한·중 소비자들의 육류대체식품에 대한 구매의도에 미치는 영향 연구 (A Cross-cultural Study of Influence Factors of Meat Substitutes between Korea and China)

  • This study examined the factors influencing the purchase intention of meat substitutes. A survey was conducted on 589 consumers in Korea (297 people) and China (292 people). The perception of meat substitute foods was lower in Korean consumers than in Chinese consumers, but there was no significant difference. The purchase intention of meat substitute foods was lower in Korean consumers than in Chinese consumers (p<0.01). Korean consumers' perception of meat substitute foods was higher in males than in females (p<0.01). The purchase intention of meat substitute foods also showed the same trend (p<0.001). Chinese consumers' perception of meat substitute foods was higher in males than in females. The overall purchase intention of meat substitute foods was significantly higher in males than in females (p<0.05). The perception of meat substitute foods by Korean consumers' was higher in their 40s and 50s than in their 20s and 30s. The purchase intention of meat substitute foods was also high in their 40s and 50s (p<0.01). On the other hand, the perception of meat substitute foods by Chinese consumers' was higher in their 20s and 30s than in their 40s and 50s (p<0.01). The purchase intention of meat substitute foods also showed the same trend (p<0.01). Korean consumers' perception of meat substitute foods had a significant positive effect on the purchase intention of meat substitutes (p<0.001). Chinese consumers' perception of meat substitute foods also had a significant positive effect on the purchase intention of meat substitute foods (p<0.001). Overall, food technology neophobia has a significant negative effect on the purchase intention of meat substitutes (p<0.05).

대체육의 아미노산 조성 및 아연 생체 이용률의 영양학적 분석 (Nutritional analysis of amino acid composition and zinc bioavailability in plant-based meats)

  • 본 연구는 비건 인구의 증가 및 비건 문화의 확대에 발맞추어 대체육 제품에 대한 시장의 요구가 커짐에 따라, 대체육의 영양학적인 부적합의 가능성이 제시된 아미노산 조성과 아연 생체 이용률의 측면에서 대체육 제품이 동물성 육류 제품을 영양학적으로 대체할 수 있는지 평가하고자 수행되었다. 텐더 형태의 동물성 계육 제품 1종과 대체육 제품 2종을 선정하여 HPLC를 통한 아미노산 함량 및 조성측정, ICP-AES를 이용한 아연, 칼슘 등의 미량 원소 함량 측정, 아연 생체 이용률 저해 화학종인 피트산의 침전 추출 및 UV-Vis 분석을 통한 정량을 수행하고, 측정 결과를 실제 제품 섭취의 맥락에 맞추어 적용, 분석하였다. 연구 결과, 대체육 제품에서 valine, lysine 등 일부 필수 아미노산 함량이 동물성 육류 제품에 비해 부족하고, 제품을 통해 권장 섭취량을 달성하기 어려운 것으로 나타났다. 아연 생체 이용률의 경우, 칼슘에 의한 아연 생체 이용률 저해는 유의미하지 않을 것으로 분석되었으며, 같은 대체육이라 하더라도 제품 원재료의 아연 함량, 피트산 함량에 따라 낮은 단계에서부터 높은 단계까지 다양한 아연 이용률을 보였다. 따라서 아연 함량이 높고 피트산 함량이 낮은 식물성 원재료를 선정, 적절히 가공함으로 적절한 아연 생체 이용률을 달성하는 대체육 제품을 생산할 수 있을 것으로 보인다.

  • The rise in plant-based food consumption is propelled by concerns for sustainability, personal beliefs, and a focus on healthy dietary habits. This trend, particularly in alternative meat, has attracted attention from specialized brands and eco-friendly food companies, leading to increased interest in plant-based alternatives. The dominant plant-based proteins, derived mainly from legumes, include soy protein isolates, which significantly impact sensory factors. In the realm of plant-based fats, substitutes are categorized into fat substitutes based on fats and fat mimetics based on proteins and carbohydrates. The production of these fats, utilizing gums, emulsions, gels, and additives, explores characteristics influencing the appearance, texture, flavor, and storage stability of final plant-based products. Analysis of plant-based proteins and fats in hamburger patties provides insights into manufacturing methods and raw materials used by leading alternative meat companies. However, challenges persist, such as replicating meat's marbling characteristic and addressing safety considerations in terms of potential allergy induction and nutritional supplementation. To enhance functionality and develop customized plant-based foods, it is essential to explore optimal combinations of various raw materials and develop new plant-based proteins and fat separation.

