IPA Analysis according to the Attributes of the Franchise Coffee Shop Selection of College Students in Busan (부산지역 대학생의 프랜차이즈 커피전문점 선택속성에 따른 IPA분석)

  • The aim of this study was to provide strategic implications for the coffee market in which competition got severer through IPA analysis based on the attributes of selection of a specialized franchise coffee shop. The results of a positive analysis conducted with undergraduates in their twenties were as follows: According to the evaluation of the importance of the attributes of selection of a specialized coffee shop, the most important were 'cleanliness and hygienic facilities inside the shop (6.09)' and 'taste and quality of the menu (coffee) (6.09)'. According to the performance analysis, those showing the highest performance were 'brand image (4.92)' and 'cleanliness and hygienic facilities inside the shop (4.92)'. According to the result of IPA analysis, what customers regarded as being the most important were 'taste and quality of the menu (coffee)', 'kindness of the staff', and 'cleanliness and hygienic facilities inside the shop', and, in fact, they showed great performances as well. However, 'price of the menu (coffee)' was regarded as being important but did not indicate a great performance; therefore, they showed dissatisfaction with it. Although they did not think 'environment around the shop', 'brand image', 'brand recognition' or 'interior size and scale of the shop' were important, the attributes did not appear to show great performances. Therefore, we need constant maintenance strate gies regarding the fact that consumers are considered to be very important for evaluation, and should make efforts to change the price in advance.

Menu quality Analysis in University Foodservice operated by Contracted Foodservice Management Company (위탁운영 대학교 급식소 메뉴의 품질 분석)

  • The purpose of this study was to analyse serving size, plate waste, and sensory evaluation on menu of university foodservice. This study was conducted in three restaurant of one university for 14 days, 1995. The serving size of food was measured by weighing machine. The plate waste of food was calculated by the aggregative selective plate waste measurement technique. Questionnaires of sensory evaluation were developed and hand-delivered at three restaurants. Rating criteria of sensory evaluation were appearance, taste, temperature, color, flavor, texture and overall quality. The plate waste of side dish were 35.5%, 42.5%, and 39.2% in A, B, and C restaurants. The plate waste of kimchi were 46.8%, 36.3%, and 55.9% in A, B, and C restaurants. So, university foodservice manager should concern quality of side dish and kimchi. The score of fried food in sensory evaluation was low. So, batch cooking was needed. The score of rice in sensory evaluation of C restaurants was very low. Therefore, steam ice cooker in C restaurants should be changed by gas automatic rice cooker.

  • The interface of computer software has to promote human-computer interaction. The one quality of interface to promote HCI should be evaluted with regard to user's information processing. The usability of interface is one of the main components of it's quality, and it is straightforwardly concerned with learnability, especially when users want to use a software at the first stage. In this paper, word processors, wide spreadly used in OA environments is studied in respect to menu structure on the interface. An cognitive menu structure is suggested by user's conceptual network of the main functions of word processor. Two word processors is selected to compare with the cognitive menu structure and to evalute learnabilities by teaming model.

Effects of Meat Country-of-Origin on the Consumer Evaluations of Restaurant Menus - Focused on University Students - (외식 메뉴의 식육 원산지가 메뉴 평가에 미치는 영향 - 대학생을 중심으로 -)

  • This study was designed to determine the effects of meat country-of-origin on the perceived quality, perceived risk, perceived value, and purchase intension of restaurant menu items. A total of 237 university students in Seoul were used in the final statistical analyses, which included factor analysis, ANOVA and Duncan's test. The results were as follows: First, in the case of perceived quality, the participants gave higher evaluations of restaurant menu items better when the origin of the foodstuff was Korea. Second, the effects of origin on perceived value were not statistically significant. Third, the effect of origin on the purchase intension of fried chicken was statistically significant, but the effects of origin on the purchase intension of boned rib and fillet were not statistically significant. Lastly, the limitations of this study and suggestions for further research are presented.

Middle School Boys' and Their Parents' Preference on Menu Types of School Breakfast in Gyeonggi Area (경기지역 남자 중학생과 학부모의 학교 아침급식 식단에 대한 유형별 선호도)

  • The purpose of this study was to investigate middle school boys' and their parents' preference on menu types of school breakfast. School breakfast was served at a boys' middle school in Gyeonggi-do, Korea for 7 weeks. Ten types of convenient menus, including steamed rice, rice porridge, rice cake, bread, or cereal, were served to 200 students free of charge. After the service period ended, questionnaires were distributed to the students and their parents. Usable questionnaires were returned by 142 (71%) students and 124 (62%) parents. About two-thirds (66%) of the students and about half (51%) of the parents preferred convenient menus to traditional menus as school breakfast. The students were the most highly satisfied with the menu type including hot dog buns whereas the parents regarded these as neither appropriate nor inappropriate as school breakfast. Overall, the menu types including steamed rice such as Kimbap or rice balls were highly ranked in terms of the students' level of satisfaction as well as the parents' level of appropriateness evaluation. About 20% of the students and 50% of the parents expressed intention to eat or make their children eat school breakfast even if payment is required. Over two-thirds of both the students (70%) and parents (68%) responded that less than 1,500 won per meal would be the appropriate price of school breakfast. The results of this study show that convenient menus could be considered as alternatives to traditional menus in school breakfast service, although additional efforts are necessary to develop such menus to satisfy both the students and their parents.

