Carcass and Meat Characteristics and Gene Expression in Intramuscular Adipose Tissue of Korean Native Cattle Fed Finishing Diets Supplemented with 5% Palm Oil

  • We hypothesized that supplementing finishing diets with palm oil would promote adipogenic gene expression but depress stearoyl-CoA desaturase (SCD) gene expression in intramuscular (i.m.) adipose tissues of Hanwoo steers during fattening period (from 16 to 32 mon of age). Fourteen Hanwoo steers were allotted randomly to 2 groups of 7 steers based on initial BW and fed either a basal diet (control) or the basal diet supplemented with 5% palm oil (BDSP). At slaughter, i.m. adipose tissue was harvested for analysis of adipogenic gene expression and fatty acid composition. There were no differences in BW or average daily gain between treatment groups. Supplemental palm oil had no effect on carcass quality traits (carcass weight, backfat thickness, loin muscle area, or marbling scores) or meat color values. Palm oil increased (p<0.05) expression of AMP-activated protein kinase-${\alpha}$ and peroxisome proliferator-activated receptor-${\gamma}$, but decreased (p<0.05) CAAT/enhancer binding protein-${\beta}$ gene expression and tended to decrease stearoyl-CoA desaturase gene expression in i.m. adipose tissue. Palm oil increased total i.m. polyunsaturated fatty acids (p<0.05) compared to the control i.m. adipose tissue, but had no effect on saturated or monounsaturated fatty acids. Although there were significant effects of supplemental palm oil on i.m. adipose tissue gene expression, the absence of negative effects on carcass and meat characteristics indicates that palm oil could be a suitable dietary supplement for the production of Hanwoo beef cattle.

Comparison of Nutrient Intakes Regarding Stages of Change in Dietary Fiber Increasing for College Students in Kyunggi-Do (경기 일부지역 대학생의 섬유소 섭취 행동단계에 따른 영양소 섭취상태 비교)

  • This study was conducted to compare nutrient intakes regarding stages of change in dietary fiber increasing behavior. Subjects were consisted of healthy 383 college students (2S0 females and 133 males) in Kyunggi-Do. Stages of change classified by an algorithm based on 6 items were designed each subjects into one of the 5 stages: precontemplation (PC), contemplation (CO), preparation (PR), action (AC), maintenance (MA). Nutrient intakes were assessed by 24-hr recall method. Regarding the S stages of changes, PR stage comprised the largest group $(39.4\%)$, followed by AC $(33.7\%)$, MA$(14.6\%)$, PC$(7.6\%)$, CO$(34.7\%)$. Female were more belong to either AC or MA. The higher stage of change in dietary fiber increasing behavior, the higher self-efficacy. In all male and female, there were no differences in energy, protein, monounsaturated fatty acids, polyunsaturated fatty acids and cholesterol intakes across the 5 stages. But, fiber, postassuim (K), vitamin A and vitamin C intakes of AC or MA were higer than those of PC, CO and PR $Energy\%$ from fat of $PR(25.4\~26.5\%)$ was higher than $20\%$, and those of AC and MA was lower than the other groups. Dietary P/S and ${\varepsilon}6/{\varepsilon}$ 3 ratios of AC and MA were similar to the recommended ratio. Female of PR had the most total saturated fat and palmitic acid and those of MA had the least. Male of PR had the least $\alpha-LNA\;({\varepsilon}3)$ and total ${\varepsilon}3$ fatty acids and those of MA had the most. In male and female in AC or MA, fiber and K intakes from breakfast, dinner and snack and vitamin C intakes from all meals were higher than those of the other stages. These results of our study confirm differences in stages of change in fiber intake in terms of nutritional status. To have lower $energy\%$ from fat, higher intakes of K, fiber and vitamins, desirable ratio of dietary fatty acids, it needs consistent nutritional education leading to the AC or MA of fiber increasing behavior.

Effects of Organic Amendments on Soil Microbial Community in Red Pepper Field (시용 유기물의 종류가 고추 재배지 토양 미생물상에 미치는 영향)

  • Diverse organic amendments available in local areas have been used to improve soil quality in red pepper field and so the need for investigating the soil chemical and biological properties changed by the organic amendments application is increasing. Soil microbial diversities were measured by phospholipid fatty acid (PLFA) and Biolog $EcoPlate^{TM}$. Compost was most effective for improving soil chemical properties including pH, EC, total nitrogen, P, K, and Ca, and bark increased soil organic matter significantly (P=0.05). Compost increased the fatty acids indicating actinomycetes and vascular arbuscular fungi, and ratio of cy19:0/18:1w7c and monounsaturated fatty acids/saturated fatty acids in soils in PLFA analysis. Bark increased soil fungal indicators in PLFA analysis (P=0.05). Principal component analysis of Biolog EcoPlate data and PLFA differentiated the compost- and bark-amended soils from other organic matteramended soils especially the soil incorporated with compost. More researches are needed to use bark for improving soil microbial properties because the soil chemical and microbiological properties caused by compost and bark are significantly different.

