Quality Characteristics in Mash of Takju Prepared by Using Different Nuruk during Fermentation (누룩 종류를 달리하여 담금한 탁주 발효과정중 술덧의 품질특성)

  • The characteristics of mash qualities of takju prepared by using different nuruk (Korean-style bran koji) such as Mucor racemosus nuruk, Rhizopus japonicus nuruk, Aspergillus oryzae nuruk, Aspergillus kawachii nuruk and traditional nuruk were investigated during fermentation. At the begining of fermentation, ethanol content was in the range of $2.0{\sim}3.0%$. However, it increased to $8.2{\sim}12.6%$ after 16 days of fermentation. Takju made from Rhizopus japonicus nuruk showed higher ethanol content than treated otherwise. pH of takju made from Rhizopus japonicus nuruk showed higher value the others. Total acids were $0.15{\sim}0.20%$ at the begining of fermentation, and it increased to $0.086{\sim}1.57%$ after 16 days of fermentation. Total sugar were $16.64{\sim}17.62%$ at the begining of fermentation, but decreased to below 7.00% after 16 days of fermentation. Rhizopus japonicus nuruk showed the lowest level of total sugar content. Except ethanol, iso-amyl alcohol and iso-butyl alcohol were major part of minor alcohol in the mash of takju. Higher concentration of iso-amyl alcohol, iso-butyl alcohol and n-propyl alcohol were found in the mash of Rhizopus japonicus nuruk whereas the level of phenylethyl alcohol was high in the mash of traditional nuruk. Fusel oil was $0.002{\sim}0.411\;mg/mL$ during fermentation.

  • LAS-system ceramic powder, spodumene ($Li_2O{\cdot}Al_2O_3{\cdot}4SiO_2$), was successfully synthesized by a chemical solution technique employing PVA(polyvinyl alcohol) as an organic carrier. The PVA content affected the microstructure of porous precursor gels and the crystalline development. The optimum PVA content contributed to homogeneous distribution of metal ions in the precursor gel and it resulted in the synthesis of glass free $\beta$-spodumene powder having a specific surface area of $7.57\;m^2/g$. The agglomerated $\beta$-spodumene powders were also enough soft to grind to fine powders by a simple ball milling process. The microstructures of the densified powder compacts were strongly dependant on the minor phases of spodumene solid solution and amount of liquid phase, which were formed from the inhomogeneous precursors.

  • Reduction of (${\pm}$)-3-ketoproline ethyl ester (1) by $NaBH_4$ in the presence of $CaCl_2$ and $MgCl_2$ as the chelating agents gave selective products cis-3(R/S)-alcohols, while reduction by $NaBH_4$ alone or chelated with $NiCl_2$ and $AlBr_3$ gave mixtures of cis- and trans-alcohols. The reduction of (${\pm}$)-1 by various vegetables however, gave exclusively the cis-alcohol as the major and trans-alcohol as the minor. On the contrary, reduction of (${\pm}$)-1 by carrot afforded a mixture of cis- and trans-alcohols, in which the trans-alcohol exists as the major product. In addition, we found that this biocatalyst selectively converted S-enantiomer of (${\pm}$)-1 to the cis-alcohol, and R-enantiomer to a mixture of cis- and trans-alcohols with cis-alcohol as the major product. This fact prompted us to use various fresh plant tissues for stereoselective reduction of diverse types of pyrrolidinones, as its stereoselectivity towards racemic mixtures is higher compared to that using chemical reducing agents.

