Possibility of Making Low-fat Sausages from Duck Meat with Addition of Rice Flour

  • Low-fat sausages with or without 10% hydrated rice flour were made from duck, chicken and pork and their physical and sensory properties were compared. Results showed that moisture content did not differ significantly among the sausage batters. However, crude protein, crude fat and total ash content were significantly lower in the group with added rice flour compared with the no flour group. Crude protein and crude fat were the highest in pork sausages without rice flour (p<0.05). Adding 10% rice flour reduced total expressible fluid in all meat type sausages. Cooking loss was also decreased when 10% rice flour was used in making sausages from chicken and pork. However, no changes in cooking loss were found in duck meat by adding rice flour. Again, the highest cooking loss was in pork sausages without rice flour and lowest in chicken sausages with 10% rice flour. The pH of the meat from different animal species differs significantly, although no significant difference was found within meat types with or without rice flour. Lightness ($L^*$) increased, while redness ($a^*$) decreased with adding rice flour in all meat type sausages. Results showed that hardness was significantly reduced when 10% rice flour was added to pork, chicken and duck meat (p<0.05). This may be due to increased water retention of rice flour after cooking. Sensory evaluation indicated that the overall acceptability of pork and chicken sausages with or without rice flour was the same, but duck sausages without rice flour had the highest off-flavor score among the sausages. Addition of rice flour increased the overall acceptability of duck sausage to that of pork and chicken sausages.

Comparison of Meat Quality Characteristics and Proteolysis Trends associated with Muscle Fiber Type Distribution between Duck Pectoralis Major and Iliotibialis Muscles

  • This study was conducted to evaluate the proteolysis trends and change in meat quality during 10 days of cold storage in duck M. pectoralis major (PM) and M. iliotibialis (IL). Duck IL had a higher pH and greater degree of lightness but lower cooking loss than PM (p<0.05). During the 10-day cold storage, the pH value of PM declined significantly (p<0.05), while the meat quality traits of IL were not affected by cold storage (p>0.05). In PM, the redness increased from day 1 to day 5, while cooking loss was lower on day 10 compared to day 5 (p<0.05). There were no significant differences in the activities of cathepsin B and proteasome 20S during cold storage (p>0.05). The activity of calpains declined gradually during 10 days of storage (p<0.05), and the activity of calpains in PM was higher than that in IL (p<0.05). A total of 5,155 peptides were detected and derived from 34 proteins of duck PM muscle, whereas 4,222 peptides derived from 32 proteins were detected from duck IL muscle. Duck PM muscle was composed only of fast type of muscle fiber, whereas IL muscle was composed of both slow and fast types. The proteins responsible for glycolysis or myofibrillar proteins were closely related to changes in meat color or water-holding capacity during cold storage. These results suggest that changes in meat quality characteristics during cold storage are closely related to protein degradation, which is also related to the distribution of muscle fiber types.

Carcass Characteristics and Meat Quality of Korean Native Ducks and Commercial Meat-type Ducks Raised under Same Feeding and Rearing Conditions

  • This study was conducted to compare carcass characteristics and physico-chemical meat quality in two different genotype ducks raised under identical feeding and rearing conditions. A total of ninety 1-d-old Korean native ducks (KND, n = 45) and commercial meat-type ducks (Grimaud, n = 45) were fed same experimental diets during 56 d and 42 d, respectively to obtain similar slaughter weights. The experimental diet for starter period contained 20% crude protein (CP) and 2,900 kcal nitrogen corrected true metabolizable energy (TMEn)/kg of diet and that for grower period contained 17% CP and 3,050 TMEn/kg of diet. Average daily gain and feed efficiency of KND were inferior to those of commercial meat-type ducks (p<0.05). Carcass weight was not different between two genetically different ducks, but carcass yield of KND was significantly higher (p<0.05) than that of commercial meat-type ducks. There were no significant differences in cooking loss and pH of breast meat between two genetically different ducks, but water holding capacity of KND was significantly higher than that of commercial meat-type ducks. The linoleic acid and total polyunsaturated fatty acid of breast meat from KND were significantly higher (p<0.05) than the corresponding part from commercial meat-type ducks. Significant differences were detected in water holding capacity and the content of linoleic acid and polyunsaturated fatty acid, which were significantly higher in KND, whereas growth performance tended to be superior in commercial ducks. At the market weight, the meat from KND was judged to have better qualities with regard to higher water holding capacity and greater content of polyunsaturated fatty acid compare with meat from commercial meat-type duck.