저지방 육제품의 제조 및 평가 (Manufacture and Evaluation of Low-Eat Meat Products(A review))

  • Reducing the fat content of processed meat products can be performed by (1) using leaner raw meat materials (2) inducing non-meat ingredients that serve to replace a portion or all of the fat, and (3) applying new ingredient combinations, technologies or processing procedures that decrease the fat and cholesterol content of meat products. Low-fat meat products were manufactured with Int replacers which were food ingredients that had the functional and sensory properties of fat without contributing fat calories, resulting in lower fat(<3%) content. Added water, non-meat proteins, carbohydrates, such as starch and hydrocolloids(gums) and vegetable oils have been used as typical fat replacers to be used in meat products. In addition, fat substitutes included structural lipids, sucrose polyester and ingredient combinations. Formulations for the manufacture of low-fat meat products in combined with new technologies have focused on the use of fat replacer combinations that contributes a minimum of calories and not detrimental to flavor, juiciness, mouthfeel or textural traits expected more traditional products. In conclusion, some combinations of fat replacements that mimics the flavor, mouthfeel and textural characteristics of fat offer potential for further development of low-fat meat products to have similar characteristics of regular-fat counterparts.

Quality Characteristics of Meat Analogs through the Incorporation of Textured Vegetable Protein and Tenebrio molitor Larvae in the Presence of Transglutaminase

  • Alternative protein sources with greater nutritional value and a lower environmental footprint have recently attracted interest in the production of meat substitutes. However, it is required that these alternatives mimic the texture and structure of meat. This study investigated varying ratios of textured vegetable proteins (TVP) to Tenebrio molitor larvae (brown mealworm; TM) with the addition of transglutaminase (TG) to determine the quality characteristics of these emulsions. The results demonstrated low protein solubility of the emulsions as TVP content increased. Furthermore, when the proportion of TM was high, the TG-treated emulsion had a low pH. Additionally, when there was a high TM ratio to TVP in the TG treatment, the emulsions demonstrated better thermal stability and water holding capacity. Regarding the rheological properties of the emulsion, both the frequency-dependent storage modulus (G') and loss modulus (G'') increased as the proportion of TVP in the emulsion increased with and without the addition of TG. Differential scanning calorimetry analyses demonstrated two protein denaturation peaks in all treatments, with high peak temperatures for both treatments with a high proportion of TM. The hardness and chewiness of the emulsion were highest in the treatment (T6 and T8) with TG, and the gumminess of the emulsion was greatest when TM only or when equal ratios of TVP and TM were treated with TG, respectively. In conclusion, the addition of TM to TVP with TG improves the overall texture of the protein mixture, making it a suitable meat alternative.

돈육 가공에서 기능성 탄수화물을 이용한 인산염 대체 소재 개발 (Application of Functional Carbohydrates as a Substitute for Inorganic Polyphosphate in Pork Meat Processing)

  • 본 연구는 소금의 첨가수준을 저수준(1.5%)으로 고정시키고, 인산염 대체가능성이 있는 다양한 기능성 소재들의 수준을 달리하여 원료돈육의 가공특성, 유화안정성 및 육색 등에 미치는 첨가효과를 구명하였다. 기능성 물질의 첨가는 원료돈육의 일반성분과 pH에는 유의적인 영향을 미치지 않았다. 보수력과 가열 감량에 있어 후보 물질들과 인산염 처리구 간에 유의적인 변화가 나타났고, 구아검, 카라기난, 알긴산이 인산염 대체에 적적한 특성을 보였다. 유화안정성에서는 인산염, 알긴산과 구아검 첨가구가 유의적으로 높은 안정성을 나타냈어 이후 실제 가공품에의 적용가능성을 나타냈다. 이상의 결과에서 카라기난과 구아검의 경우인산염과 유사한 가공특성, 유화안정성과 육색을 나타내어 육제품 제조용 인산염 대체첨가물질로 가능성을 확인할 수 있었다.

