산화정도와 단백질 첨가에 따른 산화 옥수수 전분 겔의 유동특성 (Effect of Protein and Degree of Oxidation on Viscoelastic Behavior of Corn Starch Gel)

  • Viscoelastic behavior of oxidized starch gel, modified with sodium hypochlorite (NaOCl) and the adding effects of protein in oxidized starch gel was studied by dynamic viscoelastic measurement. The storage modulus(G′) of starch gel increased with the increase of starch concentration. They showed higher value when starch suspension was treated to 95$^{\circ}C$ rather than 85$^{\circ}C$. Consistency of starch gel was decreased over 1.0% active Cl/g starch when heated to 95$^{\circ}C$, which means that the swelling of starch granules increased with concentration of NaOCl and showed more sensitive against shear. As the extent of oxidation increased, starch granules were easily destroyed. Therefore, it is hard to separate between compartment of leached-out amylose and that of amylopectin, which means that the ability of gel formation was reduced. When oxidized starches were gelatinized in presence of soy protein and sodium caseinate, it was found that G′ decreased, and frequency dependence of G′ and G" increased with the increased degree of oxidation in starch. The reduce of starch-protein interaction was thought to be through the dissociation of the branched amylopectin, which playa leading role in protein interaction, with the oxidation of starch.

  • Fillers have been used for printing paper to improve printability, sheet formation and optical properties and to reduce production costs by replacing expensive wood pulps. However, an increased filler content will decrease paper strength because filler particles interfere with fiber-fiber bonding. In order to increase filler content without sacrificing too much paper strength in high filler content papers, the surface of precipitated calcium carbonate (PCC) has been modified by adsorbing anionic polyacrylamide and cationic starch in series. The adsorbed polymer layers would enhance interactions between the filler surface and the fiber surface, improving internal bonding. It was found that the modified PCC increased paper strength at a given filler content compared to the coventional method. Negligible differences in optical properties and formation of paper, filler and fines retention and drainage on the wire section were observed between the modified and the conventional PCC. However, the decreased bulk of paper was observed when the modified PCC was used.

하이드록시프로필화 후 가교화시킨 복합변성 쌀 전분의 이화학적 특성 (Physiochemical Properties of Dual-Modified (Hydroxypropylated and Cross-linked) Rice Starches)

  • 치환제인 PO 농도(2%, 6%, 12%)를 달리하여 제조한 하이드록시프로필화 쌀전분에 가교제인 $POCl_{3}$ 농도(0.005%, 0.02%)를 달리하여 처리한 HPCL 쌀전분을 제조하고, HPCL 쌀전분의 용해도, 팽윤력, pasting 특성 및 열적 특성을 연구하였다. 팽윤력은 일반 쌀전분 보다 다소 낮은 온도에서 증가되기 시작하였으나 그 이후는 모두 낮은 수치를 보여 HPCL 쌀전분이 일반 쌀전분보다 완만한 상승을 나타내었다. 용해도는 HPCL 쌀전분이 일반 쌀전분보다 전체적으로 낮은 값을 나타내었다. 한편 PO 함량이 증가할수록 팽윤력과 용해도 모두 증가하는 경향을 나타내었다. RVA pasting분석 결과, HPCL 쌀전분의 경우 일반 쌀전분보다 최고 점도는 낮아졌고 holding strength와 finalviscosity는 높은 경향을 나타내었으며, breakdown은 낮아지고 setback은 높은 것으로 나타났다. 열적 특성 분석 결과 HPCL 쌀전분의 경우 일반 쌀 전분보다 낮은 $T_{o}, T_{p}, T_{c}$${\Delta}H$를 나타내었으며, $POCl_{3}$ 함량이 적을수록 감소폭이 더 큰 것으로 나타났다. 따라서 HPCL 쌀전분의 경우 RVA pasting 특성은 PO 첨가량, 즉 하이드록시프로필화에 따른 영향이 크다고 볼 수 있고 DSC 열적특성은 하이드록시프로필화 및 가교화 모두 영향을 미치는 것으로 생각된다.

  • Structural modification of corn starch by gamma irradiation was evaluated for under dry conditions at varied intensities from 0 to 40 kGy. Under scanning electron microscopy, the granule shape of corn starch was not significantly affected by the irradiation up to 40 kGy. In addition, X-ray diffraction and melting patterns of the irradiated starches were similar to those of the native starch, indicating that crystalline regions in the starch granules were not changed by irradiation. However, the pattern of gel permeation column chromatography showed a significant increase in partial hydrolysis of gamma irradiated starch samples. The degree of polymerization and the paste viscosity of irradiated starch samples dose-dependently decreased significantly with irradiation, and increased solubility and clarity were observed in the irradiated starch solution. In addition, the degree of retrogradation decreased as irradiation dose increased. Irradiation of corn starch has advantages over the ordinary acid or the enzyme hydrolysis modification methods. It does not affect the granular shape and crystalline phase of starch during hydrolysis, and the process can be carried out in dry state.