Quality of Duck Breast and Leg Meat after Chilling Carcasses in Water at 0, 10 or $20^{\circ}C$

  • An experiment was carried out to investigate the effects of different chilling temperature on duck breast and leg meat quality. Duck carcasses were chilled for 30 minutes in water at either $0^{\circ}C$, $10^{\circ}C$ or $20^{\circ}C$ within 20 minutes of post mortem with 6 carcasses per group. Results showed no significant effects of chilling temperature on ultimate pH, protein solubility, sarcomere length and shear force value for duck breast or leg meat (p>0.05). Leg meat had higher ultimate pH, redness and shear force value, lower cooking loss, lightness, yellowness and protein solubility values than breast meat. The interaction of meat type and chilling temperature on cooking loss was significant (p<0.05). The effect of chilling temperature on cooking loss was more severe in leg meat than breast meat and $20^{\circ}C$ chilling resulted in significantly higher cooking losses than the other chilling temperatures. Results of this experiment revealed that duck carcass can be chilled at $10^{\circ}C$ without any harmful effect on meat quality including toughness of meat.

오리고기의 첨가 수준이 냉장 저장 중 유화형 소시지의 품질 특성에 미치는 영향 (Effect of Addition Levels of Duck Meat on Quality Characteristics of Emulsion Type Sausages during Cold Storage)

  • 본 연구는 소시지 제조 시 오리고기와 돼지고기의 혼합비율에 따른 냉장 저장 중 품질 특성을 구명하고자 수행하였다. 처리구는 소시지 제조 시 사용되는 고기 함량을 기준으로 오리고기 100%(T1), 돼지고기 100%(T2), 오리고기 50% + 돼지고기 50%(T3), 오리고기 40% + 돼지고기 60%(T4) 및 오리고기 30% + 돼지고기 70%(T5)로 나누었다. 그 결과, 수분은 다른 처리구에 비해 T1이 유의적으로(p<0.05) 가장 높았고, T2가 유의적으로(p<0.05) 가장 낮게 나타났다. 단백질과 지방함량에 있어서는 T2가 다른 처리구에 비해 유의적으로(p<0.05) 가장 높게 나타났다. 명도의 경우, T1이 전 저장기간 동안 다른 처리구에 비해 유의적으로(p<0.05) 가장 낮은 명도를 보였다. 적색도는 다른 처리구에 비해 T1이 전 저장기간 동안 유의적으로(p<0.05) 가장 높게 나타난 반면, T2는 전 저장기간 동안 유의적으로(p<0.05) 가장 낮은 것으로 나타났다. 경도의 경우, 오리고기 40%와 돼지고기 60%로 제조한 T4가 다른 처리구에 비해 전 저장기간 동안 유의적으로(p<0.05) 높게 나타났다. 응집성의 경우, 냉장 저장 2주까지 T5가 다른 처리구에 비해 유의적으로(p<0.05) 높게 나타났다. 관능평가 결과, 육향, 맛 및 조직감에 있어서는 T5가 유의적으로(p<0.05) 낮은 것으로 나타난 반면, 다른 처리구 간에는 유의적인 차이가 없는 것으로 나타났다. 전체적인 기호도는 T5가 다른 처리구에 비해 유의적으로(p<0.05) 낮은 것으로 나타났다. 이상의 결과를 종합해 볼 때, 오리고기 소시지 제조 시 경도와 기호성을 좋게 하기 위한 근육 단백질의 혼합 비율은 오리고기 40%와 돼지고기 60%의 비율이 적당한 수준인 것으로 사료된다.

