탁아기관 급식을 위한 식단작성 전산 프로그램 개발 (Development of Computer-based Menu Planning Program for Day-Care Centers)

  • The purpose of the study was to develop computer-based menu planning program for day-care centers maximizing food preference score among children and satisfying such constraints as expense, nutrients, and season. Children's preference about 142 menu items was surveyed among 382 children of day-care centers. A 16-bit personal computer compatible with IBM-PC/AT was used. The data base files were created by dBASE III Plus, and processing programs were created by using FORTRAN language. Children preferred bread or a la carte menu items to cooked rice in main dish category. Deep fat fried or stir-fried menu items were more preferred than kimchi or cooked vegetables in side dish category. Preference scores for menu items were influenced by cooking methods or main ingredients. The contents of the computerized system show that when the program runs, the user should type inputs of cycle, season, and menu pattern, then the computer lists a series of menu satisfying the criteria of constraints. The user can examine and select a set of menu from the menu lists. Menus are generated seasonally. Menu lists are generated weekly and monthly basis with the contents of menu items, preference scores and price. Nutrient reports are also generated on a weekly and monthly basis with the contents of calories, 12 nutrients and price. Recipes for each menu items are also generated.

  • The purpose if this study is to analyze the psychological preference of Family Restaurants and their behavioral characteristic and its segmentation, positioning, new product development and marketing min. Result of analysis, index and type of MBTI psychological preference are related to Family Restaurant Choice attributes intimately. Specially, "Menu composition reflected restaurant image", and "Providing of corresponded value to price"were shows considerable difference according to psychological preference. And "Providing of the corresponded value to price"of Value, Price and Image Factor, indexes, types, including all the other aspects, shows the most considerable difference. Therefore, all market of Family Restaurant when inventing or designing a menu, they should consider restaurant′s concept and image to manage a menu, and keep in mind that all customer take "value"at up most importance.

효율적인 대학급식 관리체계 및 경영전략을 위한 소비자 태도 분석 (Assessing how the Yonsei University Foodservice is perceived by the students: Toward an effective strategy formulation)

  • The purposes of this study were to: (a) identify college students' patronage behaviors, (b) develop an instrument measuring the attitudes of University Students towards university foodservices management practices, (c) determine university students' attitude towards the four types of university foodservices, and (d) provide recommendations on marketing strategies for university foodservice. Questionnaires were hand delivered to 600 Yonsei University students by designated coordinators. A total of 549 questionnaires were usable; resulting in an 93.3% response rate. The survey was conducted between November 28 to December 4, 1995. Statistical data analysis was completed using the SAS Programs for descriptive analysis, T-test, ${\chi}^2$ test, ANOVA, Factor Analysis and Stepwise Multiple Regression. Most (88.3%) of students were patronizing university foodservices for lunch. Underground student foodservice (40.1%) and Restaurants outside the campus (33.7%) were primarily used for lunch and dinner respectively. Eighty six percent of university students had 1 to 2 meals per day at university foodservices. The reasons given by students for patronizing university foodservices were as follows: location, time, price, menu, taste. Most of the respondents were least satisfied with hygiene, taste, menu and atmosphere. Data indicated strong support for eight priori dimensions in terms of food, menu, atmosphere, hygiene, employee attitude, facilities and convenience. After the factor analysis, price, fast service and foodservice location attributes were rearranged, combined and created a new dimension called as 'access'. Three dimensions in terms of menu, hygiene, convenience were important to students although performance was perceived as poor through importance-performance analysis. Most of students were not satisfied with all four types of university foodservices. In terms of food quality and price which university foodservices offer, most of respondents were moderately satisfied. According to multiple regression analysis, 93.31% of the variance respondents' satisfaction score could be explained by food, menu, price, atmosphere, hygiene, employee attitude, facilities, and convenience dimensions.