Effects of Edible Insect Powders as Meat Partial Substitute on Physicochemical Properties and Storage Stability of Pork Patties

  • In this study, physicochemical and antioxidant properties, and storage stability (1, 3, and 7 days) of pork patties added with edible insect powders (EIP) of four species (Larvae of Tenenbrio molitor, Protaetia brevitarsis seulensis, Allomyrina dichotoma, and Gryllus bimaculatus) as meat partial substitutes were investigated. Twenty percent of each EIP was added to pork patties, and four treatments were prepared. On the other hand, two control groups were set, one with 0.1 g of ascorbic acid and the other without anything. Adding EIP decreased water content but increased protein, fat, carbohydrate, and ash contents. In addition, the use of EIP increased the water holding capacity and texture properties as well as decreased the cooking loss. However, the sensory evaluation and storage stability were negatively affected by the addition of EIP. The 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity had a positive effect on storage stability. It is believed that the addition of EIP resulted in high antioxidants due to the presence of polyphenol compounds in EIP. These results indicate that EIP has great potential to be used as meat partial substitute to improve the quality improvement and antioxidant in pork patties. However, in order to improve storage stability and consumer preference, further research is needed to apply it to patties by reducing the amount of EIP or adding auxiliary ingredients.

The Potential Substitution of Oyster Shell Powder for Phosphate in Pork Patties Cured with Chinese Cabbage and Radish Powder

  • The use of natural ingredients in meat processing has recently gained considerable interest, as consumers are increasingly attracted to clean-label meat products. However, limited research has been conducted on the use of natural substitutes for synthetic phosphates in the production of clean-label meat products. Therefore, this study aimed to explore the potential of oyster shell powder as a substitute for synthetic phosphates in pork patties cured with Chinese cabbage or radish powders. Four different groups of patties were prepared using a combination of 0.3% or 0.6% oyster shell powder and 0.4% Chinese cabbage or radish powder, respectively. These were compared with a positive control group that contained added nitrite, phosphate, and ascorbate and a negative control group without these synthetic ingredients. The results showed that patties treated with oyster shell powder had lower (p<0.05) cooking loss, thickness and diameter shrinkage, and lipid oxidation than the negative control but had lower (p<0.05) residual nitrite content and curing efficiency than the positive control. However, the use of 0.6% oyster shell powder adversely affected the curing process, resulting in a decreased curing efficiency. The impact of the vegetable powder types tested in this study on the quality attributes of the cured pork patties was negligible. Consequently, this study suggests that 0.3% oyster shell powder could serve as a suitable replacement for synthetic phosphate in pork patties cured with Chinese cabbage or radish powders. Further research on the microbiological safety and sensory evaluation of clean-label patties during storage is required for practical applications.

Comparison of consumption behaviors and development needs for the home meal replacement among Chinese college students studying abroad in Korea, Chinese college students in China, and Korean college students in Korea

  • BACKGROUND/OBJECTIVES: The consumption of home meal replacement (HMR) is increasing among college students in Korea and China. In particular, Chinese college students studying abroad in Korea (CSK) show changes in their dietary behavior after migration, and HMR consumption for meal substitution is also increasing. This study was conducted to compare the HMR consumption behaviors and HMR development needs of CSK, Chinese college students in China (CSC), and Korean college students in Korea (KSK). SUBJECTS/METHODS: The subjects were 570 college students (180 CSK, 200 CSC, and 190 KSK) who had experience of HMR consumption. Data were collected by face-to-face survey in 2019 and analyzed using SPSS 25.0. RESULTS: The majority of the subjects purchased HMR to 'saving time' and 'preventing meal skipping'. Average purchase price per HMR was about 5,000 won for the CSK and KSK, and about 3,000 won for the CSC. The most important attributes when selecting HMR for the CSK and CSC were hygiene, freshness, and taste in that order, while for the KSK were taste, price, and hygiene. Rice was preferred by the KSK while grilled and fried dishes were preferred by the CSK and CSC. In terms of development needs, dessert and meat-based side dishes were highest in all three groups. The preferred food materials for more than 50% of the subjects of all groups were beef, chicken, pork, shrimp, and squid, and spinach and Chinese cabbage in the CSK, and onion in the KSK. CONCLUSIONS: This study shows more effort is needed to develop the healthy customized HMR for college students studying in Korea and China, and that focuses are placed by CSK on hygiene and freshness, by CSC on meat side dishes, hygiene, and price, and by KSK on snacks (as meal substitutes), taste, and price.

