at $500\;{\mu}g/ml$, and it was similar to the BHA effect(43.8%). Tyrosinase inhibitory activities of water and 70% ethanol extracts were 79.6% and 93.5% at $1,000\;{\mu}g/ml$. These results confirm that mulberry root bark has the great potential to be a cosmeceutical ingredient with a natural antioxidant and a skin-whitening effect.