  • 본 연구의 목적은 냉면전문점의 메뉴품질이 고객만족과 재구매의도에 미치는 영향을 분석하는 것이다. 이를 통해 향후 냉면전문점의 메뉴개발 연구를 위한 기초자료를 제시하고자 하였다. 수집된 자료는 SPSS 22.0과 AMOS 22.0 프로그램을 이용하여 분석하였다. 본 연구의 실증분석에 따른 결과를 요약하면 다음과 같다. 첫째, 메뉴품질은 음식의 맛, 메뉴의 독창성, 메뉴의 다양성, 메뉴의 가격 요인으로 분류되었다. 메뉴 품질의 음식의 맛, 메뉴의 독창성, 메뉴의 다양성, 메뉴의 가격 요인 모두 고객만족에 유의한 영향을 미치는 것으로 나타났다. 둘째, 고객만족은 재구매의도에 유의한 영향을 미치는 것으로 나타났다. 셋째, 고객만족은 메뉴품질과 재구매의도 사이에서 매개효과가 있는 것으로 나타났다. 본 연구는 연구결과를 통하여 메뉴품질, 고객만족 및 재구매의도를 향상시킬 수 있는 전략적 시사점을 제시하였다.

  • This study systemized the theories of promotion menu and surveyed the clients using hotel restaurants. This study has a goal of establishing marketing plans of development of the promotion menu by observing the choice attributes of promotion menu. The followings are the results of this study. First, the distinctiveness from the previous food appeared to be very important when selecting the promotion menu. Second, one of the big problems in the hotels is that unreasonable price. Third, most of the people get information on the promotion menu from newspapers and magazines. Fourth, a thorough training of the employees is needed and a high-quality incentive policy needs to be done.

호텔 연회장 이벤트 메뉴 선택 속성이 고객 만족에 미치는 영향 - P호텔을 중심으로 - (Influence of a Choice Attribute of Hotel Banquet Event Menu on Customer Satisfaction - Focusing on the P Hotel -)

  • 본 연구는 서울 지역 소재 특급호텔 연회장 레스토랑을 이용하는 고객들을 대상으로 이벤트 메뉴를 선택할 때 메뉴 선택 행동을 조사하고, 이벤트 메뉴를 선택할 때 고려 요인과 이벤트 메뉴에 따른 고객 만족을 분석하고자 한다. 분석한 결과를 기초로 호텔 연회장 레스토랑 지배인은 이벤트 메뉴를 기획하고 그 메뉴를 교체 시에 효율적으로 활용할 수 있도록 하는 방안을 제시하는데 목적이 있다. 이벤트 메뉴 선택 시 고려 속성과 고객 만족의 회귀분석한 결과, 독립 변수의 투입방식은 강제 투입 방식으로 엔터 분석법(Enter Method)을 사용하였으며, t값의 유의도에 의해 고객 만족에 영향을 미치는 변수로는 심리적 동기, 음식의 질, 합리적 가격 등 3개의 변수가 유의한 변수들로 판명이 되었다. 그러나 나머지 요인인 감각적 이미지, 메뉴의 구성, 프로모션 메뉴, 청결과 서비스 등 4가지 요인은 유의하지 않은 변수로 판명되었다. 따라서 고객 만족에 영향을 미치는 변수들 중 음식의 질의 $\beta$계수 값이 0.416으로 가장 크게 나타나 고객 만족에 가장 설명력이 높은 변수임을 나타내고 있으며, 심리적 동기가 0.283, 합리적 가격이 0.134 등의 순서로 고객 만족에 유의한 영향을 미치는 것으로 분석되었다.

대학교 기숙사 급식소의 이용실태 조사 및 운영형태별 서비스 품질 영역에 대한 고객 만족도 평가 (Evaluation of Customer's Patronage Behaviors and Satisfaction Levels towards Service Quality Dimensions of University Residence Hall Foodservice)