Xiang Study: an association of breastmilk composition with maternal body mass index and infant growth during the first 3 month of life

  • BACKGROUND/OBJECTIVES: This study aimed to establish a mother and child cohort in the Chinese population, and investigate human breastmilk (HBM) composition and its relationship with maternal body mass index (BMI) and infant growth during the first 3 mon of life. SUBJECTS/METHODS: A total of 101 Chinese mother and infant pairs were included in this prospective cohort. Alterations in the milk macronutrients of Chinese mothers at 1 mon (T1), 2 mon (T2), and 3 mon (T3) lactation were analyzed. HBM fatty acid (FA) profiles were measured by gas chromatography (GC), and HBM proteomic profiling was achieved by matrix-assisted laser desorption/ionization time-of-flight (MALDI-TOF) mass spectrometry (MS). RESULTS: During the first 3 mon of lactation (P < 0.05), significant decreases were determined in the levels of total energy, fat, protein, and osteopontin (OPN), as well as ratios of long-chain saturated FA (including C16:0, C22:0 and C24:0), monounsaturated FA (including C16:1), and n-6 poly unsaturated FA (PUFA) (including C20:3n-6 and C20:4n-6, and n-6/n-3). Conversely, butyrate, C6:0 and n-3 PUFA C18:3n-3 (α-linolenic acid, ALA) were significantly increased during the first 3 mon (P < 0.05). HBM proteomic analyses distinguished compositional protein differences over time (P = 0.001). Personalized motherinfant analyses demonstrated that HBM from high BMI mothers presented increased total energy, fat, protein and OPN, and increased content of n-6 PUFA (including C18:3n-6, C20:3n-6 and n-6/n-3 ratio) as compared with low BMI mothers (P < 0.05). Furthermore, BMI of the mothers positively correlated with the head circumference (HC) of infants as well as the specific n-6 PUFA C20:3n-6 over the 3 time points examined. Infant HC was negatively associated with C18:0. CONCLUSION: This study provides additional evidence to the Chinese HBM database, and further knowledge of FA function. It also helps to establish future maternal strategies that support the healthy growth and development of Chinese infants.

Effects of Corn Distiller's Dried Grains with Solubles on Production Performance and Economics in Laying Hens (옥수수 주정박이 산란계의 생산성 및 경제성에 미치는 효과)

  • A 10-wk layer feeding trial was conducted to investigate the effects of high quality corn distiller's dried grains with solubles (DDGS) on performance, egg qualities, and yolk fatty acid composition. The economics of using DDGS in the Korean situation was also analyzed. A total of 216 Hy-line Brown layers, 23-wk of age, were employed in this trial consisting of three dietary treatments (0%, 10%, and 20% DDGS), and six replicates per treatment. All experimental diets were prepared as iso-protein (17%) and iso-calorie (2,780 kcal/kg). The use of DDGS up to 20% in layer diets did not affect the feed intake, laying rate, egg weight, and feed conversion ratio (P>0.05). At 5th and 10th wk of the trial, the eggshell color, albumen height, and Haugh unit were not influenced by the DDGS supplementation. At 5th wk of the trial, the eggshell qualities, like eggshell weight, eggshell thickness, and eggshell strength, were not affected by the DDGS feeding; however, these eggshell qualities were decreased at 10th wk due to the 20% DDGS feeding (P<0.05). Yolk color of DDGS 20% increased compared to DDGS 0% at 5th and 10th wk of the trial (P<0.05). At 10th wk, yolk/egg ratio of DDGS 20% decreased compared to DDGS 0% (P<0.05). The yolk fat content was not changed due to DDGS feeding. The monounsaturated fatty acid content of yolk decreased linearly by feeding DDGS (P<0.05). The yolk polyunsaturated fatty acid content of DDGS 20% increased significantly compared to DDGS 0%. The DDGS feeding was not found to affect the degree of yolk fat unsaturation. The cost of feed (₩/kg feed) decreased as the level of DDGS increased. The production costs of egg (₩/kg egg) were cheap in the order of DDGS 10%, DDGS 20%, and DDGS 0%, indicating that DDGS is a viable alternative feed ingredient to corn and soybean meal. In conclusion, high quality DDGS ($L^*$ 61.72) could be used economically up to 20% level without any harmful effect on laying performance: however, the use of DDGS up to 10% is more economical than DDGS 20%.

