Use of the viamin-mineral supplements markedly increased with the awareness of diet and health. Data were collected from the self-administered questionnaire of 450 free living elderly, 60 to 94 years old, in Korea, to assess the relationships between socioeconomic variables, beliefs about nutrition, and the factors affecting gupplements usage. In addition, vitamin-mineral intakes through the supplements were calculated, and compared with RDA. 44.9% of the subjects took the vitamin-mineral supplements, and significantly higher percentage of women(49.3%) than men(38.1%) took supplements(p<0.05). The higher the education level, monthly pocket money, the percentage of supplements consumption was higher. People living in large cities took more supplements than those in small cities. One of the mainly cited reasons for taking supplements was to maintain health. The most favored nutrient supplements used by the subjects were in the order of vitamin B complex, vitamin E and Calcium, and vitamin-mineral intake through the supplements were much greater than RDA and ranges of their intakes were very wide. Vitamin B1 and vitamin E were observed to consume excessive amount(63 times of RDA and 40 times of RDA, respectively). The reasons for supplementation were often inappropriate and unreliable sources of information were used. Thus nutritional understanding and education of the elderly peopled are needed in regard to the use of vitamin-mineral supplements, and the relationship between adequate diet and good health.
This study investigated associations between exercise habit and bone mineral density (BMD) and bone mineral content (BMC) in postmenopausal women. The BMD and BMC of the spinal skeleton was measured by dual energy x-ray absorptiometry. Exercise and energy expenditure of physical activity were estimated by questionnaire. For exercise activities, subjects were asked to identify all exercises they have participated in. The subjects were further asked to estimate the number of years of participation, the number of weeks per year, the number of times per week, and the number of hours per time. Subjects were then categorized into exercise (more than 3 times/wk, more than 30min per session exercise (n = 47) and nonexercise group (n = 72). Results indicated that there were no significant differences in BMD and BMC when comparisons were made between subjects in exercise habit, a general exercise group and a nonexercise control group. However, when exercise subjects were divided into weight-bearing and nonweight-bearing groups, significant differences were found. These results suggest that weight-bearing exercise positively influences bone mineral density and bone mineral content in postmenopausal women. Sedentary women should be encouraged to adopt a weight-bearing exercise to maintain the health of their skeletons. Exercise interventions are practical and feasible for healthy women and should be encouraged at the earliest possible age. Our findings lend support to recommendations for physical activity and weight-bearing exercise as a means of osteoporosis prevention.
The purpose of this study was to examine the effects of dietary protein and exercise on bone mineral density and bone mineral content of growing male rats. Forty male, Sprague-Dawley rats(age 21 days) were assigned to four groups that underwent 9 weeks of experimental treatment. Animals were assigned to one of two exercise treatments (treadmill running or sedentary). The exercise and nonexercise group were fed a diet containing casein or soy with rich isoflavones (3.4mg/g protein). The exercise group ran on a rodent treadmill(speed of 15m/min for 30min) three days per week during the 9-week study period. All rats were fed an experimental diet and deionized water ad libitum for 9 weeks. Total bone mineral density (BMD), total bone mineral content (BMC), total body calcium, spine BMD and BMC, and femur BMD and BMC were determined by using dual energy x-ray absorptiometry (FIXI-mus, GE Lunar Radiation Cooperation, Madison, WI, USA). The soy diet group appears to have a significantly higher total BMD/weight and total BMC/ weight, spine BMD/weight, spine BMC/weight, femur BMD/weight and femur BMC/weight compared to the casein group in nonexercise and exercise. The exercise group had significantly greater total BMD/weight and BMC/ weight, spine BMD/weight and BMC/weight, femur BMD/weight and BMC/weight compared to the nonexercise group when the protein source was casein. The exercise combined soy group had significantly greater total BMD/weight and BMC/weight, spine BMD/weight and BMC/weight, femur BMD/weight and BMC/weight, compared to the exercise combined casein group. The results indicate that exercise had a positive influence on bone mineral density and bone mineral content and soy significantly affect on bone mineral density and bone mineral content for the 9 weeks experimental period. It can be concluded that exercise combined with a soy diet is most beneficial for acquisition of spine bone mineral density in young growing male rats. This convincing evidence suggests that a change in life style such as increasing exercise and consumption of soy protein is a practical strategy for significantly reducing the incidence of osteoporosis.