토종오리의 교배 조합이 오리고기의 부분육 생산수율, 육질 및 관능검사에 미치는 영향 (Effect of Crossbred Korean Native Ducks on the Retail Cut Yield, Meat Quality, and Sensory Evaluation of Duck Meats)

  • 본 시험은 토종오리와 육용오리의 교배 조합이 부분육 비율과 육질에 미치는 영향을 연구하기 위해 수행하였다. 토종오리와 육용오리의 교배 조합으로 발생된 4처리구의 오리 360수를 평사에서 사육하고, 일정 주령(A, B, C 8주령, D 6주령)에 도달하였을 때 각 처리구에서 암수 각각 9수씩 선별하였다. 교배 조합 방법은 토종오리(female)$\times$토종오리(male), 육용오리(female)$\times$토종오리(male), 토종오리(female)$\times$육용오리(male), 육용오리(female)$\times$육용오리(male)의 4처리구를 각각 A, B, C, D로 하였다. 선별된 개체들은 도압(屠鴨)하여 부분육 비율을 측정하고, 오리고기의 이화학적 성상과 관능검사를 실시하였다. 날개와 목 부위의 비율은 D 처리구가 가장 낮았으며(P<0.05), 가슴 부위는 B 처리구에서 가장 높았다(P<0.05). 다리 부위는 처리구간 차이가 없었으며, 부분육을 제외한 부위는 A, B, D 처리구에서 C 처리구에 비해 유의적으로 높았다(P<0.05). 오리고기의 pH는 처리구간 차이가 없었으나(P>0.05), 지방, 단백질 함량은 B 처리구가 가장 높았으며(P<0.05), 콜라겐 함량은 D 처리구가 가장 높았다(P<0.05). 오리고기의 육색과 물리학적 성상(전단력, 가열 감량, 보수력)은 처리구간 차이가 없었다(P>0.05). 오리고기의 관능검사는 다즙성에서 D 처리구가 가장 높았으나(P<0.05), B와 D 처리구 사이에는 유의적 차이가 없었다. 따라서 토종오리와 육용오리의 교배 조합은 이화학적 성상이나 관능검사의 개선 효과가 뚜렷하지 않지만 가슴육 수율 향상에 영향을 주는 것으로 사료된다.

  • 함기 포장과 진공 포장이 냉장 저장 중 오리고기의 육색, 지방 산화 및 지방산 조성에 미치는 영향을 조사하였다. pH는 가슴육이 다리육에 비해 낮았으며, 냉장 저장 중 가슴육이 다리육에 비해 육색의 변화가 크게 나타났다. 다리육의 조지방 함량이 가슴육에 비해 약2배 정도 높았으며, 저장 3일 째부터 전단가가 낮아졌다. 함기 포장은 진공 포장에 비해 냉장저장 중 다리육의 지방 산화를 촉진하는 것으로 나타났으며, 지방 산화는 palmitic acid 함량의 감소와 linoleic acid 함량의 증가와 관련이 있는 것으로 나타났다 결과적으로 오리고기의 장기적인 냉장 유통을 위해서는 함기 포장보다 진공 포장을 하는 것이 바람직할 것으로 사료된다.

Antioxidant Enzyme Activity and Meat Quality of Meat Type Ducks Fed with Dried Oregano (Origanum vulgare L.) Powder

  • One-day-old Cherry valley meat-strain ducks were used to investigate the effect of supplemental dried oregano powder (DOP) in feed on the productivity, antioxidant enzyme activity, and breast meat quality. One hundred sixty five ducks were assigned to 5 dietary treatments for 42 days. The dietary treatment groups were control group (CON; no antibiotic, no DOP), antibiotic group (ANT; CON+0.1% Patrol), 0.1% DOP (CON+0.1% DOP), 0.5% DOP (CON+0.5% DOP), and 1.0% DOP (CON+1.0% DOP). Upon feeding, 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical scavenging activity of oregano extracts was higher than that of tocopherol, although it was less than that of ascorbic acid. As a result of in vivo study, DOP in the diet showed no effects on final body weight, feed intake, or feed conversion ratio. However, dietary 0.5% and 1% DOP supplementation caused a significant increase in the serum enzyme activity of superoxide dismutase (SOD) compared with CON and ANT, while glutathione peroxidase (GPx) in tissue was increased as compared to ANT (p<0.05). Cooking loss from ducks fed with DOP decreased compared with the control ducks. Thiobarbituric acid reactive substance (TBARS) values of duck breast meat at 5 d post slaughter was found to be significantly reduced in ducks whose diets were supplemented with 0.5% and 1% DOP (p<0.05). These results suggest that diets containing 0.5% and 1% DOP may beneficially affect antioxidant enzyme activity of GPx and SOD, improve meat cooking loss, and reduce TBARS values in breast meat at 5 d of storage in ducks.

