The Color Measurement and Sensory Evaluation for the Accelerated Fish Sauce Products (속양(速釀) 어장유(魚醬油)에 대한 색(色) 측정(測定) 및 관능검사(官能檢査))

  • The color distribution of fish sauces was studied by using the change in log absorbance per 100nm as a parameter of color tone. A linear relationship was found between the logarithm of absorbance (log A) and wavelength at 450 nm to 650 nm in the color of fish sauces. Change in log A per 100nm $({\Delta}A)$ in the color of the fish sauce products was in the range of 0.55 to 0.59. Absorbance at 450 nm (A 450) of the fish sauce treated with soy sauce koji was high in comparison with A 450 of the fish sauce treated by pronase and control. The color of fish sauces treated with soy sauce koji was dark reddish orange, and was similar to the color of soy sauce. A 450 of every fish sauce increased with the progress of fermentation but ${\Delta}A$of the fish sauces slightly increased at the beginning of fermentation and then decreased at the end of fermentation. In the results of sensory evaluation for the flavor of fish sauce products, the fish sauce product treated with soy sauce koji that 20% salt was added at the first stage was the molt desirable in the strength of flavor, tastefulness and after taste, and the fish sauce was also the best in acceptability.

Effects of Yeast and Nuruk on the Quality of Korean Yakju (약주의 품질 특성에 미치는 효모와 누룩 첨가량의 영향)

  • Effects of rice varieties, fermentation temperature, nuruks and yeast on the quality of yakju (Korean traditional rice wine) were investigated. Among various yakju made by using some rice varieties, Chucheong yakju produced the highest ethanol of 18.9%. The maximum amount of ethanol was produced when 2% nuruk and 0.8% yeast were added to cooked Chucheong rice and fermented at $20^{\circ}C$ for 10 days. This Chucheong yakju also showed the best overall acceptability. Changes of physicochemical properties and sensory evaluation of the 3 kinds of Chucheong yakju made by cooked rice and uncooked rice and gruel rice were investigated during fermentation. Ethanol contents of uncooked rice- Chucheong yakju and gruel rice- Chucheong yakju were significantly increased from 10.6% and 9.9% after 3 days fermentation to 17.1% and 17.2% after 7 days fermentation. Sensory evaluation revealed the gruel rice - Chucheong yakju was the best in total acceptability with sweety and refreshing tastes.

A Study in Packing of Changran-Jeotgal -1. Shelf-life of a Jar Packing in Changran-Jeotgai- (창란젓갈의 포장에 관한 연구 -1. 병포장 젓갈의 품질유지기한-)

  • Quality variation of jar packing of Chanran-Jeotgal produced by improved process and conventional process were investigated during storage at 10, 20, and $30^{\circ}C$, respectively. The increasing rate of pH, volatile basic nitrogen (VBN), $CO_{2}$, and viable cell counts of Chanran-Jeotgal produced by improved process was slower than that of conventional process at all storage temperature. Also the result of sensory evaluation indicate that the production of Changran-Jeotgal by improved process may extend the shelf·life of jar packing Chanuan-Jeotgal. From above results, relationship between quality parameters was concluded. In case of Changran-Jeotgal in a jar, pressure, pH, L-value, VBN and sensory score were highly correlated. Therefore, these parameters are expected to use as shelf-life indication.

Storage Stability of Corns Irradiated by Gamma-Ray (감마선 조사한 옥수수의 저장 안정성)