This study was done to evaluate the effect of dietary calcium level (a diet which met 100% or twice the calcium level in AIN-76 diet) on preventing bone loss in ovariectomized rats. Forty Sprauge-Dawley female rats(body weight 200$\pm$5g)were divided into two groups. One group were ovariecotomized (Ovx) while the others received sham operation(Sham). Thereafter, each rat group was further divided into normal calcium diet(0.52%) and high calcium diet(1.04%) subgroups. All rats were fed on experimental diet and deionized water ad libitum for 8 weeks. The total body, spine and femur bone mineral densities and bone mineral contents were measured by Dual Energy X-ray Absorptiometry, Eight weeks following operation, ovariectomized rats fed a high calcium diet had a significantly higher total bone mineral content, total bone calcium content, spine bone mineral density, spine bone mineral content and femur bone mineral content than ovariectomized rats fed control calcium diet. The correlation between dietary calcium intake level and spine bone mineral density were positive, but there was no correlation between dietary calcium intake and femur bone mineral density. The findings from the present study demonstrated that bone loss due to ovarian hormonal deficiency can be partially prevented by a high calcium diet. Futhermore, these findings support the strategy of the use of a high calcium diet in the prevention of estrogen depleted bone loss(postmenopausal osteoporosis)
Previous studies have shown that plant-based vegetarian diets, which typically contain a variety of antioxidants and dietary fiber, help reduce the risk of heart disease, diabetes, obesity, and cancer. However, some studies have reported that vegetarian diets can lead to deficiencies in protein and trace minerals compared to non-vegetarian diets. This study was conducted to compare anthropometric measurements, blood parameters, dietary intake, and hair mineral status in long-term vegetarians (MV; moderate vegan, LV; lacto-ovo vegetarian) and non-vegetarians (NV). Thirty MV (12 males, 18 females; mean age, $50.58{\pm}5.05$ years), 15 LV (11 males, four females; mean age, $49.45{\pm}4.97$ years), and 30 NV (15 males, 15 females; mean age, $48.90{\pm}3.62$ years) participated. No significant differences were observed for age, height, weight, or body mass index, but body fat was significant lower in MV and LV males than that in NV males. White blood cell counts of MV, LV, and NV male subjects were significantly different. Dietary intake data showed that plant protein and plant iron intake were significantly higher in MV and LV than those in NV. Animal protein, animal fat, and animal iron intake were significantly higher in NV than those in MV and LV. A hair mineral analysis showed that calcium and iron were higher in the hair of MV and LV than those in NV. Zinc concentration in hair was not significantly different among the groups. The results suggest that vegetarian diets are adequate to sustain mineral status to at least the same degree as that of non-vegetarian diets.

Calorie, mineral content and amino acid composition of four japonica, seven $j{\times}indica$ and one waxy milled rice were analyzed. No significant differences in calorie, mineral content and amino acid composition were found between japonica and $j{\times}indica$ rice varieties. Only the variation of methionine among varieties was noticed. The most limiting amine acid of milled rices was lysine.
This study was performed to investigate the factors related to vitamin & mineral supplement use by the adolescents. Nine hundred and seventy-two adolescent boys and girls attending middle or high schools were chosen from various cities and rural communities in Korea. In this study, the factors affecting vitamin & mineral supplement use were analyzed from a self-administered questionnaire. It was found that vitamin & mineral supplements were taken by 31.3% of subjects. High school students(p<.01), female girl students(p<.001), and rural-dwellers(p<.001) took vitamin & mineral supplements more frequently than their complementing groups. The socioeconomic status of the family (p<.01), and supplement consumption by parents and siblings respectively affected the supplement use by the subjects(p<.001). Vitamin·mineral supplements were consumed more often in subjects who perceived their health as poor(p<.001), skipped breakfast(p<.05), and received nutritional information from books or magazines(p<.05). However, food habits and nutritional knowledge score of subjects did not affect vitamin & mineral supplement use. These findings suggest that adolescents take vitamin & mineral supplements commonly, and they tend to use supplements without prescription. Vitamin·mineral supplement consumption seems to be affected by general characteristics, health related variables, and meal management attitudes of subjects. Therefore, nutritional understanding and education are required in regard to the used of vitamin & mineral supplements, and the relationship between balanced diet and good health for the adolescents.