The Study on the Focus Group of Adolescent Alcohol Use (청소년 음주 예방을 위한 포커스집단 연구)

  • This study examines the current alcohol use situation among adolescents and provides information relevant to development of adequate prevention programs for adolescent alcohol use in Korea. In this study, we used focus group research method and analyzed the outcome with constant comparison method. We classified 4 major categories of adolescent alcohol use situation such as the factors on enhancing alcohol use, the factors on delaying alcohol use, the occasions significantly related to alcohol use and the first alcohol use experience of adolescent. And we found out 16 minor categories and 93 concepts under the major categories. The results from the study revealed that the factors on enhancing alcohol use were associated with adolescents' psychological reasons, their positive perceptions on alcohol, family factors, peer influences, teacher's influences and social and cultural aspects on alcohol in general. The factors on delaying alcohol use were associated with health conditions, their negative perceptions on alcohol, parental monitoring, economic reasons and their limited access to purchase alcohol. The occasions significantly related to adolescent alcohol use were family events, school events and peer gatherings. In addition, the first adolescent alcohol use experience was strongly associated with the peer influences and significant adults' offer of alcohol. Findings suggest recommendations for prevention and intervention programs for adolescent alcohol use in Korea.

Single Oral Dose Toxicity Study of an Alcohol Extract of Bumblebee, Bombus ignitus Larvae in Rats

  • The alcohol extract of the larvae of Bombus ignitus, otherwise known as the Bumblebee, was orally administered to rats at doses of 0, 0.04, 0.2, 1 or 2 g/kg as a single oral dose. There were no observed clinical signs or deaths related to treatment in all the groups tested. Therefore, the approximate lethal dose of the alcohol extract of B. ignitus was considered to be higher than 2 g/kg in rats. Mild decreases in body weight gain in male rats were observed dose-dependently within the B. ignitus treated groups over 2 weeks. Throughout the administration periods, no significant changes in diet consumption, ophthalmologic findings, clinical pathology (hematology, clinical chemistry and coagulation) or gross pathology were detected. Minor changes in male rats were found with in the hematological parameters in groups treated with the 0.04 g/kg, 1 g/kg or 2 g/kg of B. ignitus larvae extract, however, all the changes observed were within the physiological range. From these results, it was concluded that there was no evidence of specific toxicity related to the ingestion of alcohol extract of B. ignitus larvae.

Fermentation Characteristics of Jeju Foxtail Millet-wine by Isolated Alcoholic Yeast and Saccharifying Mold (제주좁쌀약주의 품질개선을 위한 선발균주에 의한 양조특성)

  • In order to improve foxtail millet wine, a traditional Jeju cereal wine, fermentation characteristics of millet Yakju with different types of Nuruks prepared using isolated Aspergillus sp. and Rhizopus sp. were investigated. When the millet wine was brewed with the Nuruk prepared in this study, the combination ratio of wheat flour: barley : wheat bran : millet = 8 : 1 : 1 : 0 (pellet) showed the highest level of alcohol concentration, and a more favorable score than Kuksundang Nuruk in sensory evaluation. The main organic acids in millet wine were lactic and acetic acids, and the minor organic acids were fumaric, oxalic, citric and malic acids. Analysis of sugar compositions showed that glucose, arabinose, and maltose were present in decreasing order, and that xylose was also detected. Flavor components of millet wine were mainly iso-amyl, iso-butyl and n-propyl alcohols. Ethylacetate and acetadehyde were also detected. The contents of iso-butyl and n-propyl alcohols were higher in the millet wine prepared with Kuksundang Nuruk than those prepared with other Nuruks.

Properties of Red Wine Fermented Using Freeze-Concentrated Muscat Bailey A Grape Juice (동결농축 Muscat Bailey A 포도 과즙으로 제조한 무가당 적포도주의 품질 특성)

  • Muscat Bailey A grapes, one of the major grape varieties in Korea, contain 18-20% (w/w) sugars, which is less than the amount required to make red wine. In the present study, fermentation of freeze-concentrated Muscat Bailey A grape juice to $24^{\circ}Brix$ was performed using several industrial wine yeasts, including Saccharomyces cerevisiae $OC_2$, S. cerevisiae Fermivin and S. cerevisiae W-3. During fermentation, changes in the levels of soluble solids, alcohols, and yeast viable counts were monitored. Wine quality parameters including organic acid, minor alcohol, sensory score, etc. were also analyzed. Alcohol contents reached maximal levels after 9 days of fermentation, and were 12.6% (v/v) when Fermivin was used and 13% (v/v) when strains $OC_2$ and W-3 were used. No major difference between strains was apparent, except that Fermivin fermentation was somewhat slower in terms of both alcohol production and sugar consumption. Similar levels of soluble solids and total phenols were measured in wines fermented by each of the three strains. The total acid level of W-3 wine was high, whereas the alcohol content of Fermivin wine was low. Although the wines were variable in terms of acetaldehyde and minor alcohol contents, the levels of these materials were much lower than the limits set by the Korean National Tax Service. Upon sensory evaluation, $OC_2$ wine obtained the highest scores in terms of color, flavor, and overall acceptance. However, the best taste score was awarded to the Fermivin wine, which had the same flavor score as $OC_2$ wine but a slightly lower overall acceptance score.