  • Physicochemical, microbiological, and sensory properties of corns irradiated by gamma-ray at 1.2 kGy, 10.1 kGy or 30.5 kGy were investigated every 40 days during the storage at 25$^{\circ}C$ and 50% relative humidity. The moisture content of irradiated corns decreased and crude lipid content increased during the storage. Acid values of the irradiated corns were not significantly different from those of the nonirradiated corns but acid values generally increased during the storage. TBA values of irradiated corns increased in proportion to the irradiation dose and to the storage period. Numbers of mesophilic and psychrotrophic bacteria in the nonirradiated corns and 1.2 kGy dose-irradiated corns were higher than those in the corns irradiated at 10.1 kGy and 30.5 kGy at the late storage. The number of yeasts and molds in the nonirradiated corns were higher than those in the irradiated corns during the storage. In Hunter's color, L values of irradiated and nonirradiated corns decreased with the storage period and b values of all groups decreased except the group irradiated at 30.5 kGy. In sensory evaluation, fresh corn odor of the irradiated group was significantly different from those of the nonirradiated one stored for only 0 day and 200 days but raw corn odor and acidic odor were not significantly different among the groups depending upon the radiation dose and storage period.

Processing Conditions for Low-Salted Squid Jeotkal (저식염 오징어젓갈 제조 조건)

  • Low-salted and fermented squid products, squid jeotkal was prepared and fermented at $10^{\circ}C$. During fermentation of squid, microbiological and chemical changes were examined. Sensory evaluation was also carried out. After 20 days of fermentation, taste and flavor of the squid jeotkal containing $10\%$ NaCl were proven to be the best; in contrast, the jeotkal with $7\%$ NaCl exhibited the highest sensory score. At the period showing the best flavor and taste, viable cell count reached to $10^8/g$. Throughout the fermentation period, types of microorganisms isolated were significantly different in squid jeotkal of different salinity. In general, protease producer and bacteria producing components of jeotkal-flavor and organic acids more likely contributed to producing the jeotkal of the best quality. pH of the squid jeotkal with $10\%$ salinity maintained under pH 7.0 throughout the fermentation periods; however, in the case of the jeotkal with $7\%$ salinity, pH increased over pH 7.0 after day 25. Similar tendency was observed in the results from VBN and hypoxanthine formation. Total nitrogen was decreased as fermentation proceeded; in contrast, total free amino acids were increased.

  • The purpose of this study was to investigate the effect of marination condition(immersion and tumbling) on quality characteristics of cured pork meat and sensory properties of pork jerky. Pork meat was immersed for 1, 6, 12, 24, and 48 hours or tumbled for 10, 20, 30, and 60 minutes with curing solution. The jerky was made from cured pork meat immersed for 6, 12, 24, and 48 hours or tumbled fer 10, 20, 30, and 60 minutes. The curing yields and water holding capacity in immersion and tumbling treatments were increased as marination time increased, and the curing yields of tumbling treatments were higher than those of immersion treatments, but water holding capacity was not. The pH value of all treatments were not significantly different. CIE $L^*$- and $b^*$-value of immersion treatments were significantly decreased as marination time increased, but CIE $a^*$-value were increased. Objective color of tumbling treatments showed a similar tendency with those of immersion treatment. The sensory properties of pork jerky were not significantly different between immersion and tumbling treatments.

The Effects of Gamma Irradiation on the Microbiological, Physicochemical and Sensory Quality of Peach (Prunus persica L. Batsch cv Dangeumdo) (감마선 조사에 의한 복숭아의 미생물학적, 이화학적 품질 및 관능적 품질 변화)

  • The effect of gamma irradiation ($0.5{\sim}2$ kGy) on the microbiological, physicochemical and sensory properties of peaches was investigated during 6 day storage at $20{\pm}3^{\circ}C$. Total aerobic bacteria, yeasts and molds significantly decreased with increasing dose level. In Hunter's color values, L-values decreased and a- and b-values increased with increment of irradiation dose level. Hardness significantly decreased with increment of irradiation dose level whereas pH, soluble solid, and total polyphenol contents increased with increment of irradiation dose level. DPPH (1,1-diphenyl-2-picrylhydrazyl) radical-scavenging activity of irradiated peach was higher than that of control and its activity increased with increment of irradiation dose level. Vitamin C content was not affected by irradiation. In sensory test, overall acceptabilities of irradiated samples were higher than those of control. These results suggest that gamma irradiation on peach was effective for microbiological safety while improving the antioxidant activity, but not good on color and texture of peach.