The aim of this study was to define an arginine effect when added to a diet. The influence of arginine supplements on bone mineral density and content were studied in young female Sprague-Dawley rats fed either an arginine supplemented diet or control diet. Twenty four rats (body weight $83{\pm}5g$) were randomly assigned to one of two groups, consuming casein or casein with supplemented arginine diet. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks. Bone mineral density (BMD) and bone mineral content (BMC) were measured using PIXImus (GE Lunar Co, Wisconsin, USA) in spine and femur 3, 6, and 9 weeks after feeding. The serum and urine concentrations of Ca and P were determined. Diet did not affect weight gain and mean food intake. The serum concentration of Ca and P were not changed by arginine supplementation. Urinary Ca excretion was significantly decreased by arginine supplementation. Spine BMD was significantly increased by arginine supplementation on 3 and 6 weeks after feeding. Femur BMD was significantly increased in the group of arginine supplementation on 3, 6, and 9 weeks. Rats fed the arginine-supplemented diet had better bone mineral content than did control diet rats in the experimental period. Therefore, arginine supplementation may be beneficial on spine and femur BMD increment in growing female rats. These are thought to be associated with an arginine-induced growth hormone release. The exact mechanism of this effect remains to be elucidated.
Data from the 2001 Korea Health and Nutrition Examination Survey, a nationally representative, cross-sectional survey, were analyzed to assess prevalence of health intended food use overall and in relation to socio-demographic and lifestyle characteristics. Health intended food were classified into four broadly defined categories: vitamin and mineral supplements, health aid food, animal protein based restorative food and medicinal plants. Thirty three percent of adults aged 20 years or older reported taking health intended food in the past year : twenty four percent took vitamin or mineral supplements and medicinal plants were taken by 17 % of adults, health aid food by 15% and animal protein based restorative food by 6%. In multivariate logistic regression, female gender, older age, more education, regular exercise and non smoking were associated with greater use of vitamin or mineral supplements. Dietary quality was significantly associated with use of vitamin or mineral supplements or health aid food but not with use of medicinal plants or animal protein based restorative foods. Obese persons were less likely to take vitamin or mineral supplements. These findings suggest that epidemiologic studies of diet, demographic or lifestyle and health take health intended food use into account because of high prevalence of use of the food by the population and differential use of the food by socio-demographic and lifestyle characteristics.
To investigate the effects of dietary patterns on bone mineral density and its biochemical markers among Korean healthy college women for 2 years, 34 female college students were recruited through convenience sampling. Bone mineral density was measured using Dual Energy X-ray Absorptiometry (DEXA) twice at baseline and two years later. Osteocalcin and parathyroid hormone were measured in fasting serum and N-teleopeptides of type collagen (NTx) in urine. Dietary intake was assessed by 24-hour recall method 8 times with average 4-month interval. Dietary patterns with percent energy of each food group using cluster analysis were classified into two groups. The first cluster (n = 16) was characterized with high consumption of bread, snack, fast foods, beverage and considerable of rice so it was determined as 'Modified dietary pattern group'. The second cluster was characterized with high consumption of rice and kimchi so determined as 'Traditional dietary pattern group'. There were no significant difference of age, menarcheal age, body mass index but percent of body fat by pattern groups. The traditional group showed higher value of bone mineral density among lumber spine and all femur sites at baseline and 2 years later but it was not significant after adjusted for percent of body fat. Serum osteocalcin and urine NTx was higher among the traditional group at baseline than the modified group. There were similar proportions of carbohydrate:fat:protein between groups but significantly higher intake of protein, iron, vitamin A among the traditional group. In conclusion, there were two distinctive dietary patterns among Korean college women. There was difference of bone mineral density and its biochemical markers between two patterns. Further research would be necessary to explore the relationship between dietary patterns and health risks for larger-sized and various populations.