  • Recently, as the male silkworm pupae, bee pupae have the potential that strengths men's vitality on vascular endothelial nitric oxide in endothelial cells. Especially we prepared alcohol extract of pupae of bumblebee, native bee named Hobakbul, Bombus ignitus. The alcohol extract of pupae of B. ignitus was administered to rats at doses of 0, 0.04, 0.2, 1 or 2 g/kg as a single oral dose. There were no observed clinical signs or deaths related to treatment in all the groups tested. Therefore, the approximate lethal dose of the alcohol extract B. ignitus pupae was considered to be higher than 2 g/kg in rats. Clinical Experience of Head-Injured Patients in the Rural Area (농촌지역에서의 두부외상 환자의 임상경험)

  • Objective : The incidence of head injury has been increasing in the rural area. The author investigated the clinical features and difficulties in care of the acute head-injured patients in this area. Method and Material : The authors performed a retrospective review of radiological data and clinical records in patients with mild to moderate head injury. Cause, type of craniocerebral injury, delayed intracranial lesions, complications, its relation to alcohol abuse, and outcome were analyzed. Results : In total of 68 cases, 20(29.4%) victims were associated with acute alcohol intoxication. Motor vehicle accident was the leading cause of head injury and the most common craniocerebral lesion was basilar skull fracture. Eight(11.8%) patients showed delayed radiological and clinical deterioration and 40(58.8%) were followed-up regularly after discharge. The subdural hygroma was commonly noted in the elderly and alcoholics. Causes of thirty events that resulted in an atypical and difficult neurosurgical practice were as follows : delayed admission, premature discharge against doctor's request, refusal of radiological studies and admission, misunderstanding of disease entity, and unreasonable desire of transfer to tertiary hospitals. Inaccurate initial diagnoses were made by emergency doctors in twenty patients. During the course of treatment, there were a few complications such as alcohol withdrawal, acute otitis media, cerebrospinal fistula, facial weakness, and posttraumatic seizure. Outcome was good in 60(88.2%) patients. Conclusion : Most of minor head trauma patients in this series have shown good results, but we have to consider some possible complications and delayed intracranial lesions in these patients that should be managed with special cautions with various kinds of treatment difficulties.

Polyvinyl-alcohol fiber-reinforced concrete with coarse aggregate in beam elements

  • The use of fibers has been commonly considered in engineered cementitious composites, but their behavior with coarse aggregate in concrete has not been studied significantly, which is needed to meet structural performance objectives for design, such as ductility. This research analyzes the behavior of fiber-reinforced concrete with coarse aggregate with 0.62%, 1.23%, and 2% PVA (Polyvinyl-alcohol) content, varying the maximum aggregate size. Tensile (direct and indirect) and compressive concrete tests were performed. The PVA fiber addition in coarse aggregate concrete increased the ductility in compression, especially for the fiber with a larger aspect ratio, with a minor impact on strength. In addition, the tensile tests showed that the PVA fiber increased the tensile strength of concrete with coarse aggregate and, more significantly, improved the ductility. A selected mixture was used to build short and slender reinforced concrete beams to assess the behavior of structural members. PVA fiber addition in short beams changed the failure mode from shear to flexure, increasing the deflection capacity. On the other hand, the slender beam tests revealed negligible impact with the use of PVA.