Properties of Doenjang (Soybean Paste) Prepared with Different Types of Salts

  • Samples of doenjang (a fermented soybean paste) were prepared with different types of salts; purified salt (PS), 3-year-aged solar salt (SS3), 1-year-aged solar salt (SS1), and bamboo salt (BS, 3rd processing product). For starter doenjang samples, selected starters comprising two bacilli, one yeast, and one fungus were inoculated, whereas for non-starter doenjang samples, microorganisms present in rice straw were inoculated after enrichment. The doenjang samples were fermented for 13 weeks at 25℃. During the fermentation period, SS and BS doenjang samples showed higher bacilli counts as well as much lower yeast counts than PS doenjang. At 13 weeks, yeast counts of starter doenjang samples were 7.75, 5.69, 6.08, and 4.74 log CFU/g for PS, SS3, SS1, and BS doenjang, respectively. For non-starter doenjang samples, counts were 7.17, 5.05, 5.92, and 4.54 log CFU/g for PS, SS3, SS1, and BS doenjang, respectively. SS and BS promoted growth of bacilli but inhibited growth of yeasts compared with PS. Debaryomyces hansenii was the dominant yeast in PS doenjang, whereas Candida guilliermondii and Pichia sorbitophila were dominant in SS and BS doenjang. In the sensory evaluation, SS and BS doenjang scored better than PS doenjang. In conclusion, SS and BS seem better than PS for production of high-quality doenjang.

Studies on the Color Improvement of Doenjang (Fermented Soybean Paste) Using Various Aspergillus oryzae Strains (Aspergillus oryzae를 이용한 대두발효식품의 색상개량에 관한 연구)

  • The studies on the color improvement of the Doenjang (two types of fermented soybean paste : soybean Doenjang and modified Doenjang) using various Aspergillus oryzae strains (6 strains : A, B, C, D, E, F) were conducted with the series of experiments of enzymatic activities (pretense, $\alpha$-and $\beta$-amylase), browning color formation (Lovibond color), major chemical components (amino nitrogen, reducing sugar and others) and sensory evaluation (color, taste and odor). Aspergillus oryzae 2157 (C strain) had a high potential for the color improvement of Doenjang products and was identified as non-browning strain during Doenjang fermentation and storage period. And also this strain was appeared to be in good enzyme activities and flavor characteristics.

Optimal Fermentation Condition for Development of High Quality Pear Wine and Characteristics of Pear Wines (고품질 배 와인 제조를 위한 최적 발효 조건과 품질특성)

  • The goal of this study was to develop new functional pear wine using six Asian pears (Pyrus pyrifolia, Nakai), namely Wonhwang, Niitaka, Whangkeumbae, Whasan, Gamcheonbae and Chuwhangbae. To select optimal yeast and pear, we investigated the physicochemical properties of the pear wines from fermentation of musts of six pear cultivars at $25^{\circ}C$ for 7 days by several yeasts. $11.2%{\sim}12.4%$ of ethanol from musts of 'Wonhwang', 'Whangkeumbae' and 'Whasan' were produced by Saccharomyces cerevisiae K-7 and 12.8% of ethanol was also produced from 'Niitaka' by commercial Saccharomyces cerevisiae C-2. 9.9% and 11.4% of ethanol were produced from musts of 'Gamcheonbae' and 'Chuwhangbae' by Saccharomyces cerevisiae KCTC 7904, respectively. Among several pear wines, Niitaka pear wine showed the best acceptability in the sensory evaluation, and Niitaka pear wine and Whangkeumbae pear wine showed 31.1% and 27.8% of antihypertensive angiotensin I-converting enzyme(ACE) inhibitory activity, respectively. However, the other functionalities were not detected or very low. Furthermore, Niitaka-strawberry mixed fermentation wine was showed the excellent acceptability and high antihypertensive ACE inhibitory activity of 64.9%.