Taxonomical Characterization and Antimicrobial Activity of Red Pigment-Producing Marine Bacterium Strain JE-34 (적색색소를 생산하는 해양미생물 JE-34 균주의 분류학적 특성 및 항균활성)

  • A red pigment-producing bacterial strain was isolated from sediment sample of the East China Sea. The isolate was identified by analysis based on 16S rDNA sequence and morphological, physiological properties, biochemical characteristics and fatty acid composition. Phylogenetic analysis based on 16S rDNA sequence showed that isolate represent a phyletic lineage within the genus Zooshikella, and this strain was most closely related to Zooshikella ganghwensis KCTC $12044^T$ (AY130994) (99.79%). The strain was Gram-negative, aerobic and required NaCl at 0.5~8.0% for growth. The predominant cellular fatty acids were saturated and monounsaturated straight-chain fatty acids. Consequently, this strain was identified as a member of the genus Zooshikella and designated as Zooshikella sp. JE-34. The pigment showed characteristics similar to prodigiosin, a well-known red pigment previously detected in Serratia marcescens. The antimicrobial activity of Zooshikella sp. JE-34 bacterial pigment was tested against 18 microorganisms, which were fish and human pathogens. The Zooshikella sp. JE-34 red pigment showed high antimicrobial activity against Streptococcus iniae, S. parauberis, S. mutans, Staphylococcus aureus, and Propionibacterium acnes.

Meat Quality and Nutritional Properties of Hanwoo and Imported Australian Beef (한우고기와 호주산 냉장수입육의 육질 및 영양성분 비교)

  • This study was conducted to investigate the proximate composition, meat color, Warner-Bratzler shear force (WBS), total collagen content (%), cooking loss (CL), fatty acid composition, amino acid composition, and mineral content of loin, strip loin, top round, and chuck tender Hanwoo beef and imported Australian beef. Protein content was significantly lower for strip loin and loin of Hanwoo QG $1^+$ and 1 beef when compared to that of Australian black Angus or cross beef (p < 0.05), whereas it was not significantly different for top round and chuck tender. Intramuscular fat content was higher for QG $1^+$ Hanwoo beef strip loin (15.48%) than that in Australian cross beef (8.83%) and it was also higher in loin for QG $1^+$ (17%) and 1 (15.52%) Hanwoo beef than that in Australian Angus beef (10.59%) and cross beef (9.21%) (p < 0.05). The CIE $L^*$ value was significantly higher for Australian cross beef strip loin than that of Hanwoo beef but the CIE $a^*$ value was not significantly different between the same cuts from different origins. However, CIE $b^*$ values were significantly higher for the Australian cross beef than those for four cuts of Hanwoo beef and Australian Angus beef (p < 0.05). No significant difference in WBS of loin, top round, or chuck tender was observed among the different beef sample origins except that strip loin had significant higher WBS for Australian cross beef (3.02 kg) but lower for Australian Angus beef (2.13 kg). Australian cross beef contained significantly higher palmitic acid, stearic acid, linolenic acid, but lower palmitoleic acid, oleic acid, eicosenoic acid content in strip loin, loin, and top round than those of QG $1^+$ and 1 Hanwoo beef (p < 0.05). QG $1^+$ Hanwoo beef had significant lower saturated fatty acid and higher monounsaturated fatty acid content than those in Australian cross beef (p < 0.05). Hanwoo $1^+$ beef had more glycine in top round and chuck tender, whereas Hanwoo QG 1 beef and Australian Angus beef had higher cysteine, methione, and glycine levels in strip loin and loin and valine and leucine in top round and chuck tender than the same cuts of Hanwoo $1^+$ beef (p < 0.05). No significant differences were observed for Ca, Fe, or Zn content among the different beef samples.