  • The purposes of this study were to : (a) analyze university students' perception and patronage behaviors to the service quality dimensions, and (b) assist university residence hall foodservices in formulating improved managerial strategies. Questionnaires were hand delivered and mailed to 1,210 university students residing in the residence hall and 13 foodservice managers. A total of 1,011 was usable; resulting in 83.6% response rate. The survey was conducted between October, 1998 and May, 1999. Statistical data analysis was completed using the SAS/Win 6.12 for Descriptive Analysis, $x^2-test$, T-test, ANOVA, and Stepwise Multiple Regression. Forty-seven percent of the respondents indicated that 'taste' was their first priority when choosing a menu. The reasons behind choosing residence hall foodservice were 'location', 'board plan', 'price', 'taste', 'opening hours', and 'menu variety'. The main reasons of dissatisfaction with the residence hall foodservice were 'board plan', 'taste', 'menu variety'. The overall satisfaction score was 2.99 out of 5. The satisfaction score of ${\ulcorner}convenience{\lrcorner}$, ${\ulcorner}food\;quality{\lrcorner}$ and ${\ulcorner}menu\;variety{\lrcorner}$were 3.25, 2.94 and 2.76, respectively. Generally, male students were more satisfied than females. Graduate students and students living in residence halls over six semesters were the most dissatisfied with the residence hall foodservice. Residence hall students were dissatisfied with the variables ${\ulcorner}menu\;variety{\lrcorner}$ and ${\ulcorner}facilities{\lrcorner}$in 'self-operated' operations, whereas ${\ulcorner}food\;quality{\lrcorner}$, ${\ulcorner}menu\;variety{\lrcorner}$ and ${\ulcorner}price{\lrcorner}$ in 'contracted' operations. Foodservice operations with 'less than 1,000 meals serving per day' was the highest satisfaction score(3.36) among other serving sizes. Meal price with 'less than 1,300 won' was most satisfied with students. When overall customer satisfaction and service quality dimensions were analyzed by Stepwise Multiple Regression ${\ulcorner}food\;quality{\lrcorner}$(p<.001), ${\ulcorner}price{\lrcorner}$(p<.001), ${\ulcorner}facilities{\lrcorner}$(p<.001), ${\ulcorner}convenience{\lrcorner}$(p<.001), ${\ulcorner}menu\;variety{\lrcorner}$(p<.001), ${\ulcorner}manager's\;attitude{\lrcorner}$(p<.0l), and ${\ulcorner}atmosphere{\lrcorner}$(p<.01), in decreasing order, significantly impacted on ${\ulcorner}overall\;customer\;satisfaction{\lrcorner}$.

이태리 메뉴와 요리품질이 고객가치 및 고객만족에 관한 연구 (A Study on Italian Menu and Its Quality Affecting Customer Value and Customer Satisfaction)

  • This study explored the quality of menu and customer value and satisfaction in Italian restaurants. From the result of the research, the menu and the quality of hotel restaurants had an important effect on the customer satisfaction, and the menu and its quality were closely related to each other. Specially, the price of the menu had an effect on the customer satisfaction directly. The customer value has a more direct effect than Italian menu and the importance of the menu perceived by the customers in Italian restaurants had a relatively less effect than the importance of menu information. In the result of the factor analysis, the more the menu was perceived appropriately, the better the customer value was. It was approved that Italian menu had positive (+) influence on the customer satisfaction. The more the quality of Italian cooking was perceived, the higher the customer value was. And the higher the customer value was, the better customer satisfaction was.

  • In accordance with changes in life style, people's desire to eat out is getting changed in their preferring factors from whether they can buy food they want to eat fast and easily to mood of the dining space, content and quality of service, hygiene condition of restaurant, quiet location and surrounding circumstance, and discount coupon and price destruction. In addition, consumers who begin to recognize the seriousness of environmental pollution prefer health-oriented food. On the other hand, excessive presence of competitors, growing personnel expense, increasing expenditure in accordance with swelling price of rent and material expenditure, increase of tax burden, decrease of income because of credit card service charge and high expected level by consumers make it difficult for restaurant's owners to manage restaurant business. Therefore, this study purposes to establish development of menu from the consumer's and the supplier's point of view and propose how to develop menu aiming at convenience, health and diversity.

대학식당의 이용실태 및 만족도 (Students' Attitude and Satisfaction towards University Foodservices)

  • The purpose of this study is to assess students' attitude and satisfaction of university foodservices. We conducted a survey for this study using questionnaires with 400 university students. A total of 344 students answered with a usable response rate of 86.0%. We performed a statistical data analysis using SPSS program for $X^{2}-test$ and t-test. Students visited university foodservices more frequently for lunch than for breakfast or dinner. Students' food choice depended on taste of food. The main reasons for using university cafeteria included 'a low price' and 'economy of time'. The prior complaint factor on university foodservices was 'taste of food'. Students were more satisfied with a price than other factors. They marked 'a variety of menu' as the least satisfied. The matters, such as 'more delicious food' and 'more various menu' were pointed out for improvement. In conclusion, developing tastier food and diversifying a menu are required to enhance the quality of university foodservices.