A Study on Designing of a Menu Structure for the Instrument Cluster IVIS using Taguchi Method (다구찌 방법을 이용한 Instrument Cluster 상의 IVIS 메뉴 설계에 대한 연구)

  • The growth of function in vehicle needs complex display and control system, the In-Vehicle Information System(IVIS). Although current IVISs are widely implemented in commercial vehicles, a new form of IVIS has been recently studied in order to reduce drivers' workloads. The purpose of this study is to suggest an appropriate menu structure of a new type IVIS, to be implemented on the instrument cluster panel, using Taguchi's parameter design. In the research, firstly, functions were selected that are appropriate to control through the instrument cluster among existing functions of current IVISs by quantitative evaluation of ergonomic principles. Then, menu structure alternatives were extracted by investigating priorities to those functions selected. Finally, menu structure alternatives were evaluated through an experiment and suggest the most appropriate one by applying Taguchi's parameter design. Taguchi method was used not only for planning an experiment but also evaluating alternatives. SN ratios were a key value to evaluate the alternatives and to find the most proper one. Through the research, the most appropriate menu structure for the instrument cluster IVIS was finally suggested among the alternatives and it is expected that the results of this research could provide a guideline to the instrument cluster IVIS.

Evaluation of Meals Students Consumed in College Foodservice (일부 서울지역 대학식당의 메뉴분석)

  • A survey was conducted in 591 college students using 8 different cafeterias serving 31 meals. The information was obtained about the name and amount of dishes they consumed from the menu offered by college foodservice. Mean nutrient contents per meal in offered menu were higher than 1/3 of RDA for their age, sex in offered menu. The mean energy content was 466kcal from rice, 113kcal from soup, 141kcal from side dish and 21kcal from kimchi. When side dishes were classified by cooking methods, side dishes using grilling, frying, roasting methods had high energy content and fat percent above 200kcal, 40% per dish. By main ingredients, side dishes with animal food were higher energy than with plant food. Students consumed 94% of the energy provided in offered menu. When compared to proportion of foods consumed by sex, there was 43% of female and 22% of male consumed less than half in soup and 31% of female and 12% of male in kimchi. The most prevalent menu patterns of subjects included rice, soup, 2 side dishes, kimchi and were the same in both sexes. Mean energy intakes per meal were 989kcal for males and 842kcal for females which were enough to meet 1/3 of RDA for their age and sex. Most nutrient intake except fat and vitamin B1 were higher in set menu than in cafeteria. Nutrient adequacy ratio(NAR) were above 0.9 except calcium and vitamin A. The mean energy intake was 542kcal from rice, 70kcal from soup, 164kcal from side dish and 20kcal from kimchi. In conclusion, intake of most of the nutrients of students obtained from males in college foodservice were sufficient but calcium intake was insufficient and fat content was above 20% of energy. High fat consumption was due to side dishes from frying, grilling, roasting with animal food. To provide desirable meals in college foodservice, use of fat in cooking must be decreased.

A Study on User Interface Enhancement for NEIS School Affairs Business System (교무업무시스템의 사용자 인터페이스 개선에 관한 연구)

  • The current user interface (UI) of NEIS school affairs business system is not efficient in conducting the business because of complicated data input forms as well as unharmonious connection between similar items and functional menu. In the paper, the term UI means a comprehensive concept including input/output, input/output related functionality, and menu configuration for users to perform their tasks. The first survey, carried out with one hundred teachers at three elementary schools of Kyeonggi-do, shows that the UI problems of the system are manual inputs, inconvenient menu configuration, disconnection between academic calendar and educational process, complexities of managing attendance report and curriculum evaluation, etc. We have improved the UI design by providing more efficient input method and more systematic menu configuration compared to the current system, and then evaluated the design through the second survey. Evaluation results show that users prefer the proposed UI design especially from the viewpoint of user-friendly input interface and user-oriented view composition.

The Effects of Nutrition Evaluation Related to Suitable Food Supply Program for Elders Living Alone in Sung Nam City (성남시 독거 노인의 맞춤형 영양 처방 음식 제공 프로그램 효과 연구)

  • The nutritional status and chronic disease occurrence of the elderly living in local areas is affected by certain factors, including low energy intakes, low food diversity, poor nutritional quality and living alone. Moreover, elderly people who live alone may have low incomes and be socially isolated. Thus, we have provided them adjustable and balanced menus using standard recipes. In this study, we investigated aspects of nutritional status and living conditions in the elderly status, in relation to food, activities of daily living(ADL), nutrition risk index, average intake of calories and nutrients, the mini dietary assessment index score, depression score, menu satisfaction, menu demand, satisfaction with menu offerings. The result indicated significant nutritional improvements by providing menus to the elders and suggest that by providing adjustable and balanced menus using standard recipes, the nutritional status of isolated elders can be changed and improved.

Foodservice Management in Children Care Social Welfare facilities (아동 복지시설의 급식 운영 실태 조사)

  • The purpose of this study was to investigate the current foodservice management practices of children care social welfare facilities. Questionnaire were sent to the directors of all 275 children welfare facilities in Korea and 107 returned facilities in korea and 107 returned the complete answers. These questionnaire were answered by manager. Equipments were evaluated by investigators using the evaluation form. staffing structure revealed that most of the facilities had a director, a secretary, nurse, but only 15% of the system hired a dietitian. It showed the shortage of nurse, physical therapists, and dietitian. Therefore, food purchasing, menu planning, food delivery, and the other food service management processes are handled by non-professionals, such as director, secretary, or cooks. Food purchasing money of total budget is $10{\sim}20%$. Food purchasing place in most facilities was market place. Foodstuffs were almost purchased $2{\sim}3$ per weeks. 90% of the welfare facilities were used the menu. Modified food frequency questionnaire were used to get the frequencies of each food items used in menu. The results showed relatively satisfactory in food frequencies, however, this was about what was used in menu, not vat was eaten by the residents. conditions of most equipments in the kitchen were defective specially in dishwashing and sterilization step.