Quality improvement and aging effect of beef by low-temperature treatment of non-preferred parts of beef (비선호 부위 소고기의 저온처리에 의한 품질향상 및 소고기의 숙성효과)

  • In this study, quality improvement of beef was attempted according to the low temperature treatment and aging period of grade 1 compared to grade 1++ beef. The fat content and shear force of beef grade 1++ were 13.03% and 114.26N, but beef grade 1 was 3.21% and 149.67N. Meanwhile, after low-temperature treatment of grade 1 beef at -26℃ for 12 hours and low-temperature aging at 0 ℃ for 14 days, the shear force was greatly reduced to 87.85N, improving overall preference, softness, dripping gravy, flavor, and chewing texture. The essential free amino acid content was as low as 22.17mg/100g in grade 1++ beef, but the contents were high at 41.31~45.11mg/100g in three samples of grade 1, and there was no change in content according to cold treatment conditions. As a specific component of beef, Taurine was 30.94~34.41mg/100g, and the difference in content was small according to beef grade, but Anserine and Creatine were low at 19.68mg/100g and 70.01mg/100g in beef grade 1++ and high at 26.38~31.23mg/100g and 154.09~167.26mg/10g in beef grade 1. The content ratio of oleic acid (c18:1)/stearic acid (c18:0) as an monounsaturated fatty acid/saturated fatty acid ratio was low at 5.29 for grade 1++ beef, but high at 6.13~6.78 for grade 1 beef. In addition, there was no trend in the content ratio of these fatty acids according to the low-temperature treatment conditions and aging period in beef grade 1. As a result of this study, it was possible to improve the quality of beef grade 1 by low-temperature treatment at -26 ℃ for 12 hours and then aging at 0 ℃ for 14 days.

Quality Characteristics, Changes in Physiochemical Properties and Functional Properties of Camembert Cheese Containing Red Ginseng Powder

  • Effects of quality, physicochemical properties and antioxidants in Camembert cheese added with red ginseng powder (RGP) were investigated. Cheese samples were prepared with 0.05%, 0.10%, 0.15% and 0.20% RGP. and then monitored during ripening at $14^{\circ}C$ for 28 d. The pH of the RGP amended treatment groups increased during the ripening period relative to the control (p<0.05). Moreover, the 1,2-Diphenyl-1-picrylhydrazyle (DPPH) was highest in the 0.15% RGP group from 21 d to 28 d. $ABTS^+$ radical scavenging activity was increased just like DPPH as the ripening period passed, 0.10% treatment was highest at from 7 d to 21 d. 0.15% RGP was contents of ginsenosides : 10,999.7 ppm. The Free fatty acids (FFA), controls with 0.15% treatment, while the total fat (TF) and monounsaturated fat (MuSF) were higher in the control than the 0.15% RGP group (p<0.05). The total free amino acid (FAA) was increased in the control, and 0.15% RGP, and control was highest at then 0.15% RGP. The samples had average contents of fat and protein were 29% and 18-20% respectively. Additionally, the $L^*$ value decreased, while the $a^*$ and $b^*$ values increased as the amount of RGP added increased. Sensory evaluation revealed that texture and total acceptability were higher in the control group at 12 d. Although the addition of RGP did not exert a better effect on the ripening of the camembert cheese, but the ripening grade was similar to that of the common camembert cheese, and the additional function of the cheese was reinforced. Functional cheese could be developed.

Effect of Enteral Nutrition Supplementation on Glucose Metabolism in patients with NIDDM (인슐린 비의존형 당뇨병 환자에서 영양음료 섭취가 혈청 당질에 미치는 영향)

  • This study investigated the effect of enteral nutrition supplementation on glucose and lipid metabolism in non-insulin dependent diabetes mellitus(NIDDM) patients(n=29). Nutrition formula(400kcal/day) were supplied daily for eight weeks as a substitute for a snack or a meal. Subjects were divided into three groups based on changes of fasting blood glucose(FBG), glucose response area(GRA) on oral glucose tolerance test(OGTT), before and after intake of nutrition formula : group 1(the group of a decrease in FBG and GRA, n=20), group 2(the group of a decrease in FBG and an increase in GRA, n=4), and group 3(the group of an increase in FBF and GRA, n=5). Before nutrition supplementation, group 3 showed a longer tendency of DM duration and a lower tendency of insulin and C-peptide response are than those of group 1 and 2. At 8 weeks after nutrition supplementation, group 1 showed a significant increase in insulin and C-peptide response areas but group 2 and 3 showed no change in those areas. After nutrition supplementation, all three groups showed a tendency of decrease in glycated hemoglobin and no significant changes in the levels of serum triglycerides, HDL, LDL, total cholesterol, albumin, transferrin, creatinine, GOT and GPT. The results suggest that using an enteral nutrition formula in NIDDM patients is a good substitute for a meal or snack and could improve blood glucose control without any changes in lipid levels, and liver and kidney functions. The beneficial effect of nutrition supplementation on glycemic control resulted from components of nutrition formula had such as additional fiber and high monounsaturated fatty acid as the source of fat to be helpful 세 glycemic control in diabetics.
