In an effort to Improve the quality of meat and to monitor farms, residual tetracyclines in local beef and pork produced in the province of North Chung-cheong were determined by a EEC 4-plate, Charm II and HPLC, respectively. The results were summarized as follows ; 1. Of the 547 samples, 4 beef and 13 pork samples were judged to be positive by EEC 4 - plate method. 2. Detection rates of tetracyclines by type 1(++--) and type 2(+++ or ++$\pm$-) micro-bial growth Inhibition In EEC 4-plate method were 100% and 71%, respectively. 3. Of 17 positive samples, 6 were positive for tetracyclines, 4 were positive for tetracyclines and sulfonamides, 1 was positive for sulfonamides, and 2 were positive for others by Charm II test. 4. The best eluents were 0.01M methanolic oxalic acid, and the ideal temperature for stable concentration was $40^{\circ}C$ as optimal HPLC analytical conditions for the detection of tetracy-clines. 5. Of the 10 positive samples for tetracyclines by Charm II test, tetracyclines were confirmed in 2 beef and 6 pork samples, using HPLC, at levels ranging from 3.64~4.22 ppm and 0.2~1.20 ppm, respectively.
Three hundred and twenty four one day old mixed sex broiler chicks were assigned at random into 9 treatment groups. The experimental design was a 3${\times}$3 factorial arrangement. During the starter period (week 1-3), chicks were fed ad libitum. A cornsoybean meal based diet contained 23% crude protein, 3,200 kcal/kg metabolizable energy (NRC, 1994), and supplemented with organic or inorganic forms of chromium. Two organic chromium products, chromium yeast (Cr-Yeast from Alltech Biotechnology Corporation Limited) and chromium picolinate (Cr-Pic) were supplemented at the rate of 200, 400 and 800 ppb. One inorganic product, chromium chloride, was supplemented at the rate of 200, 400 and 800 ppb. During the finishing period (week 4-7), the corn-soybean meal based diet contained 20% crude protein, 3,200 kcal/kg metabolizable energy (NRC, 1994), and the same levels of chromium as in the starter period were added. No significant difference was observed among treatment groups in average daily gain, feed intake, body weight gain, feed conversion ratio and mortality. The carcass percentage of broilers receiving 200 and 400 ppb organic chromium (Cr-Yeast or Cr-Pic) was significantly increased (p<0.01). In addition, the supplementation of organic chromium reduced (p<0.05) breast meat fat content but increased breast meat protein content. The addition of chromium in the diet had no effect on boneless breast, skinless boneless breast, boneless leg, skinless boneless leg but reduced percentage of sirloin muscle. Total cholesterol and triglycerides were reduced by organic Cr supplementation. Supplementation with 200 and 400 ppb of both Cr-Yeast and Cr-Pic showed the lowest total cholesterol. The effects of type of Cr on HDL and LDL were variable, however, LDL increased with increasing level of Cr supplementation. This trial indicates that organic chromium tended to improve growth performances and carcass composition, reduced total cholesterol and triglycerides. The optimum level of organic chromium supplementation was at 200 ppb.
This study was to Investigate the consumer's understanding and purchasing foods, which were produced by organic agricultured method. The results of this study were as follows: 1. When shopping foods, the items which were deeply considered were taste of family and food safety. 2 Contaminants which were considered to be dangerous were, in decreasing order, agricultural chemical residue, food additives, environmental contaminant, and microbial hazard. Consumer's perception to agricultural chemical residue In foods was 'be much serious' and over 4.0 by Likert 5 scale. 3. Among of characteristics which was associated with organic farmming foods, taste and nutrition were considered the least important characteristic, whereas safety and good health were considered the most important characteristic. 4. The foods which were thought to be polluted by agricultural chemical residue were, in decreasing order fruit, vegetable, cereal, egg, meat, milk, and fish & shellfish. 5. The respondants' purchasing degree for organic farmming foods was 'often purchase' and 3.44 by Likert 5 scale. These result showed significant difference for age(p<0.05), for education level (p<0.05), for income(p<0.05) and for food expenditure(p<0.05), respectively 6. The type of organic farmming food which frequently purchased were, in decreasing order, vegetable. fruit, egg, cereal, milk, and meat. The reasons why consumer purchased organic farmming food were, in decreasing order, no pesticide/therbicides, no artifical fertilizer, no growth regulators, residue free, and good quality. 7. 78% of respondants Indicated that they bought organic farmming food in this year increasely or same as last year and 91.9% of respondants Indicated that they plan to buy organic farmming foods in next year.