식물성 기반 대체육 산업화센터 구축을 위한 경제적 타당성 분석 (Economic Feasibility Analysis Study to Build a Plant-based Alternative Meat Industrialization Center)

  • 최근 글로벌 인구 증가,소득 향상에 따른 육류 소비증가 및 동불복지, 탄소중립, 지속 가능성 등에 대한 이슈로 대체육(식품) 시장이 급성장 하고 있다. 정부에서도 그린바이오융합형 신산업육성방안을 마련하여 대체식품을 육성하고 있으나, 국내 중소기업의 기술력 부족, 생산시설 미비 등으로 사업화에 어려움이 있어 기업의 애로사항 해결을 위한 공동활용 시설 장비 구축이 필요한 상황이다. 전라북도에서는 식물성 기반 대체육 산업화센터 설립을 통해 선진국 수준의 식물성 대체육 개발·가공 및 산업화 원천기술을 확보하기 위한 전략을 추진 중에 있다. 이에 본 연구에서는 전라북도에 식물성 기반 대체육 산업화센터가 구축될 경우를 가정하여 식물성 기반 대체육 산업화센터의 경제적 타당성을 분석하였다. 먼저 식물성 대체육산업화센터 설립을 위한 기본구상을 검토하여 편익과 비용을 추정하고 다음으로 식물성 대체육 산업화센터 설립의 경제적 타당성을 분석하였으며 마지막으로 식물성 대체육 산업화센터의 지역경제 파급효과를 분석하였다. 먼저, 식물성 대체육 산업화센터는 전북바이오융합산업진흥원 내에 있는 식품분석센터(현재)를 1,000m2를 개보수하여 설립할 예정이며, 산업화센터 기반구축과 장비구축 그리고 사업화 R&D 및 운영비 등으로 100억원이 소요될 예정이다. 식물성 대체육 산업화센터는 총 5명의 신규인력을 채용하여 시설/장비를 구축하고 중장기적으로 사업을 지원할 계획이며 생산지원팀, 품질분석팀, 경영지원팀 등 총 3개의 팀으로 구성하는 것이 효율적이라 판단된다. 인력구성은 기존인력을 활용함과 동시에 신규 전문인력을 채용하여 전문성을 확보해야 하며, 경영지원, 품질분석 등 기관이 보유 및 가용한 인력을 활용하도록 설계하였다. 식물성 대체육 산업화센터 사업시행기간(2023년~2025년)에는 수익이 발생하지 않지만, 사업종료 이후 2026년부터는 장비활용수익, 기술이전수익, 교육수익, 기타수익이 매년 발생한다. 사업종료 이후 1년차인 2027년에는 장비활용수익(단독장비사용료, 품질분석), 기술이전수익, 교육수익, 기타수익으로 910,000천원이 발생하고 이후 장비활용수익, 기술이전수익, 교육수입이 꾸준히 증가하여 사업종료 후 5년차인 2030년에는 장비활용수익 1,350백만원, 기술 이전료(노하우, 기술) 360백만원, 기술교육수익 60백만원, 기타수익 400백만원이 발생할 것으로 예상된다. 다음으로 식물성 대체육 산업화센터 설립을 위한 기본구상을 기초로 사업의 경제적 타당성과 파급효과를 분석하였다. 분석 결과, B/C=1.32, NPV=374백만 원, IRR=4.8%로 나타나, 대체육산업화센터 구축에 따른 경제성은 존재하는 것으로 나타났다. 또한 산업화 센터 구축에 따른 지역경제 파급효과를 분석한 결과, 전라북도에 380억 원이 투자될 경우 전국적인 생산유발효과가 740억 원, 부가가치유발효과가 298억 원, 취업유발효과가 672명 발생하는 것으로 추정되었다. 본 연구에서는 식물성 기반 대체육 산업화센터 설립에 따른 사업 타당성을 최초로 계측한 연구이지만, 현재에는 산업화센터가 설립되기 이전이기 때문에 산업화센터 설립에 따른 비용과 편익을 추정하여 분석하였다. 금후에는 산업화센터 설립에 대한 계획이 구체화 될 경우 보다 구체적이고 체계적인 자료에 기초하여 대체육 산업화센터 설립 타당성을 보완할 필요가 있다고 판단된다.