$IO_4$-산화 가용성 전분에 의한 파파인의 변형 (Modification of Papain with $IO_4-Oxidized$ Soluble Starch)

  • Periodate-oxidized soluble starch was reacted with papain at pH 4.0, pH 7.0, and pH 9.7, and an oxidized soluble starch-papain conjugate was produced. When compared with native papain, the specific activity decreased to 60%, in both the modified papain reacted with 0.4% $NaBH_4$ and in the modified papain not reacted with $NaBH_4$. The specific activity decreased to 70% in the modified papains reacted with 1.5% $NaBH_4$ and 4.0% $NaBH_4$, respectively. The reduction by $NaBH_4$ did not have an effect in the thermal stability of either the modified or nonmodified papain. An activity of 54.7% remained in the papain modified at pH 4.0, which was incubated at $80^{\circ}C$ for 40 min. The papains modified at pH 7.0 and pH 9.7 and incubated for 40 min at two different temperatures, respectively, were stable to $60^{\circ}C$, and at $80^{\circ}C$ their activities at 56.3% and 44.1 %, respectively. The modified papain's thermal stability pattern was similar to that of native papain, with no increase in its statbility. In the range of pH $2.0{\sim}13.0$, the stability of the papain modified at pH 4.0 decreased greatly between pH $3.0{\sim}5.0$, but it was similar to the native papain at other pH values. The stability of the papain modified at pH 7.0 showed a similar pattern to the native papain at pH $2.0{\sim}6.0$, while its stability increased when moving into the alkali pH range. The papain modified at pH 9.7 also had increased stability, when moving into the alkali range. The results of Hammerstein milk casein, which was reacted with the papains modified at pH 4.0, pH 7.0, and pH 9.7, respectively, and analyzed by FPLC, showed different peaks according to the different modification pHs, and the greatest peak differences were observed with the modification at pH 9.7.

옥테닐호박산나트륨 전분의 이화학적 특성 (Physicochemical Properties of Octenylsuccinated Corn Starch)

  • Octenylscuccinated corn starches prepared by reaction of corn starch with 1-octenylsuccinic anhydride(OSAn) and their degree of substitution (DS), reaction efficiency(RE), residual octenylsuccinic acid (OSA), and physicochemical properties were compared with those of the native corn starch. DS increased with increase of OSAn and RE was much nearly the same regardless of increased of OSAn. The content of residual of residual OSA was significantly lower than that of regulation of food additives. And as washing frequency of dispersion of the reactant was increased, the content of residual OSA of octenylsuccinated starch was decreased. Raid Visco-Analyzer initial pasting temperature and setback of octenylsuccinated starches decreased whereas peak viscosity and breakdown increased. When DS of octenylsuccinated starches increased, temperature of initial gelatinization of octenylscuccinated starches drastically decreased. The octenylsuccinated starches also formed clearer pastes. The solubility was much nearly the same regardless of increase of DS at 7$0^{\circ}C$ but the swelling power increased 1.2~1.7 times higher than that of native corn starch at 7$0^{\circ}C$. The water binding capacity of octenylsuccinated starches also decreased.

Physicochemical Characteristics of Acid Thinned and High Pressure Treated Waxy Rice Starch for Yugwa (Korean Rice Snack) Production

  • The acid modification of waxy rice starch was conducted to improve the yugwa production process. The intrinsic viscosity, paste viscosity, and differential scanning calorimetry characteristics of acid modified starch were measured, and bandaegi and yugwa prepared from acid modified starch were evaluated. The intrinsic viscosities of acid thinned starches were 1.48, 1.27, 1.15, and 0.91 mL/g after reaction times of 1, 2, 3, and 4 hr, respectively. The gelatinization enthalpy was reduced from 16.3 J/g in native starch to 15.8, 15.3, 14.7, and 14.5 J/g in acid thinned starches as the time of acid thinning increased. The peak viscosity and final viscosity decreased with increasing the time of acid thinning, but the pasting temperature was slightly increased in acid thinned starches. The hardness of bandaegi from acid thinned starches under high pressure greatly decreased relative to the control, typical yugwa. Yugwa from acid thinned starch under high pressure maintained a homogeneous structure containing tiny and uniform cells similar to that of native waxy rice starch used for typical yugwa. Acid thinning under high pressure appears to be a good alternative to the existing steeping process for better yugwa quality.