Objectives : To assess the seroprevalence and risk factors of toxoplasmosis in high school students in Cheju Province, Korea. Methods : A total of 4,570 high school students from 18 schools in Cheju Province were investigated for Toxoplasma gondii antibodies(IgG) by enzyme linked immunosorbent assay (ELISA). Risk factors for toxoplasmosis, such as place of residence, type of house, contact with cats and other pets, and rare meat consumption, were examined by questionnaire. Results . The overall antibody positive rate was 5.5% and ranged from 2.6 to 11.5% by school. There was no significant difference between males and females. Statistical analyses of the questionnaire data indicated that the risk factors for seropositivity were: (1) birth place (Cheju/others), (2) place of residence (rural/urban), (3) dietary habits (vegetarian/non vegetarian), (4) eating rare meat, (5) exposure to pets and (6) hepatitis B. Conclusion : We confirmed that the prevalence of the anti-Toxoplasma gondii antibody in a population of high school students in Cheju Province was to the previously reported prevalence.
According to Sa-Sang constitution, people can be classified into 4 types, Tae-Yang-In, Tae-Eum-In, So-Yang-In, and So-Eum-In. 1he purpose of this study was to examine any significance between types of Sa-Sang constitution and dietary factors. Physical and constitutional examinations as well as a questionnaire survey were conducted on a group of 483 college students. Among the group of 483 college students, only 428 subjects were determined to have identical constitution through both the questionnaire survey and Korean traditional medical doctors' inquiries. Of 428 subjects, $29.7\%$ were determined to be Tae-Eum-Ins; $35.5\%$ were identified as So-Yang-Ins; $34.8\%$ were classified as So-Eum-Ins. Tae-Eum-Ins showed a statistically significant difference in BMI and higher smoking rate in comparison with groups of So-Yang-Ins and So-Eum-Ins. So-Eum-Ins had a tendency to take vegetables and fruits more often but they had lower preferences for balanced diets. Tae-Eum-Ins showed higher propensity to eat a visible fat protein. In terms of degrees of doneness of meat, So-Yang-Ins showed a higher tendency to prefer well-broiled meat Tae-Eum-Ins also tended to have significantly higher iron, potassium, sodium, vitamin $B_1$, niacin, $\beta$-carotene and vitamin E in their diet So-Eum-Ins had significantly lower intakes of protein, phosphorous, and folate. Considering the fact that most chronic degenerative diseases could be developed by any lifestyle factors, it is necessary to conduct educational programs about lifestyles including dietary habits for maintaining good health; On the basis of the results of this study, it is expected that the scientific, objective and accurate diet information depending upon individual's type of constitution will be provided.
The aim of this study was to identify the optimal and superior type of natural calcium for replacing phosphate in cooked ground pork products. To achieve this, 0.5% eggshell calcium (ESC), oyster shell calcium (OSC), marine algae calcium (MAC), or milk calcium (MC) was added to ground pork meat products. The effect of this substitution was studied by comparing the substituted products with products containing 0.3% phosphate blend (control). ESC was considered an ideal phosphate replacer for minimizing the cooking loss, which likely resulted from the increase in the pH of the product. Among the other natural calcium types, OSC treatment did not cause a significant increase in pH, but it lowered the cooking loss. CIE $L^*$ values were higher (p<0.05) in products treated with OSC or MC than the control, and lowest (p<0.05) in the products with ESC. However, products with ESC had higher (p<0.05) CIE $a^*$ and CIE $b^*$ values than the control and products treated with other powders. Compared to the control, products treated with ESC and OSC had similar substitution effects on the textural properties of the products. Therefore, the results of this study suggested that the combined use of ESC and OSC could be a potentially effective method for replacing synthetic phosphate in ground pork products.