Expression of genes related to lipid transport in meat-type ducks divergent for low or high residual feed intake

  • Objective: This study examined the effects of divergence in residual feed intake (RFI) on expression profiles of key genes related to lipid transport in the liver and duodenal epithelium and their associations with feed efficiency traits in meat-type ducks. Methods: A total of 1,000 male ducks with similar body weight (1,042.1±87.2 g) were used in this study, and their individual RFI was calculated from 21 to 42 d of age. Finally, the 10 highest RFI (HRFI) and 10 lowest RFI (LRFI) ducks were chosen for examining the expression of key genes related to lipid transport in the liver and duodenal epithelium using quantitative polymerase chain reaction. Results: In the liver, expression levels of albumin (ALB), CD36 molecule (CD36), fatty acid hydroxylase domain containing 2 (FAXDC2), and choline kinase alpha (CHKA) were significantly higher in LRFI ducks than in HRFI ducks (p<0.01); negative correlations (p<0.05) between expression levels of ALB, CD36, FAXDC2, and CHKA and RFI were detected in the liver. Additionally, ALB expression was strongly positively correlated (p<0.05) with CD36, FAXDC2, CHKA, and apolipoprotein H (APOH) expression in the liver. In duodenal epithelium, we found that mRNA levels of ALB, CD36, FAXDC2, and APOH were significantly higher in LRFI ducks than in HRFI ducks (p<0.01); RFI was strongly negatively correlated (p<0.05) with ALB, FAXDC2, and APOH expression, while ALB expression was strongly positively correlated with APOH expression (p<0.01) in duodenal epithelium. Furthermore, expression levels of both ALB and FAXDC2 genes were significantly associated with feed conversion ratio and RFI in both liver and duodenal epithelium (p<0.05). Conclusion: Our findings therefore suggest that ALB and FAXDC2 genes might be used as potential gene markers designed to improve feed efficiency in future meat-type duck breeding programs.

Assessment of Microbial and Radioactive Contaminations in Korean Cold Duck Meats and Electron-Beam Application for Quality Improvement

  • Animal-origin food products pose serious threat to public food safety due to high microbial loads. The microbial and radioactive contaminations in commercial cold duck meat products were evaluated. Ten different lots of commercial samples ($C_1-C_{10}$) were classified based on type and smoking process. All samples were highly contaminated (< 4-7 Log CFU/g) with total aerobic bacteria (TAB), yeasts and molds (Y&M), and 7 samples ($C_1-C_7$) were positive for coliforms. Furthermore, three samples were contaminated with Listeria monocytogenes ($C_4-C_6$) and one with Salmonella typhimurium ($C_6$). No radionuclides ($^{131}I$, $^{137}Cs$, and $^{134}Cs$) were detected in any sample. The results of DEFT (direct epifluorescent filter technique)/APC (aerobic plate count), employed to screen pre-pasteurization treatments of products, indicated that smoked samples were positive showing DEFT/APC ratios higher than 4. Notably, the samples showed a serious threat to microbial safety, thus were irradiated with electron-beam (e-beam). The $D_{10}$ values for S. typhimurium and L. monocytogenes were 0.65 and 0.42 kGy, respectively. E-beam application at 3 and 7 kGy resulted in reduction of initial TAB, Y&M, and coliform populations by 3 and 6 log cycles, respectively. Thus, e-beam was proven to be a good decontamination approach to improve the hygiene of cold duck meat.