초미세분쇄를 이용한 옥수수 변성전분의 물리적 특성 변화 구명 (Investigation of Physical Property Change in Modified Corn Starch by Ultra Fine Pulverization)

  • 본 연구는 초미세분쇄기술을 이용하여 옥수수전분의 입자구조파괴가 이루어졌을 때 분자구조적, 물리적 변화가 어떻게 이루어지는지를 구명하고자 하였다. 초미세 분쇄처리 후 옥수수전분의 평균직경은 약 50% 감소가 이루어졌으며 비표면적은 567% 증가하였다. 초미세분쇄처리 전 후의 옥수수전분에 대한 분자량분포를 GPC로 측정한 결과 분쇄 후 저분자량의 Peak II의 면적이 21.0%에서 86.5%로 상승하였다. 손상전분 함량은 각각 9.63%와 83.57%로 초미세분쇄처리에 의하여 크게 증가하였다. 옥수수전분의 경우는 겔(gel)을 형성하였으나 초미세분쇄처리 후에는 전분의 분쇄과정에서 전분입자파괴와 아울러 옥수수전분의 분자량이 저분자화 되면서 겔 형성능력이 크게 저하되었다.

가교화 후 효소처리(CLE) 찹쌀 전분의 물리화학적 특성 (Physicochemical Properties of Cross-linked and Partially Enzymatically Hydrolyzed (CLE) Waxy Rice Starch)

  • 찹쌀 전분을 가교화 후 4가지 상업용 ${\alpha}$-amylase 효소와 반응시켜 CLE 찹쌀 전분을 제조하고 이들의 이화학적 특성을 연구하였다. CLE 찹쌀 전분의 팽윤력 및 용해도는 천연 찹쌀 전분에 비해 다소 증가되는 경향을 보였다. 등온흡습곡선에서는 CLE 처리에 따른 수분 감소현상을 보였으나 유의적인 차이는 없었다. RVA특성을 검토한 결과 Termamyl과 Liquozyme으로 처리한 찹쌀 전분은 전반적으로 효소에 의한 가수분해가 강하게 진행되어 온도에 따른 점도의 변화가 크게 나타나지 않았으며, Fungamyl과 Kleistase로 처리한 찹쌀 전분은 효소에 의한 가수분해가 상대적으로 미약하게 진행되어 가교화에 의한 특성을 더 많이 나타내었다. DSC 열적 특성의 경우 호화개시온도, 호화종결온도 그리고 호화온도범위, 호화 엔탈피 모두 각 전분간에 유의적인 차이가 나타나지 않았다. X-ray 회절 분석 결과 또한 CLE 찹쌀 전분과 천연 찹쌀 전분 모두 A형의 결정 형태를 나타내었고, 상대적 결정화도의 차이가 나타나지 않는 것으로 보아 가교화 및 가교화후 효소처리가 찹쌀 전분의 결정형영역에는 영향을 주지 않는 것으로 보여진다.

단호박을 이용한 반고형 이유식의 제조 (Preparation of Semi-solid Infant Foods Using Sweet-pumpkin)

  • 호박을 이용한 반고형 이유식을 제조하기 위하여 단호박과 늙은호박을 각각 마쇄하거나, 찌거나, 데친 후 각각을 체에 내리고 가열하여 puree를 만들고, 이들의 수분함량, 점도, 색도, $\beta$-carotene 함량, riboflavin 함량, ascorbic acid 함량을 측정하고, 관능검사를 실시하였다. 단호박퓨레가 호박퓨레보다 수분 함량이 적었고, 점도, Hunter L, a, b 색도, $\beta$-carotene 함량, riboflavin 함량은 높았다. 관능검사를 실시하여 단맛과 전체적인 선호도가 높은 찐 단호박 퓨레를 이유식의 주원료로 선택하였다. 변성전분의 혼합비율이 증가할수록 호화개시온도는 낮아지고 최고점도는 증가하였다. 찐 단호박 퓨레에 변성전분, 쌀가루, 유제품을 혼합하여 제조한 이유식은 살균과정에서 색도의 변화는 적었으나 점도가 증가하였는데 변성전분 3%를 혼합한 이유식은 점도가 안정하였다. 전체적인 선호도가 찐 단호박퓨레 40%, 쌀가루 7%와 전지분유 3%, 물 50%를 혼합한 단호박 이유식이 가장 높았다.