대두유를 기초로 한 튀김유에 capsicum, butter flavor, 규소수지를 각각 0.20, 0.15%($\omega$/$\omega$) 및 10ppm 처리하여 가열안정성의 향상 및 육두향 약화에 효과가 있는 것으로 확인되었다. 즉, capsicum과 규소수지를 병행처리한 튀김유는 185$\pm$2$^{\circ}C$의 온도조건 하에서 3시간 동안 연속적으로 열처리할 경우 AV 및 SP가 각각 무처리군의 0.385, 22$0^{\circ}C$에 비하여 크게 향상된 0.301, 232$^{\circ}C$를 나타내었다. 이러한 효과는 capsicum의 항산화 효과와 함께 소포제의 일종인 규소수지의 작용에 따라 가열처리에 따른 튀김유의 표면적 팽창을 방지하여 유리지방산생성 및 연기발생을 억제한데 따른 효과인 것으로 판단되었다. 또한, 0.15%($\omega$/$\omega$)의 butter flavor처리에 따라 튀김유 및 튀김물에서 발생하는 육두향 및 기름타는 냄새를 막아주는 효과가 인정되어 새로운 형태의 튀김유 제품 생산이 가능할 것으로 기대되었다.

This study was aimed to investigate the effects of the type O foot-and-mouse disease vaccine (FMDV) on the incidence of abnormal meat such as granuloma or abscess formation at the injection site in pork and its associated economic losses. At 56 d of age, piglets were inoculated with FMDV by one of three administration routes: N-Neck (a conventional needle-syringe injection into the neck), N-Ham (a conventional needle-syringe injection into the ham), and Non-Neck (injection with a needle-free device into the neck). The injection sites were visually examined for the presence of a granuloma or abscess, and the incidence rate of abnormal meat was calculated. The gross weight of the portion of the pork carcasses condemned because of granuloma or abscess formation was measured and multiplied by the weekly sales price to calculate the total economic losses. After implementation of FMDV, the economic losses were approximately six times higher than before implementation. Granuloma or abscess formation was significantly higher in the N-Neck and Non-Neck groups, in which the vaccine was inoculated into the neck area, than in the N-Ham group (N-Neck and N-Ham vs Non-Neck, p<0.05). These results suggest that the incidence of lesions could be reduced if the ham route was used for vaccination.

A total of 96 non-lean-type (Yorkshire $\times$ Landrace) $\times$ Duroc gilts and barrows weighing approximately 80 kg were randomly allocated to 24 pens under a 2 (sex) $\times$ 3 [diet; 3.4, 3.2, and 3.0 Mcal DE/kg {'high'-, 'medium'-, and 'low'-energy diets (HE, ME, and LE), respectively}] factorial arrangement of treatments. All animals were slaughtered approximately at 115 kg, after which carcass quality traits and grades and physicochemical and sensory characteristics of the loin related to meat quality were analyzed. The ADG and gain:feed were not affected by the sex or dietary treatment, whereas ADFI was greater in the ME vs HE group. Backfat thickness was greater in barrows vs gilts and also in ME and HE vs LE only in barrows. Enumerated carcass marbling and quality grade, which were highly correlated (r=0.56; P<0.01), were greater in barrows vs gilts. Physicochemical characteristics including the color, pH, drip loss and contents of moisture, protein, and fat of fresh loin, as well as sensory characteristics of fresh and cooked loin, were not affected by the sex or dietary treatment, except for shear force for cooked loin which was greater (P<0.05) in LE and ME vs HE. In conclusion, it is thought that ME is comparable to HE in terms of the effect on growth and carcass quality of finishing pigs, but that the relative effect of LE vs ME needs to be further studied.
Purpose. The purpose of this study was to compare the total lifestyle patterns. of allergy and non-allergy group. Method. The study was carried out to access the lifestyle patterns such as food intake, smoking, alcohol intake and exercise habits by questionnairing the no allergy people and 205 non-allergy people living in Seoul area. Results. 1. The proportion of eating stimulatory food materials-mainly hot and salty-of allergy group were significantly higher than those of non-allergy group. 2. In allergy group, the proportion of meat intake was significantly higher than that of non-allergy. 3. In allergy group, exercise habit was higher than that of non-allergy, but not significant. 4. In allergy group, smoking was lower than that of non-allergy, but not significant. 5. In allergy group, alcohol intake was lower than that of non-allergy, but not significant. Conclusion. Lifestyle patterens such as food intake(salt and meat) were significantly different by prevalence of allergy and allergy type, which suggested that lifestyle patterns of allergy people need to be studied to develop preventive stratagies for allergic reaction.
